RESUMO

3D printing technology (3DP) as additive manufacturing is an innovative design technology that can meet the individual nutritional and sensory needs of consumers. Therefore, the aim of this work was to apply 3DP in the production of a strawberry-based functional product with the addition of two hydrocolloids (corn and wheat starch) in three proportions (10, 15 and 20%) and to investigate the influence of 3DP process parameters on physico-chemical and textural properties, as well as the bioactive and antioxidant potential and microbiological stability, with(out) the addition of natural antimicrobial agents. Starch type had a significant effect on all tested bioactive compounds, as well as on starch content, except for total phenolic and hydroxycinnamic acid contents. Considering the content of bioactive compounds and antioxidant capacity, program 2 proved to be more suitable than program 1. All samples exhibited good textural properties, a high degree of stability and minimal geometric deviations. Regarding microbiological safety, no pathogenic bacteria were found in the 3DP samples during storage. The 3DP sample with added citral at a concentration of 75 mg L-1 showed the best microbiological quality. Ultimately, 3DP can be successfully used for the production of new strawberry-based functional products.

The aim of this study was to investigate the influence of high intensity pulsed electric field (HIPEF) technology on the stability of total phenols, anthocyanins, hydroxycinnamic acids, flavonols, and condensed tannins in strawberry juices (Fragaria x ananassa Duch. cv. 'Albion') with different ripening stages (75% and 100%) and stored at +4 °C for 7 days. The HIPEF parameters studied were: (i) electric field strength (40 and 50 kV cm-1), (ii) frequency (100 and 200 Hz), and (iii) treatment duration (3 and 6 min). Of the HIPEF parameters studied, electric field strength and frequency had a statistically significant effect on the content of all phenolic compounds. Treatment duration showed no statistically significant effects on phenolic compounds except for flavonols and condensed tannins. Storage had a positive effect on the stability of most of the phenolic compounds, with the exception of flavonols. Optimization of HIPEF processing showed that strawberry samples at both ripeness levels were suitable for HIPEF treatment to obtain functional fruit juices with a high content of polyphenols.

Strawberries (Fragaria x ananassa Duch. cv. 'Albion') were harvested at two stages of ripeness (75% vs. 100%) and their physicochemical, sensory, toxicological, and bioactive properties were evaluated before and after processing into juice. The fresh fruits and their by-products were also evaluated. During processing into juice, the color change was higher in the fully ripe fruits, confirming the encouraging prospects for using the less ripe strawberries for processing. The analysis of heavy metals (Cu, Zn, Ni, As, Cd, Pb) was carried out, and in juice and by-product samples of 100% maturity, only Pb was higher than the MDK. Of the 566 pesticides analyzed, only cyprodinil was found in the by-products of the strawberries at 75% maturity, while pyrimethanil was detected in all samples. Fresh strawberries of both ripeness levels were rated similarly to the corresponding juices for all sensory attributes studied, indicating that sensory perception was not affected by processing. However, ripeness was found to be an important factor influencing most sensory attributes. The by-products were the materials with the highest levels of all bioactive compounds. Considering all quality parameters evaluated, the chemometric evaluation confirms the suitability of 75% ripe strawberries for processing into functional juice, which could be important for the juice industry.

This work aimed to investigate the influence of high-power ultrasound (HPU) technology on the stability of bioactive compounds in strawberry juices obtained from fruits with different stages of ripeness (75% vs. 100%) and stored at 4 °C for 7 days. HPU parameters were amplitude (25, 50, 75, and 100%), pulses (50 vs. 100%) and treatment time (5 vs. 10 min). Amplitude and pulse had a significant effect (p ≤ 0.05) on all bioactive compounds except flavonols and hydroxycinnamic acids. The treatment duration of 5 min vs. 10 min had a significant positive impact on the content of anthocyanins, flavonols and condensed tannins, while the opposite was observed for total phenols, whereas no statistically significant effect was observed for hydroxycinnamic acids. The temperature changes during HPU treatment correlated positively with almost all HPU treatment parameters (amplitude, pulse, energy, power, frequency). Optimal parameters of HPU were obtained for temperature changes, where the highest content of a particular group of bioactive compounds was obtained. Results showed that by combining fruits with a certain ripeness and optimal HPU treatment, it would be possible to produce juices with highly preserved bioactive compounds, while HPU technology has prospects for application in functional food products.

The aim of this study was to compare certain important fruit quality parameters such as sugars, organic acids, total phenolic content, antioxidant capacity, and volatile compounds of 10 commercial strawberry cultivars grown in the research and experimental area in Yaltir Agricultural Company located in Adana provinces of Turkey. As for the sugar content of strawberry fruits, fructose was identified as the dominant sugar and the highest value (4.43%) was found in the cultivar "Rubygem". In terms of organic acid, among the examined strawberry cultivars, "Calinda" had the greatest level of citric acid (711.45 mg g-1). Regarding vitamin C content, the highest amount was found in the cultivar "Sabrina" (25.08 mg 100 g-1). Ellagic acid was the main phenolic acid in all examined cultivars (except the "Plared" cultivar), and the highest amount was detected in the "Fortuna" cultivar (3.18 mg 100 g-1). We found that the cultivar FL-127 had the highest total phenolic content (158.37 mg gallic acid equivalent 100 g-1 fresh weight base). Regarding antioxidant capacities, the highest value (88.92%) was found in the cultivar Victory among all the cultivars studied. The detailed analysis of volatile compounds was performed by gas chromatography/mass spectrometry (GC/MS) and 34 compounds were detected. Among them, esters, acids, and alcohols were found to be the major volatile compounds in strawberry fruits. In conclusion, strawberry fruits belong to ten cultivars showed abundant phenolic compounds and at the same time have high antioxidant activity.

The Republic of Croatia has a long tradition of fruit growing due to its geographical location, climatic conditions, and high quality of fruit crops, especially apple fruits. Apples can be used for the formulation of functional foods either in processed form (e.g., juice), or as a by-product (e.g., apple pomace). However, there is a growing demand for functional foods derived from ancient and traditional plant sources as they are recognized as a very valuable source of health-promoting bioactive ingredients. Similarly, old apple cultivars (Malus domestica Borkh.) are characterized by good morphological and pomological properties, less need for chemicals during cultivation and the higher share of biologically active compounds (BACs) with better sensory acceptability compared to commercial cultivars. However, their nutritional and biological potential is underestimated, as is their ability to be processed into functional food. The importance in preserving old apple cultivars can also be seen in their significance for improving the nutritional composition of other apple cultivars through innovative cultivation strategies, and therefore old local apple cultivars could be of great importance in future breeding programs.

The worldwide established strawberry cultivar 'Albion' and three recently introduced cultivars in Europe: 'Monterey', 'Capri', and 'Murano', grown hydroponically, were studied to ascertain the influence of cultivar and harvesting date on the physical, chemical, antioxidant and phytochemical properties of their fruits. Interrelationships of investigated parameters and these cultivars were investigated by the statistical approach of principal component analysis (PCA). Results indicated that cultivar had a more significant effect on the analyzed parameters than harvesting date. Thus grouping of the variables in a PCA plot indicated that each cultivar has specific characteristics important for consumer or industrial use. Cultivar 'Monterey' was the richest in phytochemical contents and consequently in antioxidant activity, 'Albion' showed the highest contents of total soluble solids, titratable acidity content and ascorbic acid, 'Capri' had the highest value of firmness, while 'Murano' had lighter color in comparison to others. Potential use of these cultivars has been assessed according to these important measured attributes.

The main focus of our study was to investigate differences in nutritional (dry matter, soluble solids content, total acidity and pH value) and bioactive values (ascorbic acid, total anthocyanins, total phenols, and non-flavonoids content) of wild grown raspberry (Rubus idaeus) and blackberry (Rubus discolor) genotypes harvested from native populations in Croatia. The average total acidity ranged from 0.93 to 1.72% in R. discolor and 1.57 to 1.91% in R. idaeus. Ascorbic acid was found between 22.34 mg and 45.00 mg 100 g⁻¹ in R. idaeus, while it was between 30.64 mg and 33.09 mg 100 g⁻¹ in R. discolor genotypes. A great variability in total anthocyanins was detected in roatian wild blackberry and raspberry genotypes, ranging from 2,226 to 2,367 mg kg⁻¹ for blackberries and 279 to 582 mg kg⁻¹ for raspberries, indicating wild blackberries are particularly rich in anthocyanins. On the basis of these results, it can be concluded that investigated wild growing fruit species have a great potential in nutritive research, as well as in biodiversity research. It is necessary to carry out further investigation and evaluation of wild growing fruit species to utilize them in the most appropriate way, as well as conservation of interesting accessions in the gene banks.

This research was conducted on the strawberry cultivar Diamante in continental parts of Croatia. The experiment was designed as four replicates with 100 plants for each harvest time. The quality of strawberries cv. Diamante grown out of season (fruit were picked in the early morning hours at three harvest times: 27 June, 7 September, 28 October) was determined. Total soluble solids ( degrees Brix) ranged from 5.00% to 7.03%, total acidity ranged from 1.05% to 1.12%, total soluble solids/acidity ranged from 4.74 to 6.34, vitamin C ranged from 40.73 mg/100 g fresh weight to 46.68 mg/100 g fresh weight, pH ranged from 3.53 to 3.72, total phenols ranged from 276.48 to 326.76 mg/l, non-flavonoids ranged from 169.50 to 260.53 mg/l, and flavonoids ranged from 44.71 to 106.53 mg/l, respectively. In addition, total anthocyanins ranged from 15.95 to 21.70 mg/l. The lightness L values of fruits ranged from 30.24 to 41.05, chroma C values from 25.92 to 34.13, and Hue angle H values from 44.51 to 56.02. The data showed that cv. Diamante grown out of season is of satisfactory quality.
