Resumo

A higienização adequada de uma Unidade de Alimentação e Nutrição (UAN) encontra-se diretamente relacionada à produção segura dos alimentos e alcançá-la depende principalmente da cooperação das funcionárias responsáveis pelo pré-preparo dos alimentos. Sabendo-se disso, este trabalho teve o objetivo de avaliar e garantir as condições higiênico-sanitárias do local e a segurança do alimento oferecido em uma UAN, localizada na cidade de Guarapuava-PR. O trabalho ocorreu nos meses de março e abril de 2006, através de treinamentos baseados em manuais de boas práticas de fabricação, avaliação do desempenho de oito funcionárias na realização das atividades propostas e oferecendo a elas orientações de como proceder para alcançar os objetivos propostos. As palestras trataram de temas como: 1. higiene pessoal, 2. limpeza de equipamentos e utensílios e 3. higienização dos sanitá rios. As funcionárias receberam instruções, quanto às responsabilidades individuais e em grupo, dentro da UAN, com o aUXI1iode tabelas que continham informações diárias sobre o cumprimento das atividades indicadas nas mesmas. O desempenho era classificado como Regular, Bom e Ótimo. Quando avaliadas individualmente no quesito higienização das áreas de serviço, constatou-se que 87,5% das funcionárias tiveram seu desempenho classificado como Bom e 12,5% como Regular. No quesito higiene pessoal, as avaliações indicaram que, 75% das funcionárias tiveram seus hábitos de higiene pessoal considerados Bom e 25% Regular, sendo que nenhuma obteve Ótimo. Pode-se observar que 62,5% das funcionárias melhoraram seus hábitos após a implantação do treinamento.Quando analisadas quanto ao desempenho na higienização dos sanitários, 62,5% apresentaram melhorias consideráveis durante a execução da tarefa proposta. The adequate hygienic cleaning of a unit of feeding and nutrition (UFN) meets related the directly safe production offoods, to reach it depends mainly on the cooperation of the responsible employees for daily pay-prepares and preparation of the foods. Knowing itself of this, this work had the objective to guarantee the hygienical-sanitary conditions of the UFN, located in the city of Guarapuava Pr, through the accomplishment of training based on good manuals of practical of manufacture, evaluation of the performance of eight employees in carrying through the activities indicated in the project and offering they orientations of as to proceed to reach the objectives of the project, in order to guarantee the security of the offered food. The research include lectures, that had dealt with differentsubjects as: 1. personal hygienic, 2. cleanness of equipment and utensils and 3. Hygienic cleaning of the sanitary. The employees had received instructions, how much to the responsibilities of the group and individually, inside of the UFN. These had been evaluated in the subjects cited in the lectures, through tables that contained daily information on the fulfillment of the activities indicated in the same ones. Based in these, they possessed its performance before Regular, Good and Excellent the activity proposal classified as. When evaluates individually in the question hygieniccleaning of the service areas, one evidenced that 87,5% of the employees had its classified performance as good and 12,5% as to regular. in the question personal hygiene, the evaluations had indicated that; 75%of the employees had had its habits of personal hygiene considered good and 25%for regulating, being that none got excellent. it can be observed that 62,5% of the employees had improved its habits after implantation of the training.
