Gluten-free pasta was developed from raw whole millet (RMF) and precooked (PCMF) flours by thermoplastic extrusion. The fusilli shape pasta were prepared with RMF (100%) and RMF:PCMF in a ratio of 50:50. The formulations were characterized for texture, cooking loss, antioxidant capacity, antihyperglycemic activity, sensory and color analyses. The RMF:PCMF blend exhibited better integrity while the RMF was less consistent and more brittle after cooking. The optimal cooking time was 8.5 min for RMF:PCMF and 6.5 min for RMF pasta. Concerning texture parameters, pasta with RMF:PCMF presented higher values ââthan those with RMF, approaching commercial pasta. The antioxidant capacity, DPPH and FRAP (78.5% SFR and 247.5 µmol Trolox/g), total phenolics (127.6 µmol gallic acid equivalent/g (GAE/g)) and antihyperglycemic activity (99.5%) were higher for RMF:PCMF than for pasta prepared with RMF alone. The protein, lipid and fiber content of RMF:PCMF pasta was higher than the commercial brown rice pasta. In relation to the instrumental color analysis, dry pasta (RMF:PCMF) showed a browning index (BI) of 31.9. The global acceptance index of the RMF:PCMF pasta was 66%, in which texture was the most highlighted negative parameter reported by the evaluators. Thus, the use of whole millet precooked flours by thermoplastic extrusion can be an alternative in the preparation of gluten-free products with better functional properties.

Effect of sonication on the quality parameters of juçara, banana and strawberry smoothie was evaluated using a rotational central composite design with power (73.5-250.0 W) and time (7-36 min) as independent variables. The sonicated smoothie was evaluated regarding anthocyanins, instrumental color and rheological and physicochemical parameters. Within the evaluated processing conditions, 86% of anthocyanins were retained. The pH and acidity of the smoothie wasn't affected by the independent variables. Regarding instrumental color parameters, only luminosity was affected by the operational conditions. The cavitation phenomenon decreased the apparent viscosity of the smoothie. The sonicated smoothie presented non-Newtonian behavior, with characteristics of a pseudoplastic fluid (n < 1) in all treatments and control. Taking into account that the highest anthocyanin retention was observed at 147 W for 2 min, this condition was the most recommended for the processing of the product.

BACKGROUND: The state of art of tissue grafting allows significant improvements in the soft tissue phenotype. The importance of appropriate soft tissue phenotype around implants is supported by recent literature. The present case report aims to describe the application of a modified one-stage technique of laterally positioned flap with subepithelial connective tissue graft (CTG) for the treatment of peri-implant soft tissue dehiscence in the esthetic zone. METHODS AND RESULTS: A 38-year-old female presented 4 years following prosthetic restoration, with a localized soft tissue defect in height and thickness at the buccal aspect of the implant at #11, and the abutment exposed to the oral cavity. Incisions with internal and external bevels were performed in the medial and distal margins of the dehiscence, respectively, toward the alveolar mucosa. After intrasulcular incision, the area was de-epithelialized and a split thickness flap from mesial #11 to distal #14 was elevated. A tunnel was prepared at #21. CTG was stabilized mesially, within the tunnel prepared, and distally, through simple interrupted sutures. Vertical compressive sutures were performed on the CTG. The flap was laterally positioned and secured by means of suspended sutures. Healing was uneventful, increased thickness and height of the peri-implant mucosa were observed, with great esthetic outcome. The soft tissue margin was stable at the 5-year follow-up. CONCLUSION: The technique described in this case report showed promising results for covering exposed implant abutment in the esthetic zone, as well as for modification of the soft tissue phenotype around dental implants. Lentil (Lens culinaris) is a protein-rich legume consumed worldwide and it also has the potential to become an alternative source of protein ingredient for human nutrition. The aim of this study was to determine the best processing parameters for the whole grain protein wet extraction, as well as to analyze the techno-functional properties, and physical characteristics of the protein concentrate and its flour. It was also evaluated the application of the concentrate into a fish-like croquette. The processing route was carried out by alkaline extraction and acid precipitation of the proteins where the pH, stirring time and solute:solvent ratio were evaluated. The final dried protein concentrate presented 85% protein on dry basis and a mass yield of 14%. The results were reproducible when tested on a first scaling up test. For the techno-functional properties, solubility, water and oil retention capacities, emulsification and foaming capacities and stability, and gelling capacity were tested. As for the food application into fish-like croquettes, the lentil protein showed similar scores for sensory acceptance, flavor and texture when compared to a commercial clean-taste concentrate. The results observed in this study were compatible to other alternative pulse-protein ingredients on the market, positioning lentil protein as a promising alternative protein source to produce ingredients for the plant-based market.

Grape skin is a wine by-product with a high fiber and phenolic compound content, with potential application as an ingredient in food products. This work aimed to study the hedonic and sensory perception of the consumer using the Check-all-that-apply about cereal bars made with grape skin flour (GSF) obtained from wine residue. Grape skin flour with different granulometric ranges (coarse and fine) was added to the cereal bars in different proportions (10, 15, and 20%) to replace the oat flakes present in the formulation. Sensory acceptance results showed that all bars had good acceptance scores (>6.42) and presented different sensory profiles. The cereal bar containing 15% of coarse GSF had good sensory acceptance with attributes "few dark spots," "light color," and "softer," with desirable sensory characteristics and from the nutritional point of view with high fiber content and bioactive compounds and it was considered the best formulation. Therefore, the incorporation of wine by-products in cereal bars showed excellent acceptability and the possibility of insertion in the market.

Introduction: The Brazilian Federal Government developed the Occupational Health and Safety policy for the Federal Public Servant, supported by the following axes: health surveillance and promotion, health assistance for the civil servant, and medical surveillance expertise. As a federal public institution, the Federal Institute of Northern Minas Gerais (Instituto Federal do Norte de Minas Gerais) is responsible for implementing this policy. Objectives: This study aimed to identify the challenges and perspectives associated with the health care provided to the servants of the Federal Institute of Northern Minas Gerais. Methods: This was a documentary and field study, with a qualitative and quantitative approach, conducted using documentary research and semi-structured interviews. The collected data were submitted to descriptive and categorical content analyses. Results: The Federal Institute of Northern Minas Gerais still presents several problems in the consolidation and structuring of the Occupational Health and Safety policy for the Federal Public Servant. Among the main obstacles faced are the lack of governmental and institutional support and the precariousness of financial and human resources, mainly directed to the axis of health promotion and surveillance. The institution plans to conduct periodic medical examinations, the establishment of Internal Health Commissions for Public Servants, and the implementation of a mental health program. Conclusions: It is expected that the Federal Institute of Northern Minas Gerais will be able to perform better on the development of health policies and programs for its workers.
Introdução: O Governo Federal criou a Política de Atenção à Saúde e Segurança do Trabalho do Servidor Público Federal, sustentada pelos seguintes eixos: vigilância e promoção à saúde, assistência à saúde do servidor e perícia em saúde. O Instituto Federal do Norte de Minas Gerais, enquanto instituição pública federal, detém o encargo de implementar a referida política. Objetivos: Este estudo objetivou identificar os desafios e perspectivas frente às ações de atenção à saúde do servidor no Instituto Federal do Norte de Minas Gerais. Métodos: Tratou-se de um estudo documental e de campo, de abordagem quali-quantitativa, realizado por meio de pesquisa documental e entrevista semiestruturada. Os dados coletados foram submetidos à análise descritiva e de conteúdo categorial. Resultados: O Instituto Federal do Norte de Minas Gerais ainda apresenta diversos problemas na consolidação e estruturação da Política de Atenção à Saúde e Segurança do Trabalho do Servidor Público Federal. Entre os principais obstáculos enfrentados, estão a falta de apoio governamental e institucional e a precariedade dos recursos financeiros e humanos, principalmente direcionados ao eixo de promoção e vigilância à saúde. A instituição planeja a realização de exames médicos periódicos, a criação de Comissões Internas de Saúde do Servidor Público e a implementação de um programa de saúde mental. Conclusões: Espera-se que o Instituto Federal do Norte de Minas Gerais possa melhor atuar no desenvolvimento de ações voltadas para a saúde dos servidores.

The human ERBB2 proto-oncogene is widely considered a key gene involved in human breast cancer onset and progression. Among spontaneous tumors, mammary tumors are the most frequent cause of cancer death in cats and second most frequent in humans. In fact, naturally occurring tumors in domestic animals, more particularly cat mammary tumors, have been proposed as a good model for human breast cancer, but critical genetic and molecular information is still scarce. The aims of this study include the analysis of the cat ERBB2 gene partial sequences (between exon 17 and 20) in order to characterize a normal and a mammary lesion heterogeneous populations. Cat genomic DNA was extracted from normal frozen samples (n = 16) and from frozen and formalin-fixed paraffin-embedded mammary lesion samples (n = 41). We amplified and sequenced two cat ERBB2 DNA fragments comprising exons 17 to 20. It was possible to identify five sequence variants and six haplotypes in the total population. Two sequence variants and two haplotypes show to be specific for cat mammary tumor samples. Bioinformatics analysis predicts that four of the sequence variants can produce alternative transcripts or activate cryptic splicing sites. Also, a possible association was identified between clinicopathological traits and the variant haplotypes. As far as we know, this is the first attempt to examine ERBB2 genetic variations in cat mammary genome and its possible association with the onset and progression of cat mammary tumors. The demonstration of a possible association between primary tumor size (one of the two most important prognostic factors) and the number of masses with the cat ERBB2 variant haplotypes reveal the importance of the analysis of this gene in veterinary medicine.

A lycopene-rich watermelon (Citrullus lanatus) concentrate was incorporated into snack cracker, fusilli pasta, and extruded snacks for coloring purposes. Changes in the L* and a* color coordinates and in the lycopene content were evaluated before and after thermal processes and monitored through 90 days of storage at ambient temperature. The products with the maximum lycopene degradation during processing were snack cracker and extruded snack (between 30 and 45%) whereas no degradation was observed in the fusilli pasta, except during cooking into boiling water (reduction up to 41%). The change in color during processing varied substantially depending on the product, but, in general, thermal treatments applied reduced the a* values (less reddish). The degradation kinetics of the lycopene and the color during storage followed first-order kinetics, with a half-life time of 25 to 315 days for lycopene content and 65 to 210 days for a* coordinate. Snack cracker was the most stable and had more than a 4-month period before losing half of the pigment content.

Formalin-fixed paraffin-embedded tissues (FFPET) represent the largest source of archival biological material available for genomic studies. In this work we present an advanced protocol for extraction of high quality DNA from FFPET that can be applied in several molecular studies. Although cat mammary tumours (CMT) are the third most frequent tumour in cats the recovery of significant number of samples for molecular studies are in some way restricted to FFPET samples. We were able to obtain high quality DNA from FFPET of thirty six CMT that were subjected to pre-fixation and fixation processes routinely used in the veterinary hospitals. The quality of DNA obtained was tested by PCR amplification using six sets of primers that amplify single-copy fragments. The DNA fragments obtained were further sequenced. This protocol was able to provide FFPET gDNA that can be amplified and sequenced for larger fragments up to 1182bp.

The aim of this study was to evaluate the effects of photobiomodulation (PBM) with multiple sessions of low-level laser on the alveolar repair process of rats with major risk factors for medication-related osteonecrosis of the jaws (MRONJ). Senile rats received 0.45â¯mL of vehicle (VEH and VEH-PBM) or 0.45â¯mL of 100⯵g/kg zoledronate (ZOL and ZOL-PBM) administrated intraperitoneally every two days during seven weeks. After three weeks of initiation of drug treatment the first lower left molar was extracted. No local treatment was performed in VEH and ZOL. VEH-PBM and ZOL-PBM were submitted to laser irradiation (660⯱â¯10â¯nm; 0.035â¯W; 2.1â¯J; 60â¯s) on the extraction site at 0, 2 and 4â¯days postoperatively. Euthanasia was performed 28â¯days after tooth extraction. Histological sections of the hemimandible were submitted to histopathological and histomorphometric analysis, as well as to histochemistry for collagen fiber maturation and immunohistochemistry for pro-inflammatory cytokines. In ZOL, general impairment of tissue repair, areas with osteonecrosis, lower newly formed bone tissue (NFBT), smaller amount of mature collagen fibers and increased immunoreactivity for TNFα, IL-1ß and IL-6 were observed when compared to VEH and VEH-PBM. ZOL-PBM showed significant improvement in some parameters compared to ZOL, such as positive repair tissue, higher NFBT, greater amount of mature collagen fibers, besides TNFα and IL-1ß immunoreactivity decrease. Zoledronate treatment severely compromised the tissue repair process of the tooth extraction site in rats with major risk factors for MRONJ. Based on parameters employed in the present study, PBM in multiple sessions can improve the alveolar repair process, constituting a promising preventive therapy to avoid the onset of post-extraction MRONJ.

Objetivo: Realizar uma revisão dos principais artigos encontra-dos na literatura acerca do uso dos Localizadores Eletrônicos Foraminais (LEF) em dentes decíduos e representar através de um relato de caso clínico, a importância do uso destes dispositivos durante o tratamento endodôntico em dentes decíduos. Revisão da literatura: Foi realizada uma busca nas principais bases de dados, e selecionados 13 artigos consi-derados mais relevantes. Todos os estudos mostraram que a determinação da odontometria em dentes decíduos utilizando o LEF é bastante segura e com boa acurácia, podendo ser utilizado o localizador para esta finalidade. Relato do caso:No caso clínico apresentado, o uso do LEF foi fundamental para a obtenção de uma odontometria precisa, além da diminuição do tempo de cadeira e identificar reabsorções não detectáveis radiograficamente. O caso foi conduzido em duas sessões, onde na primeira foi realizada a cirurgia de acesso, odontometria eletrônica, preparo manual dos canais e utilização de medicação intracanal de hidróxido de cálcio. Na segunda sessão foi removida a medicação intracanal e os canais foram obturados utilizando pasta iodoformada. Discussão: O uso do LEF no tratamento endodôntico de dentes decíduos tem se mostrado uma ferramenta segura e eficiente, tendo melhor performance na determinação do comprimento de trabalho quando comparado a outros métodos. Conclusão: De acordo com os estudos apresen-tados na revisão de literatura e o caso clínico apresentado, pudemos constatar que o uso do LEF contribui positivamente ao tratamento, principalmente quanto ao ganho de tempo e determinação confiável e segura do comprimento de trabalho.
Aim: To review the main articles found in the literature on the use of Electronic Apex Locators (EAL) in deci-duous teeth, and to represent, through a clinical case report, the importance of using these devices during endodontic treatment in deciduous teeth. Review of literature: A search was performed in the main data-bases, and 13 articles considered most relevant were selected. All studies showed that the determination of odontometry in deciduous teeth using LEF is quite safe and with good accuracy, and the localizer can be used for this purpose. Case report: In the clinical case presented, the use of EAL was fundamental to obtain an accurate odontometry, besides the reduction of chair time and exposure to ionizing radiation. The case was conducted in two sessions, where in the first one the access surgery was performed, electronic odontometry, manual preparation of the canals and use of intracanal medication of calcium hydroxide. In the second session the intracanal medication was removed and the canals were filled using iodoform paste. Discussion: The use of LEF in the endodontic treatment of primary teeth has been shown to be a safe and efficient tool, with better permormance in determining the working length when compared to other methods. Conclusion: According to the studies presented in the literature review and the clinical case presented, we could verify that the use of LEF contributes positively to treatment, especially in terms of time gain and acurate determination of working length.

ABSTRACT: The present study aimed to develop a mixed smoothie drink using the solid albumen of the green coconut in its composition. Smoothie formulations were prepared following an experimental design, setting the solid albumen concentration at 20% and varying the contents of the acerola (Barbados Cherry), pineapple, and coconut water pulps, which corresponded to 80% of the total mass of the product. Response parameters evaluated were vitamin C content, antioxidant capacity, and overall sensory acceptance. Ten formulations were evaluated. The ones that contained higher concentrations of acerola pulp had higher values of bioactive compounds but were not the most sensorially accepted. By means of the desirability function, a final formulation consisted of 52.8% of pineapple, 27.2% of acerola, and 20.0% of solid albumen of green coconut. This new formulation was well accepted, with a grade (score) 7 ("good"). It represents a good nutritional contribution and a source of vitamin C which can contribute to add value to a co-product of the beverage industry.
RESUMO: O objetivo deste trabalho foi desenvolver uma bebida mista do tipo smoothie utilizando o albúmen sólido do coco verde na sua composição. As formulações do smoothie foram elaboradas seguindo um planejamento experimental, fixando-se a concentração do albúmen sólido em 20% e variando-se os teores das polpas de acerola, abacaxi e água de coco, que totalizaram 80% da massa total do produto. Os parâmetros de resposta avaliados foram o teor de vitamina C, a capacidade antioxidante e a aceitação sensorial global. Foi observado que das dez formulações avaliadas, as que continham maiores concentrações de polpa de acerola, apresentaram valores superiores de compostos bioativos, porém não foram as mais aceitas sensorialmente. Por meio da função desejabilidade chegou-se a uma formulação final que consistiu de 52,8% de abacaxi, 27,2% de acerola e 20,0% de albúmen sólido de coco verde. Esta nova formulação teve boa aceitação, com nota igual a 7 ("bom") e representa um bom aporte nutricional, sendo fonte de vitamina C, podendo contribuir para agregar valor a um coproduto da indústria de bebidas.
