Thirty-four crossbred dairy cows were observed on pasture six times per week from June to August 2014 at the University of Minnesota West Central Research and Outreach Center grazing dairy in Morris, MN, for defensive behaviors in response to three species of muscid flies. Counts of stable flies (Stomoxys calcitrans (L.)), horn flies (Haematobia irritans (L.)), and face flies (Musca autumnalis DeGeer) were recorded before and after pasture observation. Individual cows were monitored for 5 min intervals to observe the frequencies of five different defensive behaviors: front and back leg stomps, head tosses, skin twitches, and tail swishes. Fly numbers averaged 5 stable flies per leg, 37 horn flies per side, and 1 face fly per face during the study. The fly counts and behavior frequencies increased with ambient temperature. The results showed a very strong relationship between the numbers of flies and numbers of defensive behaviors, though correlations between specific flies and behaviors were low. Younger cows had fewer stable flies and horn flies than older cows. The thresholds of flies to lower production for pastured organic dairy cows may be greater than 5 for stable flies, 37 for horn flies, and 1 for face flies.

Recording of body weights of dairy calves may assist producers in monitoring the health status of calves and making feed-related management decisions. Traditional methods of weighing calves can be time-consuming and labor-intensive. The objective of this study was to evaluate a forefront weight scale on stalls attached to an automated calf milk feeder system to determine the accuracy for measuring the calf body weights of Holstein and crossbred dairy calves. The study was conducted at the University of Minnesota West Central Research and Outreach Center, Morris, MN, dairy. Eighty-eight Holstein and crossbred calves were fed either 8 L/d or ad libitum milk from September 2019 to February 2020 and March 2020 to July 2020. Crossbred calves were Grazecross crossbreds composted of Jersey, Viking Red, and Normande, ProCross crossbreds composed of Holstein, Montbéliarde, and Viking Red, Limousin-sired crossbred dairy × beef bull calves, and Limousin-sired crossbred dairy × beef heifer calves. The Limousin-sired calves were from Holstein or crossbred dams. Calves were introduced to the Holm & Laue Calf Expert and Hygiene Station automatic calf feeder (Holm & Laue GmbH & Co. KG, Westerrönfeld, Germany) at 5 days of age and were weaned at 56 d. Forefront weight scales were attached to four hygiene station feeding stalls on the automated calf milk feeder, and calves were required to place both front hooves on the scale to access milk. The calf weights from the automated milk feeder were compared to the gold standard calibrated electronic scale (Avery Weigh-Tronix LLC, Fairmont, MN scale). Calves were weighed once per week using the electronic scale, and those weights were compared to the most recent weight recorded by the forefront scale. The associations of the weights from the automated milk feeder scale and the electronic scale were determined with Pearson correlations (PROC CORR of SAS) and Bland-Altman plots (PROC SGPLOT of SAS). Furthermore, PROC GLM of SAS was used to regress the electronic scale body weight on the forefront weight scale body weight for each calf. A total of 600 weight observations were used for statistical analysis. The Pearson correlation of the electronic scale compared to the forefront weight scale was high (0.991), and the concordance correlation coefficient was high (0.987). Correlations for individual calves ranged from 0.852 to 0.999 and were classified as high. Correlations of the electronic scale and forefront weight scale for breed groups ranged from 0.990 to 0.994. The slope of the regression line was 0.9153, and the 95% confidence interval was between 0.906 and 0.925. A mean bias of 0.529 kg was observed from the Bland-Altman plots. The results suggest that there is potential for the forefront weight scale to be used on automated calf milk feeders to accurately record the body weights of calves and support management decision-making, identify sick calves, and help producers determine the proper dosage of medications for calves based on body weight.

The objective of this study was to estimate genetic parameters of health treatment cost of Holstein cows from producer-recorded health treatments in 8 herds over an 8-yr period of time. Genetic parameters of health treatment cost were estimated in first (n = 2,214), second (n = 1,487) and third (n = 800) parities of US Holstein cows. The health treatments were uniformly defined and consistently recorded by 8 high-performance dairy herds in Minnesota from 2008 to 2015. A fixed treatment cost was assigned to 14 types of health treatments, and the cost included the mean veterinary expense obtained from the veterinary clinics that serviced the 8 herds, pharmaceuticals, and labor cost. The labor cost was $18/h, and the time incurred for each type of health treatment was determined from interviews with the herd owners. The 14 types of health treatment costs were partitioned into 5 categories: mastitis (including mastitis diagnostic test), reproduction (cystic ovary, retained placenta, and metritis), lameness (hoof treatments), metabolic (milk fever, displaced abomasum, ketosis, and digestive), and miscellaneous (respiratory, injury, and other). Health treatment cost for each cow was summed by category within lactation and also across categories within lactation. The estimates of heritability for health treatment cost were 0.13, 0.04, 0.10, 0.12, and 0.04 for the mastitis, reproduction, lameness, metabolic, and miscellaneous categories, respectively, in first parity. Genetic correlations between categories of health treatment cost in first parity were greatest for mastitis and reproduction (r = 0.85); however, phenotypic correlations between all categories were small (r < 0.16). Total health treatment cost had a large genetic correlation with somatic cell score (0.93) and 305-d milk production (0.44) in first parity; however, the genetic correlation (-0.60) between total health treatment cost and udder depth in first parity indicated a genetic relationship exists between shallow udders and less total health treatment cost. Total health treatment cost across categories had a heritability estimate of 0.25 in first parity, 0.16 in second parity, and 0.17 in third parity. Consequently, genetic selection for reduced health treatment cost should be possible by using producer-recorded health treatment records supplemented with treatment costs.

The objective of this study was to compare three-breed rotational crossbred calves sired by Holstein, Jersey, Montbéliarde, Normande, Viking Red, and Limousin bulls with Holstein's calves fed a high milk allowance for growth, milk consumption, health scores, and profitability in an automated group feeding system. Breed groups were Holstein (n = 16), crossbreds of Montbéliarde, Viking Red, and Holstein (n = 24), crossbreds of Jersey, Normande, and Viking Red (n = 6), and Limousin crossbred beef × dairy (n = 45) calves. Calves were randomly assigned within the breed to one of two treatments from September 2019 to June 2020 at the University of Minnesota West Central Research and Outreach Center in Morris, MN. The five breed groups were balanced across the two treatment groups. Treatment groups were fed 8 L/d (8 L) or ad libitum (AL) milk allowance, and calves were introduced to the automated feeder at day 5 and were weaned at 56 d. Milk feeding behaviors (drinking speeds) were collected from the automatic feeding system and analyzed by feeding and breed groups. Body weights were recorded at birth and weekly through weaning. The health scores of calves were recorded twice per week. Variables included in the statistical model for analyses were fixed effects of birthweight, the season of birth, breed group, and treatment group. Calves fed AL had a greater weaning weight (P = 0.001; 106.4 kg vs. 91.4 kg) and greater (P = 0.001) average daily gain (ADG; 1.11 kg/d vs. 0.87 kg/d) than calves fed 8 L, respectively. The calves fed AL (1,064 mL/min) had a slower drinking speed (P = 0.01) than calves fed 8 L (1,467 mL/min). Most breed groups were not different for weaning weight or ADG across the 56 d. Daily milk consumption per calf was lower (P = 0.009) for Limousin crossbred calves compared with Holstein and crossbred dairy calves. As expected, AL calves had higher (P = 0.001) milk cost ($189.52) than the 8 L calves ($140.71). The average cost per kilogram of gain was similar for calves fed 8 L ($2.89/kg) compared to AL ($3.00/kg) calves. Overall, the Limousin crossbred calves had the least milk cost ($152.75) compared with Holstein ($175.67) calves and Montbéliarde, Viking Red, and Holstein crossbred calves ($177.13). The results from this study found that although feeding calves AL resulted in greater milk consumption and higher cost than 8 L calves, there may be an economic advantage with costs per kilogram of gain to feeding calves ad libitum if increased growth rates are realized.

Health treatments of Holstein cows (n = 2214) were recorded by the owners of eight high-performance dairy herds in Minnesota. Cows calved from March 2008 to October 2015, and 14 types of health treatments were uniformly defined across the herds. Specific types of health treatment were subsequently assigned a cost based on the mean veterinary cost obtained from the veterinary clinics that serviced the eight herds. A fixed labor cost for time (USD 18/h) associated with specific types of health treatment was determined based on interviews with the herd owners and was added to the veterinary cost. Health treatment cost was then partitioned into five health categories: mastitis (including mastitis diagnostic test), reproduction (cystic ovary, retained placenta, and metritis), lameness (hoof treatments), metabolic (milk fever, displaced abomasum, ketosis, and digestive), and miscellaneous (respiratory, injury, and other). Lactations of cows were divided into six intervals that corresponded with stage of lactation based on days in milk. The first interval of lactation was 30 days in length, followed by four intervals of 60 days each, and the final interval started on day 271 and had variable length because it continued to the end of lactation and included the dry period. Health treatment cost was summed within each interval of lactation and subsequently across lactations by parity. Statistical analysis by parity included the fixed effects of herd, interval, and the interaction of herd and interval, with interval regarded as a repeated measure of cows. Health treatment cost was highest during the first interval for all five parities of cows and ranged from USD 22.87 for first parity to USD 38.50 for fifth parity. Reproduction treatment cost was about one-half of the total health treatment cost during the first interval in all five parities. Metabolic treatment cost during the first interval ranged from USD 3.92 (in first parity) to USD 12.34 (in third parity). Compared to the other health categories, mastitis treatment cost was most evenly distributed across intervals of lactation in all parities. Lameness treatment cost was highest during mid- or late-lactation across parities and reflected the time when cows received routine hoof trimming. Additionally, treatment cost across health categories was summed across intervals of lactation for each cow, and the total health cost of cows varied substantially from herd to herd and ranged from USD 23.38 to USD 74.60 for first parity and usually increased with parity.

Crossbreeding is a process in which animals from different breeds are mated together. The animals produced will exhibit a combination of both additive and non-additive genetic improvement from parental breeds that increase heterozygosity and negate inbreeding depression. However, crossbreeding may also break up the unique and often beneficial gene combinations in parental breeds, possibly reducing performance potential as the benefits of heterosis depends on the type of crossbreeding systems used and heritability of the traits. This effect of crossbreeding, especially on the genome architecture, is still poorly understood with respect to 3-breed crossbreeding systems. Thus, this study examined variation in genomic ancestry estimations relative to pedigree-based estimations and correlated breed composition to key production and health traits. Two rotational crossbred populations, referenced as ProCROSS and Grazecross were assessed and totaled 607 crossbred cattle. ProCROSS is a product of rotational crossbreeding of Viking Red (VKR), Holstein (HOL), and Montbeliarde (MON). In contrast, Grazecross consists of Viking Red (VKR), Normande (NOR), and Jersey (JER). Both breeding programs were aimed at capitalizing on the positive effect of heterosis. The VKR is a marketing term for Swedish Red, Danish Red, and Finnish Ayrshire breed which complicated breed determination. Therefore, genomic breed composition estimates were compared using two different representations of VKR, one of which was based on parents used in the crossing system and a second based on genotypes from the ancestral breeds that comprise VKR. Variation of breed composition estimates were assessed between pedigree and genome-based predictions. Lastly, Genomic estimations were correlated with production and health traits by comparing extreme performance groups to identify the relationship between breed ancestry and performance. With the exception of the JER breed composition in Grazecross, all other estimates of the purebred contribution to the ProCROSS and Grazecross showed a significant difference in their genomic breed estimation when using the VKR ancestral versus the VKR parental reference populations for admixture analysis. These observations were expected given the different relationship of each VKR representation to the crossbred cattle. Further analysis showed that regardless of which VKR reference population was used, the degree of MON and HOL breed composition plays a significant role in milk and fat production in ProCROSS, while the degree of VKR and NOR ancestry were related to improved health performance in Grazecross. In all, identifying the most appropriate and informative animals to use as reference animals in admixture analysis is an important factor when interpreting results of relationship and population structure, but some degree of uncertainty exists when assessing the relationship of breed composition to phenotypic performance.

The primary objective of this observational study was to evaluate the prevalence of contamination from independently collected quarter-level milk samples pooled in a laboratory and subjected to bacterial culture. To address this objective, weekly quarter-level milk samples were collected longitudinally from a cohort of 503 primiparous cows from five organic dairy farms during the first 5 weeks after calving. Individual quarter milk samples were pooled in a laboratory using aseptic technique ("lab-pooled") and subjected to bacterial culture. In the sample set of 2,006 lab-pooled milk samples, 207 (10.3%) were classified as contaminated using a standard definition (i.e., growth of three or more distinct microorganisms). Subsequent culturing of corresponding quarter-level milk samples revealed that many of the contaminated lab-pooled sample results (i.e., 46.7%) were the result of intramammary infections with different pathogens across the quarters, rather than actual contamination within any single quarter (i.e., "true contamination"). The odds of true contamination were lower when the lab-pooled sample exhibited growth of three microorganisms compared to more than 3 microorganisms. Our findings suggest that pooling of quarter samples within a laboratory setting may yield lower rates of contamination compared to those previously reported from samples composited on-farm, but that current cut-offs to define contamination may need to be evaluated for use with lab-pooled samples. Further investigation of use of lab-pooled samples may be warranted to reduce costs while still providing useful scientific insight.

The number of organic dairy farms has increased because of the increased growth of the organic market, higher organic milk price, and because some consumers prefer to purchase products from less intensive production systems. Best management practices are expected from organic dairy farms to ensure animal health and milk production. Organic dairy producers typically transition from conventional systems to avoid chemicals and pesticides, enhance economic viability, improve the environment, and increase soil fertility. Organic dairy producers respect and promote a natural environment for their animals, is also an important component of animal welfare. Organic producers have few options to mitigate pain in dairy calves. In the United States, therapies to mitigate pain for disbudded organic dairy calves are regulated by the US National Organic Program. Organic producers regularly use naturally derived alternatives for the treatment of health disorders of dairy calves, heifers, and cows. Alternative natural products may provide an option to mitigate pain in organic dairy calves. Despite the reluctance to implement pain alleviation methods, some organic farmers have expressed interest in or currently implement plant-based alternatives. Efficacy studies of alternative remedies for organic livestock are needed to verify that their use improves animal welfare. Non-effective practices represent a major challenge for organic dairy animal welfare. The relationship between humans and animals may be jeopardized during milking because first-lactation cows may exhibit adverse behaviors during the milking process, such as kicking and stomping. The periparturient period is particularly challenging for first-lactation cows. Adverse behaviors may jeopardize animal welfare and reduce safety for humans because stressed heifers may kick off the milking unit, kick at milkers, and display other unwanted behaviors in the milking parlor. This may reduce milking efficiency, overall production, and ultimately reduce the profitability of the dairy farm. Positive animal welfare is a challenging balancing act between the three overlapping ethic concerns. Identifying animal welfare deficits in organic livestock production is the first step in capitalizing on these opportunities to improve welfare.

The effective control of rodent populations on farms is crucial for food safety, as rodents are reservoirs and vectors for several zoonotic pathogens. Clear links have been identified between rodents and farm-level outbreaks of pathogens throughout Europe and Asia; however, comparatively little research has been devoted to studying the rodent-agricultural interface in the USA. Here, we address this knowledge gap by metabarcoding bacterial communities of rodent pests collected from Minnesota and Wisconsin food animal farms. We leveraged the Oxford Nanopore MinION sequencer to provide a rapid real-time survey of putative zoonotic foodborne pathogens, among others. Rodents were live trapped (n = 90) from three dairy and mixed animal farms. DNA extraction was performed on 63 rodent colons along with 2 shrew colons included as outgroups in the study. Full-length 16S amplicon sequencing was performed. Our farm-level rodent-metabarcoding data indicate the presence of multiple foodborne pathogens, including Salmonella spp., Campylobacter spp., Staphylococcus aureus, and Clostridium spp., along with many mastitis pathogens circulating within five rodent species (Microtus pennsylvanicus, Mus musculus, Peromyscus leucopus, Peromyscus maniculatus, and Rattus norvegicus) and a shrew (Blarina brevicauda). Interestingly, we observed a higher abundance of enteric pathogens (e.g., Salmonella) in shrew feces compared to the rodents analyzed in our study. Knowledge gained from our research efforts will directly inform and improve farm-level biosecurity efforts and public health interventions to reduce future outbreaks of foodborne and zoonotic disease.

Heifers and their human handlers are at risk for decreased welfare during the early lactation period. This experiment investigated pre-parturient teat dipping and parlor acclimation to reduce mastitis and aversive behaviors in early lactation heifers. Three weeks prior to calving, heifers were randomly assigned to receive either: (1) a weekly 1.0% iodine-based teat dip in the parlor (trained; n = 37) or (2) no treatment (control; n = 30). For the first 3 days of lactation, heifers were milked twice daily, and treatment-blinded handlers assessed behaviors and clinical mastitis. Aseptic quarter milk samples were collected within 36 h of calving and analyzed for pathogens. Control heifers had (OR ± SE) 2.2 ± 0.6 times greater (p < 0.01) odds of kicking during milking. Trained heifers had (OR ± SE) 1.7 ± 0.4 times greater (p = 0.02) odds of being very calm during milking, while control heifers had 2.2 ± 0.8 and 3.8 ± 2.1 times greater (p < 0.04) odds of being restless and very restless or hostile during milking, respectively. Quarters of control heifers had (OR ± SE) 5.4 ± 3.4 greater (p < 0.01) odds of intramammary Staphylococcus aureus infection, yet clinical mastitis was similar among treatments. The results indicate that teat dipping in the parlor weekly for 3 weeks before calving may alleviate some aversive milking behaviors and protect against early lactation S. aureus intramammary infections.

The objective of this experiment was to evaluate a herbal therapy used in place of standard synthetic analgesia to mitigate disbudding pain of dairy calves. For this experiment, 54 calves were randomly assigned to one of three treatments: 1) local anesthetic lidocaine given as a cornual nerve block before cautery disbudding (AD); 2) sham disbudding (SD); or 3) herbal tincture (Dull It, Dr. Paul's Lab, Mazomanie, WI) composed of white willow (Salix alba L.) bark, St. John's wort (Hypericum perforatum L.), chamomile (Matricaria recutita L.), arnica (Arnica montana L.), and fennel (Foeniculum vulgare Mill.) administered orally before and after cautery disbudding (TD). Behaviors were assessed during disbudding, and behaviors and blood plasma cortisol concentrations were assessed following disbudding. Tail wag, head movement, forcing ahead, and kick rates recorded during disbudding were similar among treatments. When averaged across the 360-min observation period following disbudding, injury-directed behavioral rates of head jerks, head shakes, horn bud scratches, and head rubs were greater (P ≤ 0.03) for calves in the AD group than calves in the SD group, calves in the TD group had greater (P < 0.01) horn bud scratch and head rub rates compared to calves in the SD group, and calves in the AD group had a greater (P < 0.01) horn bud scratch rate than calves in the TD group. Calves in the AD group took 1.6 [95% confidence interval (CI) = 1.0 to 2.4, P = 0.03] times longer to lie down after disbudding compared to calves in the TD group. Serum cortisol concentrations were greater (P ≤ 0.01) for calves in the TD group compared to calves in the SD group at 10, 30, and 90 min after disbudding. At 30 min after disbudding, calves in the AD group had 5.8 ng/mL (95% CI = -1.1 to 12.7 ng/mL, P = 0.02) greater serum cortisol compared to calves in the SD group, while calves in the TD group had 14.3 ng/mL (95% CI = 1.5 to 27.1 ng/mL, P < 0.01) greater serum cortisol than calves in the AD group. In conclusion, neither the local anesthetic lidocaine nor the orally administered herbal tincture attenuated both acute injury-directed behaviors and blood plasma cortisol concentrations in disbudded calves, and the tincture was clearly less effective at mitigating cortisol; therefore, additional analgesic may be required to properly manage disbudding pain effectively.

Access to pasture is a main benefit of free-range broiler housing systems, yet the level of outdoor stocking density on broiler animal welfare remains unsettled. The growth, feather damage, pasture ranging and behaviors were assessed for 150 mixed-sex, slow-growing Freedom Rangers from 5 to 11 weeks of age of with free access to either a high outdoor stocking density pasture (0.5 m2 per bird) or a low outdoor stocking density pasture (2.5 m2 per bird). The probability (mean, 95% CI) of tail feather damage was greater for the high-density (23.1%, 16.3 to 31.7%) compared to the low-density group (11.9%, 7.1 to 19.3%). The percent of observations resulting in sunbathing and aggressive attacks (i.e., pecking and fighting behaviors) were greater for the high-density (1.0%, 0.6 to 1.8% and 0.5%, 0.2 to 1.3%, respectively) compared to the low-density group (0.3%, 0.1 to 0.7% and 0.1%, 0.0 to 0.4%, respectively). Furthermore, an interaction between treatment and age indicated that birds in the high-density group displayed greater stretching (during weeks 7 to 10) and panting (during weeks 6 and 9). Results of this study suggest that additional outdoor pasture space may be positively associated with broiler welfare.

Organic dairy cows were used to evaluate the effect of two organic pasture production systems (temperate grass species and warm-season annual grasses and cool-season annuals compared with temperate grasses only) across two grazing seasons (May to October of 2014 and 2015) on milk production, milk components (fat, protein, milk urea nitrogen (MUN), somatic cell score (SCS)), body weight, body condition score (BCS), and activity and rumination (min/day). Cows were assigned to two pasture systems across the grazing season at an organic research dairy in Morris, Minnesota. Pasture System 1 was cool-season perennials (CSP) and Pasture System 2 was a combination of System 1 and warm-season grasses and cool-season annuals. System 1 and System 2 cows had similar milk production (14.7 and 14.8 kg d-1), fat percentage (3.92% vs. 3.80%), protein percentage (3.21% vs. 3.17%), MUN (12.5 and 11.5 mg dL-1), and SCS (4.05 and 4.07), respectively. Cows in System 1 had greater daily rumination (530 min/day) compared to cows in System 2 (470 min/day). In summary, warm-season annual grasses may be incorporated into grazing systems for pastured dairy cattle.

The objective of this study was to evaluate Freedom-Ranger broiler chickens as a method to control face fly (Musca autumnalis De Geer) larvae in cow dung pats on pasture. Ninety-nine pats in three replicates were inoculated with first-instar larvae and exposed to one of four treatment conditions for 3 to 4 days: (1) an environment-controlled greenhouse (GH); (2) pasture without broilers (NEG); (3) pasture with 25 broilers stocked at a low density of 2.5 m2 of outdoor area per broiler (LOW); and (4) pasture with 25 broilers stocked at a high density of 0.5 m2 of outdoor area per broiler (HIGH). Broiler behaviors and weather conditions were recorded twice daily. Survival rates of larvae (mean, 95% CI) were similar for pats in the NEG (4.4%, 2-9%), LOW (5.6%, 3-11%), and HIGH (3.2%, 2-7%) groups, and was greatest for larvae reared in the GH (54.4%, 36-72%) group compared to all other groups. The proportion of broilers observed pasture ranging was 14.0% (6-28%) but was negatively related to solar radiation. Broilers were never observed foraging in pats. Results indicate that use of broilers may not be an effective method for controlling larvae of dung pat breeding flies.

Goldfish (Carassius auratus) have been reported as a method to keep water tanks clean; however, little information exists on this approach. The objectives were to evaluate the efficacy of goldfish on maintaining water quality in tanks and to evaluate the frequency that this method is used. The first objective was completed during June through October 2017 in St. Paul, MN, using plastic and metal 379 L stock tanks, each with and without goldfish in a drylot that housed six adult horses. The stocking rate was 5 goldfish per tank. Daily readings of total dissolved solids (TDS) and water turbidity (NTU), and weekly samples to measure chlorophyll a were taken. At the end of each 28-day period, tanks were cleaned and rotated. Plastic tanks had lower TDS than metal tanks (P < .001); however, metal tanks had lower NTU and chlorophyll a (P ≤ .008). Adding goldfish resulted in lower TDS (P < .001); however, there was no effect on NTU or chlorophyll a (P ≥ .097). No parameters had an impact on horse preference (P ≥ .108). The second objective was completed using an online survey that was open from October 31 until December 15, 2018. Of the 672 completed surveys, 56% had not tried using goldfish in water tanks, 26% had utilized goldfish in the past, and 18% currently used goldfish. The inclusion of goldfish in water tanks did not affect all water quality parameters; however, 44% of survey respondents had tried, or were currently using, this management method.

Holstein and crossbred dairy cows from an organic grazing and low-input conventional herd were evaluated for activity and rumination across 4 yr (January 2014 to December 2017). Data were from two herds, an organic grazing (ORG) and a low-input conventional (CONV) that were managed similarly at the University of Minnesota West Central Research and Outreach Center, Morris, MN. Breed groups and total cows across the 4-yr study in the analysis for both herds were Holstein (HO, n = 114), 1964 HO genetic line (H64, n = 83); crossbreds sired by Montbéliarde, Viking Red, and HO (MVH, n = 248), and Normande, Jersey, and Viking Red (NJV, n = 167). During the summer grazing season (May to October) ORG cows were on pasture and supplemented daily with 2.72 kg of corn per cow, and CONV cows were fed a total mixed ration (TMR) in an outdoor confinement dry-lot. During the winter season (November to April) ORG and CONV cows were fed a TMR consisting of corn silage, alfalfa haylage, corn, soybean meal, and minerals in an outwintering lot and a compost barn. Activity (reported in activity units by daily and bihourly periods) and rumination, (min/d and min/2 h) from SCR DataFlow II software, were monitored electronically using HR-LD Tags (SCR Engineers Ltd, Netanya, Israel) for the 4-yr period. Daily activity was greater for 2016 and 2017 (P < 0.05) than for 2014 and 2015 for the ORG and CONV herds. Daily rumination varied by year, and 2015 and 2016 were lower (P < 0.05) than 2014 and 2017 in both herds. The HO and crossbred cows were not different (P > 0.05) for activity in both the ORG and CONV herds. The H64 cows had lower (P < 0.05) rumination than the other breed groups in the ORG and CONV herds. For ORG primiparous cows, the H64 cows had lower rumination than MVH cows, and the ORG multiparous H64 cows had lower (P < 0.05) rumination than HO and MVH breed groups. For CONV primiparous cows, the HO cows had greater (P < 0.05) rumination the other breed groups, and the CONV multiparous HO, MVH, and NJV cows had greater (P < 0.05) rumination than the H64 cows. Results from this study suggest that activity and rumination are different between breeds in the experimental low-input dairy herds.

Consumer demand for milk and meat from grass-fed cattle is growing, driven mostly by perceived health benefits and concerns about animal welfare. In a U. S.-wide study of 1,163 milk samples collected over 3 years, we quantified the fatty acid profile in milk from cows fed a nearly 100% forage-based diet (grassmilk) and compared it to profiles from a similar nationwide study of milk from cows under conventional and organic management. We also explored how much the observed differences might help reverse the large changes in fatty acid intakes that have occurred in the United States over the last century. Key features of the fatty acid profile of milk fat include its omega-6/omega-3 ratio (lower is desirable), and amounts of total omega-3, conjugated linoleic acid, and long-chain omega-3 polyunsaturated fatty acids. For each, we find that grassmilk is markedly different than both organic and conventional milk. The omega-6/omega-3 ratios were, respectively, 0.95, 2.28, and 5.77 in grassmilk, organic, and conventional milk; total omega-3 levels were 0.049, 0.032, and 0.020 g/100 g milk; total conjugated linoleic acid levels were 0.043, 0.023, and 0.019 g/100 g milk; and eicosapentaenoic acid levels were 0.0036, 0.0033, and 0.0025 g/100 g milk. Because of often high per-capita dairy consumption relative to most other sources of omega-3 fatty acids and conjugated linoleic acid, these differences in grassmilk can help restore a historical balance of fatty acids and potentially reduce the risk of cardiovascular and other metabolic diseases. Although oily fish have superior concentrations of long-chain omega-3 fatty acids, most fish have low levels of α-linolenic acid (the major omega-3), and an omega-6/omega-3 ratio near 7. Moreover, fish is not consumed regularly, or at all, by ~70% of the U. S.

The objective of this study was to compare warm-season annual grasses to cool-season perennial (CSP) grasses for ruminal nutrient digestibility and N metabolism in a dual-flow continuous culture fermentation system. Dietary treatments were 1) fresh alfalfa, 2) CSP grasses and legumes, 3) brown-midrib sorghum-sudangrass (BMRSS), and 4) teff grass from an organic dairy production system. Eight dual-flow continuous culture fermenters were used during two consecutive 10-d periods consisting of 7 d for stabilization followed by 3 d of sampling. Fermenter samples were collected on days 8, 9, and 10 for analysis of pH, NH3-N, and VFA. Apparent DM, OM, NDF, and ADF digestibility were on average lesser (P < 0.05) in CSP grasses and legumes and warm-season annual grasses compared with alfalfa. True DM and OM digestibility were lesser (P < 0.05) for CSP grasses and legumes and warm-season annual grasses compared with fresh alfalfa. Total VFA were not affected (P > 0.05) by forage. The NH3-N concentrations were highest (P < 0.05) with alfalfa compared with the other CSP grasses and legumes and warm-season annual grasses. CP digestibility was not affected (P > 0.05) by forage treatment. Flow of NH3-N was greatest (P < 0.05) for alfalfa, reflecting the greatest NH3-N concentration. Flow of total N was greatest (P < 0.05) for alfalfa, intermediate for teff, and lowest for CSP grasses and legumes and BMRSS. Flows of bacterial N, efficiency of bacterial N, non-NH3-N, and dietary N were not affected (P > 0.05) by forage source. Overall, fermentation of warm-season grasses was similar to the cool-season grasses and legumes which indicate dairy producers may use warm-season grasses without concerns about negative impact on rumen health.

Meat from Holstein and crossbred organic dairy steers finished on winter rye and winter wheat pastures was evaluated and compared for meat quality, fatty acid and amino acid profiles, and consumer acceptability. Two adjacent 4-ha plots were established with winter rye or winter wheat cover crops in September 2015 at the University of Minnesota West Central Research and Outreach Center (Morris, MN). During spring of 2015, 30 steers were assigned to one of three replicate breed groups at birth. Breed groups were comprised of: Holstein (HOL; n = 10), crossbreds comprised of Montbéliarde, Viking Red, and HOL (MVH; n = 10), and crossbreds comprised of Normande, Jersey, and Viking Red (NJV; n = 10). Dairy steers were maintained in their respective replicate breed group from three days of age until harvest. After weaning, steers were fed an organic total mixed ration of organic corn silage, alfalfa silage, corn, soybean meal, and minerals until spring 2016. Breed groups were randomly assigned to winter rye or winter wheat and rotationally grazed from spring until early summer of 2016. For statistical analysis, independent variables were fixed effects of breed, forage, and the interaction of breed and forage, with replicated group as a random effect. Specific contrast statements were used to compare HOL versus crossbred steers. Fat from crossbreds had 13% greater omega-3 fatty acids than HOL steers. Furthermore, the omega-6/3 ratio was 14% lower in fat from crossbreds than HOL steers. For consumer acceptability, steaks from steers grazed on winter wheat had greater overall liking than steers grazed on winter rye. Steak from crossbreeds had greater overall liking than HOL steers. The results suggest improvement in fatty acids and sensory attributes of beef from crossbred dairy steers compared to HOL steers, as well as those finished on winter wheat compared to winter rye.

OBJECTIVE: To develop a simple system for scoring hygiene in dairy cattle and determine whether hygiene scores were associated with individual cow somatic cell scores (SCSs). DESIGN: Observational study. ANIMALS: 1,191 cows. PROCEDURE: With the aid of a chart containing line drawings and descriptive text, hygiene scores ranging from 1 (clean) to 5 (dirty) were assigned for 5 body areas: tail head, thigh (lateral aspect), abdomen (ventral aspect), udder, and hind limbs (lower portion). To determine repeatability, hygiene scores were assigned to 75 cows twice by 4 experienced evaluators. To determine accuracy and ease of use, hygiene scores assigned by 14 college students to 23 cows were compared with scores assigned by 2 faculty members. To determine association with SCSs, hygiene scores were assigned to each of 1,093 cows by a single observer. RESULTS: Mean correlation coefficients for hygiene scores assigned twice by 4 experienced evaluators were > or = 0.884, indicating high repeatability. Students indicated that the scoring system was easy to use, and mean correlation coefficient for student and faculty member scores was 0.804. Hygiene scores for the tail head, thigh (lateral aspect), and abdomen (ventral aspect) were not significantly associated with SCS. However, hygiene scores for the udder and hind limbs (lower portion) and udder-hind limb composite scores were significantly associated with SCS, with SCS increasing as scores increased. CONCLUSIONS AND CLINICAL RELEVANCE: Results suggest that the hygiene scoring system was repeatable, accurate, and easy to use. However, only hygiene scores for the udder and hind limbs and the udder-hind limb composite score were significantly associated with SCS.
