Belly is a very popular pork cut composed of different layers of fat and muscle tissue. This work aims to investigate the effect of belly fatness on the morphological, mechanical (firmness) and compositional characteristics of fresh pork bellies and the distribution of the fat within the belly slice. A total of 182 bellies, selected to ensure variability of fatness, sexes and genotypes, were scanned by computed tomography (CT) to determine the fat content which, together with the genotype, led to the formation of 5 classes: F1 class below 26%, F2 class from 26% to 33.9%, and F3 class above 33.9% of fat content from common commercial crossbred pigs; F4 class with an average fatness of 47.3% from pure Duroc pigs; and last, F5 class with 62.6% average fat content from Iberian×Duroc pigs. The distribution of the fat in the central belly slice obtained by CT revealed important differences by region although the fat content was proportional to the overall fatness of the belly. Both belly weight and belly firmness increased with higher fatness. In bellies from common commercial pigs, an increase of SFA and MUFA and a decrease of PUFA as fatness increased was observed. This study highlights variations in belly characteristics among different fat classes, indicating considerable differences in the quality of bellies currently available in the market. This may influence producers and consumers acceptability such that fat content could be considered as a quality criterion to pre-classify bellies and better match the raw product with its final destination.

Non-invasive technologies could help to guarantee quality standards of canned tuna fish. The aim of this study was to investigate the ability of bench-top (FT-NIR) and low-cost (LC-NIR) near infrared spectrometers to determine salt content and texture in canned tuna. Salt content distribution was also investigated using hyperspectral imaging (HSI) and computed tomography. Spectra were acquired on canned tuna and reference analysis performed. Partial least squares regression and discriminant analysis were used to develop salt content predictive and texture classification models. Salt content predictive errors were 0.10%, 0.22% and 0.22% for FT-NIR, LC-NIR and HSI, respectively. Salt content was not always homogeneously distributed in the can which was attributed to the salt content differences between internal and external parts of the tuna fish. Low-cost sensors could be a suitable solution to standardise the production and enable precise nutritional labelling, but more sophisticated algorithms are needed to identify textural defects.

The practice of surgical castration of piglets and its alternatives is still under debate. Production of boars may impair meat quality due to boar taint and reduced tenderness compared to meat from surgically castrated male pigs, while immunocastration reduces boar taint and may improve meat quality but seems to be less accepted by the pig chain. In this study, we aimed to evaluate the consumer's sensory appreciation of meat from barrows (BAs), immunocastrates (ICs) and boars (BOs) in six European countries, taking into account the selection of tainted carcass and consumers' appreciation of boar taint. Loin chops of 30 BAs, 30 ICs and 30 BOs were evaluated by 752 consumers in six countries: Belgium, Czech Republic, Poland, Portugal, Romania and Spain. Consumers rated odour, flavour, tenderness, juiciness, overall liking and willingness to buy and sensitivity to and liking of androstenone (AND) and liking of skatole (SKA) was also tested. In each of the six countries, consumers liked the odour of the BO samples less than that of BA, and IC intermediate. For flavour, tenderness, juiciness, overall liking and willingness to buy, liking scores given by the Czech, Polish and Portuguese consumers significantly differed between the BA, BO and IC. Willingness to buy was highest for BA by Czech and Polish consumers and for BA and IC by Portuguese consumers. The frequency of the negative check all terms that apply terms also differed, with a higher frequency of disgusting for BO compared to BA and IC and of off-flavour, irritating, manure, sweat, disappointing compared to BA, and intermediate for IC. 31% of the consumers disliked the odour of AND (NEGAND), and 36% of them were not sensitive; in contrast, 77% of the consumers disliked SKA (NEGSKA). The decrease in flavour liking score for BO compared to BA and IC was more outspoken by the NEGAND consumer, while NEGSKA consumers gave an overall lower liking score independent of the type of male pig. The results of this study indicate that IC can be a valid alternative for surgical castration.

The inclusion of crude and acid oils from olive pomace can lead to more unsaturated meat products and, especially in the case of olive pomace acid oil, achieve a more economically and environmentally sustainable swine production. The objective of this trial was to study the effect of dietary supplementation with crude and acid oils from olive pomace, which are rich in monounsaturated fatty acids (FAs) and have differing free FA content, on growth performance, digestibility, carcass parameters and FA profile of Longissimus muscle (LM) and backfat in growing-finishing pigs compared to the conventional crude palm oil. A total of 224 male and female pigs [(Landrace × Large White) × Duroc] were randomly distributed into 48 pens according to initial BW (58.7 ± 9.71 kg, mean ± SD) and sex. Four experimental treatments were randomly assigned (n = 12 pens/treatment; 4-5 pigs/pen) for the growing (0-42 days) and finishing (40-62 days) phases. Treatments consisted of a basal diet supplemented with 5% (as-fed basis) palm oil (PO), olive pomace oil (O), olive pomace acid oil (OA) or a mixture (M) of PO and OA at 50/50. No differences were found in the growth performance results between PO, O or M, but animals fed OA showed a lower gain to feed ratio than M (P = 0.008). No differences were found in apparent ileal digestibility among treatments, however, animals fed O and OA showed the highest values of total FA apparent total tract digestibility, while those fed PO had the lowest values, and M had intermediate values (P < 0.001). No differences were observed in carcass composition among treatments. In relation to backfat and the LM FA profile, O and OA treatments led to a higher unsaturated FA to saturated FA ratio and a lower content in saturated FA than PO. Moreover, O showed a higher intramuscular fat (IMF) content in LM than PO (P = 0.037). It is concluded that olive pomace oil is an interesting alternative fat source that can be included at 5% in growing-finishing pig diets, leading to meat products with more IMF, rich in monounsaturated FA, reaching high FA digestibility values and good pig performance parameters. Alternatively, olive pomace acid oil blended with conventional palm oil did not negatively impact fat utilisation nor performance. Including these fat by-products reduced feeding costs and led to a more efficient and environmentally sustainable production.

Castration is a common practice in Iberian pigs due to their advanced age and high weight at slaughter. Immunocastration (IC) is an alternative to surgical castration that influences carcass and cut fatness. These traits need to be evaluated in vivo and postmortem. The aims of the present work were (a) to determine the relationship between ham composition measured with computed tomography (CT) and in vivo ultrasound (US) and carcass fat thickness measurements, (b) to apply these technologies to early (EIP) and late (LIP) immunocastrated Iberian pigs in order to evaluate carcass fatness and ham tissue composition and (c) to assess meat quality on these animals and to find the relationships between meat quality traits (namely, intramuscular fat (IMF)) and fat depot thicknesses. For this purpose, 20 purebred Iberian pigs were immunocastrated with three doses of Improvac ®, at either 4.5, 5.5 and 9 or 11, 12 and 14 months of age (EIP or LIP; respectively; n = 10 each) and slaughtered at 17 months of age. Fat depots were evaluated in vivo by US, in carcass with a ruler and in hams by CT. Carcass and cut yields, loin meat quality and loin acceptability by consumers were determined. Also, IMF was determined in the loin and three muscles of the ham. Carcass weight was 14.9 kg heavier in EIP vs LIP, and loin backfat thickness (US- and ruler-measured) was also greater in EIP. Similarly, CT-evaluated ham bone and fat contents were greater and smaller for EIP vs LIP, respectively. Loin and ham IMF were also greater in EIP, but the other meat quality parameters were similar. The acceptability of meat by consumers was high and it did not differ between IC protocols. Correlations between several fat depots measured with the different technologies were high. In conclusion, all these technologies allowed fat depot measurements, which were highly correlated despite being obtained at different anatomical locations.

Palatability of meat is known to be affected by intramuscular fat (IMF), but the effect in relatively low-fat New Zealand lamb is unknown. This study evaluated the eating quality of 108 loins (M. longissimus lumborum) from a single flock of ewe-lambs. Loins ranged from 1.09-5.68% IMF and were stratified into 6 groups: 1.65, 2.12, 2.65, 3.20, 3.58 and 4.40%. Consumers' (n = 165) overall liking of lamb increased significantly at around 3% IMF, achieving maximum scores at 4% IMF. One consumer cluster (n = 111) showed a linear increase in overall liking with increasing IMF%, regarded as 'IMF lovers: the more the better', while a second cluster (n = 54) preferred 2.5-3.5% IMF, described as 'IMF optimizers: just the right amount'. IMF% was modestly correlated (~ + 0.25) with all sensory attributes except juiciness. Liking scores were modestly correlated with monounsaturated (~ + 0.25) and polyunsaturated (~ - 0.20) fatty acids. Results suggest aiming for IMF% levels in New Zealand lamb beyond 3% to maximize eating quality for premium markets in particular.

The pig is a valuable animal model to study obesity in humans due to the physiological similarity between humans and pigs in terms of digestive and associated metabolic processes. The dietary use of vegetal protein, probiotics and omega-3 fatty acids is recommended to control weight gain and to fight obesity-associated metabolic disorders. Likewise, there are recent reports on their beneficial effects on brain functions. The hypothalamus is the central part of the brain that regulates food intake by means of the production of food intake-regulatory hypothalamic neuropeptides, as neuropeptide Y (NPY), orexin A and pro-opiomelanocortin (POMC), and neurotransmitters, such as dopamine and serotonin. Other mesolimbic areas, such as the hippocampus, are also involved in the control of food intake. In this study, the effect of a high fat diet (HFD) alone or supplemented with these additives on brain neuropeptides and neurotransmitters was assessed in forty-three young pigs fed for 10 weeks with a control diet (T1), a high fat diet (HFD, T2), and HFD with vegetal protein supplemented with Bifidobacterium breve CECT8242 alone (T3) or in combination with omega-3 fatty acids (T4). A HFD provoked changes in regulatory neuropeptides and 3,4-dihydroxyphenylacetic acid (DOPAC) in the hypothalamus and alterations mostly in the dopaminergic system in the ventral hippocampus. Supplementation of the HFD with B. breve CECT8242, especially in combination with omega-3 fatty acids, was able to partially reverse the effects of HFD. Correlations between productive and neurochemical parameters supported these findings. These results confirm that pigs are an appropriate animal model alternative to rodents for the study of the effects of HFD on weight gain and obesity. Furthermore, they indicate the potential benefits of probiotics and omega-3 fatty acids on brain function.

Intramuscular fat (IMF) content depends on sex, genotype and diet and varies with pig growth. The aim of the present work was to determine the evolution of IMF by genotype-sex, muscle and muscle location, to determine relationships between IMF content of different muscles and to predict IMF in live pigs with computed tomography (CT). For this purpose, 155 pigs of seven combinations of genotype-sex were CT scanned and slaughtered at 70, 100 and 120 kg. From the carcasses, fat thickness was measured at several locations along the midline. Loin samples from three anatomical positions (between the eighth and ninth last ribs, between the third and fourth last ribs and between the third and fourth lumbar vertebrae) and three ham muscles (biceps femoris, semimembranosus and gluteus medius) were extracted, weighed and IMF was determined with near-IR equipment. From CT images, the distribution of volume by Hounsfield value (unit related with the density) was obtained for each muscle and anatomical location. Marbling was evaluated in the three loin locations. The effects of genotype-sex and live weight and their interaction were included in the statistical model. For prediction of IMF with CT images, partial least square regression was used. The results show differences in IMF content by genotype-sex and muscle. In general, the most cranial part of the loin presented higher IMF content, as well as the biceps femoris muscle of the ham. Depending on the genotype-sex, IMF content increased during all growth or increased until 100 kg and then became constant. Correlation coefficients between IMF content by muscle/location were between 0.74 and 0.83 within loin locations and between 0.53 and 0.70 for ham muscles. Correlation coefficients between marbling and IMF content evaluated at the same location varied between 0.51 and 0.66. Prediction of IMF content from CT images is not accurate enough (residual predictive deviation statistical values lower than 1.3). Muscle weight increase with animal growth and allometric coefficients varied between 0.89 and 0.97 for the muscles evaluated. The conclusions of the present work are that IMF content differs between and within muscle, during growth and by genotype-sex and that prediction of IMF in CT images of live pigs is not accurate.

A consumer study was performed in four EU countries to further clarify the acceptability of meat with boar taint. In Denmark, France, Italy and Poland, a total of 476 female consumers evaluated 8 meat patties from boars with varying levels of skatole (0.10-0.40µg/g fat tissue) and androstenone (0.47-2.00 µg/g fat tissue), in a pair-wise comparison with patties from castrates. Boar meat patties were always less preferred than the castrate meat patties, regardless of the level of androstenone and skatole. Acceptability of the boar meat patties decreased with increasing skatole level. In samples with low skatole levels, higher levels of androstenone also reduced acceptability among androstenone sensitive consumers. No clear threshold levels for androstenone and skatole could be identified. Maps presenting the reduction in preference due to increasing levels of skatole and androstenone, and corrected for the general acceptance of the meat product were developed, taking into account androstenone sensitivity. Further work is needed, covering the whole range of androstenone and skatole levels found in entire male pigs and for a wider set of meat products.

The perspective of a possible ban on surgical castration of male pigs in the EU is a real challenge for pork production systems aiming at (very) high-quality products. Information was collected from a total of 272 situations in 16 European countries, including 170 situations related to EU protected designations (Database of Origin & Registration (DOOR) database) and 102 other situations related to high-quality products or differentiated production systems, in order to evaluate their potential sensitivity to the use of entire male pigs along four dimensions: BT_Inc, likelihood of increased levels of boar taint compounds compared with conventional production of entire males; BT_Per, extent to which (some of) the associated pork product(s) are susceptible to perception of boar taint by consumers; FatQQ, likelihood that the quality of (some of) the related products is decreased due to the lower fat quantity and quality in entire males; Manag, increased likelihood of animal management and welfare problems compared with conventional production of entire males. Situations corresponding to EU protected designations (DOOR situations) were on average more sensitive to entire male production but 11% of the non-DOOR situations were highly potentially sensitive, whereas one-third of the DOOR situations had low potential sensitivity. In total, 37% of the situations where castration is not formally specified as mandatory exhibited high potential sensitivity to entire male production. Three main patterns of situations were identified via ascending hierarchical clustering. A first pattern including 31% of the DOOR situations and 74% of the other ones, had potentially no increased risk compared with conventional production of entire males. A second pattern including 28% of the DOOR situations and 16% of the other ones had a high, moderate and low potential sensitivity for FatQQ, BT_Inc and Manag, respectively. The third pattern including 41% of the DOOR situations and 11% of the other situations had high potential sensitivity for BT_Inc and FatQQ, associated with moderate to high sensitivity for Manag. The approach used to evaluate the sensitivity to entire male pig production from the limited information collected for this study has many limitations. More precise approaches using more specific information are needed to evaluate the actual sensitivity of individual situations to the use of entire male pigs. Still, the present study provides a first global insight on the capacity of European production systems aiming at high-quality products to use entire male pigs as an alternative to surgical castration.

Knowledge of tissue and cuts growth depending on the sex could be used to improve performance and efficiency. Computed tomography (CT) is a non-invasive technology that enables the study of the body composition of live animals during growth. The aims of the present study were (1) to evaluate variation in the body composition of four sex types (SEX) of pigs (castrated males (CM), immunocastrated males (IM), entire males (EM) and females (FE)) at the live weight of 30, 70, 100 and 120 kg, assessed using CT; (2) to model the growth of the main tissues and cuts; and (3) to predict the mature BW (MBW) of the four SEX and establish the relationships between the growth models and the MBW. There were significant phenotypic differences in the allometric growth of fat and lean among SEX. For the lean tissue, FE and EM showed higher values of the b coefficient than CM and IM (1.07 and 1.07 v. 1.00 and 1.02, respectively) all of them close to unity, indicating a proportional growth rate similar to live weight and that this tissue developed faster in FE and EM than in CM and IM. However, these differences were not related to differences in estimated MBW. There were significant differences in estimated MBW among SEX, being higher in IM and EM than in CM and FE (303 and 247 v. 219 and 216 kg), however, the MBW may have been overestimated, especially for the IM. The poorer accuracy of the MBW estimate for the IM could be due to a maximum live weight of 120 kg in the experiment, or to the fact that this particular SEX presented two clear behaviours, being more similar to EM from birth to the second injection of the vaccine (130 days) and comparable with CM from that point to the final BW.

The aim of this work was to study the sensitivity of Chinese and Russian female consumers to androstenone and skatole and to identify their preference for pork patties from entire male pigs compared with those from castrated pigs. One-hundred-twenty women in each country were enrolled. The sensitivity of the consumers to both compounds was tested using smell strips and triangular tests. Pairwise tests were performed comparing patties from castrated male pigs with patties from boars with different levels of androstenone and skatole. Approximately 70% of the Russian and 60% of the Chinese consumers were sensitive to skatole and 37% and 32% were sensitive to androstenone, respectively. Nevertheless, a higher percentage of sensitive Russian consumers compared to Chinese consumers disliked the smell of both compounds. In Russia, the consumers' preferences were higher for patties with low levels of both compounds, while no differences were found in China. In both countries, consumers who were sensitive to skatole also preferred patties with low levels of both compounds. Thus, the levels of androstenone and skatole affect boar patty preferences.

Two consumer studies were conducted to know the acceptability of pork with different boar taint levels: test 1 performed in Spain (n=126) and United Kingdom (n=146), and test 2 performed in France (n=139) and Italy (n=140). Each test had 3 types of pork: 'Female meat', 'Low boar tainted meat', and a third type was 'Medium boar tainted meat' or 'High boar tainted meat'. Three main clusters were identified on the basis of 'How delicious do you find this meat?': 1-Pork lovers, 2-Boar meat lovers, 3-Reject boar tainted meat. Additionally, in test 2, a fourth cluster was identified: 'Reject low tainted meat'. A group of 16.2-38.2% of consumers rejected meat from boars, and another group of 12.4-21.7% rated the meat with medium or high levels of boar taint better than the meat from females, identifying a niche for meat from medium and high levels of boar taint, and suggesting the need to select carcasses on the basis of boar taint.

The aims of this study were (1) to evaluate the ability of computed tomography (CT) to predict the chemical composition of live pigs and carcasses, (2) to compare the chemical composition of four different sex types at a commercial slaughter weight and (3) to model and evaluate the chemical component growth of these sex types. A total of 92 pigs (24 entire males (EM), 24 surgically castrated males (CM), 20 immunocastrated males (IM) and 24 females (FE)) was used. A total of 48 pigs (12 per sex type) were scanned repeatedly in vivo using CT at 30, 70, 100 and 120 kg and slaughtered at the end of the experiment. The remaining 44 were CT scanned in vivo and slaughtered immediately: 12 pigs (4 EM, 4 CM and 4 FE) at 30 kg and 16 pigs each at 70 kg and 100 kg (4 per sex type). The left carcasses were CT scanned, and the right carcasses were minced and analysed for protein, fat, moisture, ash, Ca and P content. Prediction equations for the chemical composition were developed using Partial Least Square regression. Allometric growth equations for the chemical components were modelled. By using live animal and carcass CT images, accurate prediction equations were obtained for the fat (with a root mean square error of prediction (RMSEPCV) of 1.31 and 1.34, respectively, and R 2=0.91 for both cases) and moisture relative content (g/100 g) (RMSEPCV=1.19 and 1.38 and R 2=0.94 and 0.93, respectively) and were less accurate for the protein (RMSEPCV=0.65 and 0.67 and R 2=0.54 and 0.63, respectively) and mineral content (RMSEPCV from 0.28 to 1.83 and R 2 from 0.09 to 0.62). Better equations were developed for the absolute amounts of protein, fat, moisture and ash (kg) (RMSEPCV from 0.26 to 1.14 and R 2 from 0.91 to 0.99) as well as Ca and P (g) (RMSEPCV=144 and 71, and R 2=0.76 to 0.66, respectively). At 120 kg, CM had a higher fat and lower moisture content than EM. For protein, CM and IM had lower values than FE and EM. The ash content was higher in EM and IM than in FE and CM, while IM had a higher Ca and P content than the others. The castrated animals showed a higher allometric coefficient for fat and a lower one for moisture, with IM having intermediate values. However, for the Ca and P models, IM presented higher coefficients than EM and FE, and CM were intermediate.

The aim of the present study was to find single equations to predict the amounts of fat, lean, and the weights of the primal cuts (ham, loin, belly, and shoulder) as well as ham composition of pigs from 30 to 120 kg BW of different genotypes (GEN; Exp. 1) and sexual conditions (SEX; Exp. 2). Two types of regression equations, taking into account different work situations, were developed: 1) research applications, using computed tomography (CT) parameters, and 2) potential on-farm applications, which could be obtained using easily accessible equipment. Two data sets were used: Exp. 1 included 90 gilts from 3 different GEN: 30 Duroc × (Landrace × Large White), 30 Pietrain × (Landrace × Large White), and 30 Landrace × Large White, and Exp. 2 included 92 Pietrain × (Landrace × Duroc) pigs of different SEX: 24 each of females, entire males, castrated males, and 20 immunocastrated males. Pigs were fully CT scanned in vivo at 30, 70, 100, and 120 kg BW. A subsample of pigs of each GEN ( = 5) or SEX ( = 4) were slaughtered at 30, 70, and 100 kg BW, and all remaining pigs were slaughtered after weighing and scanning at 120 kg BW. For all the slaughtered pigs, the 4 main cuts were fully (GEN) or partially dissected (SEX). CT images were analyzed and used to predict the lean and fat contents as well as the weights of the primal cuts and the composition of the ham. Total amounts of fat and lean for both populations were predicted with high levels of accuracy ( = 0.994 and 0.993, respectively) and proportions of random error for GEN and SEX effects (0.998 and 0.946 for the fat and 0.997 and 0.836 for the lean predictions, respectively). Moreover, the composition of ham (fat, lean, and bone) was very well predicted with high proportions (> 80%) of random error for GEN and SEX effect using CT and potential on-farm predictors.

Intramuscular fat is an important quality trait in pork. Lysine and protein have been reported to influence this trait, but most studies have modified both factors simultaneously. In this study, the effects of dietary Lys and protein were investigated in finishing pigs to determine if either of the 2 factors alone or in combination influence the deposition of intramuscular fat. One hundred and four barrows (Landrace × Duroc) were fed 1 of 4 experimental diets, including control protein-control Lys (CPCL), control protein-low Lys (CPLL), low protein-control Lys (LPCL), and low protein-low Lys diets (LPLL) with 10 pens per treatment and 2 or 3 pigs per pen. Pigs fed CPLL showed a trend to decrease feed efficiency (P < 0.10) compared with those fed CPCL, but pigs fed LPLL performed similarly to the CPCL pigs, indicating that CP levels can be reduced to 12% for pigs between 62 and 97 kg and to 9.8% afterward without negative effects on performance. In the longissimus thoracis, intramuscular fat increased in pigs fed LPCL or CPLL (P < 0.05) compared with CPCL. In the semimembranosus muscle, intramuscular fat was reduced in pigs fed LPLL compared with those fed CPLL (P < 0.05), and the same trend was observed in the longissimus thoracis (P < 0.10). Dietary protein reduction tended to increase back fat thickness (P < 0.10) and reduced SFA and MUFA (P < 0.05) and PUFA, particularly in subcutaneous fat (P < 0.05), whereas the effect on MUFA in the longissimus thoracis was less pronounced. A reduction of n-3 FA (P < 0.05) and PUFA (P < 0.01) in the semimembranosus muscle and in the liver, respectively, was observed when the level of dietary protein was reduced. These results indicate that the effect of a reduction of dietary protein and Lys on growth and intramuscular fat is not independent, and reduction of protein, while maintaining Lys, may improve meat quality without impairing performance.

An attempt to classify dry-cured hams according to the maturation time on the basis of near infrared (NIR) spectra was studied. The study comprised 128 samples of biceps femoris (BF) muscle from dry-cured hams matured for 10 (n=32), 12 (n=32), 14 (n=32) or 16 months (n=32). Samples were minced and scanned in the wavelength range from 400 to 2500 nm using spectrometer NIR System model 6500 (Silver Spring, MD, USA). Spectral data were used for i) splitting of samples into the training and test set using 2D Kohonen artificial neural networks (ANN) and for ii) construction of classification models using counter-propagation ANN (CP-ANN). Different models were tested, and the one selected was based on the lowest percentage of misclassified test samples (external validation). Overall correctness of the classification was 79.7%, which demonstrates practical relevance of using NIR spectroscopy and ANN for dry-cured ham processing control.

RESUMEN

There are increasing concerns of society towards the consumption of animal products which have been produced and transformed in a sustainable manner. This trend influences consumer purchasing decision making, particularly in developed countries. On the other hand, in the next years, the pressure to increase the volume and efficiency of meat production will be much higher to cope with the expected unsatisfied demand. At least in part, current and future technologies could contribute to solve this challenge. However, the use of some of these innovations could have a negative effect on consumer preferences. There is no consensus in our society about this dilemma. The objective of this paper is to review the scientific evidence related to these topics and to analyze and discuss the effect of some of the extrinsic and intrinsic factors linked with the sheep industry which could affect the acceptability of lamb meat by consumers.

The effect of country of origin (local, Switzerland, Argentina, Uruguay), finishing diet (grass, grass plus concentrate, concentrate), and price (low, medium, high) on consumer's beef choice and segmentation was evaluated in Spain, France and United Kingdom. Sensory acceptability of Uruguayan beef from different production systems was also evaluated and contrasted with consumers' beef choices. Origin was the most important characteristic for the choice of beef with preference for meat produced locally. The second most important factor was animal feed followed by price with preference for beef from grass-fed animals and lowest price. The least preferred product was beef from Uruguay, concentrate-fed animals and highest price. Sensory data showed higher acceptability scores for Uruguayan beef from grass-fed animals with or without concentrate supplementation than animals fed concentrate only. Consumer segments with distinct preferences were identified. Foreign country promotion seems to be fundamental for marketing beef in Europe, as well as the development of different marketing strategies to satisfy each consumer segment.
