RESUMO

Despite the widely used author contribution criteria, unethical authorship practices such as guest, ghost, and honorary authorship remain largely unsolved. We have identified six major reasons by analyzing 78 published papers addressing unethical authorship practice. Those are lack of: (i) awareness about and (ii) compliance with authorship criteria, (iii) universal definition and scope for determining authorship, (iv) common mechanisms for positioning an author in the list, (v) quantitative measures of intellectual contribution; and (vi) pressure to publish. As a  measure to control unethical practice, we have evaluated the possibility to adopt an author categorization scheme - proposed according to the common understanding of how first-, co-, principal-, or corresponding- author is perceived. Based on an online opinion survey, the scheme was supported by ~80% of the respondents (n=370). The impact of the proposed categorization was then evaluated using a novel mathematical tool to measure "Author Performance Index (API)" that can be higher for those who might have authored more papers as primary and/or principal authors than those as coauthors. Hence, if adopted, the proposed author categorization scheme together with the API would provide a better way to evaluate the credit of an individual as a primary and principal author.

The polysaccharides (PKP-E) extracted from the pinecones of Pinus koraiensis were studied, which was fractionated using DEAE-52 cellulose and Sephadex G-100. Four novel polysaccharide fractions were obtained, which were PKP-E-1-1, -1-2, -2-1, and -2-2, respectively. The structural features were characterized using HPGPC, monosaccharide composition analysis, Congo red test, periodate oxidation, Smith degradation, FTIR and NMR spectroscopy. The results showed the 4 purified fractions were non-triple helical structured heteropolysaccharides and composed of l-rhamnose, l-arabinose, d-mannose, d-glucose, and d-galactose. The fractions were mainly linked by 1→6 or 1→ glycosidic bonds and the backbone of 4 fractions was probably composed of→2, 6)-ß-d-Man-(1→ and α-d-GalpA-(1→), which resembles pectin. Moreover, the antioxidant activities of the polysaccharides were measured by scavenging radical capacity tests. The PKP-E-2-1 was the most stable and active fraction, and the respective IC50 for the hydroxyl and ABTS·+ radicals were 3.0 and 23.6 mg/mL.

Seven magnetic covalent organic framework molecularly imprinted polymers with magnetic responsiveness, large specific surface area, and molecular recognition ability were successfully synthesized, suitable for the separation of cyanidin-3-O-glucoside from complex samples. Using a room-temperature synthesis strategy, covalent organic frameworks accompanied by imprinted sites were formed in one step on the functionalized magnetic nanoparticles with 1,6-hexanediamine. The composite materials were easy to prepare and showed high adsorption capacity (127 mg g-1) together with favorable adsorption selectivity for cyanidin-3-O-glucoside over other flavonoids and phenolic acids. Magnetic covalent organic framework molecularly imprinted polymers exhibited good stability in 10 adsorption-desorption cycles. This work established a new method of extracting and separating high-purity anthocyanins and even unstable natural compounds.

RESUMO

This paper reviews many aspects of ritual and traditional slaughter methods used to produce meat for human consumption in different countries. Undoubtedly, meat is an important source of nutrients that are essential for human health. The global meat market has become increasingly interested in Islamic halal and Jewish kosher slaughter, in particular because of potential market opportunities. The requirement for unstunned slaughter or reversible pre-slaughter stunning makes religiously-based methods of animal slaughter unique. This study suggests a simple framework for a halal and tayyib meat supply chain for the Muslim community that also maintains meat quality and wholesomeness from farm to table as a model for the religious slaughter of animals.

Growing demand for gelatin has increased interest in using alternative raw materials. In this study, different animal skins; namely frog, tuna and chicken skins; were utilized in gelatin extraction by previously optimized extraction procedures. Quality characteristics and functional properties of the resultant gelatins were comparatively investigated. Frog skin gelatin had the highest protein content with 77.8% while the highest hydroxyproline content was found in chicken skin gelatin with 6.4%. Frog skin gelatin showed a significantly higher melting point (42.7 °C) compared to tuna and chicken gelatins. Bloom value was also significantly higher in frog skin gelatin compared to that of chicken and tuna skin gelatins. Results showed that processing waste like skins of different animals may present opportunities in gelatin production as high quality alternatives. This study may help the industry by providing one hand comparable data over potentially significant sources.

To systematically study multi-stage countercurrent process for Antarctic krill protein extracting and to optimize the multi-stage countercurrent technology, the solubility of Antarctic krill proteins after multi-step dissolution was explored firstly; multi-step extraction was investigated; and then multi-stage countercurrent system for protein extraction was carried out. In single step extraction, krill-to-water ratio and pH were chosen as 1:10 and 12.5 respectively, in order to extract more protein. In the multi-step dissolution process, the protein solubility of aqueous solution at pH 12.5 was 33.0 ± 0.8 mg/mL. Multi-step cross-flow processing testified the feasibility of multi-stage countercurrent assumption. Three-stage countercurrent method using krill-to-water ratio 1:10 extracted, 95.1 ± 0.6% protein from krill, where almost the same water as previous works. The total recovery yield of 67.9 ± 1.6% was achieved after precipitation at pH 4.5.

Porphyromonas gingivalis is a pathogenic Gram-negative anaerobic bacterium that colonizes the subgingival region of gums. These bacteria can invade periodontal tissues, form plaques, and produce volatile sulfur compounds (VSC) and volatile organic compounds (VOC). Egg yolk immunoglobulin (IgY) that was specifically produced in egg yolks after chickens were challenged with P. gingivalis could control and prevent oral diseases caused by P. gingivalis. The releases of P. gingivalis offensive metabolic odors in vitro and in vivo were determined using a Halimeter and GCMS. With IgY bacterial growth was inhibited, and the relative amounts of VOC and VSC were decreased. The scores for the oral health index and the levels of IL-6 and TNF-α are also decreased. All treatment groups showed significant anti-inflammatory effects, which strongly suggests that specifically IgY against P. gingivalis may be an effective treatment for the prevention and protection of periodontal inflammation and halitosis.

To investigate the contribution of autochthonous microflora on free fatty acids (FFA) release and flavor development in low-salt fermented fish, three groups of processed fish, including bacteriostatic-acidification group (BAG), bacteriostatic group (BG), and spontaneous fermented fish (CG) were established. Results showed that addition of NaN3 reduced microbial load in BAG and BG below 3.5 log CFU/g after 3 weeks of incubation. Activities of lipases and lipoxygenase declined markedly with increasing time, where BG had the highest activities, followed by CG and BAG. There is a 36.3% higher in the total FFA content in CG than that in BAG, indicating both microbial and endogenous lipases contributed to the FFA liberation in fermented fish while endogenous lipases play a major role. However, compared to BAG and BG, largely higher levels of volatile compounds were observed in CG, suggesting that autochthonous microflora dominated the generation of volatile flavor compounds in fermented fish.

This study proposes critical limits (CL) for control points for halal slaughter (CPHS). Previously, 6 control points (CP) were determined, and CL for these 6 CPHS are suggested based on: 1) a literature survey for the CL for CP 1 (poultry breeding, rearing, and poultry feed) and CP 2 (welfare of poultry during transportation and lairage); 2) a field survey of slaughter plants in Kuantan (Malaysia) for CP 3 (immobilization), CP 4 (slaughter), CP 5 (time for full bleed-out), and CP 6 (washing and packaging); and 3) controlled experiments to refine the CL for CP 3, 4, and 5. The CL for CP 1 focused on stress reduction during rearing and use of substances that could compromise poultry meat wholesomeness. The CL for CP 2 emphasizes humane best-practices for handling poultry during lairage. The CL for CP 3 suggests a gap of 5 s between 2 shackles if only one shackler is employed and shackling times of <1 min for live chickens. In countries permitting water-bath electrical stunning of halal poultry, the stunning current needed to induce unconsciousness must be defined for the breed and bird size but not cause any chicken deaths. The CL for CP 4 mandates the recitation of the tasmiyah (the invocation), which if done for every chicken, will require ≥5 s between stunning and neck cutting. The CL for CP 4 also includes information about the slaughter knife. In CP 5 the recommended minimum time between neck cutting and scalding is 9.5 min. Finally, the CL for CP 6 emphasizes good supply chain hygiene and zero adulteration from haram species and substances.

BACKGROUND: Metal pollution of waterways directly affects human health and can impact the food chain. Seafood living in polluted water can accumulate trace metals. The purpose of this study was to analyze the toxic metals Pb and Cd and the dietary essential metals Zn and Mn in 120 cans of tuna species from four different brands processed in Iran and purchased in 2012. RESULTS: The mean level of metals for each brands of canned fish obtained in mg/kg were as follows: yellowfin tuna (Pb: 0.19 ± 0.015, Zn: 5.77 ± 4.17, Mn: 0.08 ± 0.07, Cd: 0.15 ± 0.12), Kilka (Pb: 0.95 ± 0.88, Zn: 30.47 ± 29.82, Mn: 1.01 ± 0.73, Cd: 0.07 ± 0.05), Kawakawa (Pb: 0.28 ± 0.23, Zn: 6.77 ± 5.21, Mn: 0.17 ± 0.12, Cd: 0.12 ± 0.09), longtail tuna (Pb: 1.59 ± 1.56, Zn: 7.44 ± 6.11, Mn: 0.04 ± 0.03, Cd: 0.06 ± 0.04). Pb, Zn and Cd levels were generally higher than the FAO/WHO permissible limits (Pb: 0.50 mg/kg, Zn: 50.0 mg/kg and Cd: 0.50 mg/kg) and the European Union acceptable dietary limits. CONCLUSIONS: Based on the United States Environmental Protection Agency health criteria, there is no health risk associated with Mn concentration in the samples analyzed. The limits of detection of the method for Pb, Zn, Mn and Cd in mg/kg were 0.01, 0.5, 0.01 and 0.01, respectively. The result of the one-way analysis of variance suggested significant variations (p < 0.05) in the concentration of the metals in the different types of canned fish with the following being outside of compliance levels.
