Fermentation is an important tool in producing functional beverages through agro-industrial wastes, and medicinal and aromatic plants due to the specific content of bioactive molecules. Therefore, this study evaluated the contribution of Matricaria recutita (chamomile), Cymbopogon citratus (lemongrass), or Mentha piperita (peppermint) extracts to the phytochemical profile and potential biological effects of a functional fermented orange beverage in vitro and in silico. The concentrations of aromatic herbal extracts that yielded the best sensory performance for fermented beverages were selected for analyses that involved characterizing the fermented beverages. The beverages that received the extracts (2%) had the highest phenolic and flavonoid content and antioxidant potential compared to the control. Hesperidin (124-130 mg L-1), narirutin (66-70 mg L-1), chlorogenic (11-16 mg L-1), caffeic (5.3-5.5 mg L-1), and ferulic (1-1.7 mg L-1) acids were found in the different formulations. The in silico analysis suggested that the evaluated compounds do not present a toxicity risk (mutagenicity, carcinogenicity, hepatotoxicity, and ability to penetrate the blood-brain barrier). Additionally, they can contribute to the biological effects of therapeutic importance, such as antioxidant, gastroprotective, and anti-ulcerative properties, and the Mentha piperita L. extract presented the greatest potential among the evaluated herbs for use in functional fermented beverages.

Anthocyanins are important compounds in grapes and wine and significantly influence their characteristics. Ultraviolet light-C (UV-C) can be used as a tool to induce secondary metabolism, and in this study, it was used in 'Cabernet Sauvignon' grapes in the postharvest period to improve the anthocyanin profile and sensory attributes in wine produced with irradiated grapes. Grapes in the postharvest period were exposed to 0, 2, or 3 kJ m-2 UV-C radiation. After winemaking and storage time (6 months), physicochemical and color analyses, anthocyanin quantification and identification (HPLC-PDA-MS/MS), and sensory analyses were carried out. 'Cabernet Sauvignon' wine produced with grapes irradiated with 3 kJ m-2 UV-C showed increased spectrophotometric color, which is likely due to a 22.5% increase in total anthocyanin monomers, 59.3% of pyranoanthocyanins, 92.3% of direct condensation products, and 62.8% of acetaldehyde-mediated condensation products. In addition, this irradiated dose presented higher perception scores for visual color, aroma, taste, and was preferred by the tasters over the wine produced with non-irradiated grapes. This study is the first of its kind to show that the UV-C radiation treatment of grapes in the postharvest period can be a promising tool to improve the anthocyanin profile and sensorial quality of 'Cabernet Sauvignon' wine. This study investigated the dynamic changes in the anaerobic metabolism end products (ethanol, acetaldehyde and ethyl acetate) of different apple cultivars during 84-days of regular air (RA) and controlled atmosphere (CA) storage after 0-, 3-, 7- and 14-days of anoxia. Increasing the length of exposure to anoxia increased the anaerobic metabolites concentrations (AMC) in all cultivars. Fruit could recover from anoxia, and the AMC dissipated after 84-days of storage under both storage systems when the duration of anoxia was <7-days. The rate of metabolite dissipation following 14-days of anoxia differed among cultivars and storage systems. The reduction in AMC was faster under CA than RA-storage for 'Golden Delicious' and 'Jonagold' fruit, while the opposite trend was observed for 'Kanzi'. These results indicate that storage under CA post anoxia maintains better fruit quality during 84-days of storage than RA and effectively reduces the AMC.

Consumers increasingly prefer and seek functional beverages, which, given their characteristics, provide important bioactive compounds that help prevent and treat chronic diseases. Mead is a traditional fermented alcoholic beverage made from honey solution. The aging process of mead with oak chips is innovative and bestows functional characteristics to this beverage. Thus, in this study, we sought to develop and characterize a novel functional beverage by combining the health benefits of honey with the traditional aging process of alcoholic beverages in wood. Phenolic compounds, flavonoids, and antioxidant capacity were analyzed in mead using oak chips at different toasting levels and aged for 360 days. LC-ESI-QTOF-MS/MS was used to analyze the chemical profile of different meads. Over time, the aging process with oak chips showed a higher total phenolic and flavonoid content and antioxidant capacity. Eighteen compounds belonging to the classes of organic acids, phenolic acids, flavonoids, and tannins were identified in meads after 360 days. Our findings revealed that the addition of oak chips during aging contributed to p-coumaric, ellagic, abscisic, and chlorogenic acids, and naringenin, vanillin, and tiliroside significantly impacted the functional quality of mead.

Persistent organic pollutants are characterised by their chemical structure, environmental persistence and toxicity to human and wildlife populations. The production of these chemicals is regulated and restricted. However, they continue to be detected in the environment. In this study, the occurrence of 11 congeners of polychlorinated biphenyls (PCBs 28, 52, 77, 81, 101, 118, 126, 138, 153, 169, and 180) was investigated in 90 honey samples produced in the Brazilian state of Rio Grande do Sul. The samples were from different municipalities, production systems and floral origins. Extraction was performed using the modified QuEChERS method (Quick, Easy, Cheap, Effective, Rugged and Safe) followed by gas chromatography with micro-electron capture detector. The results showed the presence of four congeners (PCBs 28, 77, 81, 101) in 15 honey samples confirming the environmental contamination in Southern Brazil. Among the contaminated samples, no significant differences were identified regarding the production system and floral origin.

Few studies investigated the biological effects of American grape cultivars. We investigated the metabolic response after acute consumption of grape juice or wine from Bordo grapes (Vitis labrusca) in a placebo-controlled crossover study with fifteen healthy volunteers. Blood samples were collected 1 hour after the intake of 100 mL of water, juice, or wine to measure TBARS, ABTS, FRAP, glucose, and uric acid levels. To evaluate differences in cellular response, intracellular reactive species production (DCFH-DA) and metabolic mitochondrial viability (MTT) were assessed after exposure of human neuron-like cells (SH-SY5Y) to juice or wine. Glycemia was reduced after juice or wine consumption, whereas blood levels of uric acid were reduced after juice consumption but increased after wine consumption. Juice and wine consumption reduced plasma lipid peroxidation and increased plasma antioxidant capacity (ABTS and FRAP assays). Furthermore, juice inhibited H2O2-induced intracellular production of reactive species (RS) and increased the viability of SH-SY5Y cells. In contrast, wine (dealcoholized) exhibited a per se effect by inducing the production of RS and reducing cell viability. These results indicate a positive impact of acute consumption of Bordo juice and wine on human oxidative status, whereas only juice had protective effects against oxidative stress-induced cytotoxicity.

Ultraviolet light type C (UV-C) was studied as a tool to increase enzymatic and non-enzymatic antioxidant defenses and phytochemical levels in 'Isabel' grapes (Vitis labrusca×Vitis vinifera L.). Grapes were exposed to 0, 0.5, 1.0, 2.0, or 4.0kJm-2 UV-C and stored for 1, 3, or 5days post-treatment. One day after UV-C irradiation, the activities of grape antioxidant enzymes and thiols were increased, especially at 1.0 and 2.0kJm-2. These doses increased total phenolic content by almost 20%, while 0.5 and 4.0kJm-2 had no effects. Total monomeric anthocyanin content was increased by >35% by UV-C at 1.0kJm-2; however, anthocyanin profile was unchanged. Grape skin antioxidant capacity was also improved by UV-C irradiation. The 1.0kJm-2 UV-C was considered the hormetic dose. Postharvest UV-C had an elicitor effect on 'Isabel' grapes, positively impacting the antioxidant capacity and phytochemical content.

Thermal pest control (TPC) is a technology that applies heated air in the vineyard to reduce pests. However, it can also alter grape anthocyanin synthesis in answer to temperature stress. The aim of this work was to determine the impact of TPC in 'Tannat' grape vineyards on wine quality. The major makers of quality considered in this study were the wine anthocyanin characterization by HPLC-PDA-MSn, beverage's sensory evaluation by descriptive analysis, and color parameters by instrumental analysis. A total of three experiments were performed in different harvesting years. In 2011/12 (Experiment I), four applications were performed from the flowering to fruiting. For the second experiment (2012/13), five applications were used only during fruiting. TPC treatment performed in 2013/14 (Experiment III) had a total of 19 applications from the flowering to harvesting. In the first experiment, TPC had increased wine pigments, color, and sensorial descriptors for visual (translucence) and gustatory (woody and body) perceptions. However, in the second experiment none of the evaluated wine quality parameters was affected by TPC (p≤0.05). In the last and longest experiment (19 applications), TPC has significantly increased some wine pigments content. Nonetheless, wine sensorial parameters were not affected. Since the climate was different among the years, it seems that TPC effect does not depend on the applications number and vegetable cycle period only, but also it can be affected by the weather conditions in which the vine is being cultivated. However, when TPC treatment has resulted in the greatest anthocyanin increment (Experiment I) some wine sensory descriptors were also improved.

ABSTRACT: Content of exchangeable potassium (K) in t soil may influence on its content in grapevines leaves, grape yield, as well as, in must composition. The study aimed to assess the interference of exchangeable K content in the soil on its leaf content, production and must composition of 'Cabernet Sauvignon' cultivar. In September 2011, in Santana do Livramento (RS) five vineyards with increasing levels of exchangeable K in the soil were selected. In the 2012/13 and 2013/14 harvests, the grape yield, yield components, total K content in the leaves in full bloom and berries veraison were evaluated. Values of total soluble sugar (TSS), pH, total titratable acidity (TTA), total polyphenols and anthocyanins were evaluated in the must. Exchangeable K content increase in soil with sandy surface texture increased its content in leaves collected during full flowering and in berries and must pH; however, it did not affect production of the 'Cabernet Sauvignon'.


RESUMO: O potássio (K) é um dos macronutrientes exigidos em maior quantidade pela videira, porém o seu incremento no solo pode não aumentar a produção de uva, mas pode modificar a sua composição. O trabalho objetivou avaliar a interferência do teor de K trocável no solo sobre o seu teor na folha, produção e composição do mosto da cv. 'Cabernet Sauvignon'. Em setembro de 2011, em Santana do Livramento (RS), foram selecionados cinco vinhedos com níveis crescentes de K trocável no solo. Nas safras 2012/13 e 2013/14, foi avaliada a produção de uva, os componentes de produção, o teor total de K nas folhas no pleno florescimento e na mudança da cor das bagas. No mosto, foram avaliados os valores de sólidos solúveis totais (SST), pH, a acidez total titulável (ATT) e os totais de polifenóis e antocianinas. O incremento do teor de K trocável no solo aumentou o K total nas folhas no pleno florescimento, nas bagas e a composição do mosto, mas não afetou a produção de uva da cv. 'Cabernet Sauvignon'.

The aim of this study was to evaluate the effect of controlled atmosphere in the change of color, chlorophyll degradation and phenolic compounds concentration in yerba maté thickly ground (“cancheada”) and thinly milled (“socada”). Yerba maté samples from the towns of Arvorezinha (RS - Brazil) and São Mateus do Sul (PR - Brazil) were stored in four levels of oxygen (1, 3, 6 and 20.9kPa of O2) and four levels of carbon dioxide (0, 3, 6 and 18kPa of CO2) and then were analyzed, after nine months of storage. According to the results, the O2 partial pressure reduction decreased the loss of green coloration, kept a higher content of chlorophylls and of total phenolic compounds. In relation to the different levels of CO2, a response as remarkable as O2 was not observed. The yerba maté that was thickly ground (“cancheada”) presented a better storage potential than the one thinly milled (“socada”) in the storage with O2 and with CO2. The 1kPa of O2 condition kept the yerba maté greener and with a higher content of chlorophylls and of total phenolic compounds after nine months of storage. The CO2 partial pressure kept the yerba maté coloration greener and with a higher content of chlorophylls and of total phenolic compounds, regardless of the level used, in the maté from both cultivation areas.


O objetivo deste estudo foi avaliar o efeito da atmosfera controlada na alteração da cor, degradação da clorofila e concentração de compostos fenólicos em erva-mate cancheada e socada. Amostras de erva-mate provenientes de Arvorezinha (RS) e São Mateus do Sul (PR) foram armazenadas em quatro níveis de oxigênio (1, 3, 6 e 20,9kPa de O2) e quatro níveis de gás carbônico (0,3, 6 e 18kPa de CO2), as quais foram analisadas ao final de nove meses de armazenamento. Segundo os resultados, a redução das pressões parciais de O2 reduziu a perda da coloração verde, manteve maior teor de clorofilas e de compostos fenólicos totais. Em relação aos diferentes níveis de CO2, não se constatou uma resposta tão marcante como na de O2. Tanto no armazenamento com O2 como com CO2, a erva-mate cancheada apresentou melhor potencial de armazenamento do que a erva-mate socada. A condição com 1kPa de O2 manteve a erva-mate mais verde, maior teor de clorofilas e compostos fenólicos totais após 9 meses de armazenamento. A pressão parcial de CO2, independente do nível utilizado, mantém a coloração da erva-mate mais verde, maior teor de clorofilas e compostos fenólicos totais nas ervas provenientes dos dois locais de cultivo.

Considerando-se a ampla utilização das folhas da erva-mate, bem como os benefícios advindos de seu emprego, neste estudo foi avaliada a qualidade de quatro tipos de ervas-mate nativas de espécime chimarrão: tradicional, com adição de 5 % e 10 % de açúcar, e a moída grossa, bem como a homogeneidade em três lotes dos produtos, correspondentes a diferentes semanas de processamento. Foram avaliadas as propriedades físico-químicas, o teor de polifenóis totais e a atividade antioxidante. Os extratos aquosos de erva-mate foram elaborados a 85 ºC, mantidos em de cocção em sistema fechado durante 10 e 30 minutos.As ervas-mate com adição de açúcar apresentaram menores teores de material mineral e de fibra bruta quando comparadas aos tipos tradicional e moída grossa. A erva-mate moída grossa acondicionada em embalagem laminada apresentou os menores valores de atividade de água em relação aos outros tipos de ervas acondicionados em embalagem de papel. A embalagem laminada também contribuiu para a menor absorção de oxigênio, que retarda a oxidação da clorofila e mantém a coloração verde do produto.Os extratos elaborados a partir da erva-mate moída grossa e os que permaneceram por maior tempo em decocção apresentaram maiores teores de polifenóis totais...

O presente trabalho foi conduzido com o objetivo de avaliar o efeito da temperatura e da umidade relativa do ar (UR) sobre a manutenção da qualidade de tangerinas durante o período de armazenamento refrigerado (AR). O delineamento experimental utilizado foi inteiramente casualizado, em esquema bifatorial, com oito repetições, contendo 15 frutos cada. Os tratamentos avaliados constituíram-se da combinação das temperaturas 2, 3 e 4°C, com UR do ar de 90 e 96 por cento. Após oito e 12 semanas de armazenamento, mais três dias de exposição a 20°C, foram realizadas as seguintes análises: acidez total titulável (ATT), sólidos solúveis totais (SST), consistência dos frutos, incidência de podridões e suculência. De acordo com os resultados obtidos, os frutos armazenados a 3°C + UR do ar de 90 por cento apresentaram ATT, SST e consistência mais elevada, após oito e 12 semanas de AR. A incidência de podridão foi significativamente superior nos tratamentos com alta UR do ar (96 por cento). Injúrias provocadas pela baixa temperatura ocorreram em alguns frutos no tratamento a 2°C. Não se constatou diferença significativa na suculência entre os tratamentos em ambas as datas de avaliação. A temperatura de 3°C combinada com UR de 90 por cento apresentou os melhores resultados na conservação de tangerinas "Montenegrina", que podem ser armazenadas por um período de até oito semanas.


This research was conducted in order to evaluate the effect of temperature and relative humidity (RH) on the quality of tangerines during cold storage. The experimental design was entirely randomized, in a bifatorial design with eight replications of 15 fruits. The treatments were the combination of three temperatures (2, 3 and 4oC) and two RH levels (90 and 96 percent). Evaluations of quality were performed after 8 and 12 weeks of cold storage plus 3 days of shelf life at 20°C. The analyzed parameters were: total titratable acidity (TTA), total soluble solids (TSS), fruits consistency, rot incidence and juiciness. According to the results, fruits stored at 3oC + 90 percent of RH presented higher TTA, TSS, fruits consistency and lower rot incidence after 8 and 12 weeks of cold storage. The rot incidence increased with high RH (96 percent). Some pitting caused by low temperature was found at 2oC. There was no difference between treatments for juiciness in both evaluations. The temperature of 3°C with 90 percent of RH showed the best results on quality maintenance of 'Montenegrina' tangerines, which can be stored during 8 weeks.

Atualmente, a batata é a hortaliça de maior importância econômica no Brasil, sendo a fritura a forma preferencial de seu preparo, tanto doméstico quanto comercial. A batata que se destina ao processamento deve apresentar características de qualidade como tamanho e coloração uniformes dos tubérculos e a tonalidade dourada-clara do chips. Os principais fatores condicionantes dessas características são o elevado teor de matéria seca, o baixo conteúdo de açúcares redutores e o formato dos tubérculos, sendo a qualidade dos chips influenciada por fatores genéticos e ambientais.

A industrializacão da batata (Solanum tuberosum L.) tem sido limitada no Brasil, quase que exclusivamente, pela falta de matéria-prima adequada. Alta qualidade do produto processado é dependente de altos teores de matéria seca, que reduz a absorcão de óleo durante a fritura e confere crocância, e baixos teores de acúcares redutores, que mantêm a coloracão clara das fritas. O objetivo deste trabalho foi identificar clones de batata de alta qualidade para processamento a partir da avaliacão de tubérculos produzidos durante os cultivos de primavera de 2003 e outono de 2004 em Santa Maria, RS. O experimento foi conduzido em um fatorial (15 clones e duas épocas de cultivo) no delineamento de blocos ao acaso, com quatro repeticões. Foram avaliados os clones Dakota Rose, SMINIAIporã, SMIJ461-1, SMIJ319-1, SMIJ456-4Y, SMID040-4RY, SMIE040-6RY, SMIC148-A, SMIF165-6RY, SMIH095-1, SMINIA90244-1, SMINIA793101-3, SMINIA95043-11, Macaca e Asterix nos cultivos de primavera de 2003 e outono de 2004 em Santa Maria, RS. As condicões ambientais, durante o período de producão, influenciaram a qualidade pós-colheita dos tubérculos. Os clones SMIJ461-1, SMIJ319-1, SMIJ456-4Y, SMIC148-A, SMIDO40-4RY e SMIH095-1 foram os que apresentaram o melhor desempenho nas características desejáveis para processamento, sendo superiores a Asterix, cultivada para consumo de mesa ou para processamento na forma de chips nas diferentes regiões produtoras de batata. Dentre esses clones, SMIDO40-4RY e SMIH095-1 foram os menos influenciados pelas diferencas de temperatura e insolacão típicas das épocas de cultivo de outono e primavera no RS. Os clones SMIJ461-1 e SMIJ456-4Y apresentaram maior teor de matéria seca e coloracão mais clara do chips no cultivo da primavera.
