RESUMO

The study was aimed at determining the effects of the rearing system and intensity of fattening on beef physicochemical properties and sensory quality, fatty acid composition, and mineral compounds and vitamins concentration. The study was conducted using meat from 38 young, crossbred bull calves, which were reared with nurse cows (C) or were fed milk replacer (R). In the study, intensive (Int) or semi-intensive (SInt) fattening system were applied. The bulls were slaughtered at the age of 560 days and samples of the longissimus lumborum (LL) muscle were collected. Meat from C bulls was juicier (p < 0.05) and had a higher concentration of conjugated linoleic acid (CLA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA), as well as zinc (Zn), iron (Fe), and α-tocopherol, compared with meat from R bulls. The Int system resulted in the intramuscular fat (IMF) content increase (p < 0.01) and reduced shear force (p < 0.05), compared with the SInt system. Meat from Int bulls had a better eating quality and a higher monounsaturated fatty acid (MUFAs), Zn, and Fe; however, it had a lower proportion of polyunsaturated fatty acids (PUFAs) and α-tocopherol concentration than meat obtained from SInt bulls.

This study was designed to compare the fatty acid (FA) profiles of four types of fat depots from crossbred bulls (Polish Holstein-Friesian × Limousin, PHF × LM) fattened semi-intensively (SI) and intensively (I). Intramuscular fat was most abundant in total polyunsaturated fatty acids (PUFAs), n-3 and n-6 PUFAs, and functional fatty acids C 18:2, C 18:3, C 20:4 and C 20:5 in comparison with the remaining fat types. Furthermore, note that external fat was more abundant in conjugated linoleic acid (CLA) than other fat types. Grass silage fed to cattle during fattening had a beneficial influence on the FA profile of beef, and an increase in the amount of concentrate in the ration did not decrease beef quality.

This study was designed to compare the fatty acid profiles of four types of fat depots from bulls, steers, and heifers. All animals were Polish Holstein-Friesian and Limousin crossbreds fattened semi-intensively-silage at libitum and concentrate in the amount corresponding to 30% of their net energy requirements. The fatty acid profile in intramuscular, intermuscular, and external and internal fat was determined. The intramuscular fat of bulls was most abundant in total PUFAs and n-6 PUFAs, and functional fatty acids C 18:2, C 20:4, and C 22:5 in comparison with steers and heifers. Regardless of sex category, intramuscular and external fat were characterized by higher levels of UFAs and a more desirable MUFA/SFA ratio than the remaining fat types. It should also be noted that external fat was more abundant in CLA than other fat types, and that the highest CLA content was found in bull fat, compared with the remaining sex categories of cattle.

OBJECTIVE: The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. METHODS: Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. RESULTS: Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). CONCLUSION: Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.

The aim of this study was to determine the effects of genotype and slaughter age on the mineral content and fatty acid profile of beef. The experiment was performed on 72 crossbred bulls produced by crossing Polish Holstein-Friesian (PHF) cows with bulls of three beef breeds: Hereford (HH), Limousin (LM), and Charolais (CH), slaughtered at 15, 18, and 21 months of age. Samples of the longissimus thoracis muscle were collected to determine their mineral (potassium-K, sodium-Na, magnesium-Mg, zinc-Zn, and iron-Fe) and fatty acid composition. The meat of PHF × LM crosses had a lower (p ≤ 0.01) content of K and Mg, compared with the remaining crossbred bulls. The Fe content per kg of meat was 4 mg higher (p ≤ 0.01) in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The content of monounsaturated fatty acids (MUFAs) in intramuscular fat was 2.77% higher in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The n-6/n-3 polyunsaturated fatty acids (PUFA) ratio did not exceed 4.0, and it was most desirable in PHF × LM crosses (2.84) and in the oldest bulls (2.92).

The objective of this study was to determine the usefulness of live animal measurements in estimating the intramuscular fat (IMF) content of m. longissimus thoracis (MLT) in beef cattle. Live animal measurements were performed in young crossbred bulls (96) and steers (59), the offspring of Holstein-Friesian (HF) cows and beef bulls (Limousin, Hereford and Charolais), at the end of the fattening period. The content of intramuscular fat was determined in samples from MLT by chemical analyses. A prediction model was developed by stepwise regression. In the validation model, the values of R2=0.74, RMSE=0.37% were determined. The results indicate that selected biometric (chest width, chest girth) ultrasound measurements (thickness of subcutaneous rump and back fat) and selected blood parameters (triglycerides) can be used to predict IMF content with satisfactory precision and accuracy. The analyzed parameters could constitute a valuable tool in the process of selecting beef quality traits and determining the slaughter value of young beef cattle.

The aim of this study was to determine the effect of disease incidence on selected parameters of cattle fattening performance and carcass quality, and the fatty acid profile of beef. The experimental materials comprised 16 bulls and 16 steers, Polish Holstein-Friesian × Limousin crossbreeds (including 10 healthy and six treated animals of each category). At 5 weeks of age, bloodless castration was carried out using a rubber elastrator. The calves were fed milk replacer provided in automatic feeding stations. Until 540 days of age, the animals were fattened in an Animal Research Laboratory equipped with the Roughage Intake Control (RIC) system (Insentec, the Netherlands). In comparison with healthy (untreated) bulls and steers, sick (treated) animals had lower average body weight at 180 days of age, by 37 kg (P ≤ 0.05) and lower average final body weight at 540 days of age, by 56 kg (P ≤ 0.05). Sick animals were characterized by lower feed intake and worse feed efficiency (not statistically significant differences). Hot carcass weight reached 318 kg in healthy animals and 258 kg in treated bulls (P ≤ 0.05). In treated steers, the percentage of lean meat and bones in the three-rib section was higher and the percentage of fat was lower, compared with their healthy counterparts (P ≤ 0.01). There was a category × health status interaction for carcass tissue composition. There were no significant influences of type of sickness on analyzed traits. In comparison with healthy steers, intramuscular fat of Musculus longissimus dorsi (MLD) from treated steers had significantly (P ≤ 0.05) higher concentrations of polyunsaturated fatty acids (n-6 and n-3) and a lower content of conjugated linoleic acid.

The study compared the slaughter value and meat quality of heifers and once-calved heifers slaughtered at the age of 18 and 28months, respectively. The once-calved heifers at the age of 15months, were bred with semen of Limousine bulls and following the calving they fed their offspring and then they were slaughtered. There were no differences in the carcass conformation and fatness between the treatments. Once-calved heifers' carcasses had a higher proportion (P<0.05) of 5 most valuable primal cuts as compared with heifers. Meat of once-calved heifers contained more (P<0.05) intramuscular fat, was darker (P<0.01), and exhibited a higher water-holding capacity and lower cooking loss (P<0.05) as compared with heifers' meat. In conclusion, due to the possibility for obtaining additional offspring and a heavier pre-slaughter weight without reducing the slaughter value of the carcass and meat quality, it is recommended to use heifers originating from commercial crossbreeding as the once-calved ones.

The objective of this study was to determine the effect of slaughter season on the fatty acid profile in four types of fat deposits in crossbred (Polish Holstein Friesian Black-and-White×Limousine) beef bulls. The percentage share of fatty acids was determined by gas chromatography and were divided into the following categories of fatty acids: saturated (SFAs), unsaturated (UFAs), monounsaturated (MUFAs), polyunsaturated (PUFAs), desirable hypocholesterolemic (DFAs) and undesirable hypercholesterolemic (OFAs), n-3 and n-6. Perinephric fat was characterized by the highest SFA concentrations (59.89%), and subcutaneous fat had the highest MUFA content (50.63%). Intramuscular fat was marked by a high percentage share of PUFAs and the highest PUFA/SFA ratio. The slaughter season had a significant effect on the levels of C18:3, C20:4 (p≤0.01) and conjugated linoleic acid (p≤0.05). There was an interaction between the slaughter season and fat type for the content of C20:4 (p≤0.01) and C20:5 (p≤0.05). The results of this study show that beef from cattle slaughtered in the summer season has a higher nutritional value and more health-promoting properties.

We investigated the effect of the amount of body condition loss in the dry period and early lactation in 42 high-yielding Holstein-Friesian cows on milk yield and the share of fatty acids in milk fat. Energy reserves were estimated based on the body condition scoring (BCS) and backfat thickness (BFT). Milk yield and milk composition were determined over 305-d lactation. From d 6 to 60 of lactation, the concentrations of 43 fatty acids in milk fat were determined by gas chromatography. Cows were categorized based on body condition loss from the beginning of the dry period to the lowest point of the BCS curve in early lactation into three groups: low condition loss group (L) ≤0.5 points (n = 14); moderate condition loss group (M) 0.75 to 1.0 points (n = 16) and high condition loss group (H) >1.0 points (n = 12). Cows whose body energy reserves were mobilized at 0.8 BCS and 11 mm BFT, produced 12,987 kg ECM over 305-d lactation, i.e. 1,429 kg ECM more than cows whose BCS and BFT decreased by 0.3 and 5 mm, respectively. In group H, milk yield reached 12,818 kg ECM at body fat reserve mobilization of 1.3 BCS and 17 mm BFT. High mobilization of body fat reserves led to a significant (approx. 5%) increase in the concentrations of monounsaturated fatty acids-MUFA (mostly C18:1 cis-9, followed by C18:1 trans-11), a significant decrease in the levels of fatty acids adversely affecting human health, and a drop in the content of linoleic acid, arachidonic acid and docosahexaenoic acid in milk fat. In successive weeks of lactation, an improved energy balance contributed to a decrease in the concentrations of unsaturated fatty acids (UFA) and an increase in the conjugated linoleic acid (CLA) content of milk fat.
