RESUMEN

REASONS FOR PERFORMING STUDY: To evaluate and compare the diagnostic capability of arthroscopy and ultrasonography for the detection of pathological change in equine stifle joints. Although descriptions of the arthroscopic and ultrasonographic boundaries of the normal femorotibial joint exist, there are few examples in the literature comparing the pathological changes observed with each imaging modality. OBJECTIVES: To evaluate and compare arthroscopic and ultrasonographic examinations for characterising pathological change in the stifle joint. To describe how the results of arthroscopic and ultrasonographic examinations may differ in characterising the severity of lesions and to evaluate which lesions are best assessed with each modality. STUDY DESIGN: Retrospective review of ultrasonographic and arthroscopic examinations. METHODS: The structures of the stifle joint were evaluated and graded for pathological change by scoring arthroscopic and ultrasonographic examinations. The presence and severity of the lesions were then compared between each modality. RESULTS: Medial meniscal lesions were detected more often with ultrasonography than with arthroscopy. Conversely, arthroscopy was better for detection of cranial medial meniscotibial ligament (CrMMTL) tearing. Articular cartilage defects were best detected with arthroscopy and periarticular osteophytes of the medial femoral condyle with ultrasonography. Four cases had defects within one of the patellar ligaments, all of which were only characterised with ultrasonography. CONCLUSIONS: Ultrasonography and arthroscopy should be combined to best evaluate pathology of the stifle, since each modality has its own limitations depending on the location and type of lesion.

Sensory analysis of ground LL samples representing 12 beef product categories was conducted in 3 different regions of the U.S. to identify flavor preferences of beef consumers. Treatments characterized production-related flavor differences associated with USDA grade, cattle type, finishing diet, growth enhancement, and postmortem aging method. Consumers (N=307) rated cooked samples for 12 flavors and overall flavor desirability. Samples were analyzed to determine fatty acid content. Volatile compounds produced by cooking were extracted and quantified. Overall, consumers preferred beef that rated high for beefy/brothy, buttery/beef fat, and sweet flavors and disliked beef with fishy, livery, gamey, and sour flavors. Flavor attributes of samples higher in intramuscular fat with greater amounts of monounsaturated fatty acids and lesser proportions of saturated, odd-chain, omega-3, and trans fatty acids were preferred by consumers. Of the volatiles identified, diacetyl and acetoin were most closely correlated with desirable ratings for overall flavor and dimethyl sulfide was associated with an undesirable sour flavor.

British × Continental steers (initial BW = 484.6 kg) were fed at a commercial feed yard to evaluate the effects of ß-agonists on live performance, carcass characteristics, and carcass subprimal yield. Weights and ultrasonic measurements were used to allocate steers to pens (n = 40) divided equally into 4 blocks, with 2 treatment replicates per block. Pens were randomly assigned to 1 of 5 treatments: control; ractopamine-HCl (RH) fed at 200 or 300 mg • steer(-1) • d(-1), or 400 mg • steer(-1) • d(-1) top dress for the final 30 d of feeding; or zilpaterol-HCl (ZH) fed at 7.5 mg/kg beginning 23 d before slaughter with a 3-d withdrawal period. Steers were harvested by block at a commercial facility over 4 wk. Carcass based performance measures were calculated using initial pen weights and actual DMI. From each pen, eight carcasses that were within ± 13.6 kg of the mean pen HCW were selected such that two carcasses were within each of the following four Yield Grade (YG) ranges: YG ≤ 2.8; 2.9-3.2; 3.3-3.5; YG > 3.5. Carcasses were fabricated by plant personnel to determine subprimal yield. Steers fed ZH had higher carcass-based ADG and carcass-based G:F compared with all other treatments (P < 0.05). Carcass-based ADG and carcass-based G:F were higher in RH treatments compared with controls (P < 0.05). Steers fed ZH had higher dressing percentages (1.0 to 1.6%) and larger LM area (4.3 to 6.7 cm(2)) than all other treatments (P < 0.05). Use of RH 400 and ZH increased HCW 6.3 and 11.1 kg, respectively compared with controls (P < 0.05). Compared with controls, RH 300 and ZH decreased marbling score and the frequency of carcasses qualifying for upper 2/3 Choice premiums (P < 0.05). Beta-agonists increased subprimal yield from the round and loin; however, blade meat was the only cut from the rib or chuck affected by ß-agonists. Results from this study indicated improvements in performance and carcass traits as a result of ß-agonist use; however, differences between ZH, RH 400, and RH 300 treatments were minimal for carcass traits and cutability. Increases in saleable yield following ß-agonist use were not uniformly distributed across the four major primals and the majority of weight gain occurred in the lower priced cuts of the round and chuck. Increased response of the lower priced cuts to ß-agonists could have economic implications to packers.

The effect of ractopamine hydrochloride (RH) and zilpaterol hydrochloride (ZH) on slice shear force (SSF) and sensory characteristics of beef from calf-fed Holstein steers was evaluated. All steers were implanted with a progesterone (100 mg) plus estradiol benzoate (10 mg) implant followed by a terminal trenbolone acetate (200 mg) plus estradiol (40 mg) implant. Steers were blocked by weight into pens (n = 32) randomly assigned to 1 of 4 treatments: control, RH fed at 300 mg·steer(-1)·d(-1) (RH 300) or RH fed at 400 mg·steer(-1)·d(-1)(RH 400) for the final 31 d of finishing, or ZH fed at 6.8 g/t for 21 d with a 5-d withdrawal before harvest. Fourteen carcasses were randomly selected from each pen, and two LM samples (1 per side) were excised and aged either 14 or 21 d before SSF testing. For trained panel evaluation, two steaks were collected from each of 60 low Choice strip loins (20 each from control, RH 300, and ZH treatments) and aged either 14 or 21 d. Steers fed RH and ZH produced steaks with SSF values that were 9% to 25% higher than controls. No difference in SSF was detected between the two levels of RH (P > 0.05). Compared to controls, the probability of steaks aged 14 d failing to meet SSF requirements to be certified tender (SSF < 20 kg) was increased 0.15, 0.17, and 0.26 in steers fed RH 300, RH 400, and ZH, respectively. Compared to controls, the probability of steaks aged 21 d having SSF values >20 kg was increased 0.03, 0.08, and 0.16 in steers fed RH 300, RH 400, and ZH, respectively. Steaks from Select carcasses of steers fed ZH aged 21 d postmortem had double the probability (0.39 vs. 0.17) of having SSF values >20 kg compared to steaks from steers fed either level of RH (P < 0.05). This difference tended to be identical in steaks from Select carcasses 14 d postmortem (0.50 vs. 0.33; P = 0.11); however, no difference was found in low Choice samples at 14 or 21 d postmortem. Trained panelists rated steaks aged 14 d from steers fed ZH lower for overall tenderness and flavor compared to controls (P < 0.05); however, no difference was found between controls and those fed RH 300. Steaks from steers fed ZH aged 21 d were rated lower for overall tenderness and juiciness compared to controls and those from steers fed RH 300 (P < 0.05). This study suggests RH and ZH negatively impact sensory attributes of beef from calf-fed Holstein steers.

Effects of ractopamine hydrochloride (RH) and zilpaterol hydrochloride (ZH) on saleable yield of carcass sides from calf-fed Holstein steers were evaluated using steers implanted with a progesterone (100 mg) plus estradiol benzoate (10 mg) implant followed by a terminal trenbolone acetate (200 mg) plus estradiol (40 mg) implant. Steers were blocked by weight into pens (n = 32) randomly assigned to one of four treatments: control, RH fed at 300 mg•steer(-1)/d(-1) (RH 300) or RH fed at 400 mg•steer(-1)/d(-1) (RH 400) the final 31 d of finishing, and ZH fed at 60 to 90 mg•steer(-1)/d(-1) (7.56 g/ton on a 100% DM basis) for 21 d with a 5 d withdrawal before harvest. Eight to nine carcass sides were randomly selected from each pen; carcass sides with excessive hide pulls, fat pulls or bruises were avoided. Cutout data were collected within a commercial facility using plant personnel to fabricate sides at a rate of one every 3 to 4 min into items typically merchandised by the facility. All lean, fat and bone were weighed and summed back to total chilled side weight with a sensitivity of ± 2% to be included in the data set. Compared to controls, ß-agonists increased saleable yield of whole-muscle cuts by 0.61%, 0.86% and 1.95% for RH 300, RH 400 and ZH, respectively (P < 0.05). Percent fat was less in carcasses from the ZH treatment compared to controls (P < 0.05); however, this difference was not observed between RH treatments and controls (P > 0.05). Percent bone was less in the ZH treatment due to increased muscle (P < 0.05). The percent of chilled side weight comprised of trimmings was unchanged between treatments, but on a 100% lean basis, RH 400 and ZH increased trim yields (P < 0.05). Analysis of saleable yield by primal showed a fundamental shift in growth and development. Beta-agonists caused a shift in proportion of saleable yield within individual primals, with a greater portion produced from the hindquarter relative to the forequarter, specifically in those muscles of the round (P < 0.05). Beta-agonists increased saleable yield, but these effects were not constant between all major primals. The cutout value gained by packers as a result of ß-agonist use may be influenced more by reduced fatness and increased absolute weight if musculature is primarily increased in the lower priced cuts of the carcass.

Effect of ractopamine hydrochloride (RH) and zilpaterol hydrochloride (ZH) on LM shear force and sensory attributes was determined using pens (n = 40) British × Continental crossbred steers randomly allocated to one of the following treatments: control; RH fed at 200 (RH 200) or 300 mg • steer(-1) • d(-1) (RH 300), or 400 mg • steer(-1) • d(-1) (RH 400) top-dressed for the final 30 d of feeding; or ZH fed at 7.5 mg/kg, beginning 23 d before slaughter with a 3-d withdrawal. Two replicates (pens) per treatment were represented in four blocks. Eighteen carcasses per pen were randomly selected and one 5-cm LM sample was removed from both carcass sides to be used for shear force and sensory evaluation. Samples were aged for 14 d, frozen at -28.8 °C, and cut into 2.5-cm steaks. All steaks were cooked to an internal temperature of 71.1 °C before being evaluated for Warner-Bratzler shear force (WBSF), slice shear force (SSF), or being fed to trained sensory panelists. Increasing dose and potency of ß-agonist increased WBSF by 4 to 17% and SSF by 5 to 24% (P < 0.05). Steaks from steers fed ZH had higher WBSF and SSF values compared with all other treatments (P < 0.05), whereas steaks from controls and steers fed RH 200 were not different (P > 0.05). Probability of steaks failing to meet shear force standards to be certified tender (WBSF <4.4 kg, SSF < 20 kg) was increased from an initial probability of <0.06 in steaks from steers in the control treatment to 0.10 to 0.20 in steers fed RH 400 or ZH (P < 0.05). No difference was detected in panel ratings for overall tenderness of steaks from steers fed RH 200 compared with controls (P > 0.05). Steaks from steers fed RH 300 and RH 400 were comparable for all sensory attributes; however, both RH 300 and RH 400 were rated lower for overall tenderness than controls (P < 0.05). Panelists failed to detect differences in overall tenderness of steaks from steers fed RH 400 and ZH (P < 0.05). Panelists detected no difference in flavor profile or juiciness among treatments (P > 0.05). Results from this study indicated ß-agonists negatively affected beef tenderness and these effects may be more noticeable in steers supplemented with ZH and higher doses of RH.

The objective of this study was to determine the optimal postmortem aging period and nutrient composition for Beef Value Cuts of the round. Forty USDA Select and 40 Premium USDA Choice beef carcasses were selected from a commercial beef packing plant in Colorado over a 12-wk period. The bottom and inside rounds were collected from both sides of each carcass for further fabrication into the following muscles: adductor, gastrocnemius, gracilis, pectineus, and superficial digital flexor. Each pair of muscles was cut into 7 steaks and randomly assigned to 1 of the following aging periods: 2, 4, 6, 10, 14, 21, and 28 d, and placed in refrigerated storage (2°C, never frozen). Upon completion of the designated aging period, steaks were removed from storage, cooked to a peak internal temperature of 72°C, and evaluated using Warner-Bratzler shear force (WBSF). A 2-way interaction was detected (P < 0.05) between individual muscle and postmortem aging period. The WBSF of all muscles except the superficial digital flexor decreased with increased time of postmortem aging. Quality grade did not affect (P > 0.05) WBSF values for the adductor, gastrocnemius, pectineus, and superficial digital flexor muscles. Exponential decay models were used to predict the change in WBSF from 2 to 28 d postmortem (aging response). The adductor, gastrocnemius, Select gracilis, Premium Choice gracilis, and pectineus required 21, 14, 23, 23, and 25 d, respectively, to complete the majority of the aging response. To determine the nutrient composition of the adductor, gastrocnemius, gracilis, pectineus, semimembranosus, and superficial digital flexor, bottom and inside rounds were collected from 10 USDA Select and 10 Premium USDA Choice carcasses and fabricated into the respective muscles, cut into 2.54-cm cubes, frozen (-20°C), and then homogenized. The adductor, gracilis, pectineus, semimembranosus, and superficial digital flexor were analyzed for DM, moisture, CP, and ash percentages. All muscles were evaluated for total lipid, fatty acid, and cholesterol composition. When quality grades were combined, all muscles fell into the extra lean or lean categories specified by USDA guidelines. Results of this study illustrate the potential for Beef Value Cuts of the round to be sold in food service operations and retail stores with marketing emphasis being placed on the exceptional leanness and acceptable tenderness of these cuts.

Effects of genotype (GEN) and implant program (IMP) on LM and gluteus muscle (GM) tenderization were investigated using crossbred steer (n = 185) and heifer (n = 158) calves. The 3-marker GeneSTAR Tenderness panel [CAST (calpastatin), CAPN1 316 (µ-calpain), and CAPN1 4751 (µ-calpain)] was used to determine the GEN of each animal (reported as total number of favorable alleles, 0 through 6). Calves were randomly assigned to 1 of 2 IMP, conventional (CNV) or delayed. Cattle in the CNV group were implanted at the beginning of the finishing period with Revalor-IS or Revalor-IH (Intervet Inc., Millsboro, DE), and then reimplanted 59 d later with Revalor-S or Revalor-H (Intervet Inc.). Calves in the delayed group received a single terminal implant (Revalor-S or Revalor-H) administered 45 d after initiation of the finishing period. Warner-Bratzler shear force (WBSF) was measured on LM and GM steaks at 3, 7, 14, 21, and 28 d postmortem. No interactions between the main effects of sex, IMP, or GEN were detected (P > 0.05) for WBSF. An IMP × postmortem aging (age) interaction was detected (P < 0.05) for LM and GM WBSF. For both muscles, steaks from CNV cattle had WBSF values that were approximately 0.2 kg greater (P < 0.05) than the values for steaks from delayed animals, but only during the early postmortem period (3 to 7 d). A linear effect of GEN on WBSF was detected (P < 0.05) for LM and GM steaks. Within each muscle, steaks from cattle with 6 favorable alleles had WBSF values 0.33 kg less than the values for steaks from cattle with 1 favorable allele. The GEN × age interaction was not significant for LM (P = 0.14) or GM (P = 0.20), but a numerical trend was observed for the effect of GEN on WBSF to diminish as age increased. To investigate how genetic markers could be interfaced with current beef carcass quality grading, cattle were sorted into 2 gene marker groups (GMG), ≤3 vs. ≥4 favorable alleles. For both muscles, GMG was effective only at identifying tenderness differences within the Select grade. When aged ≤14 d, Select LM steaks from cattle with ≥4 alleles had smaller (P < 0.05) WBSF values than did LM steaks from animals with ≤3 alleles. Preslaughter factors (sex, IMP, and GMG) controlled in the present study each accounted for less than 7% of the explained variation in tenderness of the test population. Results from this study suggest that the 3 GeneSTAR Tenderness markers were associated with small differences (0.33 kg) in WBSF and may be useful for increasing the consistency of Select beef, but these specific markers accounted for only a minor amount of variation in beef tenderness.

A beef carcass instrument grading system that improves accuracy and consistency of marbling score (MS) evaluation would have the potential to advance value-based marketing efforts and reduce disparity in quality grading among USDA graders, shifts, and plants. The objectives of this study were to use output data from the Video Image Analysis-Computer Vision System (VIA-CVS, Research Management Systems Inc., Fort Collins, CO) to develop an appropriate method by which performance of video image analysis MS output could be evaluated for accuracy, precision, and repeatability for purposes of seeking official USDA approval for using an instrument in commerce to augment assessment of quality grade, and to use the developed standards to gain approval for VIA-CVS to assist USDA personnel in assigning official beef carcass MS. An initial MS output algorithm was developed (phase I) for the VIA-CVS before 2 separate preliminary instrument evaluation trials (phases II and III) were conducted. During phases II and III, a 3-member panel of USDA expert graders independently assigned MS to 1,068 and 1,242 stationary carcasses, respectively. Mean expert MS was calculated for each carcass. Additionally, a separate 3-member USDA expert panel developed a consensus MS for each carcass in phase III. In phase II, VIA-CVS stationary triple-placement and triple-trigger instrument repeatability values (n = 262 and 260, respectively), measured as the percentage of total variance explained by carcasses, were 99.9 and 99.8%, respectively. In phases II and III, 95% of carcasses were assigned expert MS for which differences between individual expert MS, and for which the consensus MS in phase III only, was < or = 96 MS units. Two differing approaches to simple regression analysis, as well as a separate method-comparability analysis that accommodates error in both dependent and independent variables, were used to assess accuracy and precision of instrument MS predictions vs. mean expert MS. Method-comparability analysis was more appropriate in assessing the bias and precision of instrument MS predictions. Ether-extractable fat percentages (n = 257; phase II) differed among MS (P < 0.05) but were not suitable to predict or validate assigned MS. The performance and reproducibility of expert MS assignment in future evaluations was considered, and an official USDA performance standard was established, to which an instrument must conform to be approved for official on-line MS assessment. The VIA-CVS subsequently was approved to assign MS to carcasses on-line after completion of a 2006 USDA instrument approval trial conducted according to methods developed during completion of this study.

Calf-fed heifers (n = 72) and steers (n = 72) were supplemented with 4 levels (0, 0.25, 0.50, and 0.75%) of dietary Mg as MgO during the final 14 d of finishing and were commingled 1 d before slaughter (inducing stress by mixing unfamiliar cattle) to examine the effects of sex class and Mg supplementation on stress responses and LM quality characteristics. Heifers and steers exhibited markedly different stress responses. Heifers were more excitable than steers during preslaughter handling events and exhibited a short-term physiological stress response that involved acute sympatho-adrenal activation and resulted in increased meat toughness, without a concomitant increase in muscle pH. Steers, on the other hand, exhibited greater physical activity, associated with agonistic behavior, during the mixing period and therefore produced carcasses with lesser (P = 0.008) LM glycogen concentrations and greater (P = 0.042) 48-h LM pH values, compared with heifers. Steers also produced tougher (P = 0.008) LM steaks than did heifers. Within the range of pH values observed in this study (5.3 to 6.1), positive, linear relationships between 48-h LM pH and mean LM shear force (P < 0.05) were observed in both heifers (r = 0.25) and steers (r = 0.37). Effects of pH on LM shear force (P < 0.05), which were most pronounced at 3 and 7 d postmortem, diminished during postmortem aging and were no longer evident (P > 0.05) once LM samples had been aged for 21 d. Results suggested that toughness of LM steaks from beef carcasses with final LM pH values greater than 5.65 could be problematic unless LM cuts are aged for approximately 18 d or longer. Supplementation with dietary Mg increased (P = 0.011) serum Mg concentration, but had no effect (P > 0.05) on any of the physiological stress indicators or LM quality characteristics measured in this study. There was no evidence to support the premise that Mg supplementation of cattle lessens the effects of preslaughter stress on beef quality characteristics.

Relationships between behavioral and physiological symptoms of preslaughter stress and LM Warner-Bratzler shear force (WBSF) were investigated using Bos taurus steers (n = 79) and heifers (n = 77). Measurements of heart rate, respiration rate, rectal temperature, and concentrations of serum cortisol and plasma epinephrine were used as indicators of stress associated with physical handling and chute restraint, whereas concentrations of cortisol, glucose, lactate, and creatine kinase in blood samples obtained at exsanguination were measured to reflect physiological reactions of animals to transportation stress. Increased plasma epinephrine concentration, indicative of acute handling stress, was associated with elevated heart rate (r = 0.42, P < 0.001) and rectal temperature (r = 0.34, P < 0.001) during restraint, increased plasma lactate (r = 0.22, P = 0.006) and serum creatine kinase (r = 0.28, P < 0.001) concentrations at slaughter, and greater LM WBSF (r = 0.22, P = 0.006). Plasma lactate concentration at slaughter, which reflected an adrenergic stress response to transportation, was associated with lesser final LM pH (r = -0.30, P < 0.001) and greater LM WBSF (r = 0.26, P = 0.002). Categorical analyses of chute and posttransportation behavior scores (calm vs. restless vs. nervous) showed that cattle exhibiting adverse behavioral reactions to handling and chute restraint had increased (P < 0.05) values for plasma epinephrine concentration, heart rate, and rectal temperature during chute restraint, elevated (P < 0.05) plasma lactate concentration at slaughter, and increased (P < 0.05) LM WBSF. In addition, cattle showing behavioral symptoms of stress after transportation had greater (P < 0.05) plasma glucose and lactate concentrations at slaughter and produced LM steaks that were 0.34 kg tougher (P < 0.05) when compared with calm cattle. No carcasses were identified as dark cutters, and LM pH did not differ (P > 0.05) among behavior categories. Grouping cattle according to differences in plasma lactate concentration categorized them according to mean differences in LM WBSF. Moreover, steaks from cattle with the greatest plasma lactate concentrations at slaughter (91st to 100th percentile) had a delayed response to aging that persisted until 14 d postmortem. Stress-induced differences in LM tenderness observed in this study were independent of differences in muscle pH.

Carcasses that do not conform to mainstream specifications (i.e., those with nonconforming ribeye area) may not achieve their full potential value. Research was conducted to evaluate the relationship between beef carcass LM area at the 12th and 13th rib interface (LMA) and portion size acceptability of other muscles in the carcass. Sixty beef carcass sides of varying LMA sizes (between 67.74 and 116.13 cm(2)) were fabricated to generate 14 individual muscle cuts (triceps brachii long head, infraspinatus, chuckeye complexus, pectoralis profundus, longissimus thoracis, latissimus dorsi, gluteus medius, longissimus lumborum, tensor fasciae latae, psoas major, semimembranosus, biceps femoris, semitendinosus, and vastus lateralis). Retail portion size (g/1.27-cm-thick steak) as well as face surface area and dimensions were recorded for each steak cut perpendicular at the midpoint of the longitudinal axis of each muscle. Subsequently, a nationwide survey was conducted with foodservice chefs and retail meat merchandisers to evaluate acceptability of portion sizes and dimensions of individual muscle cuts. Simple linear regression and nonparametric regression analyses were used to evaluate results of the carcass muscle evaluation and survey, respectively. Results demonstrated that LMA did not affect (P < 0.05) retail portion size of 7 of the 14 muscles (chuckeye complexus, pectoralis profundus, psoas major, semimembranosus, tensor fasciae latae, triceps brachii, and vastus lateralis). Similarly, LMA did not affect (P < 0.05) surface area of steak cross-sectional face areas from 7 of the 14 muscles (chuckeye complexus, psoas major, semimembranosus, tensor fasciae latae, infraspinatus, vastus lateralis, and latissimus dorsi). Muscles for which carcass LMA (P < 0.05) was related to portion size or surface area of portion steaks, or both, were included in the survey. Results of the survey demonstrated that portion size for many muscles were still acceptable to retail merchandisers and foodservice chefs, even though carcass LMA was outside the range of commercially acceptable sizes. Results of this study demonstrated that carcass LMA is not an accurate determinant of the size, and subsequent acceptability, of many other muscles of beef in the carcasses, and may not be a good determinant of value of the beef carcass.

Effects of the dark-cutting condition were examined on commercially slaughtered beef carcass sides that were classified into groups exhibiting 1/3, 1/2, and full degrees of the dark-cutting (DEGDC) condition, as evaluated by a USDA-Agricultural Marketing Service grader (n = 20 per group). Twenty-nine muscles of each carcass side were evaluated to determine the ultimate pH and color (L*, a*, and b*). Fourteen beef muscles (biceps femoris, deep pectoral, chuck complexus, gluteus medius, infraspinatus, latissimus dorsi, psoas major, longissimus thoracis, longissimus lumborum, semimembranosus, semitendinosus, triceps brachii long head, tensor fasciae latae, and vastus lateralis) were evaluated using Warner-Bratzler Shear force (WBSF) and a trained sensory panel. The muscle x DEGDC interaction was significant for ultimate pH, L*, a*, and b* values (P < 0.05). When ultimate pH values of individual muscles were compared with the same muscles evaluated in a previous study, the 1/3, 1/2, and full DEGDC had 7, 9, and 5 muscles, respectively, that fell within a computed 95% prediction limit of what would be considered as a normal pH but were more variable as measured by within-class CV. Color values (L*, a*, and b*) of the muscles from dark-cutting carcasses were numerically lower than those from the normal carcasses. A survey designed to determine the ideal color range of beef lean for retail meat merchandisers (n = 34) and food service chefs (n = 33) across the United States resulted in data analyzed using principal components analysis of L*, a*, and b* values for muscles dissected in the study to estimate the true values for dark-cutting carcasses. Muscles that were within an acceptable color value range for food service chefs had the potential to add between $42.29 to $26.44 and $14.71 to $8.11 per side when valued at Choice and Select prices, respectively. Muscles that were within an acceptable color value range had the potential to add between $30.39 to $16.74 and $10.37 to $5.03 per side for retail meat merchandisers when acceptable muscles were valued at Choice and Select prices, respectively. No muscle x DEGDC interactions were detected for WBSF and sensory panel scores (P > 0.05), but differences were detected among muscles (P < 0.05). Several muscles were considered salvageable from the dark-cutting carcasses that were evaluated, and no significant differences in sensory scores or WBSF between DEGDC classes suggested equal sensory expectations for muscles from dark-cutting carcasses.

Forty USDA Select and 40 upper two-thirds USDA Choice beef carcasses were used to determine the effects of postmortem aging on tenderness of 17 individual beef muscles. Biceps femoris-long head, complexus, gluteus medius, infraspinatus, longissimus dorsi, psoas major, rectus femoris, semimembranosus, semitendinosus, serratus ventralis, spinalis dorsi, supraspinatus, tensor fasciae latae, teres major, triceps brachii-long head, vastus lateralis, and vastus medialis muscles were removed from each carcass. Seven steaks (2.54-cm thick) were cut from every muscle, and each steak was assigned to one of the following postmortem aging periods: 2, 4, 6, 10, 14, 21, or 28 d postmortem. After completion of the designated aging period, steaks were removed from storage (2 degrees C, never frozen), cooked to a peak internal temperature of 71 degrees C, and evaluated using Warner-Bratzler shear force (WBSF). Analysis of WBSF revealed a 3-way interaction (P = 0.004) among individual muscle, USDA quality grade, and postmortem aging period. With the exception of the Select teres major, WBSF of all muscles (both quality grades) decreased with increasing time of postmortem storage. Nonlinear regression was used to characterize the extent (aging response) and rate of decrease in WBSF from 2 through 28 d postmortem for each muscle within each quality grade. In general, WBSF of upper two-thirds Choice muscles decreased more rapidly from 2 to 10 d postmortem than did corresponding Select muscles. Muscles that had greater aging responses generally had greater 2-d WBSF values. The upper two-thirds Choice psoas major, serratus ventralis, and vastus lateralis muscles required similar aging times to complete a majority of the aging response (< or =0.1 kg of aging response remaining) compared with analogous Select muscles. The upper two-thirds Choice complexus, gluteus medius, semitendinosus, triceps brachii-long head, and vastus medialis muscles required 4 to 6 d less time to complete a majority of the aging response than did comparable Select muscles. Aging times for Select biceps femoris-long head, infraspinatus, longissimus dorsi, rectus femoris, semimembranosus, spinalis dorsi, supraspinatus, and tensor fasciae latae muscles were > or =7 d longer than those for corresponding upper two-thirds Choice muscles. Results from this study suggest that muscle-to-muscle tenderness differences depend on quality grade and aging time and that postmortem aging should be managed with respect to individual muscle and USDA quality grade.

Experimental economic procedures were used to measure the effects of changes in marbling score and Warner-Bratzler shear force (WBSF) value on consumer purchasing behavior and willingness to pay for beef strip loin steaks (n = 541). Consumers were more likely to bid on a steak during the experimental auction if the steak had a high marbling score or low WBSF value. Averaging across all consumers in the study (n = 489), the predicted odds that consumers would submit a nonzero bid were favorable for steaks with a marbling score greater than Modest(50) or a WBSF value less than 3.9 kg. Bid prices for steaks were analyzed with respect to changes in steak marbling score, WBSF value, quality grade marketing category classification (Select, Low Choice, Premium Choice, and Prime), and WBSF marketing category classification (very tender, 5.40 kg). The percentage of bids that were zero was highest (P < 0.05) for Select steaks, intermediate (P < 0.05) for Low Choice steaks, and lower (P <0.05) for Premium Choice or Prime steaks. Steaks in the very tender category had the lowest (P < 0.05) percentage of zero bids, and steaks in the slightly tough and very tough categories had the highest (P < 0.05) percentage of zero bids submitted from "buyers" in the auction. Premium Choice and Prime steaks were valued higher (P < 0.05) than Select steaks by consumers. On average, Premium Choice steaks received a 0.89 dollars/kg premium, and Prime steaks received a 2.47 dollars/kg premium over the mean bid price for Select steaks. Predicted mean bid prices for steaks decreased by 1.02 dollars/kg for each 1 kg increase in WBSF value. On average, steaks in the very tender marketing category received a higher (P < 0.05) bid price than the bid price for steaks in the slightly tender, slightly tough, and very tough categories (+0.83 dollars/kg, +2.09 dollars/kg, and +2.55 dollars/kg, respectively). Mean bid prices for steaks from the slightly tough and very tough categories did not differ (P = 0.184). Compared with the mean bid price for steaks in the slightly tender category, steaks from the slightly tough and very tough categories were discounted (P < 0.05) by 1.26 dollars/kg and 1.72 dollars/kg, respectively. Results suggest that marbling score and WBSF influence both the probability that consumers will purchase and the price they are willing to pay for strip loin steaks.

OBJECTIVE: The purpose of this study was to evaluate concurrent positive reactions of related versus nonrelated allergens based on 1000 intradermal tests of dogs with atopic dermatitis. PROCEDURE: Pairs of closely related allergens (based on botanical relations and results of research in human allergic disease) and nonrelated allergens were evaluated. Significance of the difference between group means of log odds ratios was estimated using a Bootstrap percentile confidence interval. RESULTS: There was a significant difference in the mean log odds ratio between related and nonrelated allergen pairs. However, there was also a significant difference between most groups consisting of nonrelated allergen pairs. CONCLUSION: These results provide conflicting evidence and emphasise the need for further studies. Numbers of concurrent reactions of related allergens indicate that immunotherapy should be formulated based on testing with single allergens to avoid exposure to allergens not involved in the dog's atopic disease.

Logistic regression was used to quantify and characterize the effects of changes in marbling score, Warner-Bratzler shear force (WBSF), and consumer panel sensory ratings for tenderness, juiciness, or flavor on the probability of overall consumer acceptance of strip loin steaks from beef carcasses (n = 550). Consumers (n = 489) evaluated steaks for tenderness, juiciness, and flavor using nine-point hedonic scales (1 = like extremely and 9 = dislike extremely) and for overall steak acceptance (satisfied or not satisfied). Predicted acceptance of steaks by consumers was high (> 85%) when the mean consumer sensory rating for tenderness,juiciness, or flavor for a steak was 3 or lower on the hedonic scale. Conversely, predicted consumer acceptance of steaks was low (< or = 10%) when the mean consumer rating for tenderness, juiciness, or flavor for a steak was 5 or higher on the hedonic scale. As mean consumer sensory ratings for tenderness, juiciness, or flavor decreased from 3 to 5, the probability of acceptance of steaks by consumers diminished rapidly in a linear fashion. These results suggest that small changes in consumer sensory ratings for these sensory traits have dramatic effects on the probability of acceptance of steaks by consumers. Marbling score displayed a weak (adjusted R2 = 0.053), yet significant (P < 0.01), relationship to acceptance of steaks by consumers, and the shape of the predicted probability curve for steak acceptance was approximately linear over the entire range of marbling scores (Traces67 to Slightly Abundant97), suggesting that the likelihood of consumer acceptance of steaks increases approximately 10% for each full marbling score increase between Slight to Slightly Abundant. The predicted probability curve for consumer acceptance of steaks was sigmoidal for the WBSF model, with a steep decline in predicted probability of acceptance as WBSF values increased from 3.0 to 5.5 kg. Changes in WBSF within the high (> 5.5 kg) or low (< 3.0 kg) portions of the range of WBSF values had little effect on the probability of consumer acceptance of steaks.

The ability to assess fertility of bovine sperm accurately and rapidly would be very useful for research and applications to the cattle industry. Sperm motility and other in vitro tests of sperm normality are only partially correlated with fertility, and lengthy breeding trials are expensive and time consuming. Heterospermic insemination by mixing sperm from more than one male provides an in vivo method to assess relative fertility among bulls that can be economical and rapid. Sperm that had been flow-sorted and cryopreserved from four groups of four bulls were inseminated in all combinations of three bulls within groups into nonsuperovulated heifers or superovulated heifers. Embryos were collected nonsurgically between d 13.5 and 20 following estrus and evaluated for paternity by genotyping. Following determination of paternity, a heterospermic index was created for each bull using a maximum likelihood function. These indices ranged from 0.22 +/- 0.15 to 2.43 +/- 0.43 (mean = 1.00, with a higher value indicative of greater fertility). In all four groups, either the high- or low-fertility bull was identified (P < 0.05) using a total of 25 to 36 genotypable embryos from nonsuperovulated heifers. The heterospermic rankings of bulls were similar for single and superovulated heifers for one group of bulls, but dissimilar for a second group. Heterospermic insemination followed by genotyping of embryos proved to be efficacious for rapidly ranking fertility of flow-sorted sperm from bulls when females were not superovulated, but results were less clear when females were superovulated.

Objective quantification of differences in wholesale cut yields of beef carcasses at plant chain speeds is important for the application of value-based marketing. This study was conducted to evaluate the ability of a commercial video image analysis system, the Computer Vision System (CVS) to 1) predict commercially fabricated beef subprimal yield and 2) augment USDA yield grading, in order to improve accuracy of grade assessment. The CVS was evaluated as a fully installed production system, operating on a full-time basis at chain speeds. Steer and heifer carcasses (n = 296) were evaluated using CVS, as well as by USDA expert and online graders, before the fabrication of carcasses into industry-standard subprimal cuts. Expert yield grade (YG), online YG, CVS estimated carcass yield, and CVS measured ribeye area in conjunction with expert grader estimates of the remaining YG factors (adjusted fat thickness, percentage of kidney-pelvic-heart fat, hot carcass weight) accounted for 67, 39, 64, and 65% of the observed variation in fabricated yields of closely trimmed subprimals. The dual component CVS predicted wholesale cut yields more accurately than current online yield grading, and, in an augmentation system, CVS ribeye measurement replaced estimated ribeye area in determination of USDA yield grade, and the accuracy of cutability prediction was improved, under packing plant conditions and speeds, to a level close to that of expert graders applying grades at a comfortable rate of speed offline.

RESUMEN

Forty-one cases of zinc-responsive dermatosis in the dog are described. The Siberian husky was the predominant breed affected. Periocular crusts were the most common clinical sign and parakeratosis was noted in the skin biopsy specimens of all dogs. Treatment with oral zinc ameliorated the clinical signs in most dogs, but cases necessitating other treatments such as parenteral zinc or retinoids are reported. The authors recommend a starting dose of 2-3 mg kg-1 elemental zinc per day in the treatment of this disorder.
