RESUMO

Mycotoxins, secondary metabolites synthesized by various filamentous fungi genera such as Aspergillus, Penicillium, Fusarium, Claviceps, and Alternaria, are potent toxic compounds. Their production is contingent upon specific environmental conditions during fungal growth. Arising as byproducts of fungal metabolic processes, mycotoxins exhibit significant toxicity, posing risks of acute or chronic health complications. Recognized as highly hazardous food contaminants, mycotoxins present a pervasive threat throughout the agricultural and food processing continuum, from plant cultivation to post-harvest stages. The imperative to adhere to principles of good agricultural and industrial practice is underscored to mitigate the risk of mycotoxin contamination in food production. In the domain of food safety, the rapid and efficient detection of mycotoxins holds paramount significance. This paper delineates conventional and commercial methodologies for mycotoxin detection in ensuring food safety, encompassing techniques like liquid chromatography, immunoassays, and test strips, with a significant emphasis on the role of electrochemiluminescence (ECL) biosensors, which are known for their high sensitivity and specificity. These are categorized into antibody-, and aptamer-based, as well as molecular imprinting methods. This paper examines the latest advancements in biosensors for mycotoxin testing, with a particular focus on their amplification strategies and operating mechanisms.

Dietary management is of paramount importance in the prevention and control of type 2 diabetes mellitus (T2DM). This one-year cluster-randomized controlled trial aims to evaluate the effect of dietary management tools on the dietary skills of patients with T2DM. Twenty-two communities were randomly assigned to an intervention group and a control group, and participants in the intervention group received a food guiding booklet (G) and a dinner set (D). The frequency of dietary management tools usage was collected at baseline and every three months, and different use patterns were identified by a group-based trajectory model. A self-compiled diabetic dietary skills scale and blood glucose were collected at baseline, 3, and 12 months, and a using generalized linear mixed model (GLMM) to explore the influence factors of dietary skills and blood glucose. The finding revealed four dietary tool-usage patterns among the participants: Insist using G/D, Give up gradually G/D, Give up after use G, and Never use G/D. GLMM indicated that dietary skills were higher over time (p < 0.05), and in participants using the guiding booklet (p < 0.001) or dinner set (p < 0.001), or with higher education (p < 0.001). Additionally, blood glucose were lower among participants with higher dietary skills (p = 0.003), higher educational level (p = 0.046), and a 3000−5000 monthly income (p = 0.026). These findings support using food management tools like the guiding booklet and dinner set as a useful strategy in primary health care centers for individuals with T2DM to increase their dietary skills and blood glucose control.

Home confinement during the COVID-19 pandemic has been accompanied by dramatic changes in household food dynamics that can significantly influence health. This systematic literature review presents parental perspectives of the impact of COVID-19 lockdown (up to 30 June 2022) on food preparation and meal routines, as well as other food-related behaviors, capturing both favorable and unfavorable changes in the household food environment. Themes and trends are identified and associations with other lifestyle factors are assessed. Overall, families enjoyed more time together around food, including planning meals, cooking, and eating together. Eating more diverse foods and balanced home-cooked meals (e.g., fresh fruit and vegetables) was combined with overeating and increased snacking (e.g., high-calorie snacks, desserts, and sweets), as parents became more permissive towards food; however, food insecurity increased among families with the lowest income. Adoption of meal planning skills and online shopping behavior emerged alongside behaviors aimed at self-sufficiency, such as bulk purchasing and stockpiling of non-perishable processed foods. These results are an important first step in recognizing how this pandemic may be affecting the family food environment, including low-income families. Future obesity prevention and treatment initiatives, but also ongoing efforts to address food management, parental feeding practices, and food insecurity, can account for these changes moving forward.

Over half of the total amount of food wasted in Europe concerns household food waste which is mainly due to incorrect food management habits and behaviour. During the Covid-19 outbreak, food management and consumption habits changed dramatically due to the tough lockdown restrictions imposed by governments to reduce infection. This study investigated how these dramatic changes in the daily lives of consumers influenced the generation of food waste at household level. A CAWI questionnaire was administered to a sample of 1078 Italian consumers during the lockdown (March-April 2020). The respondents were asked to self-estimate the percentage of food their households wasted before and during the lockdown and to explain their food management habits. We focused the analysis on the differences between the food the respondents declared to have wasted before and during lockdown, which revealed that most households threw away less food during the Covid-19 lockdown compared to the pre-Covid situation. We referred to Seemingly Unrelated Regression models to evaluate the association between the food waste behaviour in the two periods considered in the study and the other factors observed. The results disclosed that young consumers and people who started implementing good food management practices (shopping list, meal planning etc.) more frequently considerably reduced the food they wasted during lockdown. Also, the logistical difficulties of grocery shopping experienced by consumers during lockdown made them manage their household food consumption more carefully, which led to a reduction in the amount of food wasted.

The COVID-19 pandemic has affected how households buy, prepare and consume food, with resultant impacts on food waste generated. These impacts have not yet been properly understood, especially in the context of developing countries. Better understanding of the impacts of COVID-19 on food management behavior of households can aid in the design of policy interventions to reduce the amounts of wasted food during disastrous events. This becomes particularly important in light of the likely pro-longed effect held by the pandemic on household lifestyles in the future. This study has segmented households in Turkey, a rapidly emerging economy, on the basis of the effects imposed by COVID-19 on their food management behavior. A two-step clustering analysis has been conducted on the factor scores of planned shopping and cooking skills. Three segments were identified: careless planners and cooks, resourceful planners and cooks and careless planners and resourceful cooks. The segments were further described using health orientation, price consciousness, environmental concern, food waste disposal routines and self-perception of the amount of food waste variables. The first and the smallest segment, careless planners and cooks, is characterized by low levels of planned shopping and cooking skills, with resultant significant wastage. The largest segment of resourceful planners and cooks demonstrates excellent planned shopping and cooking skills, with resultant small wastage. The segment of careless planners and resourceful cooks showcases excellent cooking skills, but poor skills of planned shopping. The study provides first known evidence to understand how Turkish households differ on the grounds of their food management behavior in the time of the pandemic, thus laying a foundation for future segmentation studies in Turkey and beyond.

The COVID-19 pandemic has stimulated considerable interest in the resilience of the U.S. food system. Less attention has been paid to the resiliency characteristics of the final link in the food system - individual households. We use national survey data from July 2020 to understand the food acquisition, preparation, and management strategies that households implemented in response to the pandemic. We find a substantial increase in the amount of food prepared and consumed at home which scales with respondents' time availability, perceived risks of dining out, and pandemic-induced income disruption. We then identify several household responses to support this increase in home food consumption that are in line with practices suggested to enhance resiliency at other links in the food supply chain, including increased cold storage capacity and enhanced in-house capability via improved cooking and food management skills. We discuss how responses such as improved food skills can reduce the propagation of shocks through the supply chain by allowing greater flexibility and less waste, while actions such as increased home cold storage capacity could undermine system resilience by exacerbating bullwhip effects, i.e., amplifying consumer demand shocks that are propagated to upstream food supply chain actors.

Health-related knowledge, skills and attitudes that translate to behaviours are important foundations for healthy living. However, deficiencies in any one of these factors have the potential to impact quality of life. This study investigates how Australian children perceive and manage their food allergy as they transition through childhood onto adolescence. To measure this, children aged 12 years and under completed an online survey [under 8 years and 8-12 years] on knowledge, skills and attitudes. Although recruitment involved advertisements to over 700 Australian pre-schools, 44 allergy specialists and multiple representations to the patient support group, Allergy & Anaphylaxis Australia, completion relied on parental notification and/or guidance. Of the 139 participants recruited, 114 commenced the survey with 65 participants under 8 years (58%) and 49 between 8 and 12 years. Results showed participants recognised different ways to keep safe with children under 8 years (N = 65) 100% cognisant of the need to check with 'Mum/Dad' or teachers if they could safely eat food as well as the importance of not swapping lunches, while there was a slight change in compliance for those aged 8-12 years as three (6.1%, n = 3/49) children did not see the necessity of asking an adult/teacher if a food item was safe to eat. Older children were also less likely to tell friends about their food allergy even if they thought they were having an allergic reaction, despite children under 8 years more likely to feel different to friends (38%, n = 24/64) compared to those aged 8-12 years (31%, n = 14/45). Although both groups disliked parents' fussing, for children under 8 years, there was a strong association between this and 'feeling different to friends'. Results from this study highlight the importance of normalising food allergy at home and in the community, so children are confident in telling others about their food allergy.

The aim of this research is to analyse the way young people perceive the food waste process, as well as the determinants and the impact of the COVID-19 pandemic on the responsible behaviour of young people towards food waste. The research design involves a study on a sample of 375 students from Romanian universities and the development and validation of a model using SEM-PLS. Our findings show that the impact of the COVID-19 pandemic has led to more people exhibiting food waste reduction behaviour, an increased awareness for the ethics of food waste among young people, and increased awareness of the environmental consequences of food waste. The limits of the paper refer to non-probability sampling technique and sampling structure that is limited to a single country. The practical implications of the study highlight that this pandemic is a good moment to raise awareness among young people about food waste and we discuss possible strategies on this matter. Our research offers a new perspective on food waste in the conditions of current health crisis, and possible anticipated economic recession, in the future.

(1) Background: The COVID-19 pandemic and the imposition of strict but necessary measures to prevent the spread of the new coronavirus have been, and still are, major stress factors for adults, children, and adolescents. Stress harms human health as it creates free radicals in the human body. According to various recent studies, volatile oils from various aromatic plants have a high content of antioxidants and antimicrobial compounds. An external supply of antioxidants is required to destroy these free radicals. The main purpose of this paper is to create a yoghurt with high antioxidant capacity, using only raw materials from Romania; (2) Methods: The bioactive components used to enrich the cow milk yoghurt were extracted as volatile oils out of four aromatic plants: basil, mint, lavender and fennel. Initially, the compounds were extracted to determine the antioxidant capacity, and subsequently, the antioxidant activity of the yoghurt was determined. The 2,2-diphenyl-1-picrylhy-drazyl (DPPH) method was used to determine the antioxidant activity; (3) Results: The results show that cow milk yoghurt enhanced with volatile oils of basil, lavender, mint and fennel, encapsulated in sodium alginate has an antioxidant and antimicrobial effect as a staple food with multiple effects in increasing the body's immunity. The antioxidant activity proved to be considerably higher than the control sample. The highest antioxidant activity was obtained on the first day of the analysis, decreasing onwards to measurements taken on days 10 and 20. The cow milk yoghurt enriched with volatile basil oil obtained the best results; (4) Conclusions: The paper shows that yoghurts with a high antioxidant capacity were obtained, using only raw materials from Romania. A healthy diet, compliance with safety conditions and finding appropriate and safe methods to increase the body's immunity is a good alternative to a major transition through harder times, such as pandemics. The creation of food products that include natural antioxidant compounds combines both the current great possibility of developing food production in Romania and the prevention and reduction of the effects caused by pandemic stress in the human body.

Food waste is a global issue with major environmental and socio-economic implications. The problem is even worse in Arab countries where tremendous amounts of food are wasted everyday. In this study, we engaged in an ethnographic journey documenting meal management practices in rural Lebanese households as they relate to food waste. We interviewed 60 women from the Chahhar region (closest communities to the nation's largest landfill) who are in charge of their households' food management. We kept detailed reflexive notes of observations and photo-journaled the provision, preparation, preservation, consumption, and disposal of food. We found that despite the enormity of the food waste crisis in Lebanon, the environmental impact was strikingly absent from the participants' construction of food-related practices. Yet, the women exhibited a strong food waste averse behavior rooted in cultural norms and religious beliefs built on active avoidance of food waste. Our findings shed the light on the intricate connections of family and community routines anchored in frugality and hospitality practices.

The objective of this study was to evaluate the hematological and immunological parameters of yellowtail lambaris (Astyanax bimaculatus), fed with different frequencies of the probiotic (Lactobacillus spp.). Fishes were distributed into 20 experimental units and divided in five treatments: control (0%), 25%, 50%, 75% and 100% of probiotic supply. A higher presence of total leukocytes (47.70 103cell µl-1), lymphocytes (36.11 103cell µl-1) and monocytes (11.58 103cell µl-1) was verified in fish fed 100% of probiotic, showing a directly proportional ratio among the frequencies of the probiotic supply on the availability of circulating cells in the circulatory system (R² 094-0.97). Hematocrit (27.30-34.63%), hemoglobin (7.00-10.90g dl-1), mean corpuscular volume (4.21-5.45 10-5.pg), mean corpuscular hemoglobin (3.45-5.40 10-6.pg), mean corpuscular hemoglobin concentration, (2.99-4.35g dl-1), total protein (44.32-50.26mg ml-1) and total plasma immunoglobulin (27.96-34.08mg ml-1) did not diverge among treatments. The frequency of the probiotic supply interferes with the hematological profile, although lactic acid bacteria were present in the same concentrations in the intestinal tract, regardless of the probiotic supply, there was an increase in circulating leukocytes, especially lymphocytes and monocytes, in lambari fed probiotic with more frequency.(AU)


O objetivo do presente trabalho foi avaliar os parâmetros hematológicos e imunológicos do lambari-do-rabo-amarelo (Astyanax bimaculatus) alimentado com diferentes frequências de probiótico (Lactobacillus spp.). Os peixes foram distribuídos em 20 unidades experimentais e divididos em cinco tratamentos: controle (0%), 25%, 50%, 75% e 100% de frequência na suplementação probiótica. Alta presença de leucócitos totais (47,70 10³ células µ-1), linfócitos (36,11 10³ células µ-1) e monócitos (11,58 10³ células µ-1) em peixes alimentados com 100% de probiótico apresenta uma taxa diretamente proporcional entre as frequências da suplementação probiótica na disponibilidade das células no sistema circulatório (R² 094-0,97). Hematócrito (27,30-34,63%), hemoglobina (7,00-10,90g dL-¹), volume corpuscular médio (4,21-5,45 10-5.pg), hemoglobina corpuscular média (3,45-5,40 10-6.pg), concentração de hemoglobina corpuscular média (2,99-4,35g dl-1), proteína total (44,32-50,26mg ml-1) e imunoglobulina plasmática total (27,96-34,08mg ml-1) não divergiram entre os tratamentos. A frequência da suplementação probiótica interferiu no perfil hematológico. Embora as bactérias ácido láticas estejam presentes na mesma concentração no trato intestinal, independentemente da oferta de probiótico, houve um aumento na circulação de leucócitos, especialmente linfócitos e monócitos, nos lambaris alimentados com maior frequência.(AU)

OBJECTIVES: This study examined the salinity of soups provided at childcare centers by measuring the salinity for three years and providing basic data for sodium reduction.METHODS: The soup salinity was measured using a Bluetooth salinity meter from January 2015 to December 2017 at 80 childcare foodservice establishments enrolled in the Suseong Center for Children's Foodservice Management in Daegu.RESULTS: An analysis of the soup salinity each year showed that the salinity decreased significantly from 0.48% in 2015 to 0.41% in 2017, particularly in clear soups and soybean soups compared to other soups (P < 0.05). The salinity and sodium content in seafood soups (0.45% and 179.1 mg/100 g, respectively) were highest, followed by soybean soups (0.44%, 175.2 mg/100 g), with perilla seed soups containing the lowest (0.42%, 167.2 mg/100 g) (P < 0.05). The salinity was significantly higher in institutional foodservice establishments than small foodservice establishments (P < 0.001). The salinity and sodium content were the highest in foodservice establishments with a small number of measurements, and the salinity was the lowest in foodservice establishments with salinity measurements performed an average of 151 times each year (three times a week) or more (P < 0.05). The soup salinity was low in the order of winter, spring, summer, and autumn, and the salinity decreased significantly year by year in all seasons. (P < 0.05).CONCLUSIONS: The soup salinity was significantly lower in foodservice establishments where the salinity was measured more than three times a week, indicating that continuous salinity management is effective.

Com o presente estudo, objetivou-se avaliar o tempo de fornecimento de náuplios de artêmia e o período de transição alimentar para pós-larvas de acará-severo (Heros severus). Foram utilizadas 450 pós-larvas de acará-severo, distribuídas em 45 aquários, em delineamento inteiramente ao acaso, em esquema fatorial 3x5, com três repetições. Foram avaliados três períodos de fornecimento de náuplios de artêmia: zero, cinco e 10 dias. Além disso, foram testados cinco períodos de transição alimentar: um, dois, três, quatro e cinco dias, quando os animais receberam alimentação conjunta de náuplios de artêmia e dieta farelada. Ao final do experimento, os peixes foram contados, pesados e fotografados, para avaliação do desempenho produtivo e das variáveis morfométricas. Para todos os parâmetros avaliados, não foi constatada interação entre o tempo de fornecimento de artêmia e o período de transição alimentar. Os animais alimentados por 10 dias com náuplios de artêmia apresentaram os melhores resultados de desempenho e as maiores variáveis morfométricas. Os peixes que receberam alimentação conjunta por três dias apresentaram desenvolvimento satisfatório. Dessa forma, recomendam-se 10 dias de fornecimento de náuplios de artêmia e três dias de transição alimentar, antes de se iniciar o fornecimento exclusivo de dieta inerte para pós-larvas de acará-severo.(AU)


The aim of this study was to evaluate the supply time of artemia and the period of food transition to post-larvae of severum (Heros severus). A total of 450 post-larvae of severum were distributed in 45 aquaria, in a completely randomized design, in a 3x5 factorial scheme, with three replicates. Three feeding periods with artemia nauplii were evaluated: zero, five, and ten days. In addition, five feeding transitions were tested: one, two, three, four and five days, when the animals received joint feeding of artemia nauplii and dry diet. At the end of the experiment the fish were counted, weighed and photographed, to evaluate the productive performance and the morphometric variables. For all parameters evaluated, no interaction between the time of artemia supply and the feeding transition period was observed. Animals fed for 10 days with artemia nauplii showed the best performance results and the highest morphometric variables. The fish that received joint feeding for three days presented satisfactory development. Thus, 10 days of artemia nauplii supply and three days of feeding transition is recommended before starting the exclusive supply of diet inert to post-larvae of severum.(AU)

Prader-Willi syndrome (PWS) is a complex multisystem disorder due to the absent expression of the paternally active genes in the PWS critical region on chromosome 15 (15q11.2-q13). The syndrome is considered the most common genetic cause of obesity, occurring in 1:10,000-1:30,000 live births. Its main characteristics include neonatal hypotonia, poor feeding, and lack of appetite in infancy, followed by weight gain, lack of satiety, and uncontrolled appetite, frequently after the age of 2-3 years. The clinical picture includes short stature, multiple endocrine abnormalities (hypogonadism, growth hormone/insulin-like growth factor-I axis dysfunction, hypothyroidism, central adrenal insufficiency), dysmorphic features, scoliosis, osteoporosis, mental retardation, and behavioral and psychiatric problems. Subjects with PWS will become severely obese unless their food intake is strictly controlled. Constant and obsessive food seeking behavior can make life very difficult for both the family and caretakers. Prevention of obesity is mandatory in these patients from the first years of life, because once obesity develops it is difficult to maintain the control of food intake. In fact, PWS subjects die prematurely from complications conventionally related to obesity, including diabetes mellitus, metabolic syndrome, sleep apnea, respiratory insufficiency, and cardiovascular disease. The mechanisms underlying hyperphagia in PWS are not completely known, and to date no drugs have proven their efficacy in controlling appetite. Consequently, dietary restriction, physical activity, and behavior management are fundamental in the prevention and management of obesity in PWS. In spite of all available therapeutic tools, however, successful weight loss and maintenance are hardly accomplished. In this context, clinical trials with new drugs have been initiated in order to find new possibilities of a therapy for obesity in these patients. The preliminary results of these studies seem to be encouraging. On the other hand, until well-proven medical treatments are available, bariatric surgery can be taken into consideration, especially in PWS patients with life-threatening comorbidities.

Recent research has started to show the key role of daily food provision practices in affecting household food waste. Building on and extending these previous contributions, the objective of this paper is to investigate how individuals' everyday practices regarding food (e.g., shopping, cooking, eating, etc.) lead to food waste, and how policy makers and the food industry can implement effective strategies to influence such practices and ultimately help consumers reduce food waste. The research performs three Studies; a critical incident qualitative study (Study 1; N = 514) and a quantitative, survey-based study (Study 2; N = 456) to identify and examine relevant food management behaviors associated with domestic waste. Lastly, findings from a field experiment (Study 3; N = 210) suggest that a specific educational intervention, directed at increasing consumers' perceived skills related to food preparation planning behaviors, reduces domestic food waste. Implications of the research for policy makers and the food industry are discussed.

OBJECTIVES: Diffusion of smartphones has normalised consumers' use of mobile applications (apps). But how do app designs and contexts of use interact with differential consumer attributes to impact on their effectiveness, usability and value over time? For consumer food safety, answering these questions is of importance as numerous food choices increase challenges in safe food management (SFM). This research reports on results of a randomised field experiment with Australian consumers using an SFM mobile app developed by the researchers. METHOD: The SFM app development employed insights from the Health Literacy Online Heuristics framework and the experiment involved evaluation of information and/or knowledge acquisition from the app versus from a paper-based version. The experiment spanned four weeks and involved eight participants (experimental group n=4; control group n=4). RESULTS: The results highlight differentials in cognitive burden between paper and the app; beneficial affordances from the app for refreshing consumer knowledge; and longer knowledge retention on safe food management from app use over-time. DISCUSSION: We identified two key impacts of the app on consumer knowledge acquisition and knowledge retention. First, the SFM app takes longer to achieve knowledge acquisition but results in longer knowledge retention than the control. Second, the SFM app induces some level of cognitive load in adoption however; the affordance of its reuse for quick but infrequent revisitations facilitates knowledge retention. Although the study is limited by the small sample size, it however highlights the need for a large scale and purely quantitative investigation that are generalisable to the Australian population. CONCLUSION: It is anticipated that the insights gained from this study can be used to develop nationwide interventions for addressing consumer SFM knowledge gaps in the home; thus, moving a step closer towards addressing SFM behaviours of Australian consumers.

The objective of this study was to evaluate the effects of compensatory gain associated with the use of 10ppm ractopamine after a period of feed restriction in finishing pigs on performance, carcass and meat quality. Twenty castrated males and 20 females, at 110 days of age and 66.137±6.13kg live weight, were submitted to four treatments using a 2 x 2 factorial design (fed ad libitum or with 20% restriction between 0(21 days of age and fed with or without 10ppm ractopamine for 22(42 days of experimentation), with 10 replicates (animals). There was no interaction between the factors for any of the evaluated parameters. Animals treated with ractopamine presented better weight gain (1.083 versus 1.259kg), feed conversion (2.910 versus 2.577), warm and cold carcass weight (86.08 versus 89.00 and 83.46 versus 87.20kg, respectively), loin depth (63.02 versus 68.40mm), loin eye area (41.43 versus 46.59mm2) and muscle fiber diameter (27.48 versus 35.85µm). Animals submitted to feed restriction followed by ad libitum feed presented compensatory gain without losses to carcass and meat characteristics, but with a reduction in the ethereal extract (2.19 versus 1.64%) and lower water loss due to thawing in the meat (11.35 versus 9.42%). The effects of compensatory gain after food restriction and ractopamine are independent of the parameters evaluated.(AU)


Objetivou-se avaliar os efeitos do ganho compensatório associado ao uso de 10ppm de ractopamina após um período de restrição alimentar, em suínos em terminação, sobre características de desempenho, carcaça e qualidade de carne. Foram utilizados 20 machos castrados e 20 fêmeas, com 110 dias de idade e 66,137±6,13kg de peso vivo, submetidos a quatro tratamentos, fatorial 2 x 2 (alimentação à vontade ou com 20% de restrição entre zero e 21 dias de experimentação; e alimentação à vontade, sem ou com 10ppm de ractopamina, durante 22 a 42 dias de experimentação), com 10 repetições, sendo o animal a repetição. Não houve interação entre os fatores para nenhum dos parâmetros avaliados. Animais tratados com ractopamina apresentaram melhor ganho de peso (1,083 versus 1,259kg), conversão alimentar (2,910 versus 2,577), peso da carcaça quente e fria (86,08 versus 89,00 e 83,46 versus 87,20kg, respectivamente), profundidade do lombo (63,02 versus 68,40mm), área de olho de lombo (41,43 versus 46,59mm2) e diâmetro de fibras musculares (27,48 versus 35,85µm). Animais submetidos à restrição alimentar seguida de arraçoamento ad libitum apresentaram ganho compensatório sem prejuízos às características de carcaça e à carne, mas com redução do extrato etéreo (2,19 versus 1,64%) e menor perda de água por descongelamento na carne (11,35 versus 9,42%) Os efeitos do ganho compensatório após a restrição alimentar e da ractopamina mostram-se independentes sobre os parâmetros avaliados.(AU)

RESUMO

This paper introduces HighChest, an innovative smart freezer designed to promote energy efficient behavior and the responsible use of food. Introducing a novel human-machine interface (HMI) design developed through assessment phases and a user involvement stage, HighChest is state of the art, featuring smart services that exploit embedded sensors and Internet of things functionalities, which enhance the local capabilities of the appliance. The industrial design thinking approach followed for the advanced HMI is intended to maximize the social impact of the food management service, enhancing both the user experience of the product and the user's willingness to adopt eco- and energy-friendly behaviors. The sensor equipment realizes automatic recognition of food by learning from the users, as well as automatic localization inside the deposit space. Moreover, it provides monitoring of the appliance's usage, avoiding temperature and humidity issues related to improper use. Experimental tests were conducted to evaluate the localization system, and the results showed 100% accuracy for weights greater or equal to 0.5 kg. Drifts due to the lid opening and prolonged usage time were also measured, to implement automatic reset corrections.

OBJECTIVE: To examine the strategies and behaviors caregivers use to manage the household food supply when their children experience food insecurity as measured by the US Department of Agriculture's Household Food Security Survey Module. DESIGN: Cross-sectional survey with open-ended questions collected in person. SETTING: Urban and nonurban areas, South Carolina, US. PARTICIPANTS: Caregivers who reported food insecurity among their children (n = 746). PHENOMENON OF INTEREST: Strategies and behaviors used to manage the household food supply. ANALYSIS: Emergent and thematic qualitative coding of open-ended responses. RESULTS: The top 3 strategies and behaviors to change meals were (1) changes in foods purchased or obtained for the household, (2) monetary and shopping strategies, and (3) adaptations in home preparation. The most frequently mentioned foods that were decreased were protein foods (eg, meat, eggs, beans), fruits, and vegetables. The most frequently mentioned foods that were increased were grains and starches (eg, noodles), protein foods (eg, beans, hot dogs), and mixed foods (eg, sandwiches). CONCLUSIONS AND IMPLICATIONS: Caregivers use a wide variety of strategies and behaviors to manage the household food supply when their children are food insecure. Future work should examine how these strategies might affect dietary quality and well-being of food-insecure children.

BACKGROUND: The intention of the following study was to describe the interrelationship between villagers, domestic animals and wildlife at the Community Forestry Concession of Uaxactún, Guatemala by means of participatory epidemiological methods. The main focus was generating information regarding different livestock diseases considered important by villagers and their relevance, as well as obtaining knowledge concerning hunting activities and cooking methods to gain a better understanding of the interrelationship of people and animals and the diseases of their animals. RESULTS: For poultry, an overall prevalence of 41% of Newcastle disease was found by means of the ELISA test by antibody detection, chicken being the most affected species in the village. No samples were positive to avian influenza with the HI test. No virus was isolated by means of the tracheal or cloaca swabbing of ducks. FOR HUNTING: All species could be hunted by chance at any time of the year. There was a difference in species hunted between seasons, peccaries being more frequently hunted during the dry season and in contrast, deer and wild avian during the rainy season. FOR COOKING: Villagers did not consume any raw meat. The cooking methods depended on the species. Stewing was the most favoured method for peccaries, wild birds, tepezcuintle and domestic poultry, whereas grilling was preferable for deer, roasting for armadillos and marinating for pork. CONCLUSION: According to the generated information, the most important domestic livestock species in the village are chickens and pigs, chickens being the most affected by diseases. No evident health problems on pigs were observed in this study. Hunting was shown as an activity enhanced by poverty and the lack of employment opportunities in the village and was mostly directed at larger species such as deer and peccaries. From the viewpoint of a transmission of zoonoses from animals to humans cooking methods mostly reflected a protective factor as no raw meat was eaten, stews and broths being the most common forms of cooking, involving an exposure of meat to high temperatures. Nonetheless, both agricultural and hunting activities represent a risk factor for the spread of diseases as hunters may act as mechanical vectors for different pathogens within domestic and wild animal populations.
