RESUMO

The agri-food industry generates substantial waste, leading to significant environmental impacts. Lychee (Litchi chinensis Sonnerat), which is rich in bioactive compounds in its peel, pulp, and seeds, offers an opportunity for waste use. This study aimed to evaluate the effects of supplementing a high-carbohydrate diet with varying levels of lychee peel flour on lipid metabolism biomarkers and oxidative stress in a zebrafish (Danio rerio) model. A total of 225 zebrafish, approximately four months old, were divided into five groups: control, high-carbohydrate (HC), HC2%, HC4%, and HC6%. The study did not find significant differences in the growth performance of zebrafish in any group. However, the HC6% group exhibited a significant decrease in glucose and triglyceride levels compared with the HC group. Furthermore, this group showed enhanced activities of the antioxidant enzymes catalase (CAT) and superoxide dismutase (SOD), along with reduced levels of malondialdehyde (MDA). Increased antioxidant activity was also evidenced by DPPH-, ABTS+, and ß-carotene/Linoleic acid assays in the HC6% group. A positive correlation was identified between SOD/CAT activity and in vitro antioxidant assays. These findings suggest that dietary supplementation with 6% lychee peel flour can significantly modulate glucose homeostasis, lipid metabolism, and antioxidant activity in zebrafish.

A water deficit can negatively impact fruit yield and quality, affecting critical physiological processes. Strategies to mitigate water deficits are crucial to global food security. Iodine (I) may increase the efficiency of the antioxidant system of plants, but its role against water deficits is poorly understood. This study aimed to evaluate the effectiveness of I in attenuating water deficits and improving fruit quality, investigating whether metabolic responses are derived from a "priming effect" or stress relief during water deficits. Tomato plants were exposed to different concentrations of potassium iodide (KI) via a nutrient solution and subjected to a water deficit. A water deficit in tomatoes without KI reduced their yield by 98%. However, a concentration of 100 µM of KI increased the yield under a water deficit by 28%. This condition is correlated with increased antioxidant activity, photosynthetic efficiency improvement, and malondialdehyde reduction. In addition, the concentration of 100 µM of KI promoted better fruit quality through antioxidant capacity and a decline in the maturation index. Therefore, KI can be an alternative for attenuating water deficits in tomatoes, inducing positive responses during the water deficit period while at the same time improving fruit quality.

This study aimed to evaluate the influence of potential functional ingredients-green banana starch, green banana pulp flour or whole green banana flour-on the composition, physicochemical and sensory properties of plant-based fermented beverages made of baru nuts. The incorporation of green banana-derived ingredients, especially the whole flour, increased protein (2.44-2.81 g/100 g), fibre (1.53-2.32 g/100 g), resistant starch (0.15-0.33 g/100 g) and ash (0.36-0.61 g/100 g) content in fermented beverages. The total phenolic content and antioxidant capacity were higher in beverages added with pulp or whole flour. The main polyphenols identified were catechin (0.75-4.97 mg/100 g), gallic acid (0.29-0.52 mg/100 g) and ferulic acid (0.17-0.64 mg/100 g). All beverages showed to be rich in unsaturated fatty acids (68%) as omega-3, omega-6, and conjugated linoleic acid. The incorporation of green banana in beverages enhanced the probiotic bacteria growth indicating the potential prebiotic effect of the unripe fruit. The sensory acceptance of fermented beverages was also improved after adding green banana. Overall, whole green banana flour stood out as the main factor that increased the nutritional value of baru nut fermented beverage. Green banana was used for the first time as a potential prebiotic ingredient in a plant-based beverage. This novel product represents a potential symbiotic non-dairy alternative that could offer health benefits to consumers. This study aimed to evaluate the properties of cellulose nanofibers (CNFs) with different hemicellulose contents and cellulose II polymorphs. A link was found between these polysaccharides and the properties of CNFs. A decrease in crystallinity (from 69 to 63%) and changes in the crystalline structure of cellulose subjected to an alkaline environment were observed, promoting the partial conversion of cellulose I to cellulose II (from 2 to 42%) and preventing CNFs production at NaOH concentrations higher than 5%. Most treatments showed pseudoplastic fluid behavior, except for the 10% NaOH treatment over 2 h, which showed Newtonian fluid behavior. The quality index of the reference CNFs (TEMPO-oxidized) was the highest (80 ± 3), followed by that of the 5% NaOH-treated (68 ± 3 and 22% energy savings compared to the untreated sample), and the untreated (63 ± 3) samples; and the 10% NaOH treatments had quality indices of 51 ± 3 and 32 ± 1, respectively.

In the present study, the nutrient profile model is used to develop functionally potential food bars prepared with pumpkin pulp flour (PuPF) and pequi peel flour (PePF). The control (0% PuPF, 0% PePF), and treatments T1 (0% PuPF, 2.5% PePF), T2 (5% PuPF, 2.5% PePF), T3 (10% PuPF, 2.5% PePF), and T4 (17.5% PuPF, 2.5% PePF) were defined using the nutrient profile model and subsequently evaluated for antioxidant activity, sensory acceptance, and nutrient profile. All treatments were nutritionally balanced but T3 and T4 were the best, containing, respectively, 35.11 and 59.85 µg g-1 of carotenoids, 230.60 and 261.14 mg gallic acid equivalents 100 g-1 of phenolics, and high antioxidant activity, as determined using ABTS (28.60 and 34.86 µM Trolox g-1), FRAP (67.13 and 80.09 µM ferrous sulfate g-1), and ß-carotene/linoleic acid system (79.08 and 84.83% protection) methods. The nutrient profile model minimized time and resource expenditures throughout the development process.

The purpose of this paper was to develop and characterize pumpkin pulp flour (Cucurbita moschata) and pequi peel flour (Caryocar brasiliense Camb.) in order to evaluate their nutritional and functional potential for the development of healthier products. The flours were developed and characterized by proximal composition, sodium, total sugars, phenolic compounds and carotenoids content, and in vitro antioxidant capacity by ABTS, FRAP and ß-carotene/linoleic acid system methods. The means and the standard deviations were calculated for all data. Pearson correlation analysis between phenolics and antioxidant activities results was carried out, using SPSS Statistics 17.0 software. The pumpkin pulp flour presented high levels of dietary fiber (21.95 g/100 g), total sugars (51.88 g/100 g), protein (11.08 g/100 g) and carotenoids (249.04 µg/g), low levels of sodium (27.28 mg/100 g), and high antioxidant capacity by the ß-carotene/linoleic acid system (73.00% protection). The pequi peel flour presented high levels of dietary fiber (42.09 g/100 g) and phenolic compounds (20,893.73 mg GAE/100 g), low levels of sodium (22.84 mg/100 g), and high antioxidant capacity by ABTS (2105.18 µM trolox/g), FRAP (6292.11 µM ferrous sulfate/g) and ß-carotene/linoleic acid system (92.94% protection) methods. Both flours can be used for the development of healthy foods.

Postharvest technologies, such as the application of coatings, could contribute to the extension of the shelf life of avocado fruit. The objective of the present research was to evaluate the effects of coating, based on agro-industrial co-products (citrus pectin, broken rice grain flour, and cellulosic rice skin nanofiber), sorbitol and potassium sorbate, on the quality of avocado (cultivar 'Quintal') stored under refrigeration. The coating contributed to a longer conservation of the green color of avocado, both peel and pulp, and significantly reducing the respiration rate of the coated fruit, which was 35% lower than that of the control fruit. The coated fruit was firmer and, possibly, the addition of cellulosic nanofiber contributed to the maintenance of this firmness. Regarding the bioactive compounds, there was no difference (p > 0.05) among the coated and control fruit. During refrigerated storage, total phenolic compounds content increased (p < 0.05) from 311.44 ± 25.89 to 800.25 ± 160.74 mg kg-1 gallic acid equivalents (GAE) in the control fruit, and from 242.86 ± 52.33 to 584.75 ± 125.57 mg kg-1 GAE in the coated fruit. It was concluded that the shelf life of avocado (cultivar 'Quintal') could be extended and ripening delayed by a minimum of 8 days, by applying a coating formulated with rice flour, pectin, sorbitol, potassium sorbate, and cellulosic rice skin nanofiber.

Abstract Maroleiro (Annona crassiflora Mart), belonging to the family of Annonaceae is a typical specie of the Cerrado and has occurred in most states. For fruit characteristics "sui generis", with significant nutritional value. This study aimed to characterize the marolo (Anonna crasiflora Mart) during fruit development, through the evaluation of its proximal and mineral composition. The fruits 2012/2013 season, were picked to 12Km from the city of Itumirim, southern Minas Gerais, in intervals of 20 days from anthesis to maturity, and the first fruits were harvested 60 days after anthesis. The flowering marolo began in late September 2012, with fruiting initially observed at the end of October, with peak production at the end of February and beginning of March 2013 The fruits were harvested in the morning and carried to the laboratory, where followed up the moisture, ether extract, protein, ash, fiber and high sugar fraction beyond mineral quantification of them. During development reductions in moisture content and protein increments of ether extract, crude fiber and high sugar fraction and an oscillation in the mineral along the developmental stages was observed.

This study evaluated the stability of strawberry pulp subjected to three factors, pasteurisation (pasteurised and unpasteurised), freezing method (static air and forced air) and storage time (0, 2, 4 and 6 months). Pasteurisation favoured vitamin C retention during storage but enhanced the total loss of phenolics without affecting anthocyanin levels. Freezing by forced air was more effective in retaining phenolics during the first 4 months of storage, although the freezing method did not affect the anthocyanin levels. Processing and storage reduced the levels of individual phenolics. Freezing by forced air was more effective than static air in retaining antioxidant activity of the pulp. Polyphenol oxidase and peroxidase enzyme levels were relatively stable and independent of pasteurisation, freezing and storage time. Even after 6 months of frozen storage, strawberry pulp is a significant source of nutrients and bioactive compounds and retains high antioxidant capacity independent of pasteurisation and freezing method.

BACKGROUND: The objective of the present work was to develop strategies for increasing the shelf-life of red raspberries (Rubus idaeus L.), by preventing microorganism growth. RESULTS: Fruits coated with alginate plus lemon essential oil (0.2%) or orange essential oil (0.1%) after 15 days of storage had less red skin than the remaining samples. The less red color verified in these samples was also coincident with the lower concentration of anthocyanins at the end of the experiment as well as the lower capacity for scavenging ABTS free radicals or quenching singlet oxygen. Cyanidin and pelargonidin glucosides were found in raspberries fruits. The edible coatings supplemented with the essential oil of orange either at 0.1% or 0.2% were very efficient for controlling yeast and mold growth after 15 days of storage. To control the development of aerobic mesophilic bacteria the use of essential oil of lemon 0.2% and essential oil of orange 0.1% were the most efficient. CONCLUSION: The application of the film improved post-harvest quality of raspberry, since the addition of essential oils of citrus films promoted to the inhibitory effect of fungi and bacteria growth after 15 days of storage, without changing quality parameters. © 2016 Society of Chemical Industry.

This study aimed to identify using the infrared (IR) thermography data the injuries of guavas during cooling and storage at different temperatures. Three experiments were performed at three different temperatures with one storage time. The first experiment was done with static air in a refrigerator at 5 °C, the second experiment was conducted in a tunnel with forced air at 10 °C, and the third experiment was conducted in an air conditioned environment at 20 °C. Mechanical injuries caused by the impact of a pendulum were induced on guava surfaces. The surface temperatures were obtained for bruised and sound tissues during cooling and storage using an Infrared (IR) camera. With thermography, it was possible to distinguish the injured tissues of the fruits that were unaffected at temperatures of 5, 10 and 20 °C in first hours of cooling. The results suggest that the storage of guava fruits at 5 °C in static air resulted in cold-induced injury, while storage at 20 °C resulted in an altered activity pattern. The stored guava fruits were analyzed for mass loss, firmness, color, total sugars, total pectin and solubility. The parameters values were lower during the forced-air cooling and storage at 5 and 10 °C. When stored at 20 °C, there was fruit maturation that caused tissue softening, which makes the fruits more susceptible to deterioration and thermographic readings showed opposite trends.

This work aimed to obtain a simplified extraction protocol for simultaneous achievement of total anthocyanin and total phenolic in açaí pulp using a 3-step optimization approach. First, a Plackett-Burman 20 was applied in 16 independent variables selected in literature. Secondly, seven factors pre-selected in the first screening were reassessed using a Plackett-Burman 12. Then, four selected factors; solid/solvent ratio (g:mL), acetone concentration (%), time of extraction in acidified ethanolic solution (min) and ethanol concentration (%) were optimized using a central composite design with response surface methodology. In addition, the optimized protocol were compared with two standardized extraction procedures assessing açaí and grape pulps. The optimized method is effective for the simultaneous extraction of total phenolics and total anthocyanins, allowing representative measurements of free radical-scavenging capacity (DPPH) and trolox equivalent capacity (TEAC) of grape and açaí pulps, with savings of time and reagents, moreover, avoiding the use of methanol.

This work evaluates fresh-cut carrots (FCC) coated with montmorillonite (MMT) subjected to passive modified atmosphere packaging. Carrots were sanitized, cooled, peeled and sliced. Half of the FCC were coated with MMT nanoparticle film and the other half were not. All FCCs were packed in a polypropylene rigid tray, covered with a polypropylene rigid lid or sealed with polyethylene + propylene film, in four treatments (RL, rigid lid; RLC, rigid lid + coating; ST, sealed tray; STC, sealed tray + coating). FCCs were stored at 4 °C and were analyzed weekly for 4 weeks (total antioxidant activity by 2,2-diphenyl-1-picryl hydrazyl method and the ß-carotene/linoleic acid, phenolic compounds, organic acids and volatile compounds). The use of coating film with starch nanoparticles and a modified atmosphere leads to the preservation of the total antioxidant activity, the volatile and organic acids of FCC.

To determine the ideal ripening stage for consumption of the mango cultivars, "Ataulfo," "Haden," and "Tommy Atkins"; fruits at 3 flesh firmness levels (ripeness stages) were evaluated by a trained panel using descriptive analysis after instrumental measurements were made. After harvest, all fruits were ripened to allow softening and quality and sensory attribute changes. Ripening changes during softening of Ataulfo mangos were expressed by a characteristic increase in the perception of "tropical fruit" and "peach" aromas, an increase in "juiciness," "sweetness," and "tropical fruit" flavor, while "fibrousness," "chewiness," and "sourness" decreased. Similar desirable sensory changes were also detected during softening of Haden mangos; an increase in tropical fruit and peach aromas, sweetness and tropical fruit flavor, and a decrease in chewiness, sourness, and bitterness. Softening of Tommy Atkins mangos was followed by reduced chewiness and sourness and increased peach aroma. Softening of all cultivars was followed by decreased sourness and titratable acidity (TA) and increased soluble solids concentration (SSC) and SSC:TA ratio. The results indicate that mango ripening leads to increased expression of sensory attributes such as tropical fruit and peach aromas, tropical flavor, and sweetness that have been related to improved eating quality and these final changes in sensory quality attributes are specific for each cultivar. For example, Ataulfo and Haden mangos had greater improvement in quality and sensory attributes related to fruit eating quality during ripening-softening than Tommy Atkins. In our consumer test, these quality-sensory attributes expressed during ripening that were perceived by the trained panel were also validated, supporting the need for a controlled ripening protocol in mangos.

The chemical composition and functional effects of mangaba fruit pulp were evaluated through a multi-endpoint assay in mice, consisting of the bone marrow micronucleus test, gut micronucleus test, and the apoptosis, oxidative stress, and comet assays. Mangaba fruit pulp was administered in three doses, 10, 20, and 40ml/kg body weight (b.w.), by gavage to male Swiss mice against doxorubicin and dimethylhydrazine-induced mutagenicity. The phenolic profile of the mangaba fruit pulp was evaluated by HPLC, and seven compounds were identified: gallic acid, catechin, chlorogenic acid, vanillic acid, o-coumaric acid, rosmarinic acid, and rutin. The in vivo tests revealed that mangaba fruit pulp showed no toxic/mutagenic effects in any of the assays performed, and also showed protective effects at all endpoints. At the three administered extract concentrations, the main results about the protective effects were as follows: bone marrow micronucleus test (42.33, 58.14, and 77.21%), micronucleus gut test (34.21, 63.15, and 78.07%), and apoptosis index (57.5, 43.68, and 65.52%). This study provides scientific evidence for the antimutagenic potential of mangaba fruit pulp and emphasizes its potential as a functional food with widespread applicability in the food industry.

O trabalho foi realizado com o objetivo de avaliar a qualidade de pequis inteiros e fatiados submetidos ao congelamento por ar forçado durante 12 meses de armazenamento. Os frutos foram selecionados, lavados, sanitizados, descascados, branqueados, resfriados, fatiados e mantidos inteiros, acondicionados em saco de polietileno de baixa densidade, congelados em túnel de congelamento com ar forçado por 6 horas (-18°C) e armazenados em congelador doméstico a -18°C (±2°C), por 12 meses. A cada três meses, foram realizadas as seguintes análises: pH, acidez titulável, sólidos solúveis, firmeza, valores L*, a*, b*, h° e C*, carotenoides totais, β-caroteno, vitamina C, índice de peróxidos, coliformes a 35°C e a 45°C e pesquisa de Salmonella sp. O congelamento do pequi inteiro é mais efetivo em preservar os teores de sólidos solúveis e vitamina C e os valores L* e b* quando comparado com o do pequi fatiado. O tempo de armazenamento de 12 meses determina redução nos valores a*, b*, C* e de firmeza e nos teores de sólidos solúveis, carotenoides totais, β-caroteno e vitamina C em pequi congelado, independentemente do corte usado. O pequi congelado não sofre o processo de rancificação oxidativa nem alterações no pH, nos teores de acidez titulável e na tonalidade de cor (h°). Pequis congelados, na forma inteira e fatiada, são considerados seguros microbiologicamente durante 12 meses de armazenamento, não oferecendo riscos à saúde dos consumidores, desde que obedecidas à cadeia de frio e às boas práticas de fabricação.


This research was carried out aiming to evaluate the quality of pequi fruit (whole and sliced) after forced-air freezing storage during 12 months. The fruits were submitted to treatments as follows: selecting, washing, sanitizing, peeling, blanching, cooling, and slicing or not. After that, the fruits were storage using low density polyethylene bags and submitted to forced-air freezing (-18°C) for 6 hours and stored in freezer at the same temperature (±2°C) for 12 months. Each three months were measured: pH, titratable acidity, soluble solids, firmness, color (L*, a*, b*, h° and C* values), total carotenoids, β-carotene, vitamin C, peroxide value, coliforms at 35°C and 45°C and Salmonella sp. Frozen whole pequi fruits is more effective in preserving the soluble solids and vitamin C contents and L* and b* values as compared to the sliced pequi fruits. The freezing-storage time reduce a*, b* and C* values, firmness values, soluble solids, total carotenoids, β-carotene and vitamin C contents of the pequi fruit, whole or sliced. Pequi fruit frozen is not affected by rancidity oxidative process, and also does not alter the pH, titratable acidity, and color (h°). Pequi fruit frozen and stored during 12 months are considered microbiologically safe, not offering health risks to consumers, since that the good practices of manufacture are realized and the freezing and stored process are performed correctly.

This study evaluated the physical and chemical characteristics (moisture, pH, acidity titratable, soluble solidsand color) and lycopene retention in dried tomatoes submitted to different pretreatments. The tomatoes were cut longitudinally and submitted to the osmotic dehydration for 120 minutes. Six osmotic solutions were used with the following concentrations: NaCl 5, NaCl 10, NaCl 5 + sucrose 10, NaCl 10 + sucrose5, sucrose 5, sucrose 10 (w/v), and the osmotic dehydration was conducted with direct application of the solutes (NaCl or mixture of NaCl + sucrose). Soon afterwards the tomatoes were submitted to drying at65°C for 12 hours. The osmo-convective drying promoted an increase in the level of soluble solids, titratable acidity and reduction of the pH, except for the sucrose solutions, that did not alter the pH of the tomatoes.The ternary solution (NaCl + sucrose), binary (NaCl 10) and the direct application of the solutes promoted significant moisture reduction in relation to the control. The osmotic solutions only containing sucrose or NaCl 5 presented lycopene retention significantly superior to the other treatments. The use of the osmotic dehydration as pretreatment for drying of the tomato can contribute to accelerate the drying process and to preserve the tomato lycopene level.

Conduziu-se este trabalho, com o objetivo de avaliar a influência dos sanificantes hipoclorito de sódio (NaClO) e de peróxido de hidrogênio (H2O2) em diferentes concentrações sobre a vida de prateleira de pequi (Caryocar brasilense Cambess.) submetido a dois tipos de processamento mínimo: "caroço fatiado" e "caroço inteiro", e armazenados a 6 ± 1° C e 90 a 95 por cento UR, durante 15 dias. O experimento foi conduzido em delineamento inteiramente casualizado, disposto em um fatorial 2 x 6 x 5, ou seja, 2 tipos de processamento (caroços "fatiados" e "inteiros"), 6 tempos (0h, 3, 6, 9, 12, 15 dias) e 5 tratamentos (controle, NaClO 50 ppm, NaClO 100 ppm, H2O2 4 por cento e H2O2 6 por cento), com 3 repetições. A cada três dias foram realizadas as análises: vitamina C, polifenoloxidase, peroxidase e cor (CIE L*a*b*). O pequi minimamente processado apresentou decréscimo nos teores de vitamina C ao longo do armazenamento. O caroço fatiado mostrou-se com maior atividade da enzima polifenoloxidase em relação ao inteiro. A interação significativa entre o corte, o sanificante e o tempo ocorreu para a variável peroxidase, tendo sido observado para o caroço fatiado tratado com os sanificantes H2O2 4 e 6 por cento maior atividade dessa enzima. Observou-se a redução do valor de L*, durante o armazenamento do pequi minimamente processado, independente do sanificante utilizado, ocasionado pelo escurecimento do produto.


The objective of the present work was to evaluate the influence of the sanitizers sodium hypochlorite (NaClO) 50 and 100 ppm and 4 percent and 6 percent, hydrogen peroxide (H2O2) on the shelf life of fresh cut peki fruit (Caryocar brasilense Cambess.) submitted to two sorts of processing: "sliced stone" and whole stone", stored at 6 ± 1° C and 90 to 95 percent of RH for 15 days. The analyses were performed every three days. The experiment was conducted in a completely randomized design arranged by a 2 x 6 x 5 factorial, i.e. 2 sorts of processing ("sliced and whole stones"), 6 times (0h, 3, 6, 9, 12, 15 days) and 5 treatments (control, 50 ppm NaClO, 100 ppm NaClO, 4 percent H2O2 and 6 percent H2O2 ), with 3 replicates. Every three days, the following analyses were conducted: vitamin C, polyphenoloxidase, peroxidase and color (CIE L*a*b*). The fresh cut peki fruit showed decreases in the contents of vitamin C during storage. The sliced stones showed itself with an increased activity of the enzyme polyphenoloxidase relative the whole one. The significant interaction cutting sanitizer and time was found for peroxidase, the sliced stones and the sanitizers 4 percent and 6 percent H2O2 having promoted the highest activity of that enzyme. Reduced value L* during the storage of fresh cut peki fruit was observed, independent of the used sanitizer, suggesting browning of the product.

A vida-de-prateleira pode ser definida como um período de armazenamento em que produtos com alta qualidade inicial permanecem adequados para consumo. Para sua determinação, várias amostras devem ser submetidas a uma série de testes e examinadas durante um período de tempo até o limite de aceitação. O objetivo deste trabalho foi avaliar a qualidade química e sensorial de mamões minimamente processados, submetidos aos tratamentos com e sem sementes, mantidos sob refrigeração.(...)Os resultados mostraram que os sólidos solúveis totais, pH e acidez total titulável não apresentaram diferenças estatisticamente significativas no teste de F (p<0,05) durante os 15 dias de armazenamento. A avaliação sensorial indicou que houve desidratação parcial das sementes observados no tratamento com semente e do endocarpo para o tratamento sem semente no 6 dia de armazenamento. (...) Pelas analises realizadas, a presença de sementes em Carica papaya L. cultivar Havaí, minimamente processado,melhora as características sensoriais dos frutos contribuindo para maior tempo de vida de prateleira.
