Resumo
O objetivo deste trabalho foi avaliar a tolerância da maçã cultivar 'Fuji' a baixas temperaturas durante os diferentes períodos, no início ou no final do armazenamento, bem como o seu efeito na qualidade do fruto. Os tratamentos constituíram-se de temperaturas (0,5°C, 0,8°C e 1,6°C), durante oito meses de armazenamento ininterruptos em atmosfera controlada (AC - 1,0kPa de O2 + < 0,5kPa de CO2), e da combinação destas temperaturas em diferentes períodos de tempo no início ou no final do armazenamento. As análises de qualidade foram realizadas após oito meses de armazenamento mais sete dias de exposição à temperatura de 20°C. Para maçãs cultivar Fuji, temperaturas de 0,8°C, ou inferior, quando usadas no início do armazenamento, provocam maior degenerescência causada por baixa temperatura e tendem a causar mais podridões. No entanto, a temperatura de 0,8°C pode ser usada no final do armazenamento, assim mantendo melhor a qualidade da maçã 'Fuji' durante o armazenamento em atmosfera controlada.
The aim of this research was to evaluate the tolerance of 'Fuji' apple at low temperatures during the different periods at the beginning or end of storage as well as its effect on fruit quality. The treatments consisted of temperatures (-0.5 ° C, -0.8 ° C and -1.6 ° C) for eight months of continuous storage in controlled atmosphere (CA - 1,0kPa of O2 + < 0,5kPa of CO2), and their combination at different temperatures periods of time at the beginning or end of storage. The quality analysis was done after eight months of storage plus seven days at a temperature of 20 ° C. For 'Fuji' apple, temperatures of -0.8 ° C or lower, when used at the beginning of storage, caused more internal breakdown caused by the cold and tend to cause more decay. However, the temperature of - 0.8 ° C can be used at the end of storage, thus maintaining the best quality of apples during controlled atmosphere storage.

Os tratamentos avaliados foram as temperaturas de 0 (padrão); -0,8 e -1,6°C, durante quatro meses de armazenamento refrigerado (AR) e durante oito meses em atmosfera controlada (AC) a 1,0kPa de O2 + 2,0kPa de CO2; e de combinação dessas temperaturas por diferentes períodos de tempo no início ou no final do armazenamento. The objetive of the work was to evaluate the effect of temperature and controlled atmosphere conditions on the quality of Eldorado peach sighting to increase storage period. The fruits were maintained at -0.5°C and 0.5°C, with relative air humidity of 97%, in cold storage and in controlled atmosphere (CA), under the following conditions: 1.0kPa of O2 and 3.0kPa of CO2; 1.0kPa of O2 and 3.0kPa of CO2 with ethylene elimination (EE); 1.5kPa of O2 and 5.0kPa of CO2; air and 10kPa of CO2, and cold storage. Evaluations of flesh firmness, total soluble solids, titratable acidity, incidence of rot, and internal browning were done after 32 and 46 days of storage, at the opening of the chambers and after three days at shelf life of 25°C. The results showed that Eldoradopeach was not susceptible to low storage temperature damage and the reduction from 0.5°C to -0.5°C conserved the flesh firmness, total soluble solids, total titratable acidity and reduced rots and internal browning incidence. The CA storage maintained higher firmness, total titratable acidity and decreased the internal browning incidence. The elimination of the ethylene during the storage benefit the fruit quality.
O objetivo do trabalho foi avaliar o efeito de temperaturas e condições de atmosfera controlada sobre a qualidade do pêssego Eldorado, visando a prolongar o período de armazenamento. As frutas foram mantidas a -0,5°C e 0,5°C, com umidade relativa do ar de 97%, sob armazenamento refrigerado e em atmosfera controlada (AC), nas condições de: 1,0kPa de O2 e 3,0kPa de CO2; 1,0kPa de O2 e 3,0kPa de CO2 com eliminação de etileno (EE); 1,5kPa de O2 e 5,0kPa de CO2; ar e 10kPa de CO2, e armazenamento refrigerado convencional (AR). Avaliações de firmeza da polpa, sólidos solúveis totais, acidez total titulável, incidência de podridões e escurecimento de polpa foram realizadas aos 32 e 46 dias de armazenamento, na abertura das câmaras e após exposição das frutas por três dias à temperatura de 25°C. Verificou-se que o Eldorado não foi susceptível à baixa temperatura de armazenamento, e a redução da temperatura de 0,5°C para -0,5°C conservou melhor a firmeza da polpa, sólidos solúveis totais e acidez titulável, além de reduzir a ocorrência de podridão e escurecimento de polpa. A AC manteve melhor a firmeza e a acidez titulável, diminuindo a incidência de escurecimento interno. A eliminação do etileno durante o armazenamento beneficiou a qualidade das frutas.
