Free fatty acid (FFA) concentrations can be elevated in raw milk due to improper handling and management at the dairy farm, and high concentrations of FFA can lead to off flavors in milk. This study aimed to describe how the herd production system, milking system, feeding and technological factors impact on FFA concentrations in bulk tank milk. FFA concentrations in bulk milk samples from 259 organic and 3326 conventional herds were analyzed by FT-IR during one year. The FFA content was significantly lower in bulk milk from organic than conventional herds. This was most evident during the summer half-year when the organic cows graze pasture. Bulk milk from automatic milking systems (AMS) and tie-stalls contained greater concentrations of FFA than any other milking parlor systems. In AMS, high milking frequency was found to be the most significant contributor to elevated FFA content in milk. Moreover, a strong interaction was found between milking interval and production system (organic vs. conventional). The technical factors, pre-cooling, onset time for cooling after milk inlet, contact between milk and agitation also impacted on the FFA concentration, whereas other technical factors including centrifugal pump type, length and height of pumping line and type of AMS manufacturer were found to be without significant effect on FFA. Feeding variables, based on feeding plans and evaluation, only explained a small part of the variation in bulk milk FFA. Overall, this study demonstrated that AMS compared to other milking system contributes significantly to increased FFA concentration in bulk tank milk, and within AMS high milking frequency contributes to increased FFA concentration.

On-farm instruments for assessing colostrum quality are needed in order to ensure that the calf is supplied with enough IgG to avoid failure of passive transfer. The aim of this study was to evaluate methods for estimating the IgG concentration in cows' colostrum. This research included 126 colostrum samples from 21 Danish farms with different breeds, ensuring a broad variation pattern in IgG, total protein and fat concentration. Approximately one third of the samples did not fulfil the recommendation of >50 g IgG/l colostrum, and the IgG concentration decreased with time from calving to milking. The ratio of IgG to total protein varied from 6 to 61%, however IgG and total protein were correlated with r2 = 0.70. The variation in fat was independent of variations in protein and IgG. The IgG concentration was measured by ELISA and compared to fast measurements by specific gravity by colostrometer, Brix by refractometer and prediction from infrared spectroscopy. The three fast methods were all correlated to the total protein concentration of colostrum; however specific gravity was also influenced by the fat concentration. Furthermore, specific gravity generally overestimated the IgG concentration, and the cut-off level should be raised to 1050 in order to ensure adequate IgG in colostrum. None of the methods estimated IgG concentration better than the correlation of total protein and IgG, meaning that they all depended on the indirect correlation between total protein and IgG. The results suggest that using a refractometer for quality control of colostrum is an easy and feasible method, and a cut-off level of Brix 22 seems sufficient to assure adequate IgG concentration in colostrum fed to the calf.

Treatment of ventilation air from livestock production by biological airfiltration has emerged as a cost-effective technology for reduction of emissions of odorants and ammonia. Volatile sulfur compounds from livestock production include H2S and methanethiol, which have been identified as potentially important odorants that are not removed sufficiently by biological air filters. Light-expanded clay aggregates (Leca(®)) is a biotrickling filter material that contains iron oxides, which can oxidize H2S and methanethiol, and thus potentially may help to remove these two compounds in biological air filters. This study used on-line PTR-MS measurements to investigate the performances of two Leca(®) biotrickling filters (abraded Leca(®) filter and untreated Leca(®) filter) for removal of odorants and ammonia emitted from an experimental pig house. The results indicated that the abraded Leca(®) filter had a similar or slightly better capability for removing odorants than the untreated Leca(®) filter. This may be due to the enlargement of the surface area by the friction process. The volatile sulfur compounds, however, were not removed efficiently by either of the two Leca(®) filters. Kinetic analysis of a ventilation controlled experiment during the first period indicated that Grau second-order kinetics could be applied to analyze the removal of sulfur compounds and other odorants, whereas the Stover-Kincannon model could only be applied to analyze the removal of odorants other than sulfur compounds, partly due to the limitation of mass transfer of these compounds in the biotrickling filters. In the last measurement period, a production of dimethyl disulfide and dimethyltrisulfide coinciding with strongly enhanced removal of methanethiol was observed for the untreated filter. This was assumed to be enhanced by an incidence of low local air velocity in the filter and indicated involvement of iron-catalyzed reactions in the removal of sulfur compounds.

The feasibility of using a diffuse reflectance probe attached to a near infrared spectrometer to monitor the total ammonia nitrogen (TAN) content in an anaerobic digester run on cattle manure was investigated; as a previous study has indicated that this probe can be easily attached to an anaerobic digester. Multivariate modelling techniques such as partial least squares regression and interval partial least squares methods were used to build models. Various data pre-treatments were applied to improve the models. The TAN concentrations measured were in the range of 1.5 to 5.5 g/L. An R(2) of 0.91 with an RMSEP of 0.32 was obtained implying that the probe could be used for monitoring and screening purposes.

Volatile organic compounds (VOCs) in cut onions (Allium cepa L.) were continuously measured by PTR-MS during the first 120 min after cutting. The headspace composition changed rapidly due to the very reactive volatile sulfurous compounds emitted from onion tissue after cell disruption. Mass spectral signals corresponding to propanethial S-oxide (the lachrymatory factor) and breakdown products of this compound dominated 0-10 min after cutting. Subsequently, propanethiol and dipropyl disulfide predominantly appeared, together with traces of thiosulfinates. The concentrations of these compounds reached a maximum at 60 min after cutting. Propanethiol was present in highest concentrations and had an odor activity value 20 times higher than dipropyl disulfide. Thus, propanethiol is suggested to be the main source of the characteristic onion odor. Monitoring the rapid changes of VOCs in the headspace of cut onion necessitates a high time resolution, and PTR-MS is demonstrated to be a very suitable method for monitoring the headspace of freshly cut onions directly after cutting without extraction or pre-concentration.

In order to design optimal packages, it is of pivotal importance to determine the rate at which harvested fresh fruits and vegetables consume oxygen. The respiration rate of oxygen (RRO2) is determined by measuring the consumed oxygen per hour per kg plant material, and the rate is highly influenced by temperature and gas composition. Traditionally, RRO2 has been determined at discrete time intervals. In this study, wireless sensor networks (WSNs) were used to determine RRO2 continuously in plant material (fresh cut broccoli florets) at 5 °C, 10 °C and 20 °C and at modified gas compositions (decreasing oxygen and increasing carbon dioxide levels). Furthermore, the WSN enabled concomitant determination of oxygen and temperature in the very close vicinity of the plant material. This information proved a very close relationship between changes in temperature and respiration rate. The applied WSNs were unable to determine oxygen levels lower than 5% and carbon dioxide was not determined. Despite these drawbacks in relation to respiration analysis, the WSNs offer a new possibility to do continuous measurement of RRO2 in post harvest research, thereby investigating the close relation between temperature and RRO2. The conclusions are that WSNs have the potential to be used as a monitor of RRO2 of plant material after harvest, during storage and packaging, thereby leading to optimized consumer products.
