Pasturelands contribute significantly to the global CO2, CH4 and N2O emissions. These gas emissions are influenced by the amount and type of N-fertilizers applied and local climate. Recent studies showed potential of biochar and N-stabilizer compounds in minimizing CO2, CH4 and N2O emissions by regulating N-release from N-fertilizers. The present study was aimed at determining and comparing the effects of biochar and N-(n-butyl) thiophosphoric triamide + dicyandiamide (N-stabilizer) on CO2, N2O and CH4 emissions from a pasture fertilized with cattle manure or urea. The study was conducted during 2015 and 2016 in an established bermudagrass (Cynodon dactylon L. Pers.). Treatments consisted of combination of N-sources (manure, and urea) and two mitigation technologies [pine hardwood biochar (BC) and N-stabilizer] along with control. Emissions of GHGs were measured from each plot using static chamber systems. Both BC and N-stabilizer applications with manure applied to the hay field significantly decreased N2O emissions by 42% and 45%, respectively, in the year-2, and emission factors compared to manure only treatment. Addition of N-stabilizer to urea had significantly decreased N2O emissions compared to urea alone, while BC had statistically insignificant effect although numerically lowered N2O emissions in both the years. Application of manure to the soil resulted in significantly higher CO2 emissions in both years and CH4 emissions in 2016 compared to unfertilized soil. Urea application had significant effect on CO2 emissions in 2016, while no effect on CH4 emissions compared to control. Application of either biochar or N-stabilizer did not significantly affect CO2 and CH4 emissions.

The energy requirements, feed intake, and performance of grazing animals vary daily due to changes in weather conditions, forage nutritive values, and plant and animal maturity throughout the grazing season. Hence, realistic simulations of daily animal performance can be made only by the models that can address these changes. Given the dearth of simple, user-friendly models of this kind, especially for pastures, we developed a daily gain model for large-frame stockers grazing bermudagrass sCynodon dactylon (L.) Pers.], a widely used warm-season perennial grass in the southern United States. For model development, we first assembled some of the classic works in forage-beef modeling in the last 50 yr into the National Research Council (NRC) weight gain model. Then, we tested it using the average daily gain (ADG) data obtained from several locations in the southern United States. The evaluation results showed that the performance of the NRC model was poor as it consistently underpredicted ADG throughout the grazing season. To improve the predictive accuracy of the NRC model to make it perform under bermudagrass grazing conditions, we made an adjustment to the model by adding the daily departures of the modeled values from the data trendline. Subsequently, we tested the revised model against an independent set of ADG data obtained from eight research locations in the region involving about 4,800 animals, using 30 yr (1991-2020) of daily weather data. The values of the various measures of fit used, namely the Willmott index of 0.92, the modeling efficiency of 0.75, the R2 of 0.76, the root mean square error of 0.13 kg d-1, and the prediction error relative to the mean observed data of 24%, demonstrated that the revised model mimicked the pattern of observed ADG data satisfactorily. Unlike the original model, the revised model predicted more closely the ADG value throughout the grazing season. The revised model may be useful to accurately reflect the impacts of daily weather conditions, forage nutritive values, seasonality, and plant and animal maturity on animal performance.

In forage-animal nutrition modeling, diet energy is estimated mainly from the forage total digestible nutrients (TDN). As digestibility trials are expensive, TDN is usually estimated using summative equations. Early summative equations assumed a fixed coefficient to compute digestible fiber using the lignin-to-neutral detergent fiber (NDF) ratio. Subsequently, a structural coefficient (φ) was added to the summative equations to reflect an association between lignin and cell wall components. Additional modifications to the summative equations assumed a constant φ value, and they have been used as a standard method by many commercial laboratories and scientists. For feeds with nutritive values that do not change much over time, a constant φ value may suffice. However, for forages with nutritive values that keep changing during the grazing season owing to changes in weather and plant maturity, a constant φ value may add a systematic bias to prediction because it is associated with the variable lignin-to-NDF ratio. In this study, we developed a model to estimate φ as a function of the day of the year by using the daily TDN values of bermudagrass [Cynodon dactylon (L.) Pers.], a popular warm-season perennial grass in the southern United States. The variable φ model was evaluated by using it in the TDN equation and comparing the estimated values with the observed ones obtained from several locations. Values of the various measures of fit used-the Willmott index (WI), the modeling efficiency (ME), R2, root mean square error (RMSE), and percent error (PE)-showed that using the variable φ vis-à-vis the constant φ improved the TDN equation significantly. The WI, ME, R2, RMSE, and PE values of 0.94, 0.80, 0.80, 2.5, and 4.7, respectively, indicated that the TDN equation with the variable φ model was able to mimic the observed values of TDN satisfactorily. Unlike the constant φ, the variable φ predicted more closely the forage nutritive value throughout the grazing season. The variable φ model may be useful to forage-beef modeling in accurately reflecting the impacts of plant maturity and weather on daily forage nutritive value and animal performance.

An experiment was conducted to assess the effects of two-stage weaning and subsequent transport on oxidative stress markers in calves. Thirty-six crossbred Angus steers (243+/-20.8 kg; 221+/-19.7 days) were allotted to control, fenceline (FL), and nose-clip (NC) weaning groups. Steers were weighed and blood samples were collected on days -7, 0 (pre-transit) and 7 surrounding transport. Leukocytes were analyzed for glutathione peroxidase and glutathione reductase activity, whereas malondialdehyde and Se were measured in plasma. Data were analyzed using PROC MIXED with the Tukey-Kramer adjustment applied post hoc. No treatment effects were detected for blood variables or weights. Glutathione peroxidase activity was not altered by time (P = 0.27). Glutathione reductase activity, Se, and malondialdehyde declined (P<0.001) from day -7 to 7 in all steers. Treatmentxdate interaction was detected for malondialdehyde (P<0.02). Control and FL steers gained weight (P<0.03), whereas NC steers did not gain weight between days -7 and 0 (P = 0.81). All weaning treatment groups gained weight between days 0 and 7 (P<0.05). Results suggest that two-stage weaning has little effect on examined markers of oxidative stress.

Sensory acceptability, purchase intent (PI), consumer emotional profile, and fatty acid profile of rib-eye steaks from four different biological types of grass-fed cattle (Angus, Brangus, Pineywoods, and Holstein) were evaluated. The effects of health benefit information (HBI) pertaining to grass-fed beef on the overall liking (OL), emotional profile, and PI were also studied. Consumers rated steaks from the two nontraditional beef biological types (Pineywoods and Holstein) equally or higher than conventional biological types (Angus and Brangus) in several hedonic (9-point scale) categories. Mean OL scores were 6.1 for Pineywoods and 6.3 for Holstein steaks, versus 5.5 for Angus and 6.0 for Brangus. Hedonic attributes, especially OL and liking of beef flavor, accounted for most of the differences between treatments based on Wilks' Lambda Multivariate Analysis of Variance (MANOVA) and descriptive discriminant analysis. After knowledge of HBI, OL of all treatments increased, particularly Angus with OL mean score significantly increasing from 5.5 to 6.2. Positive PI increased significantly for Angus (from 48% to 65.33%), Brangus (from 50.67% to 66.67%), and Holstein (from 61.33% to 76%) steaks. Angus steaks, which initially received the lowest beef flavor liking (5.1) showed the most improvement for OL after HBI. Likewise, emotional profiles were improved after HBI, particularly the "Interested" emotion with a 0.5 unit increased. PRACTICAL APPLICATION: Providing consumers with health benefit information (HBI) can enhance acceptability of grass-fed beef. Fatty acid analyses of steaks from four biological types of steers showed favorable n-6/n-3 ratios. Although some sensory attributes of cooked rib-eye steaks were scored differently among biological types, knowledge of grass-feeding and healthier fatty acids increased overall liking and purchase intent (PI) across products. Emotional profiles improved after HBI was given to consumers, with some emotions being significantly related to PI odds ratios. This research demonstrated the usefulness of HBI in improving hedonic perceptions of grass-fed steaks and the importance of consumer emotions in predicting PI.

Weaning is often cited as a stressful event that can precipitate clinical coccidiosis in cattle. Recently, two-stage weaning methods have been investigated as a means to reduce stress in calves. The objective of this study was to investigate the effect of weaning method on fecal oocyst count (FOC) and Eimeria spp. composition. A group of 108 beef calves (190-240 days of age) were allocated to three treatments on day -7: a fenceline weaned group where calves could see and hear their dams, but were physically separated from them by a fence (FL), a noseclipped group where suckling was prevented (NC), and a group left with their dams to be traditionally weaned (TW) by abrupt separation on day 0. On day 0, noseclips were removed from the NC calves and all groups were completely separated from their dams. The steers (n=50) were transported 172 km to another farm, and heifers (n=58) were taken to distant fields on the same farm. Rectal fecal samples were collected from all calves on days -7, 0, and 14. Steers were also sampled on days 7, 28, and 42. A group of steers (n=24) from each of the treatments previously described were fitted with pedometers and intensively observed on days 1-4. The Modified McMaster's test and Wisconsin sugar flotation test were used for quantification and identification of Eimeria spp. oocysts. Clinical coccidiosis was not observed during the study. Fecal oocyst counts did not differ between treatment groups on any sampling day. Differences between steer and heifer FOC were not detected. Treatment had no effect on species composition, but time effects were detected in the steers. The mean percentage of E. bovis was lower (P<0.05) on days 28 and 42 than all other sampling days. The decrease in the percentage of E. bovis was accompanied by an increase (P<0.05) in the percentage of E. canadensis on days 28 and 42. Behavioral observation showed that TW steers exhibited higher levels of stress related behavior (P<0.05) following complete separation, although this was not reflected in FOC.

UNLABELLED: Rib-eye steaks, from 3 forage-finished systems (S1, S2, and S3) and 1 commercial steak (C), either cooked by 1-sided-grilling or 2-sided-grilling, were evaluated for sensory acceptability [overall appearance (ORA) and overall appearance of fat (OAF) for raw steaks; overall appearance (OCA), overall beef aroma (OBA), overall beef flavor (OBF), juiciness, tenderness and overall liking (OL) for cooked steaks] and purchase intent by Hispanic, Asian and U.S. consumers. They also indicated preferred degree of doneness and cooking methods. Cross-cultural differences in preferences and consumer acceptability of rib-eye steaks were observed. Grilling was the most preferred cooking method. Hispanics and Asians preferred medium and/or medium well, while U.S. consumers preferred medium and/or medium rare. For cooked steaks, the population effect was significant for all sensory attributes; Asians generally scored lower than did Hispanics and U.S. consumers. C and S3 generally had higher scores for all sensory attributes across 3 populations. Purchase intent for all forage-finished steaks was higher for Hispanics and U.S. consumers compared to Asians (50.0% to 77.8% compared with 43.2% to 65.9%). Attributes influencing purchase intent of forage-finished steaks differed among populations: tenderness (odds ratio = 1.4) for Hispanics, OCA (odds ratio = 1.5) for Asians, and OBF (odds ratio = 1.3) for U.S. consumers. Overall, this study demonstrated that the type of forage-finished system and ethnic differences influenced sensory acceptability and purchase intent of forage-finished rib-eye steaks. PRACTICAL APPLICATION: Demand for forage-finished beef has increased worldwide due to its potential health benefits. Little is known regarding the cross-cultural effects on the consumer acceptance of forage-finished beef. We evaluated sensory acceptance and purchase intent of raw and cooked forage-finished rib-eye steaks using Hispanic, Asian, and U.S. (White and African American) populations. This study demonstrated that consumer acceptability and purchase intent of forage-finished rib-eye steaks differed among Hispanic, Asian, and U.S. populations. This information can be used to guide development and marketing strategies for beef products.

There is little information available on the species dynamics of eimerian parasites in grazing cattle in the central Appalachian region of the United States. Therefore, the objective of this study was to describe the level of infection and species dynamics of Eimeria spp. in grazing beef cattle of various age groups over the course of a year in the central Appalachian region. Rectal fecal samples were collected from male and female calves (n=72) monthly from May through October 2005, heifers only (n=36) monthly from November 2005 to April 2006, and cows (n=72) in May, July, and September, 2005. Eimeria spp. oocysts were seen in 399 of 414 (96%) fecal samples collected from the calves from May through October. Fecal oocysts counts (FOC) in the calves were lower (P<0.05) in May than all other months and no significant differences were detected from June through September. Eimeria spp. oocysts were detected in 198 of 213 (92%) of fecal samples collected from the 36 replacement heifers monthly from November to April and monthly mean FOC did not differ during this time period. The prevalence of oocyst shedding increased to 100% in calves in September and remained near 100% in the replacement heifers during the sampling period. Eimeria spp. oocysts were also detected in 150 of 200 (75%) samples collected in May, July, and September from the cows and mean FOC did not differ significantly over the sampling period. Eimeria spp. composition was dominated by Eimeria bovis in fecal samples collected from calves, replacement heifers and cows. Mixed Eimeria spp. infections were, however, common in all groups and 13 Eimeria spp. oocysts were identified throughout the sampling period.
