RESUMO

Protein supplements (PS) are trendy foods, especially those made from whey. In addition to providing protein, these products are a source of metals, providing essential elements (Na, K, Mg, Ca, Mo, Mn, Fe, Co, Cu, and Zn) and other potentially toxic elements (Al, B, Sr, V Ba, and Ni). In this study, 47 whey PS samples were analyzed for mineral elements by ICP-OES, and their dietary exposures were assessed for three consumption scenarios. Elements found in higher concentrations were K (4689.10 mg/kg) and Ca (3811.27 mg/kg). The intake of 30 g PS (average recommended amount/day) provides about 20% of the established reference value (NRI) for Cr (18.30% for men and 25.63% for women) and Mo (26.99%). In a high daily consumption scenario (100 g PS/day) and when the maximum concentrations are considered, Cr, Zn, Fe, Mo, and Mg dietary intakes of these metals exceed the daily recommended intakes and could pose a risk. The daily intake of 30, 60, and 100 g of whey PS for 25 years does not pose a health risk since the hazard index (HI) is less than one in these consumption scenarios, and the essential elements contributing most to HI are Co, followed by Mo and Cr. It is recommended to improve the information to the consumers of these new products. Furthermore, to help in the management and prevention of these potential health risks, it would be advisable to improve the regulation of these dietary supplements and their labeling.

Bioaccumulation is the process by which living organisms accumulate substances, such as pesticides, heavy metals, and other pollutants, from their environment. These substances can accumulate in the organism's tissues over time, leading to potential health risks. Bioaccumulation can occur in both aquatic and terrestrial ecosystems, and can have a significant impact on the health of both humans and wildlife. The objective of this study is to find out if the concentrations of metals in the tuna species of the Canary Islands are suitable for human consumption and if they pose a health risk. Fifteen samples of Acanthocybium solandri, Katsuwonus pelamis, Thunnus albacares, Thunnus obesus and Thunnus thynnus present in canaries were analyzed. Ten grams of muscle were taken from each specimen and the metals Al, Cd, Cr, Cu, Fe, Li, Ni, Pb and Zn were determined by Inductively Coupled Plasma Optical Emission Spectrometry (ICP-OES). The tuna species that presented more metals with a higher concentration compared to the others was T. thynnus, reaching up to 100 times more than the other studied species in Fe content with 137.8 ± 100.9 mg/Kg, which may be due to the fact that it is the largest species that reaches ages of more than fifteen years. The species Thunnus thynnus should not be suitable for commercialization according to the current legislation on the concentrations of Cd in blue fish, since 75% of the specimens studied exceeded the concentration legislated for Cd. A total of 40% of the studied specimens of this this species exceeded the legislated values for the concentration of Pb in oily fish meat, so this species must be monitored to ensure that it does not pose a risk to human health.

Aquatic pollution derived from metal presence in the Galapagos Islands could affect biodiversity and human health. This research provide a baseline on food safety in commercial fish species of the Galapagos Islands. We sampled muscle tissue of pelagic (Acanthocybium solandri) and demersal (Caulolatilus affinis, Pontinus clemensi, Hyporthodus mystacinus, and Paralabrax albomaculatus) species. Metal and metalloid concentrations per species were analyzed by Inductively Coupled Plasma Optical Spectrometry (ICP-OES). According to the Food and Agriculture Organization (FAO) regulation none of the studied species should be ingested; and according to the European Food Safety Authority (EFSA) regulation, all the studied species were above the Maximum Allowable Concentration (MAC) for Cd. According to EFSA, C. affinis should not be commercialized. Finally, A. solandri, P. clemensi and H. mystacinus do not represent a human health risk since its Margen of Safety (MoS) < 1 for people of up to 100 kg of body weight.

Instant soups and noodles are one of the most widely consumed commercial food products. These products are made from ingredients of animal (chicken, meat) and/or vegetable origin, in addition to various food additives that prolong the shelf life of the product. It should be noted that instant soups are a dehydrated product, whose water-removal process can increase the accumulation of contaminants, such as toxic metals (Al, Cd, or Pb), that are harmful to the health of consumers. The content of toxic metals (Al, Cd, and Pb) in a total of 130 samples of instant soups of different types (poultry, meat, and vegetables) was determined by ICP-OES (inductively coupled plasma-optical emission spectrometry). The Al content (32.28 ± 19.26), the Cd content (0.027 ± 0.016), and the Pb content (0.12 ± 0.13) in the vegetable soups were worth mentioning. Considering an intake of twenty grams (recommended by the manufacturer), the dietary intake of Al (19.56% of the TWI set at 1 mg/kg bw/week), the intake of Cd (6.59% of the TWI set at 2.5 µg/kg bw/week), and the Pb intake (16.18% of the BMDL set for nephrotoxic effects at 0.63 µg/kg bw/week and 6.84% of the BMDL set for cardiovascular effects at 1.50 µg/kg bw/week) in the population aged 3-10 years, instant soups are not recommended for the population aged 3-10 years, while their consumption does not pose a health risk for adults. However, it is necessary to consider the cooking water used in the preparation of these products, as it may increase exposure to these toxic metals, in addition to the rest of the diet.

The consumption of vegetable milk as a substitute for cow's milk has increased in recent years. Of all the vegetable beverages on the market, soy is the most widely consumed. Soy is exposed to contamination by different chemical elements during harvesting. In this study, the concentration of fluoride in soy beverages was analyzed. Fluoride is an element that in high concentrations can be toxic, causing dental and bone fluorosis. The aims of the study were (i) to analyze the fluoride concentration in 30 samples in the most popular brands (A-Brand, B-Brand, C-Brand) of soybean beverages by a fluoride ion selective potentiometer and (ii) to evaluate the toxicological risk derived from its consumption. The fluoride concentrations were 15.5 mg/L (A-Brand), 11.3 mg/L (B-Brand) and 8.5 mg/L (C-Brand). A consumption of 1 to 3 servings/day was established. One serving (200 mL) of soybean beverage offered a contribution percentage over the ADI (acceptable daily intake) for infants and children. Teenagers and adults did not exceed the ADI (10 mg/day). The consumption of soy beverages contributes significantly to the daily intake of fluoride, which could exceed the ADI with a consequent health risk. It is recommended to control the fluoride levels in the raw material and in the final product to assure the safety of these products.

The monitoring of trace elements and toxic metals in apical predators of the trophic chain provides data on the degree of contamination in ecosystems. The common kestrel is one of the most interesting raptors in this respect in the Canary Islands; therefore, the study of the levels of trace elements and toxic metals in this species is of much scientific value. The content of trace elements and toxic metals (B, Ba, Co, Cr, Cu, Fe, Mn, Mo, Li, Zn, Ni, Sr, V, Al, Cd, Pb) was determined in the liver, muscle, and feathers of 200 specimens of common kestrel carcasses (Falco tinnunculus canariensis) from Tenerife. Cr (0.82 ± 2.62 mg/kg), Cu (11.82 ± 7.77 mg/kg), and Zn (198.47 ± 520.80 mg/kg) are the trace elements that stand out in the feather samples; this may be due to their affinity for the pigments that give them their coloring. Li was noteworthy in the liver samples (8.470 ± 5.702 mg/kg). Pb stood out in the feathers (4.353 ± 20.645 mg/kg) > muscle (0.148 ± 0.095 mg/kg) > liver (0.187 ± 0.133 mg/kg). The presence of metals in feathers correlates with recent exposure and reflects environmental contamination. When using raptor feathers as indicators of metal contamination, it is important to know what the levels of each metal signify. The analysis of the different tissues and organs of raptors, such as the common kestrel, provides valuable information on the degree of environmental contamination of the ecosystem in which it lives. Gender was not an influencing factor in this study.

BACKGROUND: The presence of toxic toxic metals in lipstick can pose a health risk to many consumers of this type of cosmetics, especially for women. Thus, the aim of this study was to assess consequences attributed to dermal and oral exposure to toxic metals in lipsticks manufactured in China and Europe as determined by non-cancer and cancer risks assessment models from SCCS and USEPA, respectively. METHOD: The treatment of the samples was carried out by calcination using muffle furnaces and the determination of Al, Cd and Pb were determined by inductively coupled plasma optical emission spectrometry (ICP-OES). CONCENTRATIONS: The concentration of Cd and Pb in the study samples does not exceed the limits stablished for the FDA (00,228 mg kg-1·day-1 for Cd and 000,343 mg kg-1·day-1 for Pb, respectively) but they do not comply with the Regulation of the European Parliament, which prohibits the presence of these two metals in cosmetics. Neither European Union nor United States have established maximum levels for Al in cosmetics. CONCLUSIONS: The cancer risk assessment of Cd and Pb metals resulted in a total cancer risk less than 1. The results of non-cancer oral risk assessment for Pb had a MoS result of 88 for China and 62 for Europe, suggesting that Pb poses a risk for the human health, especially in samples manufactured in Europe.

Consumption of cereals and cereal-based products represents 47% of the total food energy intake in Cape Verde. However, cereals also contribute to dietary exposure to metals that may pose a risk. Strengthening food security and providing nutritional information is a high-priority challenge for the Cape Verde government. In this study, toxic metal content (Cr, Ni, Sr, Al, Cd, and Pb) is determined in 126 samples of cereals and derivatives (rice, corn, wheat, corn flour, wheat flour, corn gofio) consumed in Cape Verde. Wheat flour samples stand out, with the highest Sr (1.60 mg/kg), Ni (0.25 mg/kg) and Cr (0.13 mg/kg) levels. While the consumption of 100 g/day of wheat would contribute to 13.2% of the tolerable daily intake (TDI) of Ni, a consumption of 100 g/day of wheat flour would contribute to 8.18% of the tolerable weekly intake (TWI) of Cd. Results show relevant Al levels (1.17-13.4 mg/kg), with the highest level observed in corn gofio. The mean Pb average content in cereals is 0.03-0.08 mg/kg, with the highest level observed in corn gofio. Al and Pb levels are lower in cereals without husks. Without being a health risk, the consumption of 100 g/day of wheat contributes to 17.5% of the European benchmark doses lower confidence limit (BMDL) of Pb for nephrotoxic effects; the consumption of 100 g/day of corn gofio provides an intake of 1.34 mg Al/day (13.7% of the TWI) and 8 µg Pb/day (20% of the BMDL for nephrotoxic effects). A strategy to minimize the dietary exposure of the Cape Verdean population to toxic metals from cereals should consider the continuous monitoring of imported cereals on arrival in Cape Verde, the assessment of the population's total diet exposure to toxic metals and educational campaigns.

Metal pollution in the marine environment can damage places with exceptional biodiversity such as the Galapagos Islands. For this reason, it is important to evaluate the toxic risk from metals derived from fish consumption and to perform a nutritional assessment. We sampled 20 individuals of demersal (Caulolatilus princeps and Mycteroperca olfax) and pelagic (Thunnus albacares and Seriolella violacea) species. The levels of the toxic elements (Al, B, Ba, Cd, Ni, Pb and Sr), and the macroelements, microelements and trace elements (Ca, Cr, Fe, K, Li, Mn, Mo, Mg, Na, V and Zn) of species muscle tissue were analyzed by Inductively Coupled Plasma Optical Spectrometry (ICP-OES). Demersal species have higher concentrations of Cr, K, Mg and Mo; while pelagic species have higher levels of Zn. M. olfax could potentially cause Cd toxicity so it is recommended not to ingest more than 86 and 73 g of this species (i.e. roughly, one serving) per week for men and women, respectively. None of the species could be marketed in Europe and the USA due to Cd level exceed the allowed limits by EFSA and FAO. Furthermore, the dietary intake of C. princeps is recommended due to its high concentration of Ca, Na, K, Mg and Cr, while T. albacares is recommended for people with Zn deficiency. However, due to the Cd level in C. princeps it is not recommended to ingest more than five servings per week. We attribute the source of metals in the studied fish from the volcanic origin of the islands rather than from human pollution. This is the first study that thoroughly estimate concentration of metals in commercial fish species and its contribution to food security in the Galapagos.

Potentially toxic elements (PTEs) (V, B, Ba, Li, Sr, Cr, Ni, Al, Pb, Cd) were determined in 130 samples of different tofu types (natural, flavored, smoked, and fresh made) by ICP-OES (inductively coupled plasma optical emission spectrometry). Al was the most notable element found with the highest concentration (6.71 mg/kg ww) found in flavored tofu. Ni level (0.38 mg/kg) stands out in smoked tofu. European tofu has higher PTE levels than Chinese tofu. Organic-produced tofu has higher PTE concentrations than conventional produced tofu. A total of 200 g/day of smoked tofu confers a contribution percentage of 39.6% of its TDI (tolerable daily intake). In addition, 200 g/day of flavored tofu would mean a high Pb contribution with a 23.2% of the BMDL (benchmark dose level) set in 0.63 µg/kg bw/day to the development of nephrotoxicity. Mean consumption would not pose a risk to adults' health. Considering the obtained results, it would be advisable to establish limits for certain metals such as Pb, Al, and Ni in this type of product. Furthermore, it is recommendable to set consumer guidelines to some tofu types in order to avoid excessive intake of PTEs.

Seaweeds are a basic food in the Asian diet. The search for functional and healthy foods has increased the seaweed consumption in Europe and the USA. Seaweeds are a source of essential elements such as iodine. However, high intake levels of iodine can cause damages to human health. Red seaweeds like dulse (Palmaria palmata) and Irish moss (Chondrus crispus) are common in shops and large stores. The iodine level in 30 samples of red seaweeds (dulse and Irish moss) has been determined by redox volumetry with sodium thiosulfate to determine the iodine content of both species and to assess the iodine dietary exposure from dulse and Irish moss consumption. Irish moss (3.86 ± 1.49 mg/kg dry weight) has the highest average iodine content. Four grams per day of dehydrated Irish moss seaweeds contributes greatly to the iodine recommended daily intake (DRI) for children (25.7%). The consumption of analyzed seaweeds (4 g/day) does not pose a health risk. However, the consumption of 286 g/day of Irish moss would lead to exceeding the UL for the adult population set at 1100 µg/day. It is necessary that the consumer respects the consumption guidelines of the seaweed packers.

Seaweed consumption has increased considerably in Europe as a result of new trends in food. The macroelement (Na, Ca, K, Mg) and trace element (B, Ba, Co, Cr, Cu, Fe, Li, Mn, Mo, Ni, Sr, V, Zn) levels in different species of edible brown seaweeds were determined by inductively coupled plasma optical emission spectrometry (ICP-OES). European Himanthalia elongata species had the highest recorded concentrations of K (57480 mg/kg dry weight). Asian Undaria pinnatifida species had the highest Fe content (58.8 mg/kg dw). Five grams/day of dehydrated seaweed of the Asian U. pinnatifida species mainly contributes to the admissible daily intake of Mg (9.32% adults) and Na (7.05% adults). In any case which exceeds the maximum intake values of any of the elements analyzed, the macro- and trace element levels can vary considerably in a short period of time, so it is necessary to assess the toxic risk in edible seaweeds.

The levels of toxic metals (Al, Cd, Pb) and trace metals (B, Ba, Cu, Fe, Mn, Sr, Zn) were analyzed by inductively coupled plasma optical emission spectrometry (ICP-OES) in the muscle (sirloin and chuck) and liver from a total of 180 samples of steers (less than 2 years old) (Bos taurus) of foreign and local origin slaughtered on the island of La Palma (Canary Islands, Spain). As regards toxic metals, Al was the metal with the highest contents in both tissues of the foreign steers (3.75 mg/kg in the muscle and 55.3 mg/kg in the liver) and the local steers (5.60 mg/kg in the muscle and 8.65 mg/kg in the liver). In conclusion, the present study confirmed that beef is a source of trace elements, mainly Fe and Zn. In addition, the consumption of this type of beef did not show significant intakes of toxic metals (Al, Cd, and Pb) and, therefore, the consumption of the steer muscle and liver does not pose a toxicological risk for Spanish consumers.

The study has been conducted with inductively coupled plasma optical emission spectrometry to determine the content of toxic heavy metals, macroelements, and essential elements in two species of bivalves of commercial interest in the Canary Islands: the Mediterranean mussel ( Mytillus galloprovincialis, Lamarck 1819) and the razor clam ( Ensis directus, Conrad 1883). The study included 40 samples corresponding to 20 specimens of each species acquired from fishmongers on the island of Tenerife. E. directus had higher levels of metals, except for B, Cd, Na, and Zn (0.98, 0.02, 2,006.93, and 15.07 mg/kg, respectively) compared with those in M. galloprovincialis, B, Cd, Na, and Zn (2.67, 0.12, 2,267.7, and 22.27 mg/kg, respectively). In both bivalve molluscs, the maximum limits established by European legislation on food for human consumption were not exceeded. Likewise, the estimated daily intakes for the toxic metals Pb and Cd were below the admissible daily intakes.

Panga (Pangasius hypophthalmus), originating from Vietnam, is one of the most consumed fish because of its low cost, mild taste and presentation (fillets without skin and bones). Nevertheless, due to the high levels of contamination of the rivers where it lives, and to the fact that the panga is a predator, whereby it will accumulate a higher mercury concentration, the main objectives of the present study were to evaluate the toxic risk from mercury ingestion as a result of the consumption of this fish. A total of 80 frozen panga samples natural and marinade from different commercial establishments have been analyzed using cold vapour atomic absorption spectrophotometry (CV-AAS). The results obtained show a wide range of mercury concentrations between 0.10 and 0.69 mg/kg, with an average value of 0.22 mg/kg. In addition, it has been found that the average mercury concentration in the marinated presentation (0.18 mg/kg) is higher than that obtained in the natural panga (0.16 mg/kg). However, no significant differences were found between commercial establishments or in the presentation formats, with the conclusion that they did not influence the mercury content in the samples. Assuming a weekly consumption of 350 g of panga, the contribution rate to Tolerable Weekly Intake (TWI) of mercury (4 µg/kg bw/week) is 32% and 27.5% for women and men, respectively. Based on the results obtained in this study, an exhaustive control of the mercury content in this type of fish is necessary. In addition, a consumption restriction to children will be established.

The increases in urbanization, demography and industrial activity, along with growing human needs which exploit the resources of the planet, have exponentially exacerbated pollution. In particular, the discharge of heavy metals into the marine ecosystem is a problem of global magnitude, as this may damage the diversity of marine species and ecosystems because of their toxicity, long persistence and bioaccumulation. Consequently, it is necessary to carry out an assessment of the risk of human exposure from the consumption of marine species potentially exposed to this type of pollutants. In the present study, the levels of toxic heavy metals (Cd, Pb and Al) as well as trace and essential metals (B, Ba, Co, Cu, Cr, Fe, Li, Mn, Mo, Ni, Sr, V and Zn) and macronutrients (Ca, K, Mg, Na) have been quantified in two species of fish for human consumption. In order to do this, a total of 80 muscle samples and 80 liver samples, belonging to two species of osteichthyes (bony fish), Diplodus sargus cadenati and Sparisoma cretense, were analyzed. The specimens studied were captured on the north coast of Gran Canaria (Canary Islands) using recreational fishing techniques. As they caught from the shore, the data obtained respond to the need to assess the toxic levels in two representative species of artisanal and recreational fishing in the area. The risk assessment indicated that these two fish species are safe for the average consumer; however, if the livers are frequently consumed, there may be potential risks because they exceed the Admissible Daily Intakes for Pb and Cd.

Due to increased environmental pollution, monitoring of contaminants in the environment and marine organisms is a fundamental tool for assessing the existence of risk from their consumption to human health. The levels of toxic heavy metals (Cd, Pb, and Al), trace and essential metals (B, Ba, Co, Cu, Cr, Fe, Li, Mn, Mo, Ni, Sr, V, and Zn), and macronutrients (Ca, K, Mg, Na) in two species of fish for human consumption were quantified in the present study. Eighty samples of muscle tissue and 80 samples of liver tissue belonging to two species of Osteichthyes fish; Sarpa salpa and Chelon labrosus were analyzed. The studied specimens were caught on the northern coast of Gran Canaria (Canary Islands) with fishing rods. As they caught from the shore, they are suitable samples for assessing the toxic levels of representative species caught by local amateur fishermen. The results show that both species are fit for human consumption since they have toxic levels of heavy metals (Cd, Pb, and Al) which are below the maximum established levels; however, the toxic levels of the liver samples are several orders of magnitude higher than the muscle samples, so we discourage their regular consumption. The risk assessment indicated that the two species of fish are safe for the average consumer; however, if the livers of these species are consumed, there could be risks because they exceed the PTWI for Pb and the TWI for Cd.
