RESUMEN

The application of two microemulsion based extraction methods (Extraction-1 and Extraction-2) were investigated for the extraction of carotenoids from watermelon pulp in the present study. Span 20 and glycerol for Extraction-1, and sucrose monopalmitate (SMP) with salt (NaCl) for Extraction-2 demonstrated the highest extraction efficiency. Optimization studies by response surface methodology were applied to these conditions. The optimum conditions were conducted as 6.025 g/g of Span 20/pulp sample-(S), 8.827 of glycerol/S, 38.75 °C of temperature and 18.75 min of time; 1.13 g/g of SMP/S, 7.53 g/g of Salt/S, 66.25 °C and 46.3 min of temperature and time for Extraction-1 and Extraction-2, respectively. The extraction efficiency for the optimum conditions were determined as 96.5% and 83.6% for Extraction-1 and Extraction-2, respectively. The results showed that the proposed methods can be successfully performed in the extraction of carotenoids from watermelon pulp compared to conventional solvent extraction.

In this study, the effectiveness of five different ion exchange resins (Amberlite-IRA96,-FPA51,-FPA53,-FPA54 and Lewatit-S4528) in reducing the acidity of Valencia orange juice and effects on juice quality were determined. The greatest decrease in titratable acidity (65%) and increase (23%) in pH were determined in the juices deacidified using Amberlite-FPA51. The greatest color change (ΔE*=4.89) was identified by treatment of Lewatit-S4528. Ascorbic acid contents were decreased between 12 and 28% by deacidification. Changes ((-4.43)-(+8.18)%) in the carotenoid contents were also assessed in juices treated with different resins. The changes in amount of hydroxycinnamic, hydroxybenzoic acids, flavanones, flavonol and flavone were determined. The largest decrease (ca.28%) in total phenolics was observed with Amberlite-FPA54. The most abundant organic acids in juices were citric acid followed by quinic, malic, ascorbic, tartaric, succinic and oxalic acid, which were decreased after deacidification. Lowest color change and highest carotenoid content were obtained with Amberlite-FPA54.

RESUMEN

In this work, various concepts and features of anthocyanins have been comprehensively reviewed, taking the benefits of the scientific publications released mainly within the last five years. Within the paper, common topics such as anthocyanin chemistry and occurrence, including the biosynthesis of anthocyanins emphasizing the anthocyanin formation pathway, anthocyanin chemistry, and factors influencing the anthocyanins' stability, are covered in detail. By evaluating the recent in vitro and human experimental studies on the absorption and bioavailability of anthocyanins present in typical food and beverages, this review elucidates the significant variations in biokinetic parameters based on the model, anthocyanin source, and dose, allowing us to make basic assumptions about their bioavailability. Additionally, special attention is paid to other topics, such as the therapeutic effects of anthocyanins. Reviewing the recent in vitro, in vivo, and epidemiological studies on the therapeutic potential of anthocyanins against various diseases permits a demonstration of the promising efficacy of different anthocyanin sources at various levels, including the neuroprotective, cardioprotective, antidiabetic, antiobesity, and anticancer effects. Additionally, the studies on using plant-based anthocyanins as coloring food mediums are extensively investigated in this paper, revealing the successful use of anthocyanins in coloring various products, such as dietary and bakery products, mixes, juices, candies, beverages, ice cream, and jams. Lastly, the successful application of anthocyanins as prebiotic ingredients, the innovation potential of anthocyanins in industry, and sustainable sources of anthocyanins, including a quantitative research literature and database analysis, is performed.

In this study, bioactive compounds (phenolic and carotenoid) and some quality parameters (color, browning index and hydroxymethylfurfural (HMF)) of natural cloudy lemon juice, pasteurized (90 °C/15 s) and storage stability of concentrated lemon juice (-25 °C/180 days) were carried out. Fifteen phenolic compounds were determined in the lemon juice and the most abounded phenolic compounds were hesperidin, eriocitrin, chlorogenic acid and neoeriocitrin. In generally, phenolic compound concentrations of lemon juice samples increased after the pasteurization treatment. Four carotenoid compounds (ß-carotene, ß-cryptoxanthin, lutein and zeaxanthin) were detected in natural cloudy lemon juice. Lutein and ß-cryptoxanthin were the most abounded carotenoid compounds in the lemon juice. Color values of the lemon juices were not affected by processing and storage periods. HMF and browning index of the lemon juices increased with concentration and storage. According to the results, storing at -25 °C was considered as sufficient for acceptable quality limits of natural cloudy lemon juice.
