RESUMO

The aim of this study is to determine the levels of deoxynivalenol (DON), HT-2 toxin (HT2), T-2 toxin (T2), and ochratoxin A (OTA) in bee products (bee pollen, propolis, honey and royal jelly) available in Turkey. In addition, exposure and health risk assessments were performed to identify the potential health risk of these mycotoxins. The mycotoxins were analyzed by high-performance liquid chromatography (HPLC) with a UV detector and positive samples were confirmed with liquid chromatography-tandem mass spectrometry (LC-MS/MS). The most common mycotoxins in all bee products were DON and T-2 toxin, with mean concentrations of 1.601 and 0.704 µg/per kg dry sample, respectively, followed by OTA and HT-2 toxin. It was determined that the mycotoxins taken as a result of consuming bee products in specified amounts do not pose a risk to health.

BACKGROUND AND AIMS: The aim of this study was to evaluate the glycemic parameters, lipid profiles, uric acid levels, and triglyceride-glucose (TyG) index of individuals who consume different amounts of fructose. Additionally, the relationship between the TyG index and the homeostatic model assessment for insulin resistance (HOMA-IR) values was investigated. METHODS: This cross-sectional study was conducted on healthy adults aged between 18 and 55 who applied to a university hospital in Istanbul, Turkey. Demographic characteristics and food consumption were recorded using the face-to-face interview method. Participants were divided into two groups according to their fructose consumption (≤50 g/day: moderate; >50 g/day: high). The glycemic parameters, lipid profiles, and uric acid levels were measured and TyG index was calculated. RESULTS: Fructose consumption of >50 g/day was reported by 25% of the participants. There was no relationship between lipid profile, uric acid, and fructose consumption. The fasting blood glucose (FBG), fasting insulin, HOMA-IR, and TyG index values in the moderate fructose consumption group were significantly lower than those for the high fructose consumption group (P < 0.05). The TyG index was associated with fructose consumption and HOMA-IR (P < 0.05). High fructose consumers exhibited FBG and HOMA-IR levels 1.18 (95% confidence interval [95% CI] = 1.01-1.37) and 1.42 (95% CI = 1.09-1.84) times higher than those for the moderate fructose consumers (P < 0.05). CONCLUSIONS: The results of this study confirmed that high fructose consumption negatively affects glycemic status in healthy adults. Additionally, this study revealed that there is a significant association between daily fructose consumption and TyG index.

BACKGROUND: The consumption of pesticide-contaminated sour cherries as fruit or juice has become a major health concern, and so the search for alternative processing technologies, such as pulsed electric fields (PEF), ozone (O), and ultrasonication (US) has intensified. The objectives of this experimental study of sour cherry juice were fourfold: (1) to quantify the removal efficiency of new processing technologies (PEF, O, US), and their combinations, for the pesticides chlorpyrifos ethyl, τ-fluvalinate, cyprodinil, pyraclostrobin, and malathion; (2) to detect their impact on physical, bioactive, and sensory properties; (3) to determine their microbial inactivation levels for Escherichia coli O157:H7, Bacillus cereus, Pseudomonas syringae subs. Syringae, and Penicillum expansum; and (4) to jointly optimize multiple responses of physical, quality, and sensory properties, pesticides, and microbial inactivation. RESULTS: Except for all the O treatments, the physical, bioactive and sensory properties of sour cherry juice were not adversely affected by the treatments. The joint optimization suggested PEF1 (24.7 kV cm-1 for 327 µs), PEF2 (24.7 kV cm-1 for 655 µs), PEF2 + O + US, US, and PEF2 + O as the five best treatments. PEF2 + O + US best achieved both pesticide removal and microbial inactivation. CONCLUSION: PEF2 + O + US provided promising reductions in pesticide and microbial loads. © 2019 Society of Chemical Industry.
