BACKGROUND: In the traditional food sector, the smoking process and smoking-drying process are widely used to increase the shelf-life of seafood products. The smoking process and smoking-drying process are mainly performed using barrel kiln and wood as fuel in many West African countries. The present study evaluated the performances of the barrel kiln and its effects on physicochemical characteristics and safety of smoked fish (SF) and smoked-dried fish (SDF). Twelve follow-ups were conducted with three experimental processors and 24 samples of fish collected at different steps of processing were analyzed in a laboratory using standard methods. RESULTS: The extreme values of combustion temperature recorded during the smoking process (456.4 °C) and smoking-drying process (482.8 °C) were higher than 450 °C, the temperature at which wood pyrolysis generates polycyclic aromatic hydrocarbons (PAHs). Smoked fish were highly contaminated with PAHs, and showed maximal levels of benzo[a]pyrene (52.7 µg kg-1 ) and PAH4 (i.e. sum of benzo[a]pyrene, chrysene, benzo[b]fluoranthene and benz[a]anthracene) (290.9 µg kg-1 ) exceeding the European Union limits by about 25-fold. After smoking of Scomber scombrus and smoking-drying of Cypselurus cyanopterus, no significant differences were recorded for lipid, protein and biogenic amine contents between fresh and processed fish, even if the histamine content of both fish exceeded the limit fixed by the European Union regulation. CONCLUSION: The results obtained in the present study showed that smoked fish and smoked-dried fish produced using barrel kiln and wood fuel are highly contaminated by PAHs. Therefore, there is a need to improve the preservation practices of raw fish and smoking conditions to limit the contamination of end-products by PAHs known to be carcinogenic components for humans and to ensure consumer safety. © 2021 Society of Chemical Industry.

Spoilage fungi were isolated from the skin and the muscle of smoke-dried catfish samples, which were products of traditional and improved processing methods. The samples significantly different mean aw of 0.85 and 0.81 respectively [F (1, 3) = 0.014, P = 0.018], when they were checked immediately after purchase from selected open markets. The isolated spoilage fungi were identified by their phenotypic appearance and morphological features under microscope, with reference to standard identification guidelines. The isolates comprised of Aspergillus fumigatus, A. niger, A. flavus and Penicillium species. Effects of water activity (aw) on growth and sporulation of these species at ambient temperature (25 ± 5 °C) were studied on standard media (aw = 0.995) or media in which aw was modified using NaCl as follows: 0.98, 0.94, 0.86 and 0.80. All the isolates could grow in the range of the aw studied and there were statistically significant variabilities in the rates of growth among species [F (7, 50) = 63.34, P = 0.001] and in relation to media aw [F (28, 50) = 4.055, P = 0.001]. There was no limitant aw found in the studied conditions (0.995-0.80 aw x fluctuating ambient temperature, 25 ± 5 °C), as all the isolates were fast growing. The aw of the fish samples from the improved processing line was lower than those from the traditional processing lines. However, the aw of all the tested the samples was above the Codex Standard for smoked fish, smoke-flavoured fish and smoke-dried fish, which is 0.75 aw or less (10% moisture or less), as necessary to control bacteria pathogens and spoilage fungi. The results indicated that the open market fish samples may pose serious health risks if they are consumed after a short-term storage. Waste from fish cutting (heads, swim bladders, fins, skin, and bones) is a high-value technological raw material for obtaining substances and products with a wide range of properties. The possibility of using waste from cutting fish of the Gadidae family: the Alaska pollock (Gadus chalcogrammus) and the Pacific cod (Gadus macrocephalus), processed in the coastal zone, is scientifically substantiated. In this work, a technology has been developed for processing accumulated waste from fish cutting in order to obtain fish gelatin, which is characterized by high protein content (more than 80.0%) and a full set of essential and nonessential amino acids. We studied the quality of fish gelatin obtained from wastes from cutting the fish of the Gadidae family. The possibility of using fish gelatin as a component of fish products is shown; the dose of its introduction into the fish products is substantiated. The data obtained made it possible to recommend the use of fish processing waste products as a gelling component and a source of amino acids in multicomponent food systems.

Fish processing employees are exposed to various occupational risk factors that result in musculoskeletal pain (MSP). The objective of the study was to determine the characteristics of MSP among them and its association with the nature of the job and work condition. A cross-sectional study was conducted among 364 employees of five fish processing factories using standard questionnaires. Descriptive analysis and Chi-square test were performed using SPSS software version 15.0. The prevalence of MSP was 77.7% affecting more of the upper extremities (43.8%). Mild and moderate types of pain were more (37.6%) that resulted due to repeated work (30.2%) and work method (35.4%) that include extreme temperature and work posture. The mean numeric pain severity score was 3.02 ± 2.14. Global self-rated health was reported as predominantly good (57.7%). To conclude, the study revealed a higher prevalence of MSP and its various characteristics in detail which help in designing intervention programs.

The presence of antibiotic-resistant bacteria in seafood not only poses a serious health risk for the consumers but also contributes to the spread of these antibiotic-resistant bacteria in the natural environments through the effluents discharged from the fish processing plants. The aims of this study were to isolate Gram-negative bacteria from the effluents of fish processing plants in and around Mangalore, India and to profile their antibiotic resistance pattern. Maximum resistance was seen for ampicillin (40.78%) followed by tetracycline (40.22%) and nitrofurantoin (29.05%). Further, the detection of genes that contribute to antibiotic resistance revealed the presence of sulfonamide resistance genes (sul1 and sul2) and extended spectrum ß-lactamase genes (bla CTX-M, bla TEM) in a few isolates. The presence of such bacteria in fish processing effluents is a matter of great concern because they can contribute significantly to the antibiotic resistance in the natural environment. It is imperative that seafood processing plants follow the safe disposal of effluents in order to reduce or eliminate the antibiotic resistance menace.

BACKGROUND: Alaska's onshore seafood processing industry is economically vital and hazardous. METHODS: Accepted Alaska workers' compensation claims data from 2014 to 2015 were manually reviewed and coded with the Occupational Injury and Illness Classification System and associated work activity. Workforce data were utilized to calculate rates. RESULTS: 2,889 claims of nonfatal injuries/illnesses were accepted for compensation. The average annual claim rate was 63 per 1000 workers. This was significantly higher than Alaska's all-industry rate of 44 claims per 1000 workers (RR = 1.42, 95%CI = 1.37-1.48). The most frequently occurring injuries/illnesses, were by nature, sprains/strains/tears (n = 993, 36%); by body part, upper limbs (1212, 43%); and by event, contact with objects/equipment (1020, 37%) and overexertion/bodily reaction (933, 34%). Incidents associated with seafood processing/canning/freezing (n = 818) frequently involved: repetitive motion; overexertion while handling pans, fish, and buckets; and contact with fish, pans, and machinery. CONCLUSIONS: Ergonomic and safety solutions should be implemented to prevent musculoskeletal injuries/illnesses in seafood processing.

Fish processing waste water causes pollution and eutrophication of water bodies when released untreated. Use of bacteria capable of simultaneous nitrification and denitrification (SND) as biofilms on carriers in a moving bed bioreactor (MBBR) is a popular approach but seldom used for fish processing waste water remediation. Here, we studied the variations in biofilm formation and application activities by isolates Lysinibacillus sp. HT13, Alcaligenes sp. HT15 and Proteus sp. HT37 previously reported by us. While HT13 and HT15 formed significantly higher biofilms in polystyrene microtitre plates than on carriers, HT37 exhibited highest on carriers. A consortium of the three selected bacteria grown as biofilm on MBBR carriers exhibited better remediation of ammonia (200-600 ppm and 50 mM) than the individual isolates on carriers. The mixed biofilm set on the carriers was used for nitrogenous waste removal from fish processing waste water in 2 and 20 L setups. The total nitrogen estimated by elemental analysis showed complete remediation from 250 ppm in both 2 and 20 L waste water systems within 48 h. The usual toxic nitrogenous components-ammonia, nitrite and nitrate were also remediated efficiently.

Three isolates viz. Lysinibacillus sp. HT13, Alcaligenes sp. HT15 and Proteus sp. HT37 isolated from fish processing effluent and having a C/N ratio of 2, removed 218, 169, and 400 µg cell(-1) day(-1) NH4(+)-N, respectively without subsequent build up of nitrite or nitrate. Ability of the selected isolates in removing NH4(+)-N, NO2(-)-N, and NO3(-)-N was checked in the presence of four commonly reported and tested effluent carbon sources viz. pyruvate, glycerol, methanol, and acetate. Further, when supplemented to fish processing wastewater containing 234 ppm total Kjeldahl's nitrogen, Lysinibacillus sp. HT13, Alcaligenes sp. HT15, and Proteus sp. HT37 could remediate 95.74, 86.17, and 76.6% nitrogen, respectively in 48 h. This is the first report of a Lysinibacillus sp. carrying out aerobically the process of simultaneous nitrification and denitrification. The results demonstrate the potential of the isolates for use in treatment of fish processing effluents and demonstrating the efficient removal of ammonia.

Previously, we have reported the composition, molecular mass distribution and in vivo immunomodulatory effects of common carp roe protein hydrolysates. In the current study, antioxidative activity and functional properties of common carp (Cyprinus carpio) roe (egg) protein hydrolysates, prepared by pepsin, trypsin and Alcalase, were evaluated. The three hydrolysates showed excellent antioxidant activities in a dose dependent manner in various in vitro models such as 2,2 diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, 2,2'-azino-bis(3-ethylbenzthiazoline-6)-sulfonic acid (ABTS(+)) radical scavenging activity, ferric reducing antioxidant power (FRAP) and ferrous ion (Fe(2+)) chelating ability. Enzymatic hydrolysis significantly increased protein solubility of the hydrolysates to above 62 % over a wide pH range (2-12). Carp roe hydrolysates exhibited good foaming and emulsification properties. The results suggest that bioactive carp roe protein hydrolysates (CRPHs) with good functional properties could be useful in health food/nutraceutical/pharmaceutical industry for various applications.

The present study relates to the food processing machinery and, more specifically machine for producing boneless comminuted meat from raw fish fillet. This machine is of belt and drum type meat bone separator designed for small scale fish processing in a continuous mode. The basic principal involved in this machine is compression force. The electric geared motor consists of 1HP and the conveyor belt has a linear velocity of 19 to 22 m min(-1), which was sufficient to debone the fish effectively. During the meat bone separation trials an efficiency up to 75 % on dressed fish weight basis was observed and with a capacity to separate 70 kg h(-1) of meat from fish at the machine speed of 25 rpm. During the trials, it was demonstrated that there was no significant change in the proximate composition of comminuted fish meat when compared to unprocessed fish meat. This design has a greater emphasis on hygiene, provision for cleaning-in-place (CIP) and gives cost effective need and reliability for small scale industries to produce fish meat in turn used for their value added products.

A study was conducted in fish processing facilities to investigate the microbial composition, microbial metabolic potential, and distribution of antibiotic resistance genes. Whole metagenomic sequencing was used to analyze microbial communities from different processing rooms, operators and fish products. Taxonomic analyses identified the genera Pseudomonas and Psychrobacter as the most prevalent bacteria. A Principal Component Analysis revealed a distinct separation between fish product and environmental samples, as well as differences between fish product samples from companies processing either Gadidae or Salmonidae fish. Some particular bacterial genera and species were associated with specific processing rooms and operators. Metabolic analysis of metagenome assembled genomes demonstrated variations in microbiota metabolic profiles of microbiota across rooms and fish products. The study also examined the presence of antibiotic-resistance genes in fish processing environments, contributing to the understanding of microbial dynamics, metabolic potential, and implications for fish spoilage.

The discharge of high-strength wastewater from the fish-processing industries, comprising undefined blends of toxic and organic compounds, has always been a subject of great disquiet worldwide. Despite a large number of effluent treatment methodologies known to date, biosorption with the aid of naturally grown microalgae has been recognized recently to possess promising outcomes in eradicating pollutants comprising organic compounds from liquid effluents. Interestingly, the microalgal biomass harvested from phytoremediation of fish effluent was identified to be abundant in bio compounds that exhibited potential application in pharmaceutical, nutraceutical, and, aquaculture feed, generating a circular economy. In this context, the focus of the review is to emphasize the applications of microalgal species as naturally occurring and zero-cost adsorbents for the elimination of organic contaminants from fish liquid effluents. The summary of the literature encompassed in this work is supposed to benefit the readers to comprehend the primary mechanisms by which microalgae uptakes the organic matter from fish processing effluents and converts them into various biological molecules. From the scientific works assessed through this review, the most promising microalgae species regards to nutrient uptake and removal efficiency from fish effluent, were identified as Chlorella sp. > Spirulina sp. > Scenedesmus sp. The review further revealed supercritical fluid extraction as the robust extraction tool for the extraction of targeted bioproducts from microalgal biomass grown within fish effluents. Eventually, the information presented through this review establishes phytoremediation using microalgal biomass to be a natural cost-effective, sustainable circular bio-economy approach that could be robustly applied for the efficient treatment of wastewater discharged from food processing industries.

Background: Musculoskeletal disorders (MSDs) are one of the major causes of morbidity, which affect particularly the upper quadrant in industrial settings and so upset the quality of life (QoL). The influence of the protocol of exercise-based programs at the workplace on the well-being of the worker is contradictory. The objective of the study was to find the effect of the structured exercise-based intervention on upper quadrant dysfunction among fish processing workers with work-related MSDs. Methods: The intervention group (n = 91) participated in an individually tailored structured exercise-based intervention (SEBI) program for three months, which consisted of stretching, strengthening, and active exercises. The control group (n = 93) was instructed to continue routine daily activities. The outcome measures of the cluster-randomized controlled trial were Neck Disability Index (NDI), Disabilities of Arm, Shoulder, and Hand (DASH), Visual Analog Scale (VAS), and Short Form-36, used to evaluate at baseline, eighth, and twelfth week. The data were analyzed by repeated analysis of variance and Student's t-tests. Results: The results for the overall perception of upper quadrant dysfunction showed statistically significant differences (P < 0.0001) for NDI, DASH, and VAS. Further, we obtained a significant difference in QoL between the intervention and control groups for physical and psychological health sub-domains. Conclusion: SEBI effectively enhanced the general health of fish processing workers by showing improvements in the measures of NDI, DASH, VAS, and QoL. Hence, SEBI can be recommended in the fish processing industries to achieve potential impact on upper quadrant dysfunction and improve the QoL.

The study aimed at zero-waste utilization of fish processing streams for cultivation of microalgae Galdieria sulphuraria. Wastewater from a fish processing facility, slam (mix of used fish feed and faeces), and dried pellet (sediments after enzymatic hydrolysis of rainbow trout) were investigated as potential sources of carbon, nitrogen, and phosphate for cultivation of G. sulphuraria. The pellet extract was found to support the growth of G. sulphuraria when appropriate diluted, at concentrations below 40 % (v/v). It was revealed that wastewater does not impact the growth negatively, however free amino nitrogen and carbon sources need to be supplied from another source. Therefore, only proteolyzed pellet extract (20 %, v/v) was selected for upscaling and a biomass concentration of 80 g L-1 (growth rate was 0.72 day-1) was achieved in a non-sterile fed-batch culture. Even though biomass was produced under non-sterile conditions no pathogens such as Salmonella sp. could be detected.

BACKGROUND: Hydrolytic enzymes from halophilic microorganisms have a wide range of industrial applications. Herein, we report the isolation of Halobacillus sp. HAL1, a moderately halophilic bacterium that produces a novel high molecular weight extracellular alkaline protease when grown in fish processing wastes as a substrate. RESULTS: Results showed that the isolated strain belonged to the genus Halobacillus, and it was designated as Halobacillus sp. HAL1 with the GenBank accession number OK001470. The strain secreted an extracellular alkaline protease, and the highest yield was obtained when it was grown in a medium with fish wastes substrate as the sole nutritional source (10 g/L) and incubated at 25 °C under shaking conditions. The enzyme was partially purified by Sephadex G-100 column chromatography. Zymographic analysis showed two casein degrading bands of about 190 and 250 KDa. The optimum enzyme activity was at a temperature of 50 °C at pH 8. The proteolytic activity was enhanced in the presence of metal ions (Ca2+, Mg2+, and Mn2+), surfactants (Tween 80, SDS, and Triton-X100), H2O2, and EDTA. CONCLUSION: Our study indicates that Haobacillus sp. HAL1 is a moderately halophilic strain and secrets a novel high molecular wight alkaline protease that is suitable for detergent formulation.

Aquaculture is an increasingly important supplier of food worldwide. However, due to its high dependence on agricultural and fishing resources, its growth is constantly constrained by environmental impacts beyond aquaculture production systems. Within the European Union, Spain accounts for approximately 25 % of total aquaculture production, which implies that environmental impacts in rivers and marine ecosystems must be monitored to understand the role of aquaculture systems. While studies on the environmental performance of mussels or turbot production have been reported in the literature, Spanish rainbow trout (Oncorhynchus mykiss) has not received much attention despite its relative importance. In this sense, a Life Cycle Assessment (LCA) study of rainbow trout produced in a medium-sized plant in Galicia (NW Spain) was carried out in the present study. The study considered the production of round weight trout, as well as some commonly produced processed products, including filleting. The life cycle modelling included a high level of primary data in the foreground system. In addition to the widely considered environmental impact categories for this activity (e.g., global warming potential, terrestrial acidification and freshwater eutrophication), the recent proposed antibiotic resistance (ABR) enrichment impact category was included to explore the potential impact of antibiotic release in freshwater microbiota. The results highlighted the high contribution of aquafeed to most impact categories, due to upstream agricultural and fishing processes, whereas farm operation was responsible for the larger part of the impact in freshwater eutrophication, mainly due to direct emissions of nutrients from fish feeding. Amoxicillin release to recipient water bodies was the main driver to the ABR enrichment category. In contrast, the processing phase (i.e., gutting, freezing and packaging) showed low environmental burdens. In order to improve the environmental performance of the rainbow trout production system, decreasing the feed conversion ratio (FCR), shifting to renewable energy, using low environmental burden ingredients in aquafeed, and alternatives to control diseases without antibiotics could be considered.

Small fish are an important part of the diet in Ghana, but malnutrition rates remain high. The nutritional quality of fish consumed in Ghana may be affected by food processing and cooking practices, but the extent to which these processes are practiced among poor Ghanaian households along the coastal belt is unknown. This study explored how poor Ghanaian households process, prepare, and cook meals containing small fish. This exploratory qualitative study used Attride-Stirling thematic network analysis. Respondents were purposively sampled from fishing communities in the coastal regions of Ghana. One-on-one interviews were performed by trained field assistants, audio recorded and videotaped, and transcribed for further data analysis. The most common small fish species identified were anchovies and herrings. Anchovies were fried and eaten whole. Herrings were eaten either smoked or fresh; for fresh herring, the head, fins, and viscera were removed before boiling. Herrings were smoked with the head and viscera; however, both the head and viscera were removed before being added to boiling soup and were not consumed. Anchovies were fried for 10 min, and herrings were boiled for 15-30 min. Processing methods and further meal preparation depend on the small fish species. Nutrient composition and contribution of small fish depend on the processing method, preparation method, and what tissues are eaten. Thus, these results will be of importance for sampling schemes for food composition tables and for the calculation of nutrient intake from small fish. The efficiency of native and non-native starter cultures in the production of bio-silage using composite waste from fish and vegetables was studied. An ensilage experiment was conducted in a natural way (without starter culture) of composite waste (fish to vegetable at 80 to 20%) to isolate the native fermentative microflora. An Enterococcus faecalis strain isolated from the natural ensilage of composite waste showed higher efficiency over other commercial LAB strains generally used for ensilation. A total of 60 isolates were screened and characterized biochemically from ensilaged composite waste. Among them, 12 proteolytic and lipolytic positive isolates were identified as Enterococcus faecalis, based on a BLAST search of the 16S rRNA gene sequences. Subsequently, composite bio-silage was prepared by inoculating starter cultures with three (3) treatments T1 (native-Enterococcus faecalis), T2 (non-native-Lactobacillus acidophilus), T3 (a mixture of E. faecalis and L. acidophilus) and compared with control (composite bio-silage without starter culture). The highest non-protein nitrogen (0.78 ± 0.01 mg of N /100 g) and degree of hydrolysis (70.00 ± 0.06% of protein/100 g) was seen in the T3 sample, and the lowest (0.67 ± 0.02 mg of N/100 g and 50.40 ± 0.04% of protein/100 g) was seen in the control. At the end of ensilation, the pH fell (5.95-3.88) in conjunction with the formation of lactic acid (0.23-2.05 g of lactic acid/100 g), and the lactic acid bacteria count nearly doubled (log 5.60-10.60). The lipid peroxidation products PV (0.11-0.41 milli equivalent of oxygen/kg of fat) and TBARs (1.64-6.95 mg of malonaldehyde/kg of silage) were changed within a reasonable range in the following pattern Control > T2 > T3 > T1, which led to oxidatively stable products. The findings revealed that native starter culture E. faecalis, which can be employed as a single or in combination with non-native L. acidophilus, performed better in the bio-ensilation process. Additionally, the finished composite bio-silage can be used as a novel, protein-carbohydrate rich feed component to help manage wastes from both sectors.

The objective of the work was to formulate, characterize and evaluate the stability of a product based on white cachama (Piaractus brachypomus). From four lipid sources (pork back fat, canola oil, olive oil or sacha inchi oil), the one with the highest acceptance rate was selected based on the acceptance index and sensory characteristics. The formulation was optimized using the response surface method; 15 formulations were used in triplicate, evaluating the pH, moisture, colour and sensory acceptance values. The macronutrient composition and lipid profile of the optimal formulation was determined; its stability was evaluated under refrigeration conditions by measuring lipid and protein degradation, changes in colour, texture, changes at the microbiological and sensory levels. It was found an optimal proportion of inclusion of 50% white cachama pasta, 21% canola oil and 23% water. The stability of the final product obtained was 42 days, with 82% of acceptability index. This product could be an alternative to other pâté-type products from other species.

Consumption of aquatic food, including fish, accounts for 17% of animal protein intake. However, fish consumption might also result in several side-effects such as sneezing, swelling and anaphylaxis in sensitized consumers. Fish allergy is an immune reaction to allergenic proteins in the fish muscle, for instance parvalbumin (PV), considered the major fish allergen. In this study, we characterize PV in two economically important fish species for southern European aquaculture, namely gilthead seabream and European seabass, to understand its stability during in vitro digestion and fish processing. This information is crucial for future studies on the allergenicity of processed fish products. PVs were extracted from fish muscles, identified by mass spectrometry (MS), and detected by sandwich enzyme-linked immunosorbent assay (ELISA) after simulated digestion and various food processing treatments. Secondary structures were determined by circular dichroism (CD) after purification by anion exchange and gel filtration chromatography. In both species, PVs presented as α-helical and ß-sheet structures, at room temperature, were shown to unfold at boiling temperatures. In European seabass, PV detectability decreased during the simulated digestion and after 240 min (intestinal phase) no detection was observed, while steaming showed a decrease (p < 0.05) in PVs detectability in comparison to raw muscle samples, for both species. Additionally, freezing (−20 °C) for up to 12 months continued to reduce the detectability of PV in tested processing techniques. We concluded that PVs from both species are susceptible to digestion and processing techniques such as steaming and freezing. Our study obtained preliminary results for further research on the allergenic potential of PV after digestion and processing.
