Resumo

Doxiciclinaé um fármaco do grupo das tetraciclinas indicado para tratamento de diferentes doenças, em principal a coriza infecciosa. Entretanto, antimicrobianos do grupo das tetraciclinas tem capacidade de se ligarem e indisponibilizar minerais importantes para a formação dos ovos. O objetivo do projeto foi de avaliar a interferência da doxiciclina na qualidade de ovos comerciais. Realizou-se um estudo com 100 poedeiras Dekalb Brown®onde se avaliou a cor da gema, unidade Haugh, cor da casca, peso e espessura da casca. O delineamento adotado foi o inteiramente casualizadosem um esquema fatorial 2x2, resultando nos tratamentos: sem doxiciclina ao 5° dia; com doxiciclina ao 5° dia; sem doxiciclina ao 10° dia; com doxiciclina ao 10° dia. Coletou-se 4 ovos por repetição,totalizando 48 ovos analisado por tratamento em cada um dos períodos analisados. Não foram encontradas diferenças significativas entre os tratamentos para as variáveis de qualidade interna dos ovos (cor da gema e unidade Haugh). Para as variáveis de qualidade de casca, houve uma redução significativa dos níveis de amarelo com o uso de doxiciclina por 10 dias, além da redução do peso da casca e da espessura apical e equatorial da casca, principalmente no 10º dia e com o uso de doxiciclina. Conclui-se que o uso da doxiciclina não interfere na qualidade interna dos ovos, porém confere tonalidade acinzentada as cascas, e redução de peso e espessura das mesmas.(AU)


Doxycycline is a drug from the tetracycline group indicated for the treatment of different diseases, mainly infectious coryza. However, antimicrobials from the tetracycline group can bind and make minerals important for egg formation unavailable. The aim of this project is evaluated interference of doxycycline in quality of commercial egg. A study had carried out with 100 Dekalb Brown®laying hens where evaluated the yolk color, Haugh unit,color eggshell, weight and thickness eggshell. The delimitation had completely randomized in a 2x2 factorial scheme, resulting in treatments: without doxycycline at day 5; with doxycycline a day 5; without doxycycline at day 10; with doxycycline at day 10. Four eggs had gathered per replicate, totaling 48 eggs analyzed per treatment in each of the analyzed periods. No significant differences were found between treatments for internal egg quality variables (yolk color and Haugh unit). For the shell quality variables, there was a significant reduction in yellow levels with the use of doxycycline for 10 days, in addition to a reduction in shell weight and apical and equatorial shell thickness, mainly on the 10th day and with the use of doxycycline. It is concluded that the use of the doxycycline does not interfere in the internal quality of the eggs, but it gives a greyish tonality to the eggshells, and reduces their weight and thickness.(AU)


La doxiciclina es un fármaco del grupo de las tetraciclinas indicado para el tratamiento de diferentes enfermedades, principalmente el coriza infeccioso. Sin embargo, los antimicrobianos del grupo de las tetraciclinas tienen la capacidad de unirse y hacer que minerales importantes para la formación de huevos no estén disponibles. El objetivo de este proyecto es evaluar la interferencia de la doxiciclina en la calidad del huevo comercial. Se realizó un estudio con 100 gallinas ponedoras Dekalb Brown®donde se evaluó el color de la yema, unidad Haugh, color del cascarón, peso y grosor del cascarón. La delimitación tuvo completamente al azar en un esquema factorial 2x2,resultando tratamientos: sin doxiciclina en el día 5; con doxiciclina al día 5; sin doxiciclina el día 10; con doxiciclina el día 10. Se habían recolectado cuatro huevos por réplica, totalizando 48 huevos analizados por tratamiento en cada uno de los períodos analizados. No se encontraron diferencias significativas entre tratamientos para las variables de calidad interna del huevo (color de la yema y unidad Haugh). Para las variables de calidad de la cáscara, hubo una reducción significativa de los nivelesde amarillo con el uso de doxiciclina durante 10 días, además de una reducción del peso de la cáscara y del espesor apical y ecuatorial de la cáscara, principalmente al décimo día y con el uso de doxiciclina. Se concluye que el uso de la doxiciclina no interfiere en la calidad interna de los huevos, pero da una tonalidad grisácea a las cáscaras, y reduce su peso y grosor.(AU)

Resumo

Three hundred hatching eggs from two layer breeder flocks (Hy-Line Brown and hy-Line W-36; 150 each) were obtained at three different periods of laying cycle (early, middle and late stages). The hatching eggs were randomly taken to assess the impact of chicken strain, age, and hatching time on some eggshell measurements and structures. Results indicate that egg weight, shell percentage and shell thickness were significantly affected by strain, breeder age, and incubation time. Increasing rate of calcium absorption and utilization by the embryos during the embryonic stage clearly reflects the decrease occurred in eggshell strength. The differences of eggshell breaking strength during incubation time periods were 0.41 and 0.55 kg/cm2, the differences due to the incubation time may be due to the higher demand for calcium utilization in the late incubation period (18 days), observed on the10th day of incubation. Brown eggs recorded significant higher calcium percentage in eggshell compared to the white ones. The brown breeder hens recorded significant higher total pores per egg compared to the white egg. Concerning eggshell ultrastructure, total thickness of the brown eggshell was significantly higher than those of the white eggshell by about 3.7%. All parameters, except for total thickness, were significantly affected by the interaction between strain and breeder age. Finally, we conclude that some traits including egg weight, shell percentage, shell thickness, calcium percentages in eggshell, and total pores per egg were significantly affected by strain, breeder age, and incubation time. Eggshell ultrastructure of brown egg was better compared to the white ones.(AU)

Resumo

The objective of this study was to assess the effect of ambient temperature (T) and feeding time (FT) on eggshell thickness (ST) and egg weight (EW) of broiler breeder hens. Thirty 44-week-old Ross 308 broiler breeder hens were randomly distributed into six environmentally controlled chambers and kept in individual cages. Three thermal treatments were applied: 20 ºC (T1), cyclic 20-30 ºC (30 °C between 1000 h and 1800 h) (T2), and 30 ºC (T3). Birds received 180 g of commercial breeder food at 0730 h (FT1) or 1530 h (FT2). There were two replications per treatment and egg collection was performed for seven days. The eggs from the birds at T1 and T2 fed at 1530 h (T1FT2 and T2FT2 respectively) were significantly heavier than those laid by hens at the same T when fed in the morning (T1FT1 and T2FT1); eggs from T1FT1 and T2FT1 were heavier than the eggs from T3, but there were no significant differences between them. Both T and FT had significant effects on ST, but no significant interactions were found. Birds fed at 1530 h had the highest ST, whilst birds at T3 showed the lowest. Birds on T2 produced the thickest shells due to a higher ST in birds fed at 1530 h. Birds fed at 1530 h consumed their food between 1800 h and 2030 h, resulting in a higher dietary Ca2 + available during shell mineralization. The effect of FT and biphasic T treatments on ST in feed restricted broiler breeders should be interpreted considering the length of the high T phase to the actual food consumption time.(AU)

Resumo

The study was conducted to investigate the effect of GOX on performance, egg quality, and nutrient digestibility in laying hens. In total, 432, 50-week-old Hy-Line brown breeder hens were assigned into four treatments, and fed a basal diet with GOX at 0, 100, 200 and 300 units for 10 weeks, respectively. A Quadratic decrease in FI in week 3 (p<0.05) and linear increase in egg production in week 6 to 10 and overall experiment period (p<0.05) and Quadratic increase in egg production in week 7 (p<0.05), a linear decrease in broken egg rate in week 6 (p<0.05) a quadratic increase in egg weight on day 14 (p<0.05), alinear increase in egg weight on day 28 (p<0.05), and linear decrease in yolk color on day 7 (p<0.05), a linear increase in yolk color on day 42 and day 70 (p<0.05), and linear increase in haugh unit on day 28 and 70 (p<0.05), a linear increase albumen height on day 28 and day 56 (p<0.05), and linear decrease in shell color on day 14 (p<0.05) and day 28(p<0.05), a linear and quadratic increases in eggshell strength and eggshell thickness on day 56 (p<0.05), and linear increase in eggshell strength and eggshell thickness on day 70 (P0.05) were observed with the addition of GOX the the diet. Conclusion: This study suggested that the supplementation of GOX may have beneficial effects on feed intake and egg quality in laying hens.(AU)

Eggshell quality is directly linked to the good acceptability of the product by consumers, whereas the industry is concerned with economic losses. Prolonged periods of laying, diseases, nutrition, bird age and genetics can influence egg quality. This study aimed to examine the influence of the environment, bird age and storage period on the physical characteristics of the shell of eggs from commercial laying hens. The experiment involved 288 eggs from Hy-line hens, which were distributed in a completely randomized design with a triple 3×2×4 factorial arrangement represented by three ages (31, 62 or 88 weeks), two storage temperatures (ambient or refrigerated), and four storage periods (one, 10, 20 or 30 days), totaling 24 treatments. Four replications were used with three eggs each. Eggshell strength, percentage and thickness were measured. Differences were observed, with the eggs stored at room temperature exhibiting lower shell strength. Laying eggs at an advanced age (88 weeks) resulted in decreased eggshell strength as compared with the other ages, whereas the eggs from young layers (31 weeks) had a thicker shell. The advancing age of the laying hens reduced eggshell quality, regardless of the storage environment. Nonetheless, the eggs stored in the refrigerator showed better eggshell quality and integrity than those stored at ambient temperature.


A qualidade da casca está diretamente ligada à boa aceitabilidade do produto pelos consumidores, enquanto a indústria se preocupa com as perdas econômicas. Períodos prolongados de postura, doenças, nutrição, idade da ave e genética podem influenciar a qualidade dos ovos. Objetivou-se avaliar a influência do ambiente, idade da ave e período de armazenamento nas características físicas da casca de ovos de poedeiras comerciais. Foram utilizados 288 ovos de poedeiras Hy-line, distribuídos em um delineamento inteiramente casualizado em fatorial triplo 3x2x4, sendo os fatores: três idades (31, 62 e 88 semanas), temperatura de armazenamento (ambiente e refrigerado), e quatro períodos de armazenamento (um, 10, 20 e 30 dias), totalizando 24 tratamentos, com quatro repetições de três ovos. Avaliou-se a resistência, percentual e espessura da casca. Foram observadas diferenças, uma vez que os ovos armazenados em temperatura ambiente apresentaram diminuição na resistência de casca. Ovos de poedeiras em idade avançada (88 semanas) apresentaram pior resistência de casca em relação às demais idades, enquanto ovos provenientes de poedeiras jovens (31 semanas) apresentaram maior espessura de casca. A idade avançada da poedeira reduziu a qualidade de casca dos ovos, independentemente do ambiente de armazenamento. Ainda, os ovos armazenados em geladeira apresentaram melhor qualidade e integridade da casca em comparação com os armazenados ao ambiente.

A study was carried out with the objective of determining the presence of Bacillus cereus in eggshells commercialized in Mexico, the enterotoxigenic profile of the isolated strains, and the production of biofilms in different materials as well as in the eggshell. 1000 chicken eggs from four commercial brands were collected from markets and supermarkets located in the city of Chilpancingo, Mexico. Bacillus cereus was isolated from the eggshell. The molecular identification was by amplification of the gyrB gene and the enterotoxigenic profiles by the amplification of the cytK, ces, nheABC, and hblABD genes, in addition to the amplification of the tasA and sipW genes associated with the production of biofilms. In different materials and in eggshells, the production of biofilms was evaluated. The microbiological and molecular analysis of B. cereus yielded a frequency of 5.5% (55/1000), this was higher in brand III (11.6%, p=0.0001) and white eggshell (7.6%, 38/500, p≤0.001) and by marketing source, it was similar between market (5.2% / 26/500) and supermarket (5.8%, 29/500). The most common was the toxigenic profile A (23/55). Biofilm production is high in PVC in relation to other materials (p<0.0001), and the frequency of the related genes tasA and sipW was 72.7% and 40% respectively; the highest production was related to the tasA gene; in eggshell, most of the strains (54/55) were able to produce biofilm. Strains of B. cereus with toxigenic potential circulate and persist in this product, which shows the need for sanitary regulation in the country.(AU)

The aim of this study is to evaluate the influence of including levels of calcareous seaweed flour in replacement for calcite limestone on the diet under egg conservation at different storage periods. 140 Japanese quails were used in a completely randomized experiment consisting of a 4x4 factorial design. The factorial design was four inclusions of calcareous seaweed (0%, 10%, 20%, and 30%) and four storage periods (zero, seven, 14, and 21 days) with ten replications of three eggs each. The egg quality variables were evaluated. Data were subjected to analysis of variance using Tukey test and polynomial regression at a 5% significance level. There was no interaction effect between the factor's storage time and inclusion of calcareous seaweed (p>0.05). There was an increasing linear effect on shell weight and thickness in relation to inclusion levels of calcareous seaweed. There was an individual effect of egg storage time (p>0.05) on egg weight, yolk color, albumen and yolk height, yolk weight and percentage, albumen, yolk index, yolk diameter, specific gravity, and Haugh unit. The inclusion of up to 30% of calcareous seaweed in replacement for calcite limestone in the diet of Japanese quails improves the weight and thickness of eggshells but does not influence the conservation of the eggs up to 21 days of storage.


O objetivo deste estudo foi avaliar a influência da inclusão de níveis de farinha de alga calcária em substituição ao calcário calcítico na dieta sob a conservação de ovos em diferentes períodos de armazenamento. Foram utilizadas 140 codornas japonesas em um delineamento inteiramente casualizado composto por um fatorial 4x4. Sendo 4 inclusões de alga calcária (0%, 10%, 20% e 30%) e 4 períodos de armazenamento (0, 7, 14 e 21dias) com dez repetições de três ovos em cada. Foram avaliadas as variáveis de qualidade de ovos das aves. Os dados foram submetidos a análise de variância utilizando o teste de Tukey e regressão polinomial ao nível de 5% de significância. Não houve efeito da interação entre os fatores tempo de armazenamento e inclusão de alga calcárea (p>0,05). Houve efeito linear crescente no peso e espessura da casca em relação aos níveis de inclusão de alga calcárea. Houve efeito individual do tempo de armazenamento dos ovos (p>0,05) sobre parâmetros peso de ovo, coloração da gema, altura de albúmen e gema, peso e porcentagem da gema, albúmen, índice de gema, diâmetro de gema, gravidade especifica e unidade Haugh. A inclusão de até 30 % de alga calcária em substituição ao calcário calcítico na dieta codornas japonesas aprimora o peso e a espessura da casca do ovo, mas não influencia na conservação dos ovos até 21 dias de armazenamento.

Resumo

Objetivou-se avaliar o perfil dos consumidores de ovos do município de Aquidauana-MS. A pesquisa foi realizada por meio de entrevistas com consumidores diretamente nos postos de venda, localizados em diferentes pontos da cidade mediante a aplicação de um questionário previamente definido. Verificou-se que a grande maioria dos entrevistados era do sexo feminino (72,5%), com idade entre 21 a 40 anos (47,5%), com grau de instrução referente ao ensino superior completo (28%) e renda familiar próxima a três salários mínimos (50,5 %). A maioria dos entrevistados consome ovos três vezes por semana, preferencialmente fritos (44%) e avaliam a validade do produto na hora da compra (66,8%). A maior parte da população entrevistada prefere ovos de casca vermelha (66,5%),embora não ache que a cor da casca afete o seu valor nutricional (58,9%). Ainda que 58% dos consumidores entrevistados tenham afirmado que a cor da gema influencia o valor nutricional do ovo, 59,3% não tem preferência por essa característica. Observou-se percentual significativo (71%) de consumidores que não possuem conhecimento do valor nutricional, mas que afirmam que o consumo de ovos não faz mal à saúde (67%). O consumidor de ovos do município de Aquidauana -MS é representado em sua maioria por mulheres com idade entre 20 a 40 anos, com escolaridade superior completa, renda familiar ao redor de três salários mínimos e uma frequência de consumo de três vezes na semana. São exigentes no momento da compra, preferem ovos de casca vermelha, não se importam com a coloração da gema e acreditam que o ovo não faz mal à saúde, porém declaram que o alimento apresenta alta concentração de colesterol e que pode transmitir alguma doença como a salmonelose.


The objective of this study was to evaluate the consumer profile of chicken egg in the municipality of Aquidauana-MS. The research was conducted through interviews with consumers directly at the Supermarkets, located in different parts of the city by applying a previously defined questionnaire. It was found that the majority of interviewed were female (72,5%), aged between 21-40 years (47,5%), with an education degree referring to complete higher education (28%) and family income close to three minimum wages (50,5 %). The most interviewed consumed eggs three times a week, preferably fried (44%) and evaluate the validity of the product at the time of purchase (66,8%). Most of the interviewed population chose shell eggs (66,5%), although they do not think that the color of the shell affects its nutritional value (58,9%). Even if 58% interviewed have stated that the color of the yolk influences the nutritional value of the egg 59,3% do not have prefer by this characteristic. Objetivou-se avaliar o perfil dos consumidores de ovos do município de Aquidauana-MS. A pesquisa foi realizada por meio de entrevistas com consumidores diretamente nos postos de venda, localizados em diferentes pontos da cidade mediante a aplicação de um questionário previamente definido. Verificou-se que a grande maioria dos entrevistados era do sexo feminino (72,5%), com idade entre 21 a 40 anos (47,5%), com grau de instrução referente ao ensino superior completo (28%) e renda familiar próxima a três salários mínimos (50,5 %). A maioria dos entrevistados consome ovos três vezes por semana, preferencialmente fritos (44%) e avaliam a validade do produto na hora da compra (66,8%). A maior parte da população entrevistada prefere ovos de casca vermelha (66,5%),embora não ache que a cor da casca afete o seu valor nutricional (58,9%). Ainda que 58% dos consumidores entrevistados tenham afirmado que a cor da gema influencia o valor nutricional do ovo, 59,3% não tem preferência por essa característica. Observou-se percentual significativo (71%) de consumidores que não possuem conhecimento do valor nutricional, mas que afirmam que o consumo de ovos não faz mal à saúde (67%). O consumidor de ovos do município de Aquidauana -MS é representado em sua maioria por mulheres com idade entre 20 a 40 anos, com escolaridade superior completa, renda familiar ao redor de três salários mínimos e uma frequência de consumo de três vezes na semana. São exigentes no momento da compra, preferem ovos de casca vermelha, não se importam com a coloração da gema e acreditam que o ovo não faz mal à saúde, porém declaram que o alimento apresenta alta concentração de colesterol e que pode transmitir alguma doença como a salmonelose.(AU)


The objective of this study was to evaluate the consumer profile of chicken egg in the municipality of Aquidauana-MS. The research was conducted through interviews with consumers directly at the Supermarkets, located in different parts of the city by applying a previously defined questionnaire. It was found that the majority of interviewed were female (72,5%), aged between 21-40 years (47,5%), with an education degree referring to complete higher education (28%) and family income close to three minimum wages (50,5 %). The most interviewed consumed eggs three times a week, preferably fried (44%) and evaluate the validity of the product at the time of purchase (66,8%). Most of the interviewed population chose shell eggs (66,5%), although they do not think that the color of the shell affects its nutritional value (58,9%). Salmonella spp. is an important causal agent of salmonellosis in humans. Controlling Salmonella spp. in eggs is important as the bacterium passes through the shell to an embryo and remains in the terrain. Disinfection is usually performed by using several sanitizers. However, novel, more efficient ways of controlling this agent have been studied with advances in nanotechnology, including nanoparticles. Preliminary studies of nanoparticles have shown they are successful in controlling such microorganisms. Standardizing the ideal concentration of this nanocomposite is fundamental for optimum efficiency in the control of Salmonella spp. In this study, eggs from commercial laying chickens were purchased from local trade and treated in laboratory with silver and zinc nanoparticles in different concentrations. Biofilm was formed 24 hours after that; then, the eggs were washed for the removal of free bacteria. Conventional microbiology was performed to isolate Salmonella spp., and PCR was performed to identify colonies. The effectiveness of using nanocomposite of silver oxide with silver-doped zinc oxide (ZnO:Ag-AgO) was evaluated in different concentrations to prevent the formation of eggshell biofilms.


As Salmonellas spp. são importantes agentes causadores de salmonelose em humanos. O controle da Salmonella spp. é importante, pois a bactéria ultrapassa a barreira da casca atingindo o embrião e infecta lotes de aves que podem levar a infecção ao ser humano. A desinfecção costuma ser feita por vários sanitizantes; porém, com os avanços da nanotecnologia, formas novas e mais eficientes de controle desse agente estão sendo estudadas, como as nanopartículas. Estudos preliminares dessas nanopartículas têm mostrado o sucesso de seu uso no controle de microrganismos. A padronização da concentração ideal de uso desse nanocomposto é fundamental para a máxima eficiência no controle de Salmonella spp. Ovos vermelhos oriundos de postura comercial foram comprados no comércio local e tratados em laboratório com as nanopartículas em diferentes concentrações; após 24 horas, formaram o biolfilme. Os ovos foram lavados para a retirada das bactérias livres. Realizaram-se exame microbiológico convencional, para isolamento de Salmonella spp., e PCR, para identificação das colônias. O objetivo deste artigo foi avaliar a eficácia da utilização de nanocompostos de óxido de prata com óxido de zinco dopado com óxido de prata (ZnO: Ag-Ago) em diferentes concentrações na prevenção da formação de biofilmes na casca dos ovos.

The present study was conducted on pair aged commercial laying breeder strains (Hy-Line Brown and Hy-Line W-36) to evaluate genetic differences of eggshell and bone quality. In addition, egg production performance, mortality rate, internal organs and reproductive measurements were determined. Correlation coefficients among some eggshell and bone traits were calculated. White layer breeder hens had significantly higher percentages of hen-day and hen-housed egg production compared to the brown one. Brown Hy-Line layer breeder strain had better eggshell quality compared to W-36 Hy-Line layer breeder strain. The white layer breeder strain had a significantly higher relative oviduct weight compared to the brown one. Brown layer breeder strain recorded the higher humerus width in comparison with the white one. Tibia bone weight of brown layer breeder strain was significantly heavier by 22.87% as compared to the white strain. Moreover, the brown breeder strain recorded the higher figure of tibia width, thickness, and strength. In conclusion, at the end of the laying cycle, brown Hy-Line layer breeder strain exhibited better eggshell quality, body weight and tibia bone quality than those of W-36 breeder strain. Positive correlation coefficients were detected between humerus bone strength and both eggshell thickness and strength in brown and white strains.(AU)

In order to find out the main factors influenced the hatchability and improve the hatchability of the windowed chicken eggs at stage X, several experiments were made on the basis of the former patent of eggshell windowing methods on equatorial plane, such as cutting and sealing techniques, air cell recovering, laying position immediately after sealing, as well as the injection volumes into the subgerminal cavity of the blastoderm. The result showed that:1) the best sealing material combination was straw powder (SP) and instant glue (IG); 2) there was a highly positive correlation between air cell rate and hatchability; 3) the highest hatchability increased to 71.6% when the eggs were windowed and sealed with IG dropped firstly and then SP sprinkled, finally lay down with the blunt end upward immediately after being sealed; 4) the hatchability was significantly reduced as injection volume (DMEM) was increased (p 0.05 or p 0.01) from 1 µL to 10 1 µL, and the group of injecting 1 µL was the highest (48.4 %). The hatchability and efficiency with such method of windowing, injecting, and sealing was the highest at the present time (more than 30 eggs per hour per person), and it might be broadly used in the fields of avian transgenesis, genetic resources preservation, and embryonic development model of human medicine.(AU)

Were evaluated the effects of substituting limestone with quail eggshell powder on the zootechnical performance, egg quality, and economic efficiency of Japanese quails during peak egg production (11-20 weeks old). The experimental period was 63 days, divided into three 20-day periods. A completely randomized experimental design was used with five treatments (0, 25, 50, 75, and 100% substitution of limestone by eggshell powder), six repetitions, and seven birds per experimental unit, for a total of 210 quails. Feed intake, production of egg/bird/day, egg production per bird housed, marketable egg production, egg viability, feed conversion per egg mass, Seedor index, tibia calcium content, and percentage of calcium excreted were determined. The following variables for egg quality were analyzed: egg weight, specific weight, percentage of egg yolk, albumen and shell, and shell thickness. Economic efficiency was evaluated in fresh and industrialized eggs. Statistical analyses were performed using the SAS software, version 9.2 (2010). Substitution of limestone for eggshell powder had no significant effect on zootechnical performance, tibia calcium content, or egg quality. However, there were significant effects on the percentages of albumen and calcium excreted. The substitution of limestone by eggshell powder in quail feed resulted in higher economic efficiency indexes. These results indicate that the use of 100% eggshell powder in the feed of Japanese laying quails is viable.(AU)


Com o objetivo de avaliar os efeitos da substituição do calcário pela farinha de casca de ovo de codorna sobre o desempenho zootécnico, a qualidade dos ovos e a eficiência econômica de codornas japonesas no pico de postura (11 a 20 semanas de idade), foram utilizadas 210 codornas em um período experimental com duração de 63 dias, divididos em três períodos de 21 dias cada. Foi utilizado o delineamento experimental inteiramente casualizado, composto de cinco tratamentos (0, 25, 50, 75 e 100% de substituição de calcário calcítico por casca de ovo), seis repetições e sete aves por unidade experimental. Avaliou-se o consumo de ração, produção de ovo/ave/dia, produção de ovo ave/alojada, produção de ovos comercializáveis, viabilidade, conversão alimentar massa de ovos, índice de Seedor, teor de cálcio na tíbia e porcentagem de cálcio excretado. Para avaliação da qualidade dos ovos, foram analisadas as seguintes variáveis: peso do ovo, peso específico, porcentagem da gema, de albúmen e de casca e espessura da casca. A eficiência econômica foi avaliada no ovo in natura e no ovo industrializado. As análises estatísticas foram realizadas utilizando o software SAS, 2010 (Statistical Analysis System, versão 9.2). Não houve efeito significativo da substituição do calcário calcítico por farinha de casca de ovo sobre o desempenho zootécnico, porcentagem de cálcio na tíbia e qualidade de ovos. Entretanto, a porcentagem de albúmen e a porcentagem de cálcio excretado foram alterados significativamente. A substituição do calcário pela farinha de casca de ovo nas rações resultou na melhora dos índices de eficiência econômica. This study aimed at evaluating the internal and external quality of brown-shelled eggs commercialized in the municipality of Parintins-AM. A total of 540 eggs were evaluated and distributed in a completely randomized design, which consisted of three treatments and six replications of 30 eggs each. The treatments were: eggs sold in supermarkets; in grocery stores; and eggs sold directly at the farm. The age of the eggs from supermarkets and grocery stores was unknown, however, the eggs bought at the farm were marketed as being from the day of laying. The collected data were submitted to analysis of variance and Tukey test at 5% probability. There were no differences (p > 0.05) of treatments in the percentage of dirty eggs, however, grocery and farm eggs presented higher (p < 0.05) crack percentage. The eggs at the farm presented higher incidence (p < 0.05) of internal stains of blood. The weight of the egg and albumen presented no differences (p > 0.05). However, the albumen percentage of the farm eggs was higher than the other treatments (p < 0.05). The percentages for yolk and eggshell weight from the farm eggs were lower than the supermarket and grocery eggs (p < 0.05). For the variables albumen height, Haugh unit, albumen index, yolk and albumen pH, the best results were observed for the farm eggs, however, regarding these variables, eggs sold in supermarkets and grocery stores did not differ from each other. The brown shell eggs sold in the city of Parintins/AM have high rates of external defects, and the eggs bought directly from the farm presented better internal quality, when compared to eggs sold in different establishments.(AU)
