The health benefits of nut consumption have been extensively demonstrated in observational studies and intervention trials. Besides the high nutritional value, countless evidences show that incorporating nuts into the diet may contribute to health promotion and prevention of certain diseases. Such benefits have been mostly and certainly attributed not only to their richness in healthy lipids (plentiful in unsaturated fatty acids), but also to the presence of a vast array of phytochemicals, such as polar lipids, squalene, phytosterols, tocochromanols, and polyphenolic compounds. Thus, many nut chemical compounds apply well to the designation "nutraceuticals," a broad umbrella term used to describe any food component that, in addition to the basic nutritional value, can contribute extra health benefits. This contribution analyses the general chemical profile of groundnut and common tree nuts (almond, walnut, cashew, hazelnut, pistachio, macadamia, pecan), focusing on lipid components and phytochemicals, with a view on their bioactive properties. Relevant scientific literature linking consumption of nuts, and/or some of their components, with ameliorative and/or preventive effects on selected diseases - such as cancer, cardiovascular, metabolic, and neurodegenerative pathologies - was also reviewed. In addition, the bioactive properties were analyzed in the light of known mechanistic frameworks.

Kombucha is a potential probiotic tea-based drink with increasing worldwide consumption. Studies on this probiotic beverage are growing rapidly, especially about micronutrients and microbial population. As such, the present study performed the molecular identification of the microorganism and evaluated 5-methyltetrahydrofolate content by HPLC-DAD, phenolic compounds, flavonoids, carotenoids, antioxidant activity by spectrophotometric methods, and physicochemical composition of green tea kombucha on fermentation days 1, 3, 7, 14, and 21. DNA sequencing identified the Microbacterium genus as predominant. However, was unable to safely determine the species level because of the rRNA 16S gene sequence similarity between four species M. ureisolvens, M. yannicii, M. chocolatum e M. atlanticum. The concentration of 5-methyltetrahydrofolate found on the third day was 39.12 ± 1.32 µg/mL (liquid) and 45.78 ± 8.42 µg/mL (polymeric biofilm); On the twenty-first day it was 50.87 ± 3.56 µg/mL (liquid) and 54.88 ± 3.89 µg/mL (polymeric biofilm). Total phenolic compounds increased with fermentation; however, flavonoids and carotenoids were degraded by the process. The information on 5-methyltetrahydrofolate is unprecedented and highly relevant for food guidelines, since related deficiencies can lead to fetal malformation in the first three months of pregnancy. Lastly, the best fermentation time to obtain 5-methyltetrahydrofolate and others bioactive compounds is between days 7-14. Further analyses are also encouraged to understand the bioavailability of the vitamin.

This study aimed to compare the digestibility of tropical grasses by horses by the in vivo method using mobile nylon bags with the in vitro digestibility method using horse feces as a source of inoculum. Five horses were used in a 2 × 5 factorial design with randomized blocks featuring two methods (in vivo and in vitro) and five grasses: Tifton 85 hay (Cynodon spp.), sixweeks threeawn grass (Aristida adsencionis, Linn), Alexandergrass (Brachiaria plantaginea (Link) Hitchc.), capim-de-raiz (Chloris orthonoton, Doell), and Sabi grass (Urochloa mosambicensis). No difference (P>0.05) was found between the in vivo and in vitro methods regarding nutrient digestibility of Sabi grass and sixweeks threeawn. Tifton 85 was the only grass that showed differences (P<0.05) between the two methods concerning the apparent digestibility of all nutrients. Alexandergrass, Tifton 85, and capim-de-raiz exhibited the best digestibility of dry matter, neutral detergent fiber, acid detergent fiber, and organic matter by the mobile bag method compared to the in vitro method. Tifton 85 and capim-de-raiz had higher crude protein digestibility by the mobile bag method than by the in vitro method. The mean retention time of the mobile bags in the digestive tract of the horses was 43.69 h. The bags with samples of sixweeks threeawn and Sabi grass had shorter retention times than capim-de-raiz and Alexandergrass (P<0.0001). It is concluded that, for sixweeks threeawn and Sabi grass, digestibility in horses can be assessed using the in vitro method in place of the mobile nylon bag method.

The chemical composition, antioxidant capacity and functional properties of mixtures of baru by-products, named baru food ingredients (BFI), were investigated and applied in a plant-based burger formulation. BFI were prepared from wasted baru by-products - partially defatted baru nut cake and baru pulp plus peel. A plant-based burger was developed and its chemical composition, antioxidant capacity, cooking and texture parameters were determined. BFI1 (50% partially defatted baru nut cake + 50% baru pulp plus peel) had the highest content of carbohydrate (31.9%), and dietary fibre (28.3%). BFI2 (75% partially defatted baru nut cake + 25% baru pulp plus peel) and BFI3 (90% partially defatted baru nut cake + 10% baru pulp plus peel) showed high concentration of protein and dietary fibre, and BFI3 had the highest protein content (29.5%). All BFI showed high concentration of total phenolics (402-443 mg GAE/100 g). Replacing textured pea protein of control burger (PPB) with 35% of BFI3 in the formulation of baru protein burger (BPB) resulted in a low-fat product (2.9%), with protein content (19.2%) comparable to the PPB (15.9%) and the commercial burger (mixed plant proteins - 16.3%). The BPB also showed a higher concentration of dietary fibre (4.9%) and phenolic compounds (128 mg GAE/100 g) than the control burger. BPB's cooking yield was the highest among the tested burgers. BPB had a softer texture when compared to other burgers. Baru food ingredients can be used as nutritive ingredients of health-promoting foods, especially in plant-based products, such as burger and meat analogues, or in hybrid meat products. BPB showed a healthy and nutritious profile.

We aimed to evaluate the effects of different drying methods for banana residues on the energy metabolism and respirometry of growing lambs. Twenty Santa Inês x Dorper lambs were fed five experimental diets: Tifton 85 grass hay (Control), shade-dried banana leaf hay (LH Shade), shade-dried pseudostem banana hay (PH Shade), sun-dried banana leaf hay (LH Sun), and sun-dried banana pseudostem hay (PH Sun). Nutrient intake and digestibility were assessed in metabolic cages, whereas O2 consumption and CO2, methane, and heat production were measured in a respirometry chamber with animals fed at maintenance and ad libitum levels. Nutrient and energy intake was not influenced by diet. Pseudostem hay had higher apparent digestibility of dry matter (71.5%), organic matter (72.4%), and neutral detergent fiber (58.0%). However, this led to greater energy loss in the form of methane (12.1%). The banana residue hays and drying methods did not alter oxygen consumption, CO2 production, or heat production of animals fed ad libitum or during maintenance. On the other hand, the use of leaf hay resulted in a reduction of 24.7% in enteric methane production of animals fed ad libitum. The inclusion of pseudostem hay is recommended in sheep feedlot diet. This residue provided greater use of DM, however promoted a greater loss of energy in the form of methane, resulting in similar energy consumption. The drying methods did not reduce the availability of nutrients and the sun drying method is recommended, since it is a faster drying method.

The aim of the present study was to determine the nutritional value of black soldier fly (BSF) larvae meal for quail (experiment I) and the dose-response effects of BSF levels on growth performance, relative organ weight, and body composition of growing quails (experiment II). In experiment I, 100 35-day-old quail were distributed in a completely randomized design, with two treatments (reference and test diet) and 10 replicates. The experimental period consisted of 5 days of adaptation, followed by 5 days of total excreta collection. The experimental feed consisted of a reference diet and a test diet formulated with 850 g/kg reference diet and 150 g/kg BSF. In experiment II, 1000 1-day-old quail were distributed in a completely randomized design, with five dietary levels of BSF (0, 25, 50, 75, and 100 g/kg). At 42 days of age, birds were slaughtered, and the relative organ weight and body composition were determined. Apparent metabolizable energy values corrected for nitrogen retention of BSF meal were 13.8 MJ/kg. Across the starter (1-14 days) and overall period (1-42 days), increasing BSF levels had a quadratic effect on body weight and body weight gain. Feed conversion ratio was quadratically affected during the starter phase and linearly reduced over the overall period. Additionally, the BSF levels linearly decreased the small intestine's relative weight at 42 days and had a quadratic effect on the rate of protein deposition. We concluded that the inclusion of 100 g/kg BSF meal improves feed conversion ratio for growing quail.

This study analyzed ten fish species (three farmed and seven wild-caught) to determine their centesimal composition (assessed by AOAC methods) and lipid profile (analyzed by GC-MS). Notably, "tambatinga" (farmed) and "piraputanga" (wild-caught) stood out with 28.66 % and 26.44 % protein content and 2.32 % and 3.71 % lipid content, respectively. Across all species, oleic acid was the predominant fatty acid, followed by linoleic acid. The sum of PUFAs ranged from 17.84 % in "matrinchã" to 7.85 % in "piraputanga". SFA varied from 49.93 % in "tambacu" to 39.90 % in "matrinchã", while MUFAs ranged from 44.34 % in "palmito" to 38.39 % in "tambaqui". "Matrinchã" had the highest average ω6 acid content (16.83 %), while "cachara" had the highest average for ω3 acids (5.73 %). "Piraputanga". "cachara", and "pincachara" exhibited the lowest ω6 levels. The analysis shows that fish have excellent nutritional values (proximate compositions) with few differences between species. "Pacu", "matrinchã", and "cachara" (wild-caught) demonstrated positive attributes, while "pincachara" (farmed) exhibited the highest nutritional quality in terms of fatty acid fraction. Based on quality indices (H/H), "pacu", "matrinchã" and "pincachara" are recommended choices for a healthy diet. This study adds valuable insights into the nutritional composition of fish species, which is essential for promoting regional development and local aquaculture.

BACKGROUND: Megathyrsus maximus is a forage grass native to Africa but widely cultivated in tropical and subtropical regions of the world where it is part of the grazing food chain. This study aimed to evaluate five M. maximus genotypes for the effect of maturity on their morpho-agronomic traits, nutritional composition and digestibility, and to correlate their leaf blade and stem anatomy with their nutritional value. RESULTS: The proportion of sclerenchyma tissues increased as maturity was reached, while lignin accumulation was differentiated between genotypes. Gatton Panic, Green Panic and Mutale genotypes maintained their acid detergent lignin (ADL) values for leaf blades in the three cuts evaluated. In sacco ruminal dry matter disappearance was lower in Green Panic genotype at the vegetative stage for stems, but not for leaf blades. Significant positive correlations were found between dry matter disappearance and mesophyll tissues, and the latter were negatively correlated with neutral detergent fiber (NDF) and ADL. CONCLUSION: Our results strongly indicate that cutting age and genotype affected the nutritional value of M. maximus leaf blades and stems, with a more pronounced loss of quality in stems than in leaf blades. We recommend increasing the frequency of grazing at early stage or anticipating the stage of stem elongation in Green Panic to produce forage with better nutritional value. © 2023 Society of Chemical Industry.

The Souss region in Morocco is known nationally and internationally for its essential knowledge of traditional herbal medicine and the cultural heritage of nutrition. The endemic species Argania spinosa (L.) Skeels is an important crucial plant used by the local population to treat many diseases and prepare some authentic foods. To identify the therapeutic uses of the Argan tree [Argania spinosa (L.) Skeels] and their benefits in preparing authentic foods, the survey was conducted using semi-structured questionnaires. We have achieved 450 interviews with traditional health practitioners and knowledgeable villagers. In the region of Chtouka Aït Baha and Tiznit (Western Anti-Atlas). In parallel with this survey, we collected some old local manuscripts from conventional practitioners in the region. The data obtained were analyzed using specific ethnobotanical indices such as Use Value (UV), Fidelity Level (FL), and Relative Frequency of Citation (RFC). In parallel, we analyzed the nutritional value of some authentic foods derived the argan oil (Amlou, Tagoulla, and Labsis). All 450 interviewees use the argan oil in food or for the preparation of their authentic foods derived (Amlou, Tagoulla, and Labsis); among them, 100 persons use Argan, in addition to food, in the treatment of various diseases with UV and RFC at 1.94 and 0.22, respectively. Among eight treated diseases by argan tree, the treatment of skin and subcutaneous diseases had a very highly significant value of the FL index (98%). Similarly, the analysis of the manuscripts collected in the study area revealed an ancient therapeutic use of the argan tree. The results also show that the Argan oil extracted from the seed is used to prepare authentic foods with significant nutritional value, especially Amlou.
A região de Souss em Marrocos é conhecida nacional e internacionalmente pelo seu conhecimento essencial da medicina tradicional à base de plantas e pela herança cultural da nutrição. A espécie endêmica Argania spinosa (L.) Skeels é uma importante planta crucial utilizada pela população local para tratar muitas doenças e preparar alguns alimentos autênticos. Para identificar os usos terapêuticos da árvore de argan [Argania spinosa (L.) Skeels] e seus benefícios na preparação de alimentos autênticos, a pesquisa foi realizada por meio de questionários semiestruturados. Conseguimos 450 entrevistas com profissionais de saúde tradicionais e aldeões experientes na região de Chtouka Aït Baha e Tiznit (Anti-Atlas Ocidental). Paralelamente a esta pesquisa, coletamos alguns manuscritos locais antigos de praticantes convencionais da região. Os dados obtidos foram analisados ââpor meio de índices etnobotânicos específicos, como Valor de Uso (UV), Nível de Fidelidade (FL) e Frequência Relativa de Citação (RFC). Paralelamente, analisamos o valor nutricional de alguns alimentos autênticos derivados do óleo de argan (Amlou, Tagoulla e Labsis). Todos os 450 entrevistados utilizam o óleo de argan na alimentação ou para o preparo de seus autênticos alimentos derivados (Amlou, Tagoulla e Labsis); entre eles, 100 pessoas utilizam o argan, além da alimentação, no tratamento de diversas doenças com UV e RFC a 1,94 e 0,22, respectivamente. Entre oito doenças tratadas pela árvore de argan, o tratamento de doenças de pele e subcutâneas teve um valor muito significativo do índice FL (98%). Da mesma forma, a análise dos manuscritos coletados na área de estudo revelou um antigo uso terapêutico da árvore de argan. Os resultados também mostram que o óleo de argan extraído da semente é utilizado para preparar alimentos autênticos com valor nutricional significativo, especialmente Amlou.

O objetivo do trabalho foi desenvolver mortadela de carne mecanicamente separada (CMS) de codornas poedeiras (Coturnix japonica) de descartes enriquecida com diferentes níveis de pó de casca de ovo e avaliar os aspectos físicos, químicos, microbiológicos, sensoriais, juntamente com a aceitação e intenção de compra. Produziu-se quatro produtos, com diferentes níveis de inclusão de pó de casca de ovos sendo eles: tratamento 1 = mortadela controle, com 0%; tratamento 2 = mortadela com adição de 2%; tratamento 3 = mortadela com adição de 4% e tratamento 4 = mortadela com adição de 6% de pó de casca de ovo. Os produtos foram submetidos as análises microbiológicas, composição química, pH e sensorial. Os resultados foram satisfatórios, visto que todos os tratamentos estavam aptos ao consumo humano. A inclusão de pó de casca de ovo aumentou o teor de umidade, porém quando adicionado 2%, o produto apresentou melhor aceitação e menor valor calórico. Conclui-se que adicionando o pó de casca de ovo em mortadelas elaboradas com CMS de codornas de poedeiras de descarte ocorreu redução do valor calórico, apresentando melhor qualidade nutricional e aceitação para os atributos avaliados quando incluído 2% de pó de casca de ovo, levando o produto a possibilidade de comercialização, assim como, se tornando uma excelente alternativa de alimento.
The objective of this study was to develop mortadella from mechanically separated meat (MSM) of discarded laying quails (Coturnix japonica) enriched with different levels of eggshell powder and to evaluate the physical, chemical, microbiological, and sensory aspects, along with acceptance and purchase intent. Four products were produced with varying levels of eggshell powder inclusion: treatment 1 = control mortadella, with 0%; treatment 2 = mortadella with 2% addition; treatment 3 = mortadella with 4% addition; and treatment 4 = mortadella with 6% addition of eggshell powder. The products were subjected to microbiological, chemical composition, pH, and sensory analyses. The results were satisfactory, and all treatments were suitable for human consumption. The inclusion of eggshell powder increased the moisture content; however, when 2% was added, the product showed better acceptance and lower caloric value. It was concluded that adding eggshell powder to mortadella made with MSM from discarded laying quails reduced the caloric value, resulting in better nutritional quality and acceptance for the evaluated attributes when 2% eggshell powder was included, making the product commercially viable and an excellent alternative food.
El objetivo del estudio fue desarrollar mortadela a partir de carne mecánicamente separada (CMS) de codornices ponedoras (Coturnix japonica) descartadas, enriquecida con diferentes niveles de polvo de cáscara de huevo, y evaluar los aspectos físicos, químicos, microbiológicos y sensoriales, junto con la aceptación y la intención de compra. Se produjeron cuatro productos con diferentes niveles de inclusión de polvo de cáscara de huevo: tratamiento 1 = mortadela control, con 0%; tratamiento 2 = mortadela con adición del 2%; tratamiento 3 = mortadela con adición del 4%; y tratamiento 4 = mortadela con adición del 6% de polvo de cáscara de huevo. Los productos fueron sometidos a análisis microbiológicos, composición química, pH y pruebas sensoriales. Los resultados fueron satisfactorios, y todos los tratamientos fueron aptos para el consumo humano. La inclusión de polvo de cáscara de huevo aumentó el contenido de humedad; sin embargo, al agregar el 2%, el producto mostró una mejor aceptación y menor valor calórico. Se concluyó que al añadir polvo de cáscara de huevo en mortadelas elaboradas con CMS de codornices ponedoras de descarte se redujo el valor calórico, presentando mejor calidad nutricional y aceptación para los atributos evaluados cuando se incluyó un 2% de polvo de cáscara de huevo, lo que hace al producto viable para comercialización y una excelente alternativa alimentaria.

Antioxidants are considered functional additives against oxidative stress since they avoid nutritional decline in the meat. The main objective of the present study is to evaluate the effect of sweet potato flour (SPF) as a natural antioxidant on carcass yield and physicochemical characteristics of Creole chickens of Mexico (CChM) and Cobb 500 broilers. In total, 210 chickens (105 CChM and 105 Cobb 500 chickens) were randomly assigned to three treatments: 0, 500, and 1000 mg of SPF kg-1 of feed. The Cobb 500 chickens showed higher carcass yield (hot and cold), breast, and breast fillet, whereas the CChM had higher thigh yield (P ≤ 0.05). The yield on the previously mentioned variables was not affected by the inclusion levels of SPF. The initial pH differed because of the effect of the chicken's genotype and the addition of SPF, which was higher on Cobb 500 chicken and on those that were not supplemented with SPF. The birds' skin that consumed SPF presented higher yellowness after 24 h (P ≤ 0.05). CChM manifested a higher dry matter and protein content and a lower content of ash and fat (P ≤ 0.05). In conclusion, Cobb 500 chickens present a higher carcass yield and its components, in addition to a less acid pH; however, CChM offer a higher nutritional contribution, whereas the 500 and 1000 mg addition of SPF increases the skin yellowness, which makes it an alterorganic as a pigment on broiler chicken production.

The present study aims to evaluate the nutritional value of different tree and shrub leaves in Brazilian ruminant production systems. Eight potentially edible trees and shrubs were identified from interviews with 30 ruminant producers: Aroeira (ARO; Lithraea molleoides), Black Mulberry (BMU; Morus nigra), Candeia (CAN; Eremanthus erythropappus), Jatobá (JAT; Hymenaea courbaril), Gliricídia (GLI; Gliricidia sepium), Santa Bárbara tree (SBT; Mélia azedarach), Tithonia (TIT; Tithonia diversifolia), and White Mulberry (WMU; Morus alba). Four leaf samples of each edible tree were sampled, and chemical analyses and in vitro assays were performed. Edible trees (except CAN and JAT) had lower neutral detergent fiber content than Mombasa grass. In addition, SBT, BMU, WMU, and TIT had lower fiber content than the other evaluated edible trees. Consequently, SBT, TIT, BMU, and WMU had improved dry matter degradation. Among the edible trees and shrubs, SMW and WMU increased the potential for gas production (a parameter). On the other hand, CAN decreased the estimated gas production 48 h after incubation. Furthermore, TIT decreased methane production up to 24 h after in vitro fermentation. Thus, except ARO, CAN, and JAT, the edible trees evaluated in the present study are potential feeds in moderate- to high-producing animals. Additionally, TIT fermentation reduces in vitro methane production.

Introduction: King grass (Cenchrus purpureus (Schumach.) Morrone, syn. Pennisetum purpuphoides) and pineapple peel (Ananas comosus) silages are food alternatives for livestock in conditions of feed shortage. Objective: To describe the dynamics of the microbiota present in king grass and pineapple silage during the fermentation process using next generation sequencing (NGS) and to evaluate the protective effect of Lacticaseibacillus paracasei_6714 as a silage inoculum against Listeria monocytogenes. Methods: We used an unrestricted randomized design to characterize the microbiota present in silages made from king grass harvested 70 days after regrowth and pineapple peel. We inoculated mixtures of grass and peel with L. paracasei_6714 or L. monocytogenes, or both, with a non-inoculated treatment as control. The nutritional and fermentative profile was evaluated after 30 days. After 15 and 30 days of fermentation, we used 16S rRNA analysis to determine the dynamics and diversity of the microbiota in the inoculated and control silages. Result: Dry matter content and digestibility did not differ significantly; however, there were differences in crude protein, pH and organic acids. We obtained 4432 amplicon sequence variants of Proteobacteria, Firmicutes, Bacterioidetes, Actinobacteria, Verrucomicrobia, Planctomycetes and Patescibacteria. The relative abundance of each phylum varied depending on the material and fermentation period. Phylum similarity was over 70 % (but not greater than 50 % with Bray-Curtis at the species level). Conclusion: These bacterial communities seem to have an important role during silage fermentation. Proper management of silage processing can reduce or eliminate pathogenic bacteria.
Introducción: Los ensilajes del pasto king grass (Cenchrus purpureus (Schumach.) Morrone, syn. Pennisetum purpuphoides) y cáscaras de piña (Ananas comosus) son alternativas de alimento para ganado en condiciones de escasez alimentaria. Objetivo: Describir las dinámicas de la microbiota presente en los ensilajes de king grass y piña durante el proceso de fermentación usando secuenciación de próxima generación (NGS) y evaluar el efecto de protección de Lacticaseibacillus paracasei_6714 como inoculante de ensilaje ante Listeria monocytogenes. Métodos: Usamos un diseño aleatorio no restringido para caracterizar la microbiota presente en ensilajes de king Grass cosechados 70 días después de rebrote y de cáscaras de piña. Inoculamos mezclas de pasto y cáscara con L. paracasei_6714 o L. monocytogenes, o ambos, con un tratamiento control sin inocular. El perfil nutricional y de fermentación fue evaluado luego de 30 días. Después de 15 y 30 días de fermentación, usamos un análisis de para determinar la dinámicas y diversidad de la microbiota en los ensilajes inoculados y control. Resultados: Los contenidos de materia seca y digestibilidad, no difirieron significativamente; sin embargo, hubo diferencias en proteína cruda, pH y ácidos orgánicos. Obtuvimos 4 432 secuencias variantes de amplicon de Proteobacteria, Firmicutes, Bacterioidetes, Actinobacteria, Verrucomicrobia, Planctomycetes y de Patescibacteria. La abundancia relativa de cada filo vario dependiendo del material y periodo de fermentación. Similitudes de filo fueron mayores al 70 % (pero no mayor que 50 % con Bray-Curtis a nivel de especie). Conclusión: Estas comunidades bacterianas parecen cumplir un papel importante durante la fermentación del ensilaje. Un manejo apropiado del proceso de ensilaje puede reducir o eliminar baterías patogénicas.

The aim of this work was to study the effect of blanching and ultrasound pretreatments on drying and quality characteristics of apple peel. Blanching was conducted in boiling water, ultrasound in a water bath, and drying in a batch tray dryer. The product obtained was ground into a flour, and assessed for color, water activity, proximate composition, sugars, and bioactive compounds. Results showed that effective moisture diffusivity increases with a decrease in product moisture content, being such dependence well described by a second order polynomial model. Average drying rate was higher and product moisture content was lower for blanched and sonicated flour, especially for the former. Such result suggests that blanching and ultrasound enhance water removal during drying of apple peel. Physical properties were significantly affected by pretreatments, being more intense red color and lower water activity obtained for sonicated flour. Nutritional and bioactive properties were also significantly affected by pretreatments, being lower sugar, higher protein, fiber, catechin and epicatechin content observed for blanched flour. Summarizing, blanching and ultrasound pretreatments improve drying of apple peel, both regarding process efficiency and product quality.

The aim of this study was to evaluate the nutritional profile and the physicochemical characteristics during storage of newly developed formulations of fermented milk drinks with added pineapple, mango and passion fruit pulp. The fermented drinks showed a high content of protein, iron, and calcium. The passion fruit milk drink had the lowest pH (4.13) and highest acidity (0.95%, expressed in % of lactic acid), which was significantly different (p<0.05) from the pineapple and mango drinks. As for syneresis and sedimentation, the pineapple milk drink had the highest rates at 14 days storage, with 34.33% and 6.50%, respectively and was significantly different (p≤0.05) when compared to the mango and passion fruit milk drinks. In conclusion, newly developed fermented milk drinks with added fruit pulp were a source of several nutrients. We observed physical-chemical characteristics suitable for a fermented milk product during storage.
El objetivo de este estudio fue el desarrollo de nuevas formulaciones de bebidas lácteas fermentadas adicionadas de piña, mango y maracuyá, para evaluar el perfil nutricional y las características fisicoquímicas durante el almacenamiento. Las bebidas fermentadas mostraron un alto contenido en proteínas, hierro y calcio. En cuanto a las características fisicoquímicas durante el almacenamiento, la bebida láctea de maracuyá presentó el pH más bajo (4,13) y la acidez más alta (0,95%, expresada en % de ácido láctico), con una diferencia significativa (p < 0,05), en comparación con las bebidas de piña y mango. En cuanto a sinéresis y sedimentación, la bebida láctea de piña presentó los mayores índices a los 14 días de almacenamiento, con 34,33% y 6,50%, respectivamente, y con diferencia significativa (p ≤ 0,05) al compararla con las bebidas lácteas de mango y maracuyá. En conclusión, las bebidas lácteas fermentadas con adición de pulpa de fruta son una fuente de varios nutrientes, y de características físico-químicas adecuadas para un producto lácteo fermentado durante el almacenamiento.

The nixtamalization process used for tortilla production entails extended processing time and generates pollutant effluents. Ohmic heating (OH) is an emerging technology that uses an alternating electric current for rapid and uniform food heating and mitigates effluent concerns. However, gaps exist in nutrient bioavailability studies. In this work, we assessed OH's impact on tortilla nutritional value, protein, and calcium using a rat model. Twenty-five male Wistar rats were fed one of four diets for 21 days: raw corn (RC) as an experimental control, OH-processed tortillas (OHTs), traditionally processed tortillas (TPTs), commercial tortillas (CTs), and a casein diet (CD) as a growth control. Despite similar protein and macronutrient profiles, OH significantly enhanced insoluble fiber content. The weight gain sequence was OHTs > TPTs > CTs > RC. OHTs exhibited superior protein digestibility (88.52%), which was 3% higher than other diets. The serum albumin (2.63-2.73 g/dL) indicated moderate malnutrition due to the tortilla's lower protein content. Nonetheless, the protein efficiency ratio (1.2-1.74) showed no significant difference from TPTs. Bone characteristics and fracture strength resembled the tortilla-fed groups, surpassing RC. X-ray diffraction and scanning electron microscopy confirmed that the OHT and TPT diets improved male rat bone thickness and crystallinity. The findings suggest the potential for OH as an eco-friendly tortilla production method, maintaining nutritional value comparable to traditional methods.

Nowadays, the food and health industries are generating new products with antioxidant potential; among them are those rich in phenolic compounds that have a beneficial impact on human health. Therefore, the aim of this research was to obtain different types of mixtures from Portulaca oleraceae (P), Chenopodium album (C), Opuntia oligacantha Förster var. Ulapa (O), and Amaranthus tricolor (A) and evaluate the content of total phenols, total flavonoids, and antioxidant potential in order to select the mixture with the highest content of phenolic compounds. An experimental simplex-centroid mixture design with 15 experimental treatments was used; the data were analyzed and adjusted to a quadratic model that allowed for the prediction of the content of phenols, flavonoids, and antioxidant activity using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-Azino-bis (3-ethylbenz-thiazoline-6-sulfonic acid) (ABTS) of different experimental mixtures. The results show that the individual components of C and P had the highest content of phenols and antioxidant potential. It was observed that the binary mixtures P-C and P-A presented values of total phenols greater than 11 mg of gallic acid equivalents g-1 DW and values of flavonoids greater than 13 mg of quercetin equivalents g-1 DW. These values were higher than those found in the individual components. The P-C mixture with an antioxidant potential of 66.0 ± 0.07 Trolox equivalents g-1 DW could be used as an additive in food or to obtain a functional food that improves the intake of antioxidant compounds in the population.

Ultrasonication is one of the non-thermal physical methods that can be used on foods and when used in synergy with temperature (thermosonication), this technique proves to be more effective, thus reducing the duration and intensity of heat treatment and the consequent damage to the foods. This work aimed to use the technique of ultrasonication and thermosonication in the processing of jalapeno pepper sauces in comparison with pasteurization. Two types of sauces were produced, one with pre-cooking (a) and the other without cooking (b), and the influence of time and temperature was analyzed by applying ultrasonication and thermosonication. Times of 15 and 30â min and temperatures of 25 and 65â °C were used. Both treatments stood out for their effectiveness when compared to the traditional method (pasteurization 65â °C and 30â min). The results demonstrate that, in general, the sauces are good sources of phenolic compounds (141.83 ± 0.10â mg gallic acid equivalent/100â g), flavonoids (50.40 ± 0.30â mg quercetin equivalent/100â g) and carotenoids (2.39 ± 0.07â mg ß-carotene/100â g). The sauces had an increase in carotenoids by about 25% (thermosonicated at 15 and 30â min and pre-cooked) and in antioxidant activity (ferric reducing antioxidant power) with about 12% and 13% (thermosonicated at 30â min with and without cooking, respectively) in relation to control (pasteurization). On comparing thermosonication with ultrasound process total phenolics had improved by around 14% and flavonoids by 55%. At the first time, capsantin, capsaicin, dihydrocapsaicin, and nordihydrocapsaicin were identified by ultra-high performance liquid chromatography-MS/MS (UHPLC-MS/MS). Finally, as both treatments demonstrate efficiency (thermosonication at 15 and 30â min), the use of 15â min is indicated as feasible by the reduced process time and in preventing the loss of bioactive compounds in the sauces when compared to the pasteurization treatment.

Resumen Introducción: el conocimiento acerca de la disponibilidad de materias primas regionales, junto con estrategias socio-tecnológicas y educativas, resultan útiles para un aporte óptimo de nutrientes en la dieta. El objetivo del estudio fue identificar las materias primas y subproductos locales de la región centro chaqueña, que podrían resultar útiles para cubrir deficiencias nutricionales durante la etapa de alimentación complementaria. Materiales y método: se diseñó un instrumento para encuestar a los referentes productivos acerca del tipo y destino de la actividad agropecuaria, ubicación geográfica, descripción de la producción, disponibilidad, procesos tecnológicos, capacidad/volumen de producción, entre otros. Se analizaron los productos en función de su aporte en nutrientes críticos para niños de 6 a 24 meses (calcio, hierro, vitaminas A, D y E) mediante tablas de composición química y búsqueda bibliográfica. La ficha técnica diseñada contó con 4 secciones y 29 ítems: datos generales (8 ítems), agricultura, ganadería y subproductos (7 cada una). Resultados: se trabajó con 50 productores locales que abastecían el departamento Comandante Fernández. Se observó que la principal actividad en la región fue la agricultura, representando un 32%; de éstos, el 78% de la producción correspondió a vegetales y el 22% a frutas de estación. Le siguieron las actividades mixtas en un 26% y la elaboración de subproductos en un 22% (63 tipos diferentes). En menor proporción, se encontró la actividad ganadera y otras actividades representando un 12% y 8%, respectivamente. Se identificaron como posibles alimentos fuentes de nutrientes al zapallo y batata (vitamina A), acelga y zapallo angola (vitamina E), yema de huevo, carne vacuna y morcilla (hierro), quesos, ricota, rúcula y acelga (calcio), huevo (vitamina D). Conclusiones: se concluye que la región cuenta con variedad de productos locales como fuentes primarias de nutrientes críticos para el consumo directo y desarrollo tecnológico de posibles formulaciones.
Abstract Introduction: knowledge about the availability of regional raw materials, together with socio-technological and educational strategies, are useful for an optimal supply of nutrients in the diet. The objective of this study was to identify local raw materials and by-products from the central Chaco region that could be useful to cover nutritional deficiencies during the complementary feeding stage. Materials and method: for this purpose, an instrument was designed to survey the productive referents about the type and destination of agricultural activity, geographical location, description of production, availability, technological processes, and production capacity/volume, among others. The products were analysed according to their contribution of critical nutrients for children aged 6 to 24 months (calcium, iron, vitamins A, D, and E) using chemical composition tables and a bibliographic search. The technical data sheet designed had 4 sections and 29 items: General Data (8 items), Agriculture, Livestock, and By-products (7 each). Results: 50 local producers supplied the department of Comandante Fernández. It was observed that the main activity in the region was agriculture, representing 32%; of these, 78% of the production corresponded to vegetables and 22% to seasonal fruits. This was followed by mixed activities at 26% and the production of by-products at 22% (63 different types). To a lesser extent, livestock and other activities accounted for 12% and 8%, respectively. Possible nutrient sources were identified such as pumpkins and sweet potatoes (vitamin A), chard and angola pumpkin (vitamin E), egg yolk, beef and blood sausage (iron), cheese, ricotta, arugula and chard (calcium), egg (vitamin D). Conclusion: it is concluded that the region has a variety of local products as primary sources of critical nutrients for direct consumption and technological development of possible formulations.
