The objective of this study was to compare the psysico-chemical composition and fatty acid (FFA) profile of traditional dry cured bacon Slavonska slanina, produced from the authentic Black Slavonian Pig (BP) and modern pigs (MP), using traditional homemade principles. The samples of Slavonska slanina produced from BP had a significantly (p < 0.05) higher fat content (78.32%) than the samples produced from MP (46.47%), while the samples produced from MP showed significantly higher (p < 0.05) protein and moisture content. The samples produced from BP also showed lower aw and salt content but higher pH. Determination of fatty acid composition was performed at the end of the production process. The composition of fatty acids with respect to the groups of saturated (SFA), monounsaturated (MUFA) and polyunsaturated (PUFA) fatty acids was determined, as well as the ratios n-6/n-3 and PUFA/SFA. The results of fatty acid composition determination of Slavonska slanina produced from BP and MP show that oleic acid (C18: 1n9) is the most dominant fatty acid from the MUFA group (47.02 and 46.25%), the most common SFA acid was palmitic acid (C16: 0) (23.44 and 24.96%), and PUFA linoleic acid (C18: 2n-6c) (10.76 and 9.74%). The genotype had a significant (p < 0.05) effect on the SFA and USFA composition of Slavonska slanina. The ratios PUFA/SFA (0.34−0.28) and n-6/n-3 (31.84−27.34) for samples of Slavonska slanina produced from BP and MP are in concordance with previously published data for different dry cured meat products, and do not comply with the nutritionally recommended values of international health organizations (PUFA/SFA > 0.4 and n-6/n-3 < 4).

Honey bee colonies are often subjected to diseases, nutrition quality, temperature and other stresses depending on environmental and climatic conditions. As a result of malnutrition, the level of Vg protein decreases, leading to overwintering losses. The Vg values must be high for a successful wintering, especially before wintering. If good nutrition is not reached, the long winter period may cause an increase in colony losses. Supplementary feeding is essential for colony sustainability when floral resources are insufficient, as in recent years with the emerging climate changes. Furthermore, quality food sources or nutrients are significant for maintaining honey bee health and longevity. This study examined the changes in HSP 70 and Vg proteins in 6 groups of 48 colonies fed with five different nutrients. The fatty acids that are present in the highest amount in Cistus creticus (Pink rock-rose), Papaver somniferum (Opium poppy) and mixed pollen samples were linoleic, palmitic and cis-9-oleic acids. The highest values in proline, lysine and glutamic acid were determined in C. creticus pollen. Regarding the P. somniferum pollen, the highest values were observed in lysine, proline, glutamic and aspartic acids. The highest values in lysine, proline, leucine and aspartic acid were noticed in mixed pollen. The effect of different feeding on Vg protein in nurse and forager bee samples was higher in the mixed pollen group in the fall period. In nurse bees, the mixed pollen group was followed by Cistus creticus pollen > Papaver somniferum pollen > sugar syrup > commercial bee cake > control group, respectively (p < 0.05). In forager bees, the order was mixed pollen, P. somniferum pollen, C. creticus pollen, commercial bee cake, sugar syrup and control. In the early spring period, the Vg levels were high in the mixed pollen group in the nurse bees and the commercial bee cake group in the forager bees. In the fall period, the HSP 70 value of the forager and nurse bees was the lowest in the C. creticus group (p < 0.05). In early spring, the active period of flora, a statistical difference was found between the treatment groups.

In the municipal context and depending on the collection scheme, different waste streams are of relevance. This article contains year-round data on the chemical composition of organic fractions of municipal solid waste (OFMSW) of rural and urban origins. All samples were collected in the municipality of Tübingen, which is located in southern Germany. The sampling procedure was executed in accordance with standard procedures mentioned in the German Biowaste Ordinance. The data presented in this article include (1) sampling area and process specifications (2) organoleptic examinations (3) dry matter and organic dry matter contents (4) impurity concentrations and (5) elemental compositions (major, minor and trace elements). All datasets are presented as a time series for the year 2018. Thus, this article especially presents the influence of season and settlement structure on the physico-chemical characteristics of OFMSW. Researchers, waste management companies and municipalities can compare and expand their own OFMSW data with those presented in this article. The dataset can also be used to calculate energy yields of OFMSW when utilized in anaerobic digestion. Based on the data, it is also possible to discuss and to evaluate the material utilization of OFMSW-based digestates and compost products, especially with regard to concentrations of major, minor and trace elements. Iodine is an essential trace element involved in the regulation of thyroid metabolism and antioxidant status in humans and animals. The aim of this study was to evaluate the effect of ewes’ dietary iodine supplementation on biogenic amines content as well as microbiological and physico-chemical characteristics in a raw milk cheese at different ripening times (milk, curd, and 2, 7, 15, 30, 60, and 90 days). Two cheese-making trials were carried out using milk from ewes fed with unifeed (Cheese A) or with the same concentrate enriched with iodine (Cheese B). The results indicated that the counts of principal microbial groups and physico-chemical characteristics were quite similar in both cheeses at day 90. Cheese B was characterized by a higher content of biogenic amines and propionic acid. Propionic bacteria were found in both cheeses mainly in Trial B in agreement with the higher content of propionic acid detected.

The objective of the present study was to analyze the use of vinasse from cachaça as an ingredient of the fermentation medium for the spirit production. The fermentations were conducted out in three successive batches using a Saccharomyces cerevisiae isolate. In the first batch, the sugarcane broth was only diluted with distilled water. In the second and third batches, the fermentations were carried out using the cane broth diluted with vinasse from the distillation of the sugarcane wines of the first and second batches, respectively at a concentration of 10% (v/v). The spirits were submitted to the physicochemical and sensorial analyses. The results showed that vinasse addition did not affect the fermentation, distillation and chemical-sensorial quality of the beverage. Therefore, the vinasse addition could be an alternative use for that residue.
