BACKGROUND: We investigated breed and gender variations in the compositions of long-chain (≥ C20) omega-3 polyunsaturated fatty acids (LC omega-3 PUFA), fat melting point (FMP) and intramuscular fat (IMF) contents in biopsy samples of the M. longissimus dorsi muscle of grazing beef cattle. The hypothesis that biopsy compositions of health-beneficial LC omega-3 PUFA, FMP and IMF in a pasture-based production system will vary with breed, was tested. Muscle biopsies were taken from 127 yearling pasture-based Angus, Hereford, and Wagyu heifers and young bulls exclusive to the Australian Bowen Genetics Forest Pastoral breeding stud averaging 12 ± 2.43 months of age and under the same management routine. RESULTS: Breed had a significant influence on IMF, FMP, and the compositions of oleic acid, α-linolenic acid (ALA), eicosapentaenoic (EPA), docosahexaenoic (DHA), docosapentaenoic (DPA), and total EPA + DHA + DPA in the M. longissimus dorsi muscle biopsies (P ≤ 0.03). The Wagyu breed had the highest (11.1%) and Hereford the lowest (5.9%) IMF (P = 0.03). The reverse trend was observed in FMP values where the Hereford breed had the highest (55 °C), Angus intermediate (46.5 °C), and Wagyu the lowest (33 °C) FMP. The Wagyu and Angus breeds had similar oleic fatty acid (18:1n-9) content, while the Hereford breed had the lowest (P < 0.01). The highest ALA, DPA, total EPA + DHA, total EPA + DHA + DPA and total ALA + EPA + DHA + DPA contents were detected in the Wagyu breed (P ≤ 0.03). The Hereford had similar EPA and DPA contents to the Angus (P ≥ 0.46). Total EPA + DHA + DPA contents in Wagyu, Angus, and Hereford were 28.8, 21.5, and 22.1 mg/100g tissue (P = 0.01), respectively. Sex was an important source of variation that influenced LC omega-3 PUFA composition, FMP and IMF, where yearling heifers had higher IMF (11.9% vs 5.3%), lower FMP (33°C vs 37°C), and higher LC omega-3 PUFA than bulls. CONCLUSION: All the results taken together indicate that the Wagyu breed at 28.8 mg/100g tissue, was the closest to meeting the Australia and New Zealand recommended source level threshold of 30 mg/100g tissue of health-beneficial ≥ C20 omega-3 FA content. Since gender was a significant determinant of LC omega-3 PUFA composition, IMF content and FMP, it should be factored into enhancement strategies of healthy meat eating quality traits in grazing cattle. These findings also suggest that the Bowen Genetics Forest Pastoral beef cattle studs are important sources of LC omega-3 PUFA that can be used to cover the deficit in these health claimable fatty acids in Western diets.

Body weight is a complex trait in cattle associated with commonly used commercial breeding measurements related to growth. Although many quantitative trait loci (QTL) for body weight have been identified in cattle so far, searching for genetic determinants in different breeds or environments is promising. Therefore, we carried out a genome-wide association study (GWAS) in two cattle populations from the Russian Federation (Siberian region) using the GGP HD150K array containing 139 376 single nucleotide polymorphism (SNP) markers. Association tests for 107 550 SNPs left after filtering revealed five statistically significant SNPs on BTA5, considering a false discovery rate of less than 0.05. The chromosomal region containing these five SNPs contains the CCND2 gene, which was previously associated with average daily weight gain and body mass index in US beef cattle populations and in humans respectively. Our study is the first GWAS for body weight in beef cattle populations from the Russian Federation. The results provided here suggest that, despite the existence of breed- and species-specific QTL, the genetic architecture of body weight could be evolutionarily conserved in mammals.

The assessment of iron levels in cattle muscle tissue is crucial for livestock management because it influences both animal health and meat quality, key factors in sustainable development. This study aimed to develop an optimal model for noninvasively predicting the iron content in Hereford cattle muscle tissue, contributing to a comprehensive understanding of the animals' elemental status. The research involved the atomic absorption analysis of muscle tissue and hair samples from cattle. A regression model was constructed using the least squares method to identify the most effective approach. These findings have ecological applications, aiding in evaluating environmental health and establishing acceptable iron thresholds for animals. The proposed mathematical model utilizing biomarkers (levels of Mg, K, Fe, Al, Cr in hair) will allow for the assessment of iron levels in cattle muscle tissue throughout the period of productive use, with the possibility of adjustment and tracking the changes in elemental status over time. The utilization of the developed method will enable the diagnosis of animal elementosis and assessment of the iron level burden. Subsequently, this will allow for the improvement of the qualitative characteristics of the final product. Thus, the obtained data contribute to fundamental knowledge regarding the content and variability of iron levels in the muscle tissue of cattle.

Background and Aim: The creation of objective methods for the evaluation and improvement of quantitative and qualitative indicators of meat productivity in farm animals should be based on a comprehensive analysis of the genetic, physiological, and biochemical parameters of the animal. This study aimed to investigate the effects of growth hormone (GH) and thyroglobulin (TG5) gene polymorphisms on the hormonal status, slaughter traits, and chemical, amino acid, and fatty acid composition of meat in Hereford bulls. Materials and Methods: Hereford bulls (n = 9) were reared under the same feeding and housing conditions until the age of 21 months, after which they were slaughtered. Polymerase chain reaction-restriction fragment length polymorphism was performed for genotyping GH L127V and TG5 C422T polymorphisms. The experimental animals were evaluated to determine slaughter traits (including pre-slaughter weight, carcass, and internal fat weight and yield), chemical, fatty acid, and amino acid composition of ground beef, and hormonal status using serum concentrations of GH, triiodothyronine, and thyroxine. Results: Animals with the valine homozygous (VV) genotype of GH had the maximum serum GH level of 9.33 mIU/mL (p = 0.10) higher than leucine homozygous (LL) genotype carriers. Individuals with the LL genotype outperformed V-allele carriers in serum thyroxine (T4) concentration by 21.3-30.5 nmol/L (16.15%-24.86%; p < 0.01-0.05). Genetic differentiation induced by TG5 C422T polymorphism was determined to a lesser extent by the hormonal status of the Hereford animals. The V-allele was associated with increased carcass weight, with VV homozygotes significantly outperforming LL individuals by 45.0 kg (13.61%; p < 0.05). The T allele at the TG5 gene polymorphism was associated with more intense lipogenesis and less protein synthesis in muscle tissue and these effects were enhanced in the homozygous state. Young animals with the TT variant of the TG5 gene exhibited a significantly superior polyunsaturated fatty acid/saturated fatty acid ratio of 0.012 units (p < 0.01). Carriers of the LL genotype were characterized by minimum amino acid content in muscle tissue. Heterozygous bulls exceeded LL homozygotes in the sum of essential amino acids by 3.09% (p = 0.10) and non-essential amino acids by 1.9% (p < 0.05). Conclusion: The development of breeding programs for the Hereford breed should be carried out considering genetic features that determine the formation of economic traits in animals. Analysis of polymorphisms in the TG5 gene is a promising method for the early diagnosis of the fatty acid composition of beef. Identification of polymorphisms in the GH gene allows the prediction of higher productivity potential and amino acid composition of meat. The different effects of the GH and TG5 genes on the development of various economic traits allowed us to determine further vectors for scientific research on their complex associations in Hereford cattle, which will be useful for planning effective breeding schemes.

Beta distributions are characterized by two determining parameters and a parameter space from 0 to 1, and may be useful for examining population genetic parameters such as the relationship or inbreeding coefficients. Often subpopulations exist within breeds that are congregated around particular lineages of cattle or ancestors that breeders value. These subpopulations are more related to each other than to the majority of other animals; they may have higher inbreeding as well. Value may be added to these subpopulations because of their relatedness with important or renowned ancestors. The objectives of this work were to compare the relatedness and inbreeding of a group of 26 modern bulls from a subpopulation of the American Hereford breed relative to 1) 30 males with the most descendants present in the pedigree, 2) 15 renowned American Hereford bulls considered important individuals in the breed's history, and 3) 19 prominent subpopulation male ancestors. Conformance of the mean relationship coefficients of the bulls with the three groups and the mean inbreeding coefficient with all pedigree animals to beta distributions was assessed by 1) visually determining the parameters of the beta distributions based on the entire pedigree, 2) testing the mean relationship coefficient or inbreeding coefficient of the group of subpopulation bulls for its positional inclusion in those distributions, and 3) bootstrap sampling methodology. The mean relationship coefficients of the 26 Trask bulls with the 30 bulls with the most descendants, the 15 renowned ancestors, and the 19 Trask male ancestors were 0.15, 0.132, and 0.208, respectively. Testing of these means in beta distributions indicated that the group of 26 Trask bulls were no more related to the three groups of bulls than all of the animals in the pedigree (0.06 < P < 0.25). Bootstrap sampling indicated that the 26 bulls were more related to the three groups of male ancestors than the remainder of the animals in the pedigree (P < 0.0001). The mean inbreeding coefficient of the 26 bulls (0.13) did not differ from the overall inbreeding coefficient (0.056) when tested using a beta distribution; however, bootstrap sampling indicated otherwise (P < 0.0001). Results may indicate the inadequacy of visually parameterizing a beta distribution. Quantification of pedigree relatedness of a group of animals to key ancestors, especially with no DNA available, may add value to that group and individuals.

The goal of this study was to evaluate inbreeding in a closed beef cattle population and assess phenotype prediction accuracy using inbreeding information. Effects of inbreeding on average daily gain phenotype in the Line 1 Hereford cattle population were assessed in this study. Genomic data were used to calculate inbreeding based on runs of homozygosity (ROH), and pedigree information was used to calculate the probability of an allele being identical by descent. Prediction ability of phenotypes using inbreeding coefficients calculated based on pedigree information and runs of homozygosity over the whole genome was close to 0, even in the case of significant inbreeding coefficient effects. On the other hand, inbreeding calculated per individual chromosomes' ROH yielded higher accuracies of prediction. Additionally, including only ROH from chromosomes with higher predicting ability further increased prediction accuracy. Phenotype prediction accuracy, inbreeding depression, and the effects of chromosome-specific ROHs varied widely across the genome. The results of this study suggest that inbreeding should be evaluated per individual regions of the genome. Moreover, mating schemes to avoid inbreeding depression should focus more on specific ROH with negative effects. Finally, using ROH as added information may increase prediction of the genetic merit of animals in a genomic selection program.

The article highlighted the problem of meat cattle genetic defects. The aim was the development of DNA tests for some genetic defects diagnostics, the determination of the animal carriers and their frequencies tracking in time. The 1490 DNA samples from the Aberdeen Angus (n = 701), Hereford (n = 385), Simmental (n = 286) and Belgian Blue (n = 118) cattle have been genotyped on the genetic defects by newly created and earlier developed DNA tests based on AS-PCR and PCR-RFLP methods. The Aberdeen Angus cattle genotyping has revealed 2.38 ± 0.31% AMC-cows and 1.67 ± 0.19 % AMC-bulls, 0.65 ± 0.07% DDC-cows and 0.90 ± 0.10% DDC-bulls. The single animals among the Hereford cattle were carriers of MSUD and CWH (on 0.27 ± 0.05%), ICM and HY (on 0.16 ± 0.03%). The Simmental cattle were free from OS. All Belgian Blue livestock were M1- and 0.84%-CMD1-carriers. The different ages Aberdeen Angus cattle genotyping has shown the tendency of the AMC- and DDC frequencies to increase in the later generations. The statistically significant increase of DDC of 1.17% in the cows' population born in 2019 compared to those born in 2015 allows concluding the further development of the DNA analysis-based measures preventing the manifestation of the genetic anomalies in meat cattle herds is necessary.

BACKGROUND: Major advances in selection progress for cattle have been made following the introduction of genomic tools over the past 10-12 years. These tools depend upon the Bos taurus reference genome (UMD3.1.1), which was created using now-outdated technologies and is hindered by a variety of deficiencies and inaccuracies. RESULTS: We present the new reference genome for cattle, ARS-UCD1.2, based on the same animal as the original to facilitate transfer and interpretation of results obtained from the earlier version, but applying a combination of modern technologies in a de novo assembly to increase continuity, accuracy, and completeness. The assembly includes 2.7 Gb and is >250× more continuous than the original assembly, with contig N50 >25 Mb and L50 of 32. We also greatly expanded supporting RNA-based data for annotation that identifies 30,396 total genes (21,039 protein coding). The new reference assembly is accessible in annotated form for public use. CONCLUSIONS: We demonstrate that improved continuity of assembled sequence warrants the adoption of ARS-UCD1.2 as the new cattle reference genome and that increased assembly accuracy will benefit future research on this species.

Accounting for genotype-environment interactions may improve genetic prediction and parameter estimation. The objective was to use random regression analyses to estimate variances and thereby heritability for intramuscular fat (IMF) across longitude and latitude coordinates within the continental United States. Records from the American Hereford Association (n = 169,440) were used. Analyses were first conducted using the continental United States in its entirety, and then as subdivided into two or four regions. Data were analyzed with an animal model, and linear and quadratic random regressions of additive genetic merit on longitude or latitude as covariate (separately). Subdivided data were analyzed with linear random regressions unique to regions. Regions were North and South separated at 40°N latitude, or West and East separated at 99°W longitude using longitude or latitude as covariate, respectively. Further subdivision to four regions included additional boundaries of 44.46° and 36.46°N latitude and 104.55° and 92.22°W longitude. The estimated heritability of IMF from the traditional model was 0.19 ± 0.004. Without regional subdivision of data, quadratic random regression had the best fit for the data based on likelihood ratio tests using longitude or latitude as covariate (P < 0.01). Estimates of heritability from quadratic random regression on latitude ranged from 0.12 in the South to a high of 0.27 at the extreme Northern latitude. Estimates of heritability from quadratic random regression on longitude ranged from 0.17 in the middle of the parameter space (corresponding to the central United States) to 0.37; higher estimates were noted at the extremes, that is, the far West and East longitudes. Random regression analyses of data divided into regions were conducted with a linear coefficient, as increasing to a quadratic polynomial was never accomplished. Results from random regression on latitude in the East region were similar to results from analyses without regions (h2 ranged from 0.09 to 0.32); however, estimates of heritability in the West region had a lower range from South to North (0.14 to 0.27). Estimates of heritability from random regression on longitude with data divided into two regions were similar to those from analyses that did not include region. Estimates in the South region were somewhat lower and had a lower range (0.15 to 0.31) than those from the North region (0.19 to 0.47). When data were further subdivided, estimation of only a subset of covariances among random regression coefficients was possible, that is, within-region covariances of intercept and linear terms (latitude); those and covariances between all linear random regression coefficients were estimated when longitude was the covariate. Results from random regression analyses of data with four regions modeled produced very high estimates of heritability in low latitudes in the furthest West and high latitudes in the furthest East region, with approximate difference of 0.3 and 0.2 between estimates in the two West regions and the two East regions, respectively. Results from random regression on longitude indicated higher estimates of heritability in North region, especially at the furthest East longitudes of the most Northern region. There appeared to be substantial additive genetic variance differences, as well as estimates of heritability, that correspond to different geographical environments as modeled by random regressions on within-region latitude or longitude coordinates.

AIM: This study aimed to determine the effect of thyroglobulin (TG5) gene polymorphism on milk and meat productivity in the various cattle breeds currently bred in the Republic of Bashkortostan. MATERIALS AND METHODS: The test was performed on dairy cattle of Black-and-White, Bestuzhev, and Simmental breeds, and meat cattle of Hereford and limousine breeds. The purpose of the test was to search for associations between the polymorphic alleles of the thyroglobulin (TG5) gene and economically useful traits. RESULTS: All studied breeds showed a frequency predominance of the TG5C allele (from 0.56 to 0.71). A clear trend of an effect of the genotypes of the TG5 gene on milk-productivity indicators was revealed; cows with the TG5TT genotype have the highest milk yield and fat content in milk. The milk of cows of Bestuzhev and Simmental breeds that possessed this genotype was also characterized by higher protein content. CONCLUSION: We identified an effect of the polymorphism of the TG5 gene in the Hereford and limousine breeds on fat metabolism intensity indicators, such as fat output and fat content, in the longissimus muscle and in the general sample of ground beef.

Global gene expression in liver transcriptome varies among cattle breeds. The present investigation was aimed to identify the differentially expressed genes (DEGs), metabolic gene networks and metabolic pathways in bovine liver transcriptome of young bulls. In this study, we comparatively analyzed the bovine liver transcriptome of dairy (Polish Holstein Friesian (HF); n = 6), beef (Hereford; n = 6), and dual purpose (Polish-Red; n = 6) cattle breeds. This study identified 895, 338, and 571 significant (p < 0.01) differentially expressed (DE) gene-transcripts represented as 745, 265, and 498 hepatic DE genes through the Polish-Red versus Hereford, Polish-HF versus Hereford, and Polish-HF versus Polish-Red breeds comparisons, respectively. By combining all breeds comparisons, 75 hepatic DE genes (p < 0.01) were identified as commonly shared among all the three breed comparisons; 70, 160, and 38 hepatic DE genes were commonly shared between the following comparisons: (i) Polish-Red versus Hereford and Polish-HF versus Hereford; (ii) Polish-Red versus Hereford and Polish-HF versus Polish-Red; and (iii) Polish-HF versus Hereford and Polish-HF versus Polish-Red, respectively. A total of 440, 82, and 225 hepatic DE genes were uniquely observed for the Polish-Red versus Hereford, Polish-HF versus Hereford, and Polish-Red versus Polish-HF comparisons, respectively. Gene ontology (GO) analysis identified top-ranked enriched GO terms (p < 0.01) including 17, 16, and 31 functional groups and 151, 61, and 140 gene functions that were DE in all three breed liver transcriptome comparisons. Gene network analysis identified several potential metabolic pathways involved in glutamine family amino-acid, triglyceride synthesis, gluconeogenesis, p38MAPK cascade regulation, cholesterol biosynthesis (Polish-Red versus Hereford); IGF-receptor signaling, catecholamine transport, lipoprotein lipase, tyrosine kinase binding receptor (Polish-HF versus Hereford), and PGF-receptor binding, (Polish-HF versus Polish-Red). Validation results showed that the relative expression values were consistent to those obtained by RNA-seq, and significantly correlated between the quantitative reverse transcription PCR (RT-qPCR) and RNA-seq (Pearson's r > 0.90). Our results provide new insights on bovine liver gene expressions among dairy versus dual versus beef breeds by identifying the large numbers of DEGs markers submitted to NCBI gene expression omnibus (GEO) accession number GSE114233, which can serve as useful genetic tools to develop the gene assays for trait-associated studies as well as, to effectively implement in genomics selection (GS) cattle breeding programs in Poland.

Angus and Hereford beef is marketed internationally for apparent superior meat quality attributes; DNA-based breed authenticity could be a useful instrument to ensure consumer confidence on premium meat products. The objective of this study was to develop an ultra-low-density genotype panel to accurately quantify the Angus and Hereford breed proportion in biological samples. Medium-density genotypes (13 306 single nucleotide polymorphisms (SNPs)) were available on 54 703 commercial and 4042 purebred animals. The breed proportion of the commercial animals was generated from the medium-density genotypes and this estimate was regarded as the gold-standard breed composition. Ten genotype panels (100 to 1000 SNPs) were developed from the medium-density genotypes; five methods were used to identify the most informative SNPs and these included the Delta statistic, the fixation (F st) statistic and an index of both. Breed assignment analyses were undertaken for each breed, panel density and SNP selection method separately with a programme to infer population structure using the entire 13 306 SNP panel (representing the gold-standard measure). Breed assignment was undertaken for all commercial animals (n=54 703), animals deemed to contain some proportion of Angus based on pedigree (n=5740) and animals deemed to contain some proportion of Hereford based on pedigree (n=5187). The predicted breed proportion of all animals from the lower density panels was then compared with the gold-standard breed prediction. Panel density, SNP selection method and breed all had a significant effect on the correlation of predicted and actual breed proportion. Regardless of breed, the Index method of SNP selection numerically (but not significantly) outperformed all other selection methods in accuracy (i.e. correlation and root mean square of prediction) when panel density was ⩾300 SNPs. The correlation between actual and predicted breed proportion increased as panel density increased. Using 300 SNPs (selected using the global index method), the correlation between predicted and actual breed proportion was 0.993 and 0.995 in the Angus and Hereford validation populations, respectively. When SNP panels optimised for breed prediction in one population were used to predict the breed proportion of a separate population, the correlation between predicted and actual breed proportion was 0.034 and 0.044 weaker in the Hereford and Angus populations, respectively (using the 300 SNP panel). It is necessary to include at least 300 to 400 SNPs (per breed) on genotype panels to accurately predict breed proportion from biological samples.

A prospective cohort study was performed in the purebred Hereford herd at Götala Beef and Lamb Research Centre, Sweden. The study's first objective was to assess the ability of an automatic activity monitoring system (AAMS) to detect estrus in beef suckler cows, and its second objective was to estimate the time from estrus to ovulation. The study sample (n = 38) consisted of 14 Hereford heifers and 24 Hereford cows. Standardized visual observation of estrus was performed for 20 minutes thrice daily, and animal activity was recorded with an AAMS system, Heatime (SCR Engineers Ltd., Israel). Cows in estrus underwent transrectal ultrasonography every 8 hours, to estimate the time of ovulation. Blood samples for progesterone analysis were collected thrice weekly throughout the study period. A cutoff value of 1-ng progesterone/mL of serum was used to define luteal activity. The AAMS had a 90% (95% confidence interval [CI] 77%-97%) sensitivity and 100% specificity (95% CI 94%-100%), and visual detection of estrus had a 77% sensitivity (95% CI 62%-88%) and a 89% specificity (95% CI 79%-95%) for identifying estrus when compared to the gold standard defined by temporal pattern of serum progesterone concentration. When both methods were used in parallel, the sensitivity increased to 96% (95% CI 86%-99%), and the specificity increased to 90% (95% CI 80%-96%). The time of ovulation after estrus was determined on 50 occasions. The median estrus (AAMS detected) to ovulation interval was 25 hours for heifers and 23 hours for cows (interquartile range 11-29 hours and 19-25 hours, respectively). The median estrus (visually detected) to ovulation interval was 28 hours for heifers and 21 hours for cows (interquartile range 13-29 hours for both categories). In conclusion, the AAMS had both a higher sensitivity and specificity for estrus detection than thrice-daily visual observation. The time from detection of estrus to ovulation observed in this study indicates that reproductive performance might be improved if Hereford cattle are inseminated sooner after detection of estrus than is currently recommended.

Grazing steers from Angus and Hereford breeds, their cross-breeds and a three-way cross-breed (Limousin × Angus-Hereford) were measured for growth, carcass and meat quality traits. Breed effects were studied, and the association of SNPs with fat deposition and fatty acid (FA) composition (leptin, melanocortin-4 receptor, stearoyl-CoA desaturase, FA synthase and thyroglobulin) was tested. Limousin cross-breed showed the greatest final body weight, ultrasound rib eye area, dressing percentage, carcass and leg length, and the lowest backfat thickness and intramuscular fat content. Genetic groups had similar pH, shear force, cooking loss, L* and b* and n-6:n-3 ratio. Meat from 1/2-Angus presented greater a* than Limousin cross-breed. Whereas Angus had the highest total SFA content, Hereford had the lowest total SFA and the highest total MUFA. Limousin cross-breed had greater content of several individual PUFAs, total PUFA, n-6 and n-3 FA than Angus and 1/2-Angus. Leptin and FA synthase were associated with some FAs, supporting their influence over fat metabolism for grazing animals.

The purpose of this study was to identify novel marbling-related genes by comparison of the global gene expression in semitendinosus muscle of 15-month-old Limousin (LIM), Holstein-Friesian (HF) and Hereford (HER) bulls. Muscle of LIM was lean with low intramuscular fat (IMF) content (0.53%) unlike the marbled muscles of HER and HF characterized by higher amounts of IMF (1.10 and 0.81%, respectively). The comparison of muscle transcriptional profile between marbled and lean beef revealed significant differences in expression of 144 genes, presumably involved in consecutive stages of adipose tissue development, such as preadipocyte proliferation and differentiation, adipocyte maturation, lipid filling and lipid metabolism leading to increased IMF deposition and marbling development. Correlation coefficients and regression analysis for nine of them (gadd45a, pias3, ccrn4l, diras3, pou5f1, hoxa9, atp2a2 and pim1) validated by real-time qPCR confirmed their moderate-high correlation with IMF% and explained up to 70.5% of the total variability in IMF deposition in the bulls.

O estudo foi realizado com o objetivo de verificar a utilização do peso vivo (PV) como estimador do peso da carcaça quente (PCQ), dos cortes dianteiro (PD), costilhar (PC) e serrote (PS), assim como, quantificar a relação do PV com o PCQ e principais cortes da carcaça (PD, PC e PS). Foram utilizados 58 novilhos Hereford, criados em campo nativo e abatidos com 36 meses de idade. As equações de regressão obtidas foram: PCQ=-3,97+0,474(PV); PS=4,32+0,050(PV); PC=-5,26+0,092(PV) e PD=-0,54+0.043(PV), todas altamente significativas (P<0,0001), apresentando coeficientes de determinação de 90,46%, 86,46%, 72,66% e 87,70%, respectivamente. Os resultados permitem concluir que o peso vivo é um bom estimador do peso de carcaça quente e dos cortes desta, podendo ser utilizado na seleção de animais para abate e na comercialização desses animais.
Fifty eight Hereford steers, raised under native pasture conditions, slaughtered with an average age of thirty months, were used to study the feasibility of the use of live wheight (PV) as an estimator of the hot carcass weight (PCQ) and of cuts such as fore quarter (PD), ribs (PC) and hind pistol (PS), as well as to quantify the relationship of live weight with hot carcass weight and the main carcass cuts (PD, PC and PS). The regression equations obtained were: PCQ =-3.7 + 0.474 (PV); PS = 4.32 + 0.50 (PV); PC = -5.6 + 0.92 (PV) and PD =-0.4 + 0.43 (PV), all of them highly significant (P<0.001), showing, respectively, the following determination coefficients: 90.6%, 86.6%, 72.6% and 87.0%. According to these values one might conclude that live weight is a good estimator of hot carcass weight and of its cuts, and may be utilized to sort animals for slaughter and when to sell them.
