Microbiological safety in food industry are always a concern regarding sublethal tolerance in bacteria for common and natural sanitizers. Natural bacteriocins, such as nisin (NIS), may negatively interfere in the efficiency of major compounds of essential oils against foodborne pathogenic bacteria. However, nanoemulsioned forms increase the bactericidal potential of natural compounds acting synergistically. In this study, cinnamaldehyde (CIN), citral (CIT), and linalool (LIN) were evaluated independently, associated with NIS, and in nanoemulsions (NEs) against Bacillus cereus using untargeted-metabolomics. Results revealed morphological changes in the structure of B. cereus treated with NEs of CIN and CIT, both NIS-associated. In addition, sensibility tests and UHPLC-QTOF-MS analyses indicated that NIS might react together with CIT reducing the bactericidal efficiency, while the nanoemulsion of CIT effect was enhanced by NIS in nanoemulsioned forms. This study highlights the importance of prudent administration of natural compounds as antimicrobial agents to prevent sublethal tolerance in pathogenic bacteria.

We report on production of novel quaternary nanocomposite films based on thermoplastic starch (TPS, 8% w/v) derived from cassava, cocoa butter, (CB, 30% wt.%), and lemongrass essential oil (LEO, 1:1) nanoemulsions reinforced with different concentrations of brewery spent grain (BSG, 5 or 10 wt.%) fibers, by continuous casting. The chemical composition, the morphological, thermal, mechanical properties, film barrier, biodegradability in the vegetable compound, in addition to the application in chocolates, have been widely studied. The addition of CB, LEO, and BSG caused relevant changes in the starch-based films, such as increased extensibility (from 2.4-BSG5 to 9.4%-BSG10) and improved barrier to moisture (2.9 and 2.4 g.mm.kPa-1 .h-1 .m-2 ). Contrastingly, the thermal stability of the starch film was slightly decreased. The biodegradability of the herein developed quaternary nanocomposite films was the same as that of TPS films, eliminating concerns on the supplementation with active ingredients that are expected to have some biocidal effect. Despite checking antimicrobial activity only by contact under the biocomposites, chocolates packed with the films were well accepted by consumers, especially the samples of white chocolate stored in the BSG5 biocomposite. Overall, this new approach towards quaternary active, biodegradable films produced in a pilot-scale lamination unit was successful in either improving or at least maintaining the essential properties of TPS-based films for food packaging applications, while providing them with unique features and functionalities. PRACTICAL APPLICATION: This contribution relates to new approach toward quaternary films produced in a pilot-scale lamination unit. It relates to sustainability as it is both biodegradable and based on plant biomass, as well as produced via a clean, through high-yield process. The four components of the edible films we developed provide it with good in properties performance, as both a passive barrier (i.e. purely physical), and active, related to the sensory attributes of food, essential to be applied in food packaging. The valorization of a BSG also adds to the relevance of our contribution within the circular bioeconomy framework.

Carotenoids are lipophilic compounds that provide important health-related benefits for human body functions. However, they have low water solubility and chemical stability, hence their incorporation in aqueous-based foods requires the use of emulsion-based lipid carriers. This work aimed at elucidating whether their inclusion in emulsion-based Solid Lipid Nanoparticles (SLNs) can provide a protective effect against ß-carotene degradation under different environmental conditions in comparison to liquid lipid nanoemulsions. Glyceryl Stearate (GS) was mixed with Medium Chain Trygliceride (MCT) oil to formulate SLNs. SLNs presented a significantly enhanced ß-carotene retention and a slower ß-carotene degradation kinetics at increasing storage temperature, acidic conditions and light exposure. In fact, SLNs formulated with 5% GS in the lipid phase and stored at 4 °C and pH 7 retained almost 70% of the initially encapsulated ß-carotene after 55 days of storage, while it was completely degraded when it was encapsulated in liquid nanoemulsions. Moreover, it was observed that the solid lipid type affects the protective effect that SLNs may confer to the encapsulated lipophilic bioactives. Saturated long chain triglycerides, such as hydrogenated palm oil (HPO) presented slower and lower ß-carotene degradation kinetics in comparison to solid lipids composed of MCT, such as Coconut Oil (CNUT) or MCT + 5% of GS in the lipid phase. This work evidences that the incorporation of lipophilic bioactive compounds, such as ß-carotene, into SLNs slows down their degradation kinetics which might be attributed to a reduced diffusion of the oxidative species due to the lipid crystalline structure.

Abstract The aim of this study was to evaluate the antimicrobial effect of the essential oils of cinnamon, cardamom, clove, oregano, and thyme and their synergism on vegetative cells and endospores of Clostridium perfringens type A inoculated in meat sausage (mortadella), as well as the influence of blends on the color, and lipid oxidation through the determination of thiobarbituric acid reactive substances (TBARS index). The anticlostridial action of the oil blends was established. The two added oil blends (Treat. 1: oregano, clove, and thyme; Treat. 2: oregano, clove, and cinnamon) in combination with reduced nitrite content (75 ppm) promoted a lower growth of C. perfringens in mortadella stored at 15 °C for 21 days in comparison to treatments containing only 75 ppm of nitrite. The essential oil blends showed antioxidant action and did not alter food color, thus possessing potential application as a preservative for the meat products industry.

Avaliou-se a ação antimicrobiana da combinação dos óleos essenciais de canela, pimenta chinesa, limão Taiti e cardamomo e de suas nanoemulsões no controle de Clostridium sporogenes e sua influência sobre a oxidação lipídica em mortadela. A Concentração Mínima Bactericida (CMB) de cada óleo foi determinada pelo método de macrodiluição. As CMB encontradas foram: 0,10% óleo essencial de pimenta chinesa e canela e 1,00% óleo essencial de cardamomo e limão Taiti. A nanoemulsão elaborada apresentou redução significativa no número de células vegetativas de C. sporogenes na mortadela, além de ser o tratamento mais eficiente no controle da oxidação lipídica. Os resultados obtidos comprovam a ação antimicrobiana dos óleos testados, sugerindo sua possível utilização como conservantes naturais em produtos alimentícios.

Essential oils, as well as their separate components, have shown promise as alternatives to synthetic preservatives. Therefore, it would be interesting to optimize the effect of these compounds and to evaluate their applicability as additives in food. To this end, six peracetyl and deacetyl glycosides were synthesized from eugenol, isoeugenol and dihydroeugenol. All of the glycosides were characterized by IR and NMR. The synthesized compounds and their aglycones were evaluated to determine their minimal bactericidal concentrations (MBC) against the spoilage food bacteria Escherichia coli, Listeria monocytogenes, Staphylococcus aureus and Salmonella enteritidis. All deacetyl glycosides were about twice as active as aglycones, and the peracetyl glycosides were, in most cases, equipotent with aglycones. The deacetyl glycoside of dihydroeugenol proved to be the most active compound against the bacteria tested, with a 0.37% MBC v/v for E. coli and 0.18% v/v for the other bacteria.

Os autores apresentam o estudo de 15 casos de condromalácia da patela acompanhados no Hospital Universitário da UFRJ e no Hospital de Tráumato-Ortopedia Dr. Mario Jorge/INAMPS (HTO) - RJ. Os casos foram investigados e diagnosticados através da radiologia convencional, pneumoartografia, artroscopia, cirurgia e anátomopatologia. Ressaltam o aspecto clínico: a incidência quanto à idade e o sexo; as características radiológicas e os aspectos anátomo-cirúrgicos
