BACKGROUND: Worldwide, vegan and vegetarian lifestyles, as well as food allergies and intolerance (e.g. lactose intolerance and milk protein allergy) demand the development of alternatives to dairy-based probiotic foods. In the present study, probiotic Lacticaseibacillus casei CECT 9104 was added to alginate-based edible coatings enriched with inulin and oligofructose and applied to fresh-cut apple. Microbiological, physicochemical and sensory quality parameters of the apple cubes were monitored during 8 days of refrigerated storage. Lacticaseibacillus casei was tested for its antagonistic effect against inoculated Listeria innocua and Escherichia coli O157:H7. The viability of the probiotic strain during refrigerated storage and after simulated gastrointestinal digestion (GID) was evaluated. RESULTS: After 8 days of storage, 9.52-9.64 log colony-forming units (CFU) g-1 of L. casei were detected in apple samples. The functional apple cubes retained 8.31-8.43 log CFU g-1 of the probiotic after GID, without a significant effect of prebiotic addition. The microbiological quality and nutritional properties were maintained by the use of active coatings, whereas the sensory quality decreased after 8 days of storage. A bactericidal effect was exerted by the probiotic strain loaded in the coating against L. innocua artificially inoculated on apple cubes. Escherichia coli O157:H7 counts were reduced by 2.5 log after 8 days. CONCLUSION: This study has demonstrated the suitability of apple cubes as an alternative matrix to milk for carrying probiotic L. casei CECT 9104 and prebiotics, offering a promising alternative for the development of plant-based functional foods. © 2024 Society of Chemical Industry.

The objective of this study was to develop a dried apple snack enriched with probiotics, evaluate its viability using Refractance Window (RWTM) drying, and compare it with conventional hot air drying (CD) and freeze-drying (FD). Apple slices were impregnated with Lacticaseibacillus rhamnosus and dried at 45 °C using RWTM and CD and FD. Total polyphenol content (TPC), color (∆E*), texture, and viable cell count were measured, and samples were stored for 28 days at 4 °C. Vacuum impregnation allowed for a probiotic inoculation of 8.53 log CFU/gdb. Retention values of 6.30, 6.67, and 7.20 log CFU/gdb were observed for CD, RWTM, and FD, respectively; the population in CD, RWTM remained while FD showed a decrease of one order of magnitude during storage. Comparing RWTM with FD, ∆E* was not significantly different (p < 0.05) and RWTM presented lower hardness values and higher crispness than FD, but the RWTM-dried apple slices had the highest TPC retention (41.3%). Microstructural analysis showed that RWTM produced a smoother surface, facilitating uniform moisture diffusion and lower mass transfer resistance. The effective moisture diffusion coefficient was higher in RWTM than in CD, resulting in shorter drying times. As a consequence, RWTM produced dried apple snacks enriched with probiotics, with color and TPC retention comparable to FD.

Plant extracts are used as an alternative to a wide range of foods against different types of fungal pathogens. In the present study, the extracts of avocado leaves (Persea americana) and majagua flowers (Talipariti elatum) were tested according to their antifungal activity against different fungi. The most promising extracts were those of majagua flowers that were applied lyophilized and in aqueous extract, being very effective against Alternaria alternata and reaching a 50 % in vitro reduction. Antifungal properties were also evaluated during infection of apples by A. alternata. A decrease in infection progression was confirmed with up to a 30 % reduction in disease incidence and a 20 % reduction in disease severity. Majagua extracts were also tested combined with edible pectin coatings, greatly increasing their effectiveness up 60 % reduction. Thus, extracts of majagua could provide a feasible alternative to control fungal pathogens during postharvest.

In present study 22 local apple genotypes were characterized by phenological, morphological, biochemical and sensory properties. Harvest date was the main phenological data. Morphological measurements included fruit weight, fruit shape, fruit ground color, fruit over color, fruit over color coverage and fruit firmness, respectively. Sensory measurements were as juiciness and aroma and biochemical characteristics included organic acids, SSC (Soluble Solid Content), vitamin C, total phenolic content and antioxidant capacity. Genotypes exhibited variable harvest dates ranging from 11 July to 13 August and cv. Summered harvested 30 July 2017. The majority of genotypes were harvested before cv. Summered. Fruit weight were also quite variable among genotypes which found to be between 89 g and 132 g, and most of the genotypes had bigger fruits than cv. Summered. Pink, red, yellow and green fruit skin color was evident and main fruit shape were determined as round, conic and oblate among genotypes. ART08-9, ART08-4, ART08-21 and ART08-22 had distinct bigger fruits and ART08-1, ART08-2, ART08-5, ART08-12 and ART08-17 had higher total phenolic content and antioxidant capacity. The results of the study showed significant differences for most of the phenological, morphological, sensory and biochemical characteristics. Thus, the phonological, morphological, sensory and biochemical characteristics of summer apple genotypes were distinguishable and these results suggest that phonological, morphological, sensory and biochemical differences of the summer apple genotypes can be attributed to differences in genetic background of genotypes which placed different groups by PCoA analysis.

The application of coatings with essential oils for food preservation is an alternative way to keep minimally processed apple slices fresh, nutritious, safe, sensory palatable, and accessible for consumers. In the present study, the effect of three bioactive coatings on quality variables of minimally processed Golden Delicious apple slices for 25-days at 4 °C was evaluated. The coatings were CT1-chitosan-based, CT2-guar gum-based, and CT3-composite guar gum-starch-based; all three coatings contained cinnamon essential oil and were compared with UCT0-uncoated apple slices. The quality variables evaluated were weight-loss, firmness, browning index, total phenolic content, total soluble solids, titratable acidity, respiration rate, microbial analysis, and sensory evaluation. All coatings improved the preservation and sensorial quality variables of Golden Delicious apples; however, although the CT1-chitosan-based coating was capable of extending the shelf-life of minimally processed apple, it demonstrated less sensorially favorable scores for flavor, odor, and overall acceptance attributes.

The increased demand for pesticide-free foods has also increased the search for healthier and environmentally friendly alternatives in agriculture. Essential oils are known to possess natural antifungal properties, becoming a reliable alternative for commercial fungicides, especially for postharvest decay control. However, essential oils are volatile and photodegradable, which reduces their long-term activities. This work presents the development of a lemongrass essential oil-containing poly(lactic acid) nanocapsules. They have shown in vitro antifungal activity against Colletotrichum acutatum and Colletotrichum gloeosporioides with a MIC dosage of 0.1% (v/v) for both phytopathogens. In the in vivo assay with postharvest apples, the ones treated with encapsulated essential oil showed bitter rot lesions three times smaller than the ones treated with non-encapsulated essential oil, or in comparison to the apples in positive control. The methodology led to stable nanocapsules with spherical morphology, a mean diameter of 96.4 nm, and with an encapsulation efficiency of 99%.

Se desarrolló un snack de manzana con el fin de introducir el consumo de alimentos derivados de frutas para disminuir la obesidad en escolares de Santiago de Chile. Se deshidrataron rodelas de manzanas, con la piel incluida, de variedad Fuji a 60ºC por 4 horas obteniendo un producto con 4,6 g/100 g de humedad y actividad de agua (Aw) de 0,56 . El snack de manzanas presentó 24,8 ± 0,3 g/100 g b.s. de fibra dietética y 550,16 ± 5,89 mgGAE/100 g b.s. de polifenoles lo que lo convierte en un alimento saludable, presenta además alta capacidad antioxidante medida por FRAP, con 0,59 mmolFe/100g . El análisis sensorial realizado en escolares de 8 y 12 años indica que el producto presenta alta aceptabilidad, es un producto crocante, de textura crujiente, con sabor agridulce, por lo que se constituye en una alternativa para colaciones escolares.


An apple snack has been developed with the purpose of introducing foods derived from fruit to reduce obesity in school children of Santiago, Chile. Apple slices of the ‘Fuji’ variety were dehydrated, with skin included, at 60°C for 4 h obtaining a product with 4.6 g/100 g of humidity and water activity (Aw) of 0.56. The apple snack presented 24.8 ± 0.3 g/100 g b.s. of dietary fiber and 550.16 ± 5.89 mgGAE/100 g b.s of polyphenols which converts into a healthy food, it also presents high antioxidant capacity measured by FRAP, with 0.59 mmolFe/100g. The sensory analysis done in school children between the ages of 8 and 12 years old indicates that the product presents high acceptability, is a crispy product, of a crunchy texture, with bittersweet flavor, so it is an alternative for school snacks.

We hypothesize that the Ferric Reducing Antioxidant Power (FRAP) assay that follows the reaction of Fe3+-TPTZ at 593 nm underestimates the antioxidant capacity of fruits, since the standardized time of the reaction (4 min) is not enough to titrate all the reducing compounds available. We measured FRAP, total phenolics and anthocyanins content in a variety of Chilean berry fruits (blueberries, blackberries, raspberries and strawberries) and apples (cv. Fuji, Granny Smith, Pink Lady, Red Delicious and Royal Gala). Taking into account the dependence of FRAP on the time course of the reaction, we propose to measure FRAP indexes after 1 min (FRAP-1), 30 min (FRAP-30) and 120 min (FRAP-120) of incubation. Most fruit extracts showed significant correlations between the antioxidant capacity and the incubation time, although in some cases the FRAP indexes did not correlate with the total phenolics and/or anthocyanins content. In fact, in apples and berries the correlation between anthocyanins content and FRAP indexes decreased with the incubation time. It is concluded that the fruit extracts analyzed require an incubation period higher than the established in the original experimental protocol to reach the equilibrium, due to the presence of a complex mixture of antioxidant compounds. In addition, a kinetic profile should be realized in each sample studied to establish the most suitable incubation period to titrate all the reactive antioxidant species.


Se plantea que el ensayo de la capacidad antioxidante de frutas, medido según el poder reductor de hierro (FRAP), que sigue la reacción de Fe3+-TPTZ a 593 nm, subestima la capacidad antioxidante, debido a que el tiempo de reacción (4 min) no sería suficiente para que reaccionen todos los compuestos reductores disponibles en las muestras. Se analizó la capacidad antioxidante FRAP, el contenido de fenoles y de antocianinas en diversos berries (arándano, mora, frambuesa y frutilla) y manzanas (cv. Fuji, Granny Smith, Pink Lady, Red Delicious y Royal Gala). Tomando en cuenta la dependencia del tiempo de incubación en el valor FRAP, se propone medir los índices FRAP después de 1 min (FRAP-1), 30 min (FRAP-30) y 120 min (FRAP-120). Diversos extractos de las frutas analizadas mostraron una correlación significativa entre la capacidad antioxidante y el tiempo de incubación; sin embargo, en algunos casos los índices FRAP no se correlacionaron con el contenido de fenoles totales y/o antocianinas. En efecto, en manzanas y berries la correlación entre el contenido de antocianinas e índices FRAP disminuyó con el tiempo de incubación. Se concluye que los extractos analizados requieren un tiempo de incubación mayor al que establece el protocolo analítico original para alcanzar el equilibrio, debido a la presencia de una compleja mezcla de compuestos antioxidantes. A study on the occurrence of citrinin and citrinin production ability of Penicillium spp. isolated from decaying apples collected from households in Croatia was carried out. Among 100 samples of apples, 37 strains of Penicillium spp. were found, including P. expansum, P. roqueforti, P. implicatum and P. purpurogenum. Citrinin production in liquid yeast medium by 11 strains of P. expansum varied in a range of 0.07 to 9.00 mg.kg-1. Citrinin was isolated from 19% of apple samples in range of 0.05 to 0.24 mg.kg-1. Antimicrobial activity of isolated citrinin, evaluated through tests on Bacillus subtilis, presented inhibitory zones varying from 5 mm to 1 cm. Minimal inhibitory concentrations (MIC) were 0.0072 µg.mL-1 for bacteriostatic effect, and 0.0144 µg.mL-1 for bactericidal effect.


Nesse estudo, foi examinada a ocorrência de citrinina e a capacidade de produção do citrinina por cepas de Penicillum spp. isoladas de maçãs deterioradas, recolhidas em pomares domésticos no território da Croácia. De 100 amostras de maçãs examinadas, foram isoladas 37 cepas de Penicillium spp. incluindo P. expansum, P. roqueforti, P. impicatum e P. purpurogenum. A capacidade de produção de citrinina por 11 cepas de P. expansun foi determinada em meio líquido obtendo-se concentrações variando entre 0,07 e 9,00 mg.kg-¹. A citrinina foi detectada em 19% das amostras de maçãs, com concentração variando entre 0,05 e 0,24 mg.kg-¹. O efeito antimicrobiano da citrinina foi determinado em testes com Bacillus subtilis, com zona de inibição variando entre 5 mm e 1 cm. A concentração mínima inibitória (CMI) foi 0,0072 µg.mL-1 para o efeito bacteriostático e 0,0144 µg.mL-1 para o efeito bactericida.

The experiment was carried out with the objective to evaluate the effect of variation of the temperature and relative humidity (RH) during storage period and the rate of establishment of controlled atmosphere conditions on the quality of ‘Fuji’ apples. After cooling down during 11 days (12°C to storage temperature), the fruits were stored in controlled atmosphere (CA) with 1kPa O2 and 0,2kPa CO2. The evaluated treatments were combinations of initial temperatures (0.5°C and 2.5°C), initial RH (91 and 96%) during the first 40 storage days and pull down of oxygen in the CA store (first or fourth day after CA chamber closing). Afterward the fruits were maintened at 0.5°C with 96% RH. After eight months storage treatments did not influence flesh firmness, titratable acidity, total soluble solids, rot and breakdown incidence. During shelf-life, TSS were lower when CA conditions was established on the first day. Low RH during first 40 storage days did not reduce rot incidence. On the other hand, higher initial temperature (2,5°C) was efficient on rot control.


O experimento foi desenvolvido com o objetivo de avaliar o efeito da variação da temperatura e umidade relativa (UR) durante o armazenamento e, do momento de instalação das condições de atmosfera controlada sobre a qualidade de maçãs cv. Fuji. Após o resfriamento lento (11 dias - de 12°C até a temperatura de armazenamento), os frutos foram armazenados em atmosfera controlada (AC) com de 1kPa O2 e 0,2kPa CO2. Os tratamentos avaliados foram combinações de temperaturas (0,5 e 2,5°C), UR (91 e 96%) nos primeiros 40 dias de armazenamento e instalação da atmosfera no 1º ou 4º dia após o fechamento das câmaras de AC. No restante do período, a temperatura de armazenamento, foi de 0,5°C e UR de 96%. Após oito meses de armazenamento não houve diferenças significativas nos parâmetros firmeza de polpa, acidez titulável, sólidos solúveis totais, podridão e degenerescência entre os tratamentos. No teste de prateleira (sete dias em temperatura ambiente), teor de sólidos solúveis totais foi menor para o tratamento com instalação de atmosfera no 1º dia. A redução da UR (91%) nos primeiros 40 dias de armazenamento não reduziu a ocorrência de podridões. Por outro lado, a alta temperatura (2,5°C) no início do armazenamento apresentou eficiência no controle da podridão.

The experimental design was the completely randomized with two replication. Fruits were stored in cold storage at 0 and 1ºC and in the following CA conditions: at temperature of 1ºC with 1,5kPaO2/4,0KkPaCO2, 1,5kPaO2/3,0kPaCO2, 1,0kPaO2/ 1,0kPaCO2, 1,0kPaO2/2,0kPaCO2, 1,0kPaO2/3,0kPaCO2 and at temperature of 0ºC with 1,0kPaO2/3,0kPaCO2. The relative humidity was maintained around 96%. The evaluation was done after eight months of storage, at the opening of the chambers and after seven days shelf life (31ºC). At chambers openning, there was no significant difference in the flesh firmness, titratable acidity and total soluble solids (TSS) among the CA conditions. However, after seven days in shelf life, the treatment with 1,0kPaO2/3,0kPaCO2 in the temperature of 0ºC maintained higher flesh firmness, titratable acidity and TSS, and did not exhibiting flesh breakdown. The CA storage, with 4,0kPa CO2 and cold storage caused flesh breakdown. Already the cork breakdown, was induced by 3,0 and 4,0kPa of CO2 associated with 1,5kPa of O2. The occurrence of rot was significantly higher in cold storage than in CA and more frequent al low CO2 (1kPa). The incidence of mealiness and scald could not be associated with any storage condition. Cold storage fruits presented unsatisfactory quality for marketing and consumption after 8 months of storage.


O experimento foi desenvolvido com o objetivo de avaliar o efeito da temperatura e de diferentes regimes de armazenamento em atmosfera controlada (AC) sobre as qualidades físico-químicas e ocorrência de distúrbios fisiológicos da maçã cv. Braeburn. O delineamento experimental foi o inteiramente casualizado, com duas repetições e a unidade experimental composta por 40 frutos. Os frutos foram armazenados nas seguintes condições de AC: na temperatura de 1ºC com 1,5kPaO2/ 4,0kPaCO2, 1,5kPaO2/3,0kPaCO2, 1,0kPaO2/1,0kPaCO2, 1,0kPaO2/2,0kPaCO2, 1,0kPaO2/3,0kPaCO2 e em armazenamento refrigerado (AR) e na temperatura de 0ºC com 1,0kPaO2/3,0kPaCO2 e em AR. A umidade relativa foi mantida a 96%. As análises laboratoriais foram realizadas aos oito meses de armazenamento, na abertura das câmaras e após sete dias de exposição à temperatura ambiente (±31ºC). Logo após a retirada dos frutos da câmara, não se observaram diferenças significativas na firmeza de polpa, acidez titulável e teor de sólidos solúveis totais (SST) entre as condições de AC. Contudo, após sete dias de exposição à temperatura ambiente, o tratamento com 1,0kPaO2/3,0kPaCO2, na temperatura de 0ºC, manteve a firmeza de polpa, acidez titulável e o teor de SST mais elevados, além de não exibir degenerescência senescente. O armazenamento em AC com 4,0kPa de CO2 e o armazenamento refrigerado causaram degenerescência senescente. Já a degenerescência com cortiça foi induzida pelo uso de 3,0 e 4,0kPa de CO2, associado com 1,5kPa de O2. As podridões foram significativamente maiores em AR do que em AC, sendo mais freqüente em baixa concentração de CO2 (1kPa). A incidência de rachaduras e escaldadura foi insignificante e não foi associada a nenhuma condição de armazenamento. No armazenamento refrigerado, os frutos apresentaram qualidade insatisfatória para a comercialização e consumo após oito meses de armazenamento.

Calcium deficiency in apples fruits cause cork spot and bitter pit before harvesting and during storage. Therefore, it is important study absortion, distribution and biochemichal functions and alternatives to prevent or reduce physiological disorders caused by calcium deficiency in apples.


Muitas das desordens fisiológicas que afetam os frutos estão relacionadas com baixo conteúdo de cálcio nos tecidos, sendo sua ocorrência diminuída quando há incremento deste nutriente. A deficiência de cálcio em madeira afeta os frutos que apresentam manchas de cortiça próximos a colheita e durante a frigoconservação. Em vista disto, é importante o estudo sobre a absorção, distribuição e funções bioquímicas, bem como a apresentação de alternativas para prevenir ou reduzir desordens fisiológicas causadas por deficiência de cálcio em macieira.
