Resumo

A vida moderna praticamente impôs a alimentação fora de casa o que contribuiu para o aumento cada vez mais significativo do consumo de alimentos em restaurantes self-service. O presente trabalho teve como objetivos avaliar a qualidade higiênico-sanitária das saladas mistas no tocante à exposição para o consumo; avaliar os resultados segundo a legislação vigente; recomendar medidas corretivas e reavaliar estes alimentos após trinta dias. Foram analisadas quinze amostras de saladas mistas, provenientes de quatro estabelecimentos, às quais foram analisadas quanto à temperatura de conservação nos balcões e à qualidade microbiológica (contagem de bactérias aeróbias mesófilas, contagem de estafilococos coagulase positiva e pesquisa de salmonela). Após os resultados das análises, foi feita a recomendação de medidas corretivas para os estabelecimentos. Em todos os estabelecimentos houve melhora da temperatura do balcão de frios, mas em apenas dois foi detectada discreta melhora na contagem de micro-organismos em condições sanitárias insatisfatórias. Conclui-se que não houve empenho dos estabelecimentos em se adequar às medidas orientativas já que não conseguiram atingir os valores legais estabelecidos.(AU)
The modem life practically imposed the feeding is of house what contributed for the increase each moresignificant time of the food consumption in restaurants. The mixing saladas ones are of great representation in the meals, however, these also are part of a significant parcel of causes of occurrence of Illnesses Transmitted for Foods - DTA. The present work had as objective to evaluate saladas the sanitary hygienical quality and the processing of mixing in regards to the manipulation and the exposition for consumption; to evaluate the results according to current law; to recommend corrective measures and to reevaluate these foods thirty days after. Salads had been analyzed fifteen samples of mixing, proceeding from four establishments, which had been analyzed how much the temperature of conservation in the balconies and the microbiological quality (counting of aerobic bacteria mesófilas, counting of fecals coliformes, positive counting of estafilococos coagulase and searches of salmonela) according to Silva et ai. (1997). All the samples met according to with superior temperatures to adequate and in unsatisfactory sanitary conditions the legal standards (BRAZIL, 2001). After the results of the analyses were made the recommendation of corrective measures for the establishments. After elapsing of thirty days the analyses had been repeated. In ali the establishments had improvement of the temperature of the balcony of colds, but in only two was detected discrete improvement in the counting of microrganismos in unsatisfactory sanitary conditions. One becomes necessary, the awareness of the responsible ones of the establishments in order to guide and to train its employees, attempting against to the risks of contamination of foods; it is also of basic importance, the fiscal accompaniment of the Sanitary Monitoring to minimize possible aggravations to the Public Health.
