The present study investigated the bioaccessibility of minerals, bioactive compounds, and sensory acceptance of isotonic beverages formulated with Ricotta cheese whey (RCW) and passion fruit cv. BRS Sertão Forte. Three formulations were developed: I1 with 50% RCW and 5% passion fruit pulp, I2 with 50% RCW and 8.5% pulp, and I3 with 30% RCW and 12% pulp. I3 showed higher ascorbic acid content and antioxidant activity, exhibited the highest scores in the consumer test, and maintained its physicochemical stability and microbiological safety during the storage at 7 °C for 56 days. (-)-Epicatechin gallate, (-)-epigallocatechin gallate, and cis-resveratrol were the main phenolic compounds quantified in the isotonic beverages. I1 and I3 exhibited high bioaccessibility of the minerals K, Na, and Mg (37-70%) compared to I2, which showed bioaccessibility between 31 and 40%. The beverages developed are innovative alternatives for the market of supplements for athletes, combining the use of a dairy industry by-product and a new variety of passion fruit to date little-explored economically. Microwave-assisted extraction of mucilage from juá was investigated using response surface methodology. The optimal conditions for extraction were a power of 300 W, an extraction time of 240 s, a pH of 8.0, and a water/sample ratio of 1/6, which achieved a 26.43% yield. The monosaccharide composition and antioxidant activity of the mucilage from juá fruits from different regions of Caatinga were investigated. The fruits from Agreste Paraibano showed the highest mucilage extraction yield (18.64%) compared to that of fruits from Mata Paraibana (MP) (12.37%), Borborema (BB) (11.47%), and Sertão Paraibano (8.31%) (p < 0.05). Glucose (32.8%-50.8%) and arabinose (19.3%-32.9%) were the main monosaccharides found in juá mucilage. The mucilage from fruits in the MP presented the highest antioxidant activity in the 2,2-diphenyl-1-picrylhydrazyl and oxygen radical absorbance capacity assays. Our results demonstrated the potential for the future exploration and application of juá mucilage in the food industry. PRACTICAL APPLICATION: Juá (Ziziphus joazeiro Mart.) mucilage contains phenolic compounds and antioxidant activity, and its extraction by MAE is efficient, as it contributed to a higher yield.

This study aimed to investigate the effects of spontaneous fermentation on physicochemical characteristics, bioactive compounds, and antioxidant activity of acerola and guava fruit industrial by-products. Viable cell counts of lactic acid bacterial (LAB) in acerola and guava by-products were ≥ 5.0 log CFU/mL from 24 h up to 120 h of fermentation. Fermented acerola and guava by-products had increased luminosity and decreased contrast. Contents of total soluble solids and pH decreased, and titrable acidity increased in acerola and guava by-products during fermentation. Ascorbic acid contents decreased in acerola by-product and increased in guava by-product during fermentation. Different phenolic compounds were found in acerola and guava by-products during fermentation. Fermented acerola and guava by-products had increased contents of total flavonoids, total phenolics, and antioxidant activity. The contents of total flavonoids and total phenolics positively correlated with antioxidant activity in fermented acerola and guava by-products. These results indicate that spontaneous fermentation could be a strategy to improve the contents of bioactive compounds and the antioxidant activity of acerola and guava by-products, adding value and functionalities to these agro-industrial residues.

This study elaborated different probiotic goat milk yogurt formulations with addition of a low-calorie Isabel "Precoce" grape preparation and flour from derived solid by-products. Physicochemical characteristics, probiotic counts, phenolic and protein/peptide molecular weight profile, antioxidant capacity (AC) and sensory acceptance of different yogurt formulations were evaluated. Yogurts with Isabel grape ingredients (IGI) had high nutritional value, distinct phenolic profile and high AC. High counts of probiotic Lactobacillus acidophilus La-05 were found in yogurts during storage. AC of yogurts with IGI increased during a simulated gastrointestinal digestion with breakdown of high molecular weight proteins and release of protein-bound phenolics. AC of yogurts with IGI should be linked to goat milk peptides and Isabel grape phenolics. Yogurts with IGI had enhanced sensory acceptance. Incorporation of Isabel grape preparation and derived by-product flour into probiotic goat milk yogurt resulted in an added-value product with multifunctional characteristics and improved sensory characteristics.

The concentration of polyphenolic compounds, such as flavanols and anthocyanins, and the antioxidant activity in apples (Malus domestica Borkh) seem to differ with cultivar, maturity stage, environmental conditions and the part of the fruit. In this work, the total phenolic, flavanol and anthocyanin content and antioxidant activity were measured in the flesh, whole fruit and peel from apple cultivars Fuji, Epagri COOP24 and Epagri F5P283 cultivated in Southern Brazil. Total phenolic content assayed by Folin-Ciocalteu method, flavanol by modified p-dimethylaminocinnamaldehyde method, anthocyanin content by pH differential method and antioxidant activity measured using ABTS assay. One-way analysis of variance, Tukey's test and correlation analysis were performed. Within each cultivar, the total phenolic, flavanol and anthocyanin contents and antioxidant activity were highest in the peels, followed by the whole fruit and the flesh. In the peel, whole fruit and flesh the Epagri F5P283 apple had the highest total phenolic contents and the highest total antioxidant activity, while that Epagri COOP24 was highest in flavanols and anthocyanins. Total phenolic content was positively associated with total antioxidant activity in flesh, whole fruit and peel. These results demonstrate that phenolic compounds have a significant contribution to the total antioxidant activity which varies considerably depending of the part of the fruit and of the apple cultivar analyzed.

The bioaccessibility of phenolics and antioxidant activity were determined in açaí, cupuaçu, blackberry, blueberry, jabuticaba, raspberry, cajá and soursop frozen pulps (FPs) using a digestion model coupled with a simulated intestinal barrier. Cyanidin 3-glucoside (6.56%) and pelargonidin 3-glucoside (28.33%) were bioaccessible in blueberry and raspberry. Catechin had the highest bioaccessibility in blueberry (270.71%), blackberry (137.51%), and jabuticaba (99.52%), while the highest bioaccessibility of epicatechin (153.59%) and syringic acid (147.14%) was observed in blueberry. Procyanidin B1 presented the highest bioaccessibility in cajá (102.79%) and blackberry (87.62%) and contributed to the high DPPH▪ scavenging activity observed in these FPs. The bioaccessible fraction in soursop consisted of caffeic (8.18%), p-coumaric (7.36%), caftaric (7.96%) and chlorogenic (11.08%) acids, and these acids were correlated with the iron reduction capacity of this FP. Our study assessed the bioaccessible phenolics in several FPs and showed that those found in cajá and blackberry possesses the highest antioxidant activity.

Inflammatory bowel disease (IBD) is characterized by severe mucosal damage in the intestine and a deregulated immune response. Natural products derived from plants that are rich in bioactive compounds are used by many patients with IBD. Xique-xique (Pilosocereus gounellei) is a cactus of the Caatinga family that has been used by the local population for food and medicinal purposes. The intestinal anti-inflammatory effect of xique-xique cladode juice was evaluated in the present study. A dose of 5 mL kg-1 had a protective effect on intestinal inflammation, with an improvement in macroscopic damage, and a decrease in pro-inflammatory markers and oxidative stress, in addition to preserving the colonic tissue. Immunohistochemical analysis revealed the downregulation of IL-17, NF-κB, and iNOS, and upregulation of SOCs-1, ZO-1, and MUC-2. These protective effects could be attributed to the phenolic compounds as well as the fibers present in xique-xique juice. Further studies are needed before suggesting the use of xique-xique juice as a new alternative for treating IBD.

This study characterized the phenolic profile in siriguela, umbu-cajá and mangaba, as well in their frozen pulps (FPs). The bioaccessibility of phenolic compounds and the antioxidant activity of the FP dialysates were determined following exposure to simulated gastrointestinal conditions. The profile of phenolic compounds identified in fruit and FPs were relatively similar. After pulp processing, increases of 33.60% and 68.72% in free phenolics were observed for mangaba and umbu-cajá, respectively, whereas in siriguela, the free phenolic was reduced by 56.55%. Generally, phenolic levels decreased after exposure to simulated gastric conditions in all FPs. The bioaccessibility of phenolics varied among the evaluated FPs. The highest bioaccessibility was observed for gallic acid in the umbu-cajá FP (73.92%) and the lowest for gentisic acid in the mangaba FP (8.71%). Siriguela and umbu-cajá FP dialysates presented the highest capacity for the capture of the radical 2,2'-diphenyl-2-picrylhydrazyl hydrate, whereas the mangaba FP dialysate demonstrated the highest iron reducing capacity.

An in vitro method involving simulated gastrointestinal digestion was used to assess the bioaccessibility of fifteen minerals, twenty-two phenolic compounds and the antioxidant capacity in juçara fruit during seven ripening stages. For minerals and phenolics, respectively, initial contents were up to 1325.9 and 22.9mg100g-1, whereas after in vitro digestion, the maximum values were 556.7 and 14.43mg100g-1 (dry matter). Antioxidant capacity, determined by 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity (DPPH) and ferric reducing antioxidant power (FRAP), after in vitro digestion decreased 51-78% when compared to the crude extract. Bioaccessible fractions of quercetin, protocatechuic and p-coumaric acids presented positive and significant correlation with results of DPPH and FRAP. Furthermore, our study demonstrated that the ripening stages of juçara fruit influenced the bioaccessibility of compounds and antioxidant capacity, which presented higher levels in purple fruits collected 42-69days after the appearance of the red berries on bunches.

This study reports the development and validation of a fast capillary electrophoresis method for cation determination in honey samples and the classification of honey by geographical origin using Principal Components Analysis (PCA). The background electrolyte (BGE) was optimized using the Peakmaster(®) software, which evaluates the tendency of the analytes to undergo electromigration dispersion and the BGE buffer capacity and conductivity. The final BGE composition was defined as 30 mmol L(-1) imidazole, 300 mmol L(-1) acetic acid and 140 mmol L(-1) Lactic acid, at pH 3,0, and the separation of K(+), Na(+), Ca(2+), Mg(2+) and Mn(2+) using Ba(2+) as the internal standard was achieved in less than 2 min. The method showed satisfactory results in terms of linearity (R(2)>0.999), the detection limits ranged from 0.27-3.17 mg L(-1) and the quantification limits ranged from 0.91-10.55 mg L(-1). Precision measurements within 0.55 and 4.64%RSD were achieved and recovery values for the analytes in the honey samples ranged from 93.6%-108.6%. Forty honey samples were analyzed to test the proposed method. These samples were dissolved in deionized water and filtered before injection. The CE-UV reliability in the cation analysis in the real sample was compared statistically with ICP-MS methodology. No significant differences were found, with a 95% confidence interval between the methodologies. The PCA showed that the cumulative variance for the first two principal components explain more than 85% of the variability of the data. The analytical data suggest a significant influence of the geographical origin on the mineral composition.

La concentración de compuestos polifenoles, como flavanoles y antocianinas, y la actividad antioxidante en manzanas (Malus domestica Borkh) parecen diferir con la cultivar, etapa de madurez, condiciones ambientales y la parte de la fruta. En este trabajo, el contenido de fenoles, flavanoles y antocianinas totales y la actividad antioxidante fueron medidos en fruta entera, pulpa y cáscara de las cultivares de manzana Fuji, Epagri COOP24 y Epagri F5P283 cultivadas en el sur de Brasil. El contenido de fenoles totales se midió con el método Folin-Ciocalteu, flavanoles con el método modificado p-dimetilaminocinamaldehido, antocianinas con el método de diferencia de pH y actividad antioxidante fue medida aplicando el método ABTS. Se realizó análisis de varianza de un factor, prueba de Tukey y análisis de correlación. Dentro de cada cultivar, el contenido de fenoles, flavanoles y antocianinas totales y la actividad antioxidante fueron más alto en las cáscaras, seguidas por la fruta entera y pulpa. En la cáscara, en la fruta entera y pulpa, manzana Epagri F5P283 presentó el contenido de fenoles totales y actividad antioxidante total más alto, mientras que la Epagri COOP24 presentó valores más alto de flavanoles y antocianinas. El contenido de fenoles totales fue asociado positivamente a actividad antioxidante total en la pulpa, fruta entera y cáscara. Estos resultados demuestran que los compuestos polifenoles tienen una contribución significativa a la actividad antioxidante total, los cuales varían considerablemente de acuerdo al de la parte de la fruta y cultivar de manzana analizada.
