Supplementary cementitious materials (SCMs) are commonly used to partially replace cements. Although it is necessary to investigate the rheological properties of the individual supplementary cementitious materials (SCMs) for understanding complex rheological behaviors of the blended mixes, the study on the investigation of rheological properties of various SCMs such as fly ash, blast-furnace slag, and silica fume, according to various solid volume fractions and prediction models is fairly limited. This study investigated the rheological properties of non-blended cementitious suspensions with Portland cement (PC), fly ash (FA), blast-furnace slag (BS), and silica fume (SF) materials in the experiments and predicted using YODEL (Yield stress mODEL) and Krieger-Dougherty's (K-D's) equation. Experiments were designed with various solid volume fractions (ϕ) from 0.28 to 0.44, and the rheological properties of all cementitious suspensions were noted to increase with increasing ϕ, showing an improved flowability at low ϕ. YODEL, derived from the first principles considering particle-size distributions, interparticle forces and microstructural parameters predicted the yield stress. The YODEL predictions were consistent with the experiments with a positive correlation coefficient of above 0.96. K-D's equation with the maximum particle fractions and intrinsic viscosity as key parameters predicted the plastic viscosity. The K-D's equation predictions match up with the experiments with a positive correlation coefficient of above 0.94. Both models showed more quantitative predictions without any fitting parameters and could be applied to any multimodal powder suspensions.

Supplementary cementitious materials (SCMs), such as fly ash (FA), blast furnace slag (BS), and silica fume (SF), have been mostly used as a replacement for Portland cement (PC). Replacing the SCMs with cement can provide improved strength characteristics; however, their applicability depends on the flow characteristics of the fresh mixtures. In this study, the rheological performance of cementitious suspensions in paste scale with different water-to-solid (W/S) volume ratios, varied from 1.25, 1.50, 1.75, 2.00, 2.25, to 2.50, was evaluated. As a result of the rheological tests, the yield stress and plastic viscosity of PC, FA, BS, and SF suspensions decreased as the W/S ratio increased. This study also estimated the inter-particle distances of the cementitious suspensions, and their relationship to the rheological properties was established. The inter-particle distances of the PC, FA, BS, and SF suspensions were in the ranges of 5.74~14.67 µm, 5.18~11.66 µm, 3.82~9.34 µm, and 0.107~0.27 µm, respectively. For very fine particles with a large surface area, the sensitivity to the rheological properties was high and the sensitivity was low when the particle sizes increased, indicating that the rheological properties were more sensitive to fine particles.

Considering the case of fabricating a UHSFRC (ultra-high strength fiber-reinforced concrete) beam with the method of one end placing and self-flowing to the other end, it was intended to simulate the variation of the fiber orientation distribution according to the flow distance and the variation of the resultant tensile behaviors. Then the validity of the simulation approach was shown by comparing the simulated results with experimental ones. A three-point bending test with a notched beam was adopted for the experiment and a finite element analysis was performed to obtain the simulated results for the bending test considering the flow-dependent tensile behavior of the UHSFRC. From the simulation for the fiber orientation distribution according to the flow distance, it could be found that the major change in the fiber orientation distribution took place within a short flow distance and most of the fibers became nearly aligned to the flow direction. After some flow distance, there was a not-so-remarkable variation in the fiber orientation distribution that could influence the tensile behavior of the composite. For this flow region, the consistent flexural test results, regardless of flow distance, demonstrate the reliability of the simulation.

This study investigated the antioxidative and functional effects of a curing agent containing grapefruit seed extract (GSE) on the quality and storage characteristics of chicken breast. The total polyphenol and total flavonoid contents of GSE were 45.06 mg/g and 36.06 mg/g, respectively. The IC50 value of 2,2-diphenyl-1-picrylhydrazyl hydroxyl scavenging of GSE was 333.33 µg/mL. The chicken breast comprised six groups: no-treatment (N), 0.2% ascorbic acid + 70 ppm sodium nitrite (C), 0.05% GSE (G0.05), 0.1% GSE (G0.1), 0.3% GSE (G0.3), and 0.5% GSE (G0.5). The pH and cooking loss of cured chicken breast decreased with increasing GSE levels, and the water holding capacity increased with increasing GSE levels. The hardness and chewiness of GSE-treated chicken breast were higher than those of N and C. Hunter's L and a color values increased significantly after GSE addition. Moreover, 0.1% GSE (G0.1) increased the flavor and total acceptability scores. The 2-thiobarbituric acid and volatile basic nitrogen values of the 0.5% GSE group decreased significantly compared with those of C group. Total microbial counts of GSE-treated chicken breast were higher than those of C, but that lower than those of N. Adding GSE to chicken breast delayed lipid peroxidation and had antimicrobial effects during cold storage. GSE improved shelf life and palatability; therefore, it could be used as a natural antioxidant and functional curing agent ingredient in meat products.

In this paper, the post-cracking tensile behavior of Ultra-High Performance Cementitious Composites (UHPCC) was studied and an improved analytical model to predict the behavior depending on the fiber orientation distribution was proposed. Two different casting methods were adopted to estimate the influence of the casting method on the tensile behavior. The direct tensile test results showed that the post-cracking tensile behavior was considerably dependent on the casting method. The influence of the casting method was quantified by image analysis of the fiber distribution. The fiber orientation distribution obtained by image analysis may sometimes include considerable error according to the image resolution, which may cause inaccuracy when predicting the post-cracking tensile behavior based on the fiber orientation distribution. To overcome this dependency, the tensile bridging behavior by the fibers in UHPCC was simulated considering the obtained fiber orientation distribution as well as the number of fibers detected. The post-cracking behavior was then simulated by combining the bridging behavior and tension softening behavior of the matrix. The approach adopted in this study to simulate the post-cracking behavior of UHPCC showed good agreement with the experimental results.

The distribution of fiber orientation is an important factor in determining the mechanical properties of fiber-reinforced concrete. This study proposes a new image analysis technique for improving the evaluation accuracy of fiber orientation distribution in the sectional image of fiber-reinforced concrete. A series of tests on the accuracy of fiber detection and the estimation performance of fiber orientation was performed on artificial fiber images to assess the validity of the proposed technique. The validation test results showed that the proposed technique estimates the distribution of fiber orientation more accurately than the direct measurement of fiber orientation by image analysis.

The objectives of this research were to evaluate antioxidant activities and nutritional components, including phenolic acid, catechin, organic acid, sugar, and amino acid, of persimmon juice from persimmons grown in different regions around Korea. Persimmon (Diospyros kaki) exhibits potent antioxidant effects in DPPH, ABTS, reducing power, and FRAP methods of analysis. The levels of nutritional constituents showed significant differences among all the samples. In particular, tartaric acid, glucose, gallic acid, epicatechin gallate and aspartic acid were observed to be the predominant component for each of their general chemical groups, with total average contents of 1876.51 mg/kg, 62.69 g/kg, 12.73 mg/kg, 208.99 mg/kg, and 31.84 mg/100 g, respectively. Interestingly, persimmons from the Hadong region presented the highest sugar (130.60 g/kg), phenolic acid (42.27 mg/kg), and catechin (527.97 mg/kg) contents in comparison with other regional samples. Moreover, this location exhibited the greatest antioxidant activity with highest total phenolic (298.01 mg GAE/kg) and flavonoid (32.11 mg/kg RE) contents. Our results suggest that strong antioxidant activities of persimmons correlate with high phenolic acid and catechin contents, particularly gallic acid and epicatechin gallate. Additionally, these two compounds may be key factors when considering the useful ingredients of persimmon.
