Knowledge of how grazing cattle utilize heterogeneous landscapes in Mediterranean silvopastoral areas is scarce. Global positioning systems (GPS) to track animals, together with geographic information systems (GIS), can relate animal distribution to landscape features. With the aim to develop a general spatial model that provides accurate prediction of cattle resource selection patterns within a Mediterranean mountainous silvopastoral area, free-roaming Sarda cows were fitted with GPS collars to track their spatial behaviors. Resource selection function models (RSF) were developed to estimate the probability of resource use as a function of environmental variables. A set of over 500 candidate RSF models, composed of up to five environmental predictor variables, were fitted to data. To identify a final model providing a robust prediction of cattle resource selection pattern across the different seasons, the 10 best models (ranked on the basis of the AIC score) were fitted to seasonal data. Prediction performance of the models was evaluated with a Spearman correlation analysis using the GPS position data sets previously reserved for model validation. The final model emphasized that watering point, elevation, and distance to fences were important factors affecting cattle resource-selection patterns. The prediction performances (as Spearman rank correlation scores) of the final model, when fitted to each season, ranged between 0.7 and 0.94. The cows were more likely to select areas lower in elevation and farther from the watering point in winter than in summer (693 ± 1 m and 847 ± 13 m vs. 707 ± 1 m and 635 ± 21 m, respectively), and in spring opted for the areas furthest from the water (963 ± 12). Although caution should be exercised in generalizing to other silvopastoral areas, the satisfactory Spearman correlations scores from the final RSF model applied to different seasons indicate resource selection function is a powerful predictive model. The relative importance of the individual predictors within the model varied among the different seasons, demonstrating the RSF model's ability to interpret changes in animal behavior at different times of the year. The RSF model has proven to be a useful tool to interpret the spatial behaviors of cows grazing in Mediterranean silvopastoral areas and could therefore be helpful in managing and preserving ecosystem services of these areas.

Trees and shrubs expanded in the last decades in European mountains due to land abandonment and the decrease in grazing pressure, and are expected to further spread also due to climate change. As a consequence of low forage quality and topographic constraints, the management of mountain environments dominated by woody vegetation with livestock is often challenging. Silvopastoral systems based on cattle hardy breeds able to forage on woody plants, such as Highland cattle, could be a suitable option for the management and restoration of such environments. In this study, we used direct observations to explore the foraging behavior of Highland cattle in four study areas across the western Alps. In particular, we assessed: (1) cattle diet composition, (2) the selection for more than 30 tree and shrub species, and (3) the relationships between species consumption and their abundance in the environment. Highland cattle fed on a mixture of both woody and herbaceous species, including between 15 and 46% of woody plants in the diet. Some trees (e.g., Celtis australis, Fraxinus spp., and Populus tremula) and shrubs (e.g., Frangula alnus, Rhamnus spp., and Rubus idaeus) were positively selected by cattle, thus they could be an important forage supplement to their diet. Moreover, the results highlighted that relative species consumption generally increased with increasing species abundance in the environment, suggesting that this cattle breed could be suitable to control shrub expansion in highly encroached areas. The outcomes of this study can support the development of targeted silvopastoral systems in the Alps. The beef livestock system in Sardinia is based on suckler cows, often belonging to autochthonous breeds, such as the Sarda breed, and they often graze silvopastoral areas. Besides beef meat, silvopastoral systems (SPSs) provide several Ecosystem Services (ESs), such as timber provision, harvested as wood, and watershed protection. Livestock distribution is a critical factor for the sustainable use of SPSs (e.g., to avoid uneven grazing patterns) and information on patterns of spatial use are required. A study was conducted to determine: (i) the spatial distribution and (ii) the habitat selection of Sarda cattle grazing in a Mediterranean silvopastoral area. Over different seasons, 12 free-roaming adult Sarda cows were fitted with Global Positioning System (GPS) Knight tracking collars to calculate an index mapping of the incidence of livestock in the landscape (LRI) and a preference index (PI) for different areas. Since the PI data were not normally distributed, the Aligned Rank Transform (ART) procedure was used for the analysis. LRI was able to represent the spatial variability in resource utilization by livestock as a LRI map. Overall, the areas where the animals drank and received supplementation were strongly preferred by the cows, reaching PI values in the summer of 19.3 ± 4.9 (median ± interquartile range), whereas areas with predominantly rocks were strongly avoided (the worst PI value in the spring was 0.2 ± 0.6). Grasslands were, in general, used in proportion to their presence in the area, with slightly increased use in the spring (PI 1.1 ± 0.5). Forest area was avoided by cows, except in the spring when it was used in proportion to their presence in the area.

Regardless of the issue, most of the research carried out on summer pastures of European Alps had to consider the effects of grazing management, as it is an intrinsic component of alpine environment. The management intensity of grazing livestock is measured in terms of livestock stocking rate, but not always a direct measure of it is easily retrievable. Therefore, the aim of the research was to test the reliability of proxies easily retrievable from open data sources (i.e. slope and distance from buildings) in approximating the pastoral site-use intensity. To test the proxies' effectiveness two different approaches were used. With the first one, the proxies' reliability was assessed in a case-study conducted at farm scale by using the number of positions gathered with GPS collars, which are a reliable measure of livestock site-use intensity. With the second, the proxies' reliability was assessed by means of five Vegetation Ecological Groups (VEGs), used as a tool for indirect quantification of livestock site-use intensity at regional scale (thirty-two alpine valleys of the Western Italian Alps, Piedmont Region-Italy). At farm scale, distance from buildings and slope were both reliable predictors of the number of GPS locations as assessed with a Generalized Additive Model. Results of Generalized Linear Models at the regional scale showed that the values of both the slope and the distance from buildings were able to separate VEGs along the same site-use intensity gradient assessed by modelling the number of GPS locations at farm scale. By testing proxies' reliability both with a direct (i.e. GPS collar positions) and indirect (i.e. VEGs) measurement of livestock site-use intensity, results indicated that slope and distance from buildings can be considered effective surrogates of site-use intensity gradient in alpine grasslands managed under livestock grazing. Therefore, when the level of site-use intensity in research carried out in alpine summer pastures is not directly available, a reliable solution consists in the use of the terrain slope and the distance from buildings, which are also easily retrievable from open data sources or computable.

BACKGROUND: Plant composition of species-rich mountain grasslands can affect the sensorial and chemical attributes of dairy and meat products, with implications for human health. A multivariate approach was used to analyse the complex relationships between vegetation characteristics (botanical composition and plant community variables) and chemical composition (proximate constituents and fatty acid profile) in mesophilic and dry vegetation ecological groups, comprising six different semi-natural grassland types in the Western Italian Alps. RESULTS: Mesophilic and dry grasslands were comparable in terms of phenology, biodiversity indices and proportion of botanical families. The content of total fatty acids and that of the most abundant fatty acids (alpha-linolenic, linoleic and palmitic acids) were mainly associated to nutrient-rich plant species, belonging to the mesophilic grassland ecological group. Mesophilic grasslands showed also higher values of crude protein, lower values of fibre content and they were related to higher pastoral values of vegetation compared to dry grasslands. The proximate composition and fatty acid profile appeared mainly single species dependent rather than botanical family dependent. CONCLUSION: These findings highlight that forage from mesophilic grasslands can provide higher nutritive value for ruminants and may be associated to ruminant-derived food products with a healthier fatty acid profile. © 2016 Society of Chemical Industry.

Maintaining multiple ecological functions ("multifunctionality") is crucial to sustain viable ecosystems. To date most studies on biodiversity-ecosystem functioning (BEF) have focused on single or few ecological functions and services. However, there is a critical need to evaluate how species and species assemblages affect multiple processes at the same time, and how these functions are interconnected. Dung beetles represent excellent model organisms because they are key contributors to several ecosystem functions. Using a novel method based on the application of 15 N-enriched dung in a mesocosm field experiment, we assessed the role of dung beetles in regulating multiple aspects of nutrient cycling in alpine pastures over appropriate spatial (up to a soil depth of 20 cm) and temporal (up to 1 yr after dung application) scales. 15 N isotope tracing allowed the evaluation of multiple interrelated ecosystem functions responsible for the cycling of dung-derived nitrogen (DDN) in the soil and vegetation. We also resolved the role of functional group identity and the importance of interactions among co-occurring species for sustaining multiple functions by focusing on two different dung beetle nesting strategies (tunnelers and dwellers). Species interactions were studied by contrasting mixed-species to single-species assemblages, and asking whether the former performed multiple functions better than the latter. Dung beetles influenced at least seven ecological functions by facilitating dung removal, transport of DDN into the soil, microbial ammonification and nitrification processes, uptake of DDN by plants, herbage growth, and changes in botanical composition. Tunnelers and dwellers were found to be similarly efficient for most functions, with differences based on the spatial and temporal scales over which the functions operated. Although mixed-species assemblages seemed to perform better than single-species, this outcome may be dependent on the context. Most importantly though, the different functions were found to be interconnected sequentially as reveled by analyzing 15 N content in dung, soil and vegetation. Taken together, our current findings offer strong support for the contention that the link between biodiversity and ecosystem functions should be examined not function by function, but in terms of understanding multiple functions and how they interact with each other.

Traditional products and related processes must be safe to protect consumers' health. The aim of this study was to evaluate microbiological criteria of a traditional Piedmont cheese, made by two different cheese producers (A and B). Three batches of each cheese were considered. The following seven samples of each batch were collected: raw milk, milk at 38°C, curd, cheese at 7, 30, 60, 90 days of ripening. During cheese making process, training activities dealing with food safety were conducted. Analyses regarding food safety and process hygiene criteria were set up according to the EC Regulation 2073/2005. Other microbiological and chemical-physical analyses [lactic streptococci, lactobacilli, pH and water activity (Aw)] were performed as well. Shiga-toxin Escherichia coli, aflatoxin M1 and antimicrobial substances were considered only for raw milk. All samples resulted negative for food safety criteria; Enterobacteriaceae, E.coli and coagulase-positive staphylococci (CPS) were high in the first phase of cheese production, however they decreased at the end of ripening. A high level of CPS in milk was found in producer A, likewise in some cheese samples a count of >5 Log CFU/g was reached; staphylococcal enterotoxins resulted negative. The pH and Aw values decreased during the cheese ripening period. The competition between lactic flora and potential pathogen microorganisms and decreasing of pH and Aw are considered positive factors in order to ensure safety of dairy products. Moreover, training activities play a crucial role to manage critical points and perform corrective action. Responsible application of good manufacturing practices are considered key factors to obtain a high hygienic level in dairy products.

In recent decades, pastoral abandonment has produced profound ecological changes in the Alps. In particular, the reduction in grazing has led to extensive shrub encroachment of semi-natural grasslands, which may represent a threat to open habitat biodiversity. To reverse shrub encroachment, we assessed short-term effects of two different pastoral practices on vegetation and dung beetles (Coleoptera, Scarabaeoidea). Strategic placement of mineral mix supplements (MMS) and arrangement of temporary night camp areas (TNCA) for cattle were carried out during summer 2011 in the Val Troncea Natural Park, north-western Italian Alps. In 2012, one year after treatment, a reduction in shrub cover and an increase in bare ground cover around MMS sites was detected. A more intense effect was detected within TNCA through increases in forage pastoral value, and in the cover and height of the herbaceous layer. Immediately after treatment, changes in dung beetle diversity (total abundance, species richness, Shannon diversity, taxonomic and functional diversity) showed a limited disturbance effect caused by high cattle density. In contrast, dung beetle diversity significantly increased one year later both at MMS and TNCA sites, with a stronger effect within TNCA. Multivariate Regression Trees and associated Indicator Value analyses showed that some ecologically relevant dung beetle species preferred areas deprived of shrub vegetation. Our main conclusions are: i) TNCA are more effective than MMS in terms of changes to vegetation and dung beetles, ii) dung beetles respond more quickly than vegetation to pastoral practices, and iii) the main driver of the rapid response by dung beetles is the removal of shrubs. The resulting increase in dung beetle abundance and diversity, which are largely responsible for grassland ecosystem functioning, may have a positive effect on meso-eutrophic grassland restoration. Shrub encroachment in the Alps may therefore be reversed, and restoration of grassland enhanced, by using appropriate pastoral practices.

The determination of the geographical origin of dairy products is an ongoing issue. In this paper the effects of botanical diversity of two pastures on the hydrocarbon and fatty acid composition of cheese fat were studied, over 2 years of experimentation. Two areas in the Italian southwestern Alpine region, dominated by Trifolium alpinum (T) and Festuca nigrescens (F) vegetation, respectively, were chosen, and milk obtained from cows grazing on these pastures was used to produce a semihard traditional cheese. Cheese samples showed a significantly different composition of most linear hydrocarbons, odd-chain (C15, C17, and C17:1) and unsaturated (trans-11,cis-15-C18:2, C18:3, C20:4n-6, C20:4n-3, and 20:5n-3) fatty acids, according to pasture type. The ratio between C(29) and C(27) linear hydrocarbons, unlike the absolute content of the single molecules, showed a good discriminating ability between the two pastures and was little affected by the natural variability due to the climatic and environmental factors.

The composition of the volatile fractions of three important grasses from sub-alpine N.W. Italian pastures, namely Festuca nigrescens Lam. non Gaudin (chewing fescue), Phleum alpinum L. (alpine timothy) and Poa alpina L. (alpine bluegrass) was investigated. The fresh aerial parts were collected at the flowering stage during the summer season. The volatile oils obtained from green tissues by steam distillation in a Clevenger-type apparatus, were analyzed by GC/FID and GC/MS. The oil yield was 0.04 +/- 0.01% weight/fresh weight bases for each of the investigated species. Several classes of compounds were found in the volatile fractions, including aldehydes, alcohols, acids, hydrocarbons, esters, ketones, terpenes, and phenolics. Qualitative and quantitative differences were observed.

The volatile fraction from the aerial part of Alchemilla xanthochlora Rothm. (Rosaceae) was obtained by hydrodistillation, and the chemical composition of the obtained oil was determined by GC/FID and GC/MS. Several compounds were found, belonging to the classes of aldehydes, alcohols, terpenes, esters, acids and hydrocarbons. The major constituents were cis-3-hexenol (11.20+/-0.02%), linalool (10.36+/-0.75%), oct-1-en-3-ol (8.98+/-1.43%), and nonanal (7.83+/-0.93%), followed by myrtenol (4.65+/-0.40%), hexadecanoic acid (4.59+/-0.79%), cis-3-hexenyl acetate (3.92+/-0.15%) and alpha-terpineol (3.10+/-0.26%).

The nutritional distinctiveness of pasture-fed dairy products is mainly influenced by the transfer of specific chemical compounds from the grass to the milk and by their effect on rumen microflora and animal metabolism. Thus, the pasture-fed origin has to be objectively proven, using fast and reproducible analytical methods applied to finished products, in order to protect consumers against potential frauds. In this work, Electronic Nose patterns of Alpine milks produced by cows grazing Trifolium alpinum and Festuca nigrescens pasture types have been examined, in order to test the potential use of this device for routine control analyses of the botanical origin of milk and dairy products. The data have been treated with different multivariate analyses (MANOVA, LDA) and chemometrics (MPLS). The results allow a very good classification of the milks, according to the two treatments. Such results demonstrate that this device could be successfully applied to PDO dairy products food chain as a tool for the determination of their dietary origin.
