The long-term stability of red wine color depends on the formation of polymeric pigments from anthocyanins. Although there is still a lot of uncertainty about the specific structure of this diverse group of pigments, there is consensus that they are reaction products of anthocyanins and other polyphenols. Interactions between anthocyanins and pectic polysaccharides have been suggested to stabilize anthocyanins. This study explores the impact of such interactions by adding pectin during red winemaking. The results demonstrate that these interactions induce the formation of additional polymeric pigments which enhance the pigment stability during fermentation and aging. While initial pigment formation is higher in wines with added pectin, a notable proportion of the complexes degrades in the later stages of fermentation. Presumably, tannins form insoluble complexes with pectin, reducing tannin concentration by more than 300 mg/L. Anthocyanin concentrations decrease by over 400 mg/L, and polymeric pigments double. Anthocyanins that form polymeric pigments with pectic polysaccharides expand the range of pigments in red wines with possible consequences for the sensory properties of the wine. These findings highlight the complex interactions between pectin, anthocyanins, and tannins, and their influence on pigment formation and wine composition during fermentation and aging.

RESUMO

The next two decades are expected to open the door to the first coincident detections of electromagnetic (EM) and gravitational-wave (GW) signatures associated with massive black-hole (MBH) binaries heading for coalescence. These detections will launch a new era of multimessenger astrophysics by expanding this growing field to the low-frequency GW regime and will provide an unprecedented understanding of the evolution of MBHs and galaxies. They will also constitute fundamentally new probes of cosmology and would enable unique tests of gravity. The aim of this Living Review is to provide an introduction to this research topic by presenting a summary of key findings, physical processes and ideas pertaining to EM counterparts to MBH mergers as they are known at the time of this writing. We review current observational evidence for close MBH binaries, discuss relevant physical processes and timescales, and summarize the possible EM counterparts to GWs in the precursor, coalescence, and afterglow stages of a MBH merger. We also describe open questions and discuss future prospects in this dynamic and quick-paced research area.

The science objectives of the LISA mission have been defined under the implicit assumption of a 4-years continuous data stream. Based on the performance of LISA Pathfinder, it is now expected that LISA will have a duty cycle of ≈ 0.75 , which would reduce the effective span of usable data to 3 years. This paper reports the results of a study by the LISA Science Group, which was charged with assessing the additional science return of increasing the mission lifetime. We explore various observational scenarios to assess the impact of mission duration on the main science objectives of the mission. We find that the science investigations most affected by mission duration concern the search for seed black holes at cosmic dawn, as well as the study of stellar-origin black holes and of their formation channels via multi-band and multi-messenger observations. We conclude that an extension to 6 years of mission operations is recommended.
