RESUMO

The brown marmorated stink bug (BMSB; Halyomorpha halys Stål.) is a highly destructive and polyphagous invasive pest that poses a serious threat to more than a hundred reported host plants. In the current study, the metabolic response of peach fruit of two cultivars-'Maria Marta' and 'Redhaven'-to BMSB infestation was studied using high-performance liquid chromatography (HPLC) and mass spectrometry (MS). In general, a strong phenolic response to BMSB infestation in peach flesh in the injury zone was observed, with flavanol content increasing by 2.4-fold, hydroxycinnamic acid content by 5.0-fold, flavonol content by 3.2-fold, flavanone content by 11.3-fold, and dihydrochalcones content by 3.2-fold compared with the undamaged tissue in the cultivar 'Maria Marta'. The phenolic response in the 'Redhaven' cultivar was even stronger. Consequently, the total phenolic content in the injured flesh also increased, 3.3-fold in 'Maria Marta' and 6.9-fold in 'Redhaven', compared with the uninjured flesh. Infestation with BMSB induced the synthesis of cyanidin-3-glucoside, which is not normally present in peach flesh. In comparison, the phenolic response was lower in peach peel, especially in the cultivar 'Maria Marta'. The study showed that both peach cultivars reacted to BMSB infestation with an increase in phenolic content in the peach flesh, but in a limited area of injury.

In the present study, the partial substitution of common white wheat flour for a bread recipe with variously bioprocessed wholegrain spelt was investigated. The addition of 1% and pasteurised 5% "germinated + enzymatic treated" spelt flour to wheat flour significantly improved the specific volume of the bread, but their texture profile analysis and sensory evaluation were not satisfactory. A higher percentage of added bioprocessed spelt flour darkened the colour of the bread. Breads with the addition of more than 5% of bioprocessed spelt flour were unacceptable in terms of quality and sensory parameters. The highest extractable and bound individual phenolics were found in breads with 5% "germinated + fermented" spelt flour (GFB5) and 5% pasteurised "germinated + enzymatic treated" spelt flour (GEB5P). A strong positive correlation was determined between trans-ferulic acid and TPC and DPPH• radical scavenging activity. The GEB5P bread showed the highest increase in extractable and bound trans-ferulic acid content, by 320% and 137%, respectively, compared to the control bread. Principal component analysis showed differences between the control bread and enriched breads in terms of their quality, sensory and nutritional properties. Breads with 2.5% and 5% "germinated + fermented" spelt flour had the most acceptable rheological, technological and sensory characteristics, in addition to a substantial improvement in their antioxidant content.

BACKGROUND: Herbs are rich in various beneficial bioactive compounds and they can be used for many different purposes. One of the most common is maceration of herbs in alcohol. Different substances respond differently to extraction in prepared solutions. It is very important to enhance the highest proportion of beneficial ingredients during the maceration process in a herbal liqueur. A comparative analysis of numerous different phenolic compounds from eight of the most frequently used herbs for making aperitifs in Europe was performed. RESULTS: In the comparison among all studied herbs, the highest phenolic content was found with Artemisia absinthium (wormwood) (14.61 mg g-1 ) and Mentha piperita (peppermint) (13.89 mg g-1 ), while the lowest content was found with Centaurium erythraea (common centaury) (3.96 mg g-1 ). Salvianolic acid isomers and caffeic acid derivatives were the greatest contributors to the total phenolic content in lemon balm, wormwood, peppermint, fennel and sage. These compounds contain more hydroxyl groups and they were better extracted at the beginning of the maceration process. Caraway and common centaury contain more flavonols (quercetin and kaempferol derivatives), with higher chemical stability and fewer hydroxyl groups in their structure. CONCLUSION: The compositions of eight herbal liqueurs were highly related to the presence of different herbal ingredients and their solubility in the extract over time. Most flavonol derivatives were extracted over a longer time and the two liqueurs (common centaury and caraway) therefore had the highest phenolic contents after 3 weeks of maceration. © 2019 Society of Chemical Industry.

BACKGROUND: Commercially available poinsettia (Euphorbia pulcherrima) varieties prevalently accumulate cyanidin derivatives and show intense red coloration. Orange-red bract color is less common. We investigated four cultivars displaying four different red hues with respect to selected enzymes and genes of the anthocyanin pathway, putatively determining the color hue. RESULTS: Red hues correlated with anthocyanin composition and concentration and showed common dark red coloration in cultivars 'Christmas Beauty' and 'Christmas Feeling' where cyanidin derivatives were prevalent. In contrast, orange-red bract color is based on the prevalent presence of pelargonidin derivatives that comprised 85% of the total anthocyanin content in cv. 'Premium Red' and 96% in cv. 'Harvest Orange' (synonym: 'Orange Spice'). cDNA clones of flavonoid 3'-hydroxylase (F3'H) and dihydroflavonol 4-reductase (DFR) were isolated from the four varieties, and functional activity and substrate specificity of the corresponding recombinant enzymes were studied. Kinetic studies demonstrated that poinsettia DFRs prefer dihydromyricetin and dihydroquercetin over dihydrokaempferol, and thus, favor the formation of cyanidin over pelargonidin. Whereas the F3'H cDNA clones of cultivars 'Christmas Beauty', 'Christmas Feeling', and 'Premium Red' encoded functionally active enzymes, the F3'H cDNA clone of cv. 'Harvest Orange' contained an insertion of 28 bases, which is partly a duplication of 20 bases found close to the insertion site. This causes a frameshift mutation with a premature stop codon after nucleotide 132 and, therefore, a non-functional enzyme. Heterozygosity of the F3'H was demonstrated in this cultivar, but only the mutated allele was expressed in the bracts. No correlation between F3'H-expression and the color hue could be observed in the four species. CONCLUSIONS: Rare orange-red poinsettia hues caused by pelargonidin based anthocyanins can be achieved by different mechanisms. F3'H is a critical step in the establishment of orange red poinsettia color. Although poinsettia DFR shows a low substrate specificity for dihydrokaempferol, sufficient precursor for pelargonidin formation is available in planta, in the absence of F3'H activity.

BACKGROUND: Interest in organic blue honeysuckle berries has increased in recent years. They are rich in various health-promoting compounds which are sensitive to different environmental factors and are modified during the growing season. RESULTS: Honeysuckle berries from different locations differed significantly in their contents of primary and secondary metabolites. The location Ogulin, with the highest altitude and consequently high UV radiation, had the highest phenolic content (259.85 mg per 100 g). Additionally, Vukovski Vrh, with the lowest temperature, had the highest ascorbic acid content (36.83 mg per 100 g), while Smartno pri Litiji and Visnja Gora, with the highest precipitation, had the highest organic acid contents (885.85 and 850.01 mg per 100 g respectively). A combination of stressful environmental conditions of temperature, water source and light intensity led to the highest saponin content in Visnja Gora (695 mg per 100 g), the highest tannin content in Dolnje Impolje (134 mg per 100 g) and the highest sugar content (2585.45 mg per 100 g) in Vucetinac. CONCLUSION: The contents of bioactive substances were influenced by various environmental factors such as temperature, UV radiation, altitude, light intensity and fruit ripening stage. Different compounds respond distinctly to different environmental factors. © 2017 Society of Chemical Industry.

MAIN CONCLUSION: Rare red currants colors caused by low anthocyanin content in the pink and a lack of anthocyanins in the white cultivar correlated with low ANS gene expression, enzyme activity, and increased sugar/acid ratios. Changes in the contents of polyphenols, sugars, and organic acids in berries of the three differently colored Ribes rubrum L. cultivars ('Jonkheer van Tets', 'Pink Champagne', and 'Zitavia') were determined by LC-MS and HPLC at 4 sampling times during the last month of fruit ripening. The activities of the main flavonoid enzymes, chalcone synthase/chalcone isomerase (CHS/CHI), flavanone 3-hydroxylase (FHT), and dihydroflavonol 4-reductase (DFR), and the expression of anthocyanidin synthase (ANS) were additionally measured. Despite many attempts, activities of flavonol synthase and glycosyltransferase did not show reliable results, the reason of which they could not be demonstrated in this study. The pink fruited cultivar 'Pink Champagne' showed generally lower enzyme activity than the red cultivar 'Jonkheer van Tets'. The white cultivar 'Zitavia' showed very low CHS/CHI activity and ANS expression and no FHT and DFR activities were detected. The DFR of R. rubrum L. clearly preferred dihydromyricetin as substrate although no 3',4',5'-hydroxylated anthocyanins were present. The anthocyanin content of the red cultivar slightly increased during the last three weeks of ripening and reached a maximum of 890 mg kg-1 FW. Contrary to this, the pink cultivar showed low accumulation of anthocyanins; however, in the last three weeks of ripening, their content increased from 14 to 105 mg kg-1 FW. Simultaneously, the content of polyphenols slightly decreased in all 3 cultivars, while the sugar/acid ratio increased. The white cultivar had no anthocyanins, but the sugar/acid ratios were the highest. In the white and pink cultivars, reduction/lack of anthocyanins was mainly compensated by increased relative concentrations of hydroxycinnamic acids and flavonols.

BACKGROUND: Double maturation raisonnée (DMR) is a potential canopy measure that affects grape and wine composition. The aim of this work was to study for the first time the DMR impact on the physical, biochemical and sensorial characteristics of the berries and wines of Merlot, one of the world's fastest-expanding grapevine varieties. RESULTS: DMR significantly increased the content of soluble solids (1.2-fold), free amino nitrogen (1.8-fold) and acidity in berries but decreased the weight of 100 berries on harvest (approx. 28%). Irrespective of the vintage, DMR-treated grapes had a significantly higher content of non-astringent tannins (0.73-0.78 mg L-1 ) and anthocyanin extractability (34.7-36.4%) but a lower index of astringency (31.2-33.7) when compared to the control. Consequently, the DMR wines achieved higher alcohol, total acidity and extract, hydroxycinnamic acids, flavanol and flavonol contents, whereas the content of anthocyanins was similar to that of the control. Sensorial evaluation showed that DMR wines were not rated higher and would not be appreciated more than control wines. CONCLUSION: Changes in berries during DMR altered the wine characteristics only in terms of primary metabolites. A reduced accumulation of phenolics, especially anthocyanin content, in the berry skin of DMR-treated grapes was not reflected in their presence in wines. To the best of our knowledge, this is the first paper that has reported an impact of DMR on the grape and wine composition of Merlot, as one of the most promising red varieties. © 2017 Society of Chemical Industry.

BACKGROUND: Elderberry (Sambucus nigra L.) possesses high antioxidant activity and has been used to treat numerous medicinal disorders. In addition to their antioxidant properties, elderberry parts accumulate toxic cyanogenic glycosides (CGG). It has been proven that altitude influences the biosynthesis of many secondary metabolites. In the present study we investigated the change of phenolics and CGG in elder leaves, flowers, and berries induced by different altitudes and locations. RESULTS: The data indicate that the accumulation of CGG and phenolics is affected by the altitude of the growing site. An increase of anthocyanin content was recorded in elder berries collected at higher elevations in both locations. Fruit collected at the foothills of location 2 contained 3343 µg g-1 anthocyanins as opposed to fruit from the hilltop, which contained 7729 µg g-1 . Elder berries contained the lowest levels of harmful CGG compared to other analysed plant parts. However, more cyanogenic glycosides were always present in plant parts collected at the hilltop. Accordingly, berries accumulated 0.11 µg g-1 CGG at the foothills and 0.59 µg g-1 CGG at the hilltop. CONCLUSION: Elder berries and flowers collected at the foothill were characterised by the lowest levels of both beneficial (phenolics) and harmful compounds (CGG) and are suitable for moderate consumption. © 2016 Society of Chemical Industry.

BACKGROUND: Three different irrigation regimes - upper limit of field capacity (UFC), -12 kPa); lower limit of field capacity (LFC), -33 kPa; and deficit irrigation (DI), -70 kPa) were established on silty-loam soil and monitored with tensiometers. Yield and fruit quality of 'Flamenco' and 'Eva's Delight' ever-bearing strawberry cultivars were monitored. The aim of the study was to evaluate the effect of different irrigation regimes on the content of sugars, organic acids and phenolic compounds using high-performance liquid chromatography-mass spectrometry HPLC/HPLC-MS. RESULTS: Deficit irrigation significantly increased the content of sugars (from 1.1- to 1.3 fold), organic acids (from 1.1- to 1.3-fold), their ratio (from 1.1- to 1.2-fold) and the content of most identified phenolics in cv. 'Flamenco'. Conversely, higher amounts of total sugars and organic acids (1.7- to 1.8-fold) were detected in 'Eva's Delight' strawberries at UFC and LFC irrigation. Deficit irrigation generally decreased strawberry yield of cv. 'Eva's Delight'. CONCLUSION: The results suggest superior fruit quality and taste of strawberries grown under minor deficit irrigation for cv. 'Flamenco'. © 2016 Society of Chemical Industry.

BACKGROUND: The interest in producing wines preferred by consumers increases the need for improving practices to modify grape and wine composition. The aim of this study was to assess the impacts of three different canopy management measures, (1) early leaf removal in the cluster zone, (2) removal of young leaves above the second pair of wires and (3) Double Maturation Raisonnée, on the yield and chemical composition of 'Istrian Malvasia' grape and wine. RESULTS: Double Maturation Raisonnée had a significantly greater impact on phenolic compounds, while the highest soluble solids (24.3 and 23.5 °Brix) and titratable acidity (7.0 and 7.1 g L-1 ) were measured at early leaf removal. Leaf removal at véraison caused an unexpected augmentation of flavonols in the berry skin. Early leaf removal resulted in significantly lower extracts of wine. Nevertheless, they reached the highest mark (16.5 out of 20.0 points) in sensory evaluation compared with leaf removal at véraison and Double Maturation Raisonnée (15.0 points) and control (16.0 points). CONCLUSION: Leaf removal at véraison and Double Maturation Raisonnée improved the phenolic composition of wine, producing a full-bodied wine. On the other hand, early leaf removal significantly augmented the yield and titratable acidity, hydroxycinnamic acids and flavanols of wine, which might have led to a fresher but less-bodied wine. © 2016 Society of Chemical Industry.

BACKGROUND: Watercore is a physiological disorder affecting fruit of some apple (Malus domestica Borkh.) cultivars. Intercellular spaces are filled with fluid, which reduces intercellular air space volume. In this study individual phenolic content, sugars and organic acids in watercore affected flesh have been identified and quantified. Peroxidase activity was also measured, as a potential stress indicator. The study was performed on three cultivars prone to watercore development 'Delicious', 'Gloster' and 'Fuji'. RESULTS: Total phenolic content was higher in flesh of fruit without watercore in all three cultivars, which was mainly due to higher individual and total flavanol content. In contrast, total and individual dihydrochalcone content was higher in watercore flesh, where it was up to 2.4 times higher from the flesh of fruit without watercore. Also, peroxidase activity was higher in watercore flesh. CONCLUSION: Higher peroxidase activity and total and individual dihydrochalcone content leads us to believe that oxidative stress occurred. These results show that watercore has an influence on apple fruit sugar and phenol content even before any visual signs of internal breakdown and browning. With the development of non-destructive techniques for phenol content determination, the knowledge about phenolic changes in watercore affected fruits could aid with apple fruit sorting. © 2015 Society of Chemical Industry.

The enzyme polyphenol oxidase (PPO) catalyzes the oxidation of phenolic compounds into highly reactive quinones. Polymerization of PPO-derived quinones causes the postharvest browning of cut or bruised fruit, but the native physiological functions of PPOs in undamaged, intact plant cells are not well understood. Walnut (Juglans regia) produces a rich array of phenolic compounds and possesses a single PPO enzyme, rendering it an ideal model to study PPO. We generated a series of PPO-silenced transgenic walnut lines that display less than 5% of wild-type PPO activity. Strikingly, the PPO-silenced plants developed spontaneous necrotic lesions on their leaves in the absence of pathogen challenge (i.e. a lesion mimic phenotype). To gain a clearer perspective on the potential functions of PPO and its possible connection to cell death, we compared the leaf transcriptomes and metabolomes of wild-type and PPO-silenced plants. Silencing of PPO caused major alterations in the metabolism of phenolic compounds and their derivatives (e.g. coumaric acid and catechin) and in the expression of phenylpropanoid pathway genes. Several observed metabolic changes point to a direct role for PPO in the metabolism of tyrosine and in the biosynthesis of the hydroxycoumarin esculetin in vivo. In addition, PPO-silenced plants displayed massive (9-fold) increases in the tyrosine-derived metabolite tyramine, whose exogenous application elicits cell death in walnut and several other plant species. Overall, these results suggest that PPO plays a novel and fundamental role in secondary metabolism and acts as an indirect regulator of cell death in walnut.

BACKGROUND: As a part of the ongoing interest in nutritional and nutraceutical properties of locally produced fruits, the aim of the article was to determine sugars, organic acids, polyphenols and antioxidant capacity of wild bilberries grown in Slovenia. Primary and secondary metabolite composition of bilberry fruit was compared among six phyto-climatic conditions, differing in photosynthetic active radiation and light intensity. RESULTS: Three sugars were quantified in bilberry fruit, the predominant being fructose and glucose, along with five organic acids. Bilberry fruit contained high levels of anthocyanins (cyanidin, delphinidin, malvidin, petunidin and peonidin glycosides), hydroxycinnamic acid derivatives and low levels of flavonol glycosides (mainly quercetin and myricetin glycosides), flavan-3-ols, proanthocyanidins and iridoids. The results of the study indicate that bilberries growing in sites with high photosynthetic active radiation (PAR) contained higher levels of total sugars, anthocyanins, flavonols and hydroxycinnamic acids and lower levels of organic acids compared with bilberry fruit from low-light locations. Consequently, total phenolic content and antioxidative capacity of the fruit from high-PAR locations were significantly increased. CONCLUSION: Bilberries from different natural habitats differ significantly in the quantity of sugars, organic acids and phenolic compounds. Our results contribute to a fuller understanding of the relationships between environmental factors and accumulation of primary and secondary metabolites in bilberry fruits.

BACKGROUND: Changes of environmental factors, created under the influence of various shading nets, could significantly affect the biological characteristics of plants grown in such conditions as well as biosynthesis of primary metabolites and ascorbic acid. Five blackcurrant cultivars - 'Ben Sarek', 'Ben Nevis', 'Ben Lomond', 'Ometa' and 'Cacanska Crna' - were cultivated in the shade of two green polyethylene nets and exposed to direct sunlight during two experimental seasons. RESULTS: In the control treatment, all cultivars contained the highest amounts of soluble solid content and number of flower buds per shoot in both years of cultivation. The bushes exposed to direct sunlight had the highest sunburn damage to the berries and leaves, and loss of yield. The greatest yield loss caused by berry damage in the present study during the experimental period was in cultivar 'Ben Sarek': 9.0% in 2010 and 15.4% in 2011. Growing in the shade of light-green net contributed the highest content of ascorbic acid. Control bushes and those shaded by light-green net had significantly higher radical scavenging activity, with values between 1.15 and 1.22 mg mL(-1). CONCLUSION: Plants shaded by nets in both years of cultivation had lower damage to leaves and berries and percentage of loss of yield, and usage of the net would be economically advantageous to growers. Fruit of blackcurrant cultivars grown in shading conditions still represent a good source of valuable nutritive and biologically active compounds.

This study aimed to determine the content and composition of bioactive compounds in autochthonous rose hips (R. pendulina, R. spinosissima, and R. gallica) and to compare them with the content of bioactive compounds in some cultivars ('Harstad', 'Bourgogne', 'Mount Everest', 'Poppius', 'Fruhlingsduft', 'Single Cherry', 'Fruhlingsmorgen', 'Violacea', and 'Splendens') derived from these main species. Due to insufficient information on how bioactive compound content changes when crossing roses, this study also sought to ascertain whether modern rose hip cultivars are still a sufficiently rich source of bioactive compounds and could, therefore, be potentially used as a functional food. All material was collected in the Arboretum Volcji Potok (Slovenia). The ascorbic acid content was highest in the 'Harstad' cultivar (12.79 g/kg FW), and the total organic acid content varied from 1.57 g/kg FW (R. spinosissima) to 34.39 g/kg FW ('Harstad'). Of all the carotenoids analyzed, only lycopene and ß-carotene were present in all the samples. The total carotenoid content was highest in the 'Fruhlingsmorgen' cultivar (100.84 mg/kg FW), derived from R. spinosissima, and lowest in the main species, R. spinosissima (9.26 mg/kg FW). It can be concluded, therefore, that the content of bioactive compounds in rose hips of modern cultivars is generally lower than in rose hips of old cultivars and original species included in this study. The research results confirm that modern breeding strategies are mainly focused on goals such as abundant flowering and resistance to diseases and pests and not so much on the content of bioactive compounds.

The present study deals with the comparison of traditional fruit processing methods on medlar fruits and their effects on sugar content, organic acids, and phenolic composition in the medlar fruit variety 'Domaca nesplja'. The study aimed to analyze which processing methods can be used to make technologically mature medlar fruits that are not yet suitable for consumption edible and to maintain their good chemical quality. The two major sugars in medlars are fructose (59.30 g/kg FW) and glucose (54.43 g/kg FW), and the most abundant organic acids present are malic (8.44 g/kg FW) and quinic acid (8.77 g/kg FW). A total of 38 different phenolic compounds were identified in the medlar fruits: 13 phenolic acids, 9 flavanols, 1 flavone, 3 flavanones, and 12 flavonol glycosides. To explicate: phenolic acids (532.85 mg/kg FW) and flavanols (375.21 mg/kg FW) predominated; neochlorogenic acid had the highest content among phenolic acids; and procyanidins were the most abundant flavanols. The analysis observed statistical differences in metabolite content amongst fruits treated differently (technologically ripe fruits (harvested from the three fruits), edible fruits (technologically ripe fruits stored at 8 °C for 25 days), fruits exposed to the hoarfrost (temperature -1 °C to -4 °C), fruits heated at 60 °C (3 h), and frozen fruits (at -20 °C for 2 months). The lowest levels of fructose (191.77-195.1 g/kg DW) and sorbitol (29.35-31.3 g/kg DW) were detected in the heated and edible fruits. Edible fruits had a 30% lower content of organic acids than technologically ripe fruits and a five times lower content of flavanols, whereas flavonols had an 18.7 times lower content of phenolic acids than technologically ripe fruits. Heating the fruits to 60 °C resulted in a 40% increase in total phenolic compounds in medlars. The results of the study indicate that exposure of medlar fruit to hoarfrost does not significantly affect the chemical quality of the fruit and only minimally alters the composition of sugars, acids, and phenolic compounds. The processing of medlar fruit with hoarfrost, therefore, remains the most suitable method of fruit bletting.

The aim of the study was to determine whether the partial replacement of wheat flour with bioprocessed spelt flour contributes to a higher bioaccessibility of the antioxidants in bread. The results showed that the type and amount of bioprocessed spelt flour in a bread recipe has a major impact on the extractable and bound TPC, the content of individual phenolics, their antioxidant activity, and their bioaccessibility as determined by in vitro digestion. Extractable p-coumaric and trans-ferulic acids in breads decreased after digestion, while extractable cis-ferulic and p-hydroxybenzoic acids increased. The bioaccessibility of TPC in the control bread (100% wheat flour), and in bread enriched with 5% "germinated + fermented" spelt flour (GFB5), did not differ. However, the digested GFB5 bread contained 5.2-times more extractable, and 1.3-times more bound, trans-ferulic acid than the digested control bread. trans-Ferulic acid showed the lowest bioaccessibility, up to 2.8%. In GFB2.5 and GFB5 breads, the bioaccessibility of p-coumaric, trans-ferulic, and cis-ferulic acids was higher than in other digested breads. PCA visualized the difference between the undigested and digested breads. The incorporation of germinated and fermented, or germinated and enzymatic, treated spelt flour in a white bread recipe could be an attractive way of providing consumers with nutritionally interesting foods.

The effects of salicylic acid (SA) and one of its better-known derivatives-methyl salicylic acid (MeSA)-on the infection of apple fruits with the fungus Monilinia laxa, which causes brown rot, were investigated. Since research to date has focused on preventive effects, we also focused on the curative use of SA and MeSA. Curative use of SA and MeSA slowed the progression of the infection. In contrast, preventive use was generally unsuccessful. HPLC-MS was used to analyze the content of phenolic compounds in apple peels in healthy and boundary peel tissues around lesions. The boundary tissue around the lesions of untreated infected apple peel had up to 2.2-times higher content of total analyzed phenolics (TAPs) than that in the control. Flavanols, hydroxycinnamic acids and dihydrochalcones were also higher in the boundary tissue. During the curative treatment with salicylates, the ratio of TAP content between healthy and boundary tissue was lower (SA up to 1.2-times higher and MeSA up to 1.3-times higher content of TAPs in boundary compared to those in healthy tissue) at the expense of also increasing the content in healthy tissues. The results confirm that salicylates and infection with the fungus M. laxa cause an increased content of phenolic compounds. Curative use of salicylates has a greater potential than preventive use in infection control.

Mulberries are the "essence of the past", the so-called Proust effect, for the inhabitants of the sericultural regions who enthusiastically remember feeding silkworms with mulberry leaves and picking the different coloured fruits that were their favourite sweets in childhood. To determine the chemistry behind the colour and taste of mulberry soroses, the main metabolites of the local and introduced varieties were studied. The soroses were classified into five different colour types and the size parameters were determined. The main sugars identified were glucose and fructose, while the predominant organic acids were citric and malic acids, which were highest in the darker varieties, and fumaric and tartaric acids, which were highest in the lighter varieties. A total of 42 phenolic compounds were identified. The predominant phenolic acid was chlorogenic acid, followed by other caffeoylquinic acids and coumaroylquinic acids. The predominant anthocyanins were cyanidin-3-glucoside and cyanidin-3-rutinoside. According to PCA analysis, the colour types showed a clear chemotype character. The sweet taste of the yellowish-white soroses was defined by 49% fructose, followed by 45% glucose and 6% organic acids. The sour character of the black genotypes was characterised by a lower sugar and higher (11%) organic acid content. The colour- and species-dependent effect was observed in the proportion of caffeoylquinic acids and quercetin glycosides, which decreased with increasing colour intensity from 60% of the total to 7%, and from 17% to 1%, respectively. An upward trend was observed for flavanols (5% to 29%) and anthocyanins, which accounted for 62% of the total phenolics in black varieties. This article gives an insight into the metabolite composition of mulberry soroses as the sweets of choice between light and sweet and dark and sour.

Our research aimed to investigate the primary and secondary metabolites of rosehips and petals of R. gallica in comparison with R. subcanina. R. gallica was chosen because it is still unexplored in terms of various bioactive substances and is strongly present in Slovenia. Given that roses are generally very variable and unstudied, our research will contribute to greater transparency and knowledge of the bioactive composition of rosehips and petals. We found a strong positive correlation between the total content of phenolics and ascorbic acid, between the total content of organic acids and the total content of carotenoids, and between the total content of sugars and the total content of organic acids. Hips of R. gallica contained higher amounts of sugars, ascorbic acid, and carotenoids than R. subcanina. Based on the composition of phenolic compounds in the petals, it is possible to distinguish between the two species. Among all the phenolic compounds in the petals, both genotypes are richest in gallotannins, followed by flavonols. Among anthocyanins, cyanidin-3-glucoside was determined, the content of which was also higher in R. gallica. It can be concluded that the studied hips had an extremely low sugar content and, consequently, an extremely high organic acid content. The content of carotenoids in hips was in the lower range of the average content compared to data from the literature. By optimizing the harvesting time, we could obtain a higher content of carotenoids, which could potentially be used for industrial purposes. However, we found that the analyzed petals were a rich source of phenolic compounds, which benefit the human body and could be potentially used in the food and cosmetic industries.
