RESUMO

Several types of enrichment can be used to improve animal welfare. This review summarizes the literature on the use of mechanical brushes, tactile udder stimulation, music, and visual stimuli as enrichment methods for dairy cows. Mechanical brushes and tactile stimulation of the udder have been shown to have a positive effect on milk yield and overall behavioral repertoire, enhancing natural behavior. Classical music reduces stress levels and has similarly been associated with increased milk yield. A slow or moderate tempo (70 to 100 bpm) at frequencies below 70 dB is recommended to have this positive effect. Evidence on the impacts of other types of enrichment, such as visual stimulation through mirrors, pictures, and color lights, or the use of olfactory stimuli, is equivocal and requires further study.

Homeless persons with dogs are often the subject of stigma, with the public criticising them for not having a proper lifestyle to care for a pet. There is solid documentation of how dogs enhance a homeless person's life, but there are few publications that address the welfare of the dog. This descriptive study assesses the physical and behavioural health of dogs belonging to homeless persons through a One Welfare lens by observing animal/human well-being, environment, and "a life worth living". A survey was carried out along with a visual assessment of the condition of the dog for 100 human-dog dyads in the Western United States. Results showed that dogs of homeless persons were well cared for and physically healthy (which was consistent with other studies), and had few behavioural problems, but did display evidence of separation distress while the owner was away. Results from this study can provide information that may lead to policy and practice changes, including, for example, changes to policies and practices prohibiting dogs from being kept with their owner while staying at a homeless shelter. Typically, shelters report that they do not have the resources to care for a person with a dog.

The slaughter process in livestock is considered a stressor where the transport and handling of animals, as well as the selected stunning and bleeding methods, can cause acute pain, distress, and suffering. In water buffaloes, although stunning is known to be performed before bleeding to induce unconsciousness, no emphasis is made on the nociceptive events during this process. Particularly, current mechanical stunning methods applied to cattle are unsuitable for water buffaloes due to anatomical differences in the skull from other large ruminants. Furthermore, although very high-pressure pneumatic (200-220 psi) may be effective in the frontal position for lighter-weight water buffalos, for heavier animals, it is less likely to be effective. The present review aims: (1) to analyze the anatomical particularities of water buffaloes to discuss the importance of selecting a stunning method suitable for buffaloes, and (2) to revise the potential pain-related consequences, such as hyperalgesia and sensitization, and the signs to assess the stun quality and death to comprehend the relevance of a proper technique according to the species.

In Europe, regulations contain guidance to maintain high standards of animal welfare. In many parts of the world, large buyers for supermarkets or restaurants are the main enforcers of basic animal welfare standards. They can have considerable influence on improving standards on large commercial farms. Research clearly shows that straw is one of the most effective environmental enrichment for pigs. On some large farms, there are concerns that straw will either clog waste management systems or bring in disease. This paper contains a review of both scientific research and practical experience with enrichment devices that are easy to implement. Pigs prefer enrichment objects that they can chew up and deform. Broiler chickens prefer to climb up on objects, hide under them or peck them. It is always essential to uphold basic welfare standards such as animal cleanliness and low levels of lameness (difficulty walking). It is also important to reduce lesions, and maintain body conditions of breeding animals. An environment enrichment device is never a substitute for poorly managed facilities. It should enhance animal welfare on well-managed farms.

Udder edema (UE) is a metabolic disorder that most commonly occurs around the transition period. However, gaps exist in our knowledge about its effects on parlor behavior. The aim of this study was to examine the prevalence and effects of UE on behavior in the milking parlor during udder preparation and active milking from 2 to 9 days in milk in first- (FL) and second-lactation (SL) Holstein dairy cattle. Each cow (n = 375) was observed once and monitored from the point of first contact during udder preparation through the first 5 min of active milking. Behavior measurements include step, kick, and kicking off the milking unit. Cows were determined to have UE when the rear udder medial suspensory ligament lost definition and was softened due to the presence of interstitial fluid. In this study, 237 out of 247 (95.6%) FL cows and 104 of 128 (81.3%) SL cows presented with UE. First-lactation cows with UE had a higher step rate (3.97 steps/session) when in contact during udder preparation and attachment (2.80 steps/session), and kick rate during milking (2.68 kicks/milking session) compared with SL cows with UE (2.37 steps/session, 1.25 steps/session, 1.24 kicks/milking session). Those FL cows with UE had a lower step rate during milking (6.04 steps/milking session) compared with FL cows without UE (7.20 steps/milking session). The FL cows with UE had a higher average count of kicking off the milking unit (µ = 0.220 kick-offs) than SL cows with UE (µ = 0.029 kick-offs) and FL cows without UE (µ = 0.091 kick-offs). The results indicate that UE is prevalent among dairy cattle, and the disorder has effects on behaviors presented in the milking parlor. Reducing UE has the potential to decrease step and kick behaviors to improve welfare of transition cows and reduce risk to dairy caretakers in the milking parlor.

RESUMO

"Do cattle and other animals know they are walking up a chute that will lead to their death?" Many people ask this question, which the author first had to answer when starting work in the cattle industry. From observations at slaughter plants, feedlots, and ranches, the author learned that cattle behavior was the same when entering a chute for vaccination and when entering a chute for slaughter. If cattle knew they would die, their behavior should have been wilder and more agitated at the slaughter plant, but that was clearly not the case. This article canvasses points of ethical and clinical relevance for discussions about human dietary consumption and practice.

The author has worked as a consultant with global commercial supply managers for over 20 years. The focus of this commentary will be practical application of The Five Domains Model in commercial systems. Commercial buyers of meat need simple easy-to-use guidelines. They have to use auditors that can be trained in a workshop that lasts for only a few days. Auditing of slaughter plants by major buyers has resulted in great improvements. Supply chain managers need clear guidance on conditions that would result in a failed audit. Animal based outcome measures that can be easily assessed should be emphasized in commercial systems. Some examples of these key animal welfare indicators are: percentage of animals stunned effectively with a single application of the stunner, percentage of lame animals, foot pad lesions on poultry, and body condition scoring. A farm that supplies a buyer must also comply with housing specifications. The farm either has the specified housing or does not have it. It will be removed from the approved supplier list if housing does not comply. These types of easy to assess indicators can be easily evaluated within the four domains of nutrition, environment, health and behavioral interactions. The Five Domains Framework can also be used in a program for continuous improvement of animal welfare.

Many people believe that animal agriculture should be phased out and replaced with vegetarian substitutes. The livestock industry has also been attacked because it uses vast amounts of land. People forget that grazing cattle or sheep can be raised on land that is either too arid or too rough for raising crops. At least 20% of the habitable land on Earth is not suitable for crops. Rotational grazing systems can be used to improve both soil health and vegetation diversity on arid land. Grazing livestock are also being successfully used to graze cover crops on prime farmland. Soil health is improved when grazing on a cover crop is rotated with conventional cash crops, such as corn or soybeans. It also reduces the need for buying fertilizer. Grazing animals, such as cattle, sheep, goats, or bison, should be used as part of a sustainable system that will improve the land, help sequester carbon, and reduce animal welfare issues.

Previous research has clearly shown that short-term stresses during the last few minutes before stunning can result in Pale Soft Exudative (PSE) pork in pigs or increased toughness in beef. Electric prods and other aversive handling methods during the last five minutes are associated with poorer meat quality. Handlers are more likely to use aversive methods if livestock constantly stop and are difficult to move into the stun box. Factors both inside and outside the slaughter plant contribute to handling problems. Some in-plant factors are lighting, shadows, seeing motion up ahead, or air movement. Non-slip flooring is also very important for low-stress handling. During the last ten years, there have been increasing problems with on-farm factors that may make animals more difficult to move at the abattoir. Cattle or pigs that are lame or stiff will be more difficult to move and handle. Some of the factors associated with lame cattle are either poor design or lack of adequate bedding in dairy cubicles (free stalls) and housing beef cattle for long periods on concrete floors. Poor leg conformation in both cattle and pigs may also be associated with animals that are reluctant to move. Indiscriminate breeding selection for meat production traits may be related to some of the leg conformation problems. Other on-farm factors that may contribute to handling problems at the abattoir are high doses of beta-agonists or cattle and pigs that have had little contact with people.

It is dangerous for both riders and horses when a horse suddenly startles. Sometimes horses do this in familiar environments because familiar objects may look different when rotated. The purpose of this study was to determine whether horses that had been habituated to a complex object (children's playset) would react to the object as novel when rotated 90 degrees. Twenty young horses were led past the playset 15 times by a handler. Next, the rotated group was led past the rotated playset 15 times. Each time the horse was led by the object was a pass. The behavioral responses observed and analyzed were ears focused on the object, nostril flares, neck raising, snort, avoid by stopping, avoid by moving feet sideways, and avoid by flight. An increasing reactivity scale was used to quantify behavioral responses. A two-sample t-test was performed on the reactivity scores comparing the first pass by the novel object to the first pass by the rotated object. The horses in the rotated group reacted to the rotated orientation similarly to the first exposure (p = 0.001, α < 0.05). Being aware of potential reactions to changes in previously familiar environments can help keep the handler safer.

This observational field study examined the effect of changes in shadow contrasts on the floor and noise on balking behavior during handling. Seventy-four Bos taurus beef cattle were observed during handling at a small abattoir. Shadow contrast type (none, soft, sharp) was recorded during three stages of handling (unloading, lairage to single-file alley and into stun box). Cattle balking behavior (stop, put head down, back up) and aversive handling (electric prod, tail twist) were recorded for each shadow contrast type and the presence or absence of a noisy rendering truck. Sharp contrast shadows increased balking behavior compared to soft contrast shadows or none during unloading (X2 = 12.4, P < 0.001). The noisy truck increased balking behavior during handling from the lairage holding pens to the single-file alley (P < 0.001) and during movement into the stun box (P = 0.001). Sharp contrast shadows on the floor from lighting changes and noise from the truck increased balking behavior in cattle.

This study investigated reactions of pigs (N = 148) and sheep (N = 77) to group stunning where animals were present for the slaughter of others. Mock stunning with an isolated animal was used as the control. In both species, there was little evidence to suggest a difference in blood glucose and cortisol with stun order (P ≥ 0.21). In pigs, lactate differed by stun order (P < 0.001). Control pigs had lower lactate than pigs stunned first (P = 0.009) likely due to longer rest time after pre-slaughter handling. Conversely, the control sheep had greater average lactate than other groups. However, due to limited sample size and large variation there was not enough evidence to conclude an effect of stun order on sheep lactate (P = 0.28). Overall, there was limited evidence of an impact of stun order on behavior. The last pigs stunned exhibited a greater likelihood of grunting compared with other stun orders (P ≤ 0.05).

In the U.S., the most severe animal welfare problems caused by COViD-19 were in the pork industry. Thousands of pigs had to be destroyed on the farm due to reduced slaughter capacity caused by ill workers. In the future, both short-term and long-term remedies will be needed. In the short-term, a portable electrocution unit that uses scientifically validated electrical parameters for inducing instantaneous unconsciousness, would be preferable to some of the poor killing methods. A second alternative would be converting the slaughter houses to carcass production. This would require fewer people to process the same number of pigs. The pandemic revealed the fragility of large centralized supply chains. A more distributed supply chain with smaller abattoirs would be more robust and less prone to disruption, but the cost of pork would be greater. Small abattoirs can coexist with large slaughter facilities if they process pigs for specialized premium markets such as high welfare pork. The pandemic also had a detrimental effect on animal welfare inspection and third party auditing programs run by large meat buyers. Most in-person audits in the slaughter plants were cancelled and audits were done by video. Video audits should never completely replace in-person audits.

Physiological udder edema is a noninfectious metabolic disorder in dairy cattle, which may be present in a high percentage of dairy cows. This review summarizes the factors associated with udder edema. They include genetics, nutrition, oxidative stress, and physiological changes in freshening heifers. Udder edema negatively affects the productive life of a dairy cow. Udder support structures may be broken down due to tissue damage. Swollen teats may become sensitive, which makes attaching the milking unit more difficult. The amount of milk produced is decreased due to fluid buildup in the tissue spaces. Risk of secondary diseases, such as mastitis or udder cleft dermatitis, is also increased. All of these elements have an economic impact on the dairy farmer, in both the short term and the long term. If severe, damage could lead to early culling. Some possible methods for managing udder edema include (1) providing a separate diet for late-gestation heifers to monitor anionic salt intake, (2) selecting for either genetic lines with lower milk production or a phenotypic reduction of udder edema, and (3) ensuring that adequate exogenous antioxidants, such as vitamin E, vitamin C, carotenoids, and flavonoids, are provided in the diet to mitigate oxidative stress. In conclusion, udder edema may be an emerging issue that has the potential to seriously affect dairy cow welfare. Many of the research studies are outdated, and research with modern dairy cows is needed. The development of a scientifically validated udder edema scoring system is also needed to assess the severity of udder edema.

Livestock bruising is both an animal welfare concern and a detriment to the economic value of carcasses. Understanding the causes of bruising is challenging due to the numerous factors that have been shown to be related to bruise prevalence. While most cattle bruising studies collect and analyze data on truckload lots of cattle, this study followed a large number (n = 585) of individual animals from unloading through postmortem processing at five different slaughter plants. Both visual bruise presence and location was recorded postmortem prior to carcass trimming. By linking postmortem data to animal sex, breed, trailer compartment, and traumatic events at unloading, a rich analysis of a number of factors related to bruise prevalence was developed. Results showed varying levels of agreement with other published bruising studies, underscoring the complexity of assessing the factors that affect bruising. Bruising prevalence varied across different sex class types (P < 0.001); 36.5% of steers [95% confidence interval (CI): 31.7, 41.6; n = 378], 52.8% of cows (45.6, 60.0; 193), and 64.3% of bulls (no CI calculated due to sample size; 14) were bruised. There was a difference in bruise prevalence by trailer compartment (P = 0.035) in potbelly trailers, indicating that cattle transported in the top deck were less likely to be bruised (95% CI: 26.6, 40.4; n = 63) compared to cattle that were transported in the bottom deck (95% CI: 39.6, 54.2; n = 89). Results indicated that visual assessment of bruising underestimated carcass bruise trimming. While 42.6% of the carcasses were visibly bruised, 57.9% of carcasses were trimmed due to bruising, suggesting that visual assessment is not able to capture all of the carcass loss associated with bruising. Furthermore, bruises that appeared small visually were often indicators of larger, subsurface bruising, creating an "iceberg effect" of trim loss due to bruising.

Animal temperament is complex and has implications for productivity and economic profitability. Quantifying an animal's response to differing stimuli may facilitate breeding selections and identify animals that are better suited to specific management strategies. Multiple tests have been developed to evaluate cattle temperament (e.g., exit velocity, chute score, pen score, open field test, startle test, bovine zero maze), but each of these tests evaluates the animal's response to different stimuli (e.g., isolation, novel environment, startle, willingness to enter an enclosed area). Cattle temperament has been observed to be relatively stable over time. However, the evaluation of temperament has the potential to be influenced by current conditions, previous experiences, and observer bias. Many of these temperament tests have been improperly categorized as fear tests and have also been criticized for being subjective. This paper provides a framework for standardizing behavioral tests for cattle and suggests that these different evaluations assess different aspects of the animal's overall temperament.

Autism spectrum disorder (ASD) is a heterogeneous condition with a complex genetic etiology. The objective of this study is to identify the complex genetic factors that underlie the ASD phenotype and other clinical features of Professor Temple Grandin, an animal scientist and woman with high-functioning ASD. Identifying the underlying genetic cause for ASD can impact medical management, personalize services and treatment, and uncover other medical risks that are associated with the genetic diagnosis. Prof. Grandin underwent chromosomal microarray analysis, whole exome sequencing, and whole genome sequencing, as well as a comprehensive clinical and family history intake. The raw data were analyzed in order to identify possible genotype-phenotype correlations. Genetic testing identified variants in three genes (SHANK2, ALX1, and RELN) that are candidate risk factors for ASD. We identified variants in MEFV and WNT10A, reported to be disease-associated in previous studies, which are likely to contribute to some of her additional clinical features. Moreover, candidate variants in genes encoding metabolic enzymes and transporters were identified, some of which suggest potential therapies. This case report describes the genomic findings in Prof. Grandin and it serves as an example to discuss state-of-the-art clinical diagnostics for individuals with ASD, as well as the medical, logistical, and economic hurdles that are involved in clinical genetic testing for an individual on the autism spectrum.

Hair cortisol is a novel biomarker of chronic stress. The objective of this study was to determine the effect of hair color and length, as well as, animal age on hair cortisol concentration in beef feedlot steers. Nineteen beef crossbred steers used for nutrition research and housed in a small feedlot setting were used for this study. Seven of the steers (680 ± 4.5 kg; ~9 years of age) were fitted with ruminal fistulas and duodenal cannulas. The other 12 steers (473 ± 3.1 kg; ~2.5 years of age) were fitted with only ruminal fistulas. Hair samples from each steer were collected throughout a period of 6 weeks from six different areas and analyzed for cortisol concentrations. One pre-determined area was shaved each week for 5 weeks (Weeks 1-5). During week 6, all five, previously shaved areas and an additional area was shaved to collect hair samples of various lengths. Hair length was recorded prior to the collection of each hair sample. Only data from the last week (Week 6) of collection were included in the analyses. Steers were categorized into one of three groups: old with black hair (OB, n = 3); old with white hair (OW, n = 3); young with black hair (YB, n = 12). Older steers exhibited greater hair cortisol concentrations than younger steers (P < 0.001). Hair cortisol concentration was not impacted by duration of growth (P = 0.33). Cortisol concentrations exhibited a weak, positive correlation with hair length (r = 0.33, P-value = 0.01). The average hair growth per week of beef steers in the winter months was calculated to be 0.90 mm. Further research should be performed to improve our understanding of the effect of hair characteristics, sampling methodologies and analysis techniques on hair cortisol concentrations.
